Given the troubles Kimmy has had the last couple of years, it was such a joy to catch up with her and see for myself how well she is doing. Particularly because I feel responsible for leading her down the path she is on.

Of course, my sweet, sweet Kimmy doesn’t see it that way.

I sadly haven’t seen much of Kim since the tragic passing of her dear ex and my beloved friend Monty. As soon as we saw each other, we ran into the other’s’ arms and sobbed for her loss before spending the afternoon reminiscing about the good times with Monty and how proud of her she would be.

While Andy Cohen would be extremely disappointed with my inability to convince her to return to the housewives full time – I still think she needs time to heal – he (and Rinna) would be happy that I was able to get her to accept the infamous bunny for Hucksley’s first birthday.

After achieving the near impossible, I decided to push my luck and talk to her about the sequel-reboot of Witch Mountain … which she just LOVED, though I sadly can’t talk about it due to Disney’s hella watertight confidentiality agreements (the slut pigs).

Given how much ground we had to cover, we needed something light, hearty and soothing – that I could also sneak a drink in a mug with – to give us sustinance. No doubt you know where this is going – given it is our simplest pun yet and isn’t shoehorned in at all – we shared my famed Pumpkim Richartta Rolls.

 

 

A little bit spicy, soothingly sweet and the earthy combination of pumpkin and the ricotta work to create a delightful vegetarian alternative to sausage rolls that doesn’t include spinach.

Pumpkim Richartta Rolls
Makes: 12.

Ingredients
500g butternut pumpkin, diced and roasted
500g ricotta cheese
2 cloves garlic, minced
2 eggs , lightly whisked
½ – 1 cup breadcrumbs
2 tbsp ground cumin
1 tbsp dried oregano, plus extra to garnish
1 tbsp plain flour
¼ cup grated parmesan
3 sheets puff pastry
salt and pepper, to taste
milk, to glaze

Method
Preheat oven to 180°C.

Combine the pumpkin, ricotta, garlic, eggs, breadcrumbs, cumin, oregano, flour and parmesan in a food processor with a good whack of salt and pepper, and blitz until smooth(ish) and combined. Add more breadcrumbs if it is too wet.

Cut each sheet of pastry in half, place a long strip of the mixture in the middle of each pastry half and roll over to enclose.

Cut each in half, transfer to a lined baking sheet and brush with milk before sprinkling with some extra oregano. Place in the oven and bake for about twenty minutes, or until golden and crispy. Then, obviously, devour like, again, a slut pig.

As you know, I’ve long been a friend of the Richards-Hilton-Umansky sisters.

While one of my big-breaks came from being Kyle’s stunt double on Halloween, I actually connected with the girls during my previous big-break working as Kim’s stunt double on Nanny and the Professor and Escape to Witch Mountain.

Given my stunted height, Kimmy outgrew me but being the kind soul that she is, hooked me up to do Kyle’s stunts and we transitioned to being the best of friends slash drinking buddies.

What do I make that says, I’m so happy you’re doing so well and I’m sorry I introduced you to alcohol and the term slut pig?

Tom Yum Everett Soup

A decade of saying so, Main, Side, Snack, Soup

If for some reason that you’re someone that was turned off by the unwarranted terrible reviews for Because I said So, a) fuck you but b) let me catch you up on the plot.

Diane Keaton is a nightmare mother who is concerned that her youngest daughter played by Mandy Moore hasn’t found validation in a marriage or even just a steady man or marriage, unlike her two eldest two daughters played by Loz Graham and Piper Perabo. Because hijinks need to ensue, she decides to place a personal ad for her daughter since Tinder wasn’t a thing ten years ago. She then vets the candidates (which the Republican Party probably should have done a better job of), rejecting a dreamy guitarist and trying to orchestrate a chance encounter with Tom Everett Scott.

Now don’t get me wrong, Tom is always that thing you do in my bed … but you always choose the guitarist.

Speaking of, I first met Tommy Evs on the set of That Thing You Do! Where I was working as a P.A. to my dear friend Tom Hanks. I have long been a dear friend of the Hanks-Wilson clan, so Tom trusted me when I assured him that the unknown Tommy Evs was the only person  that could play Guy.

First day on set, I approached Tommy Evs, told him that little anecdote and said, and I quote, “you owe me a life debt you little shit, so be grateful.”

Oh – I should probably mention at this point that I was so far off the wagon at the time that I wouldn’t even be able to find it and my drink of choice was rum, thus the violence.

Anyway, he was completely terrified and did everything I said before he got a case of Stockholm syndrome and we became the closest of friends.

I haven’t seen much of Tommy recently as his career has been semi-booming, with his small role as my dear Em Stone’s *spoiler* in La La Land and the father in Scream, the MTV series – let’s just take a moment to mull over the juxtaposition of those credits. Perfecto, no?

Anyway Tommy was gutted to miss out on a SAG nom for La La, so jumped at the opportunity to get together and celebrate the jewel in the crown of his credits over a delicious and fiery Tom Yum Everett Soup.

Now while this soup has a violent past – I used to cook it until boiling and throw it at him on set – we’ve continued to share it over the years as a way to remind him that I could turn at any given moment and me that I shouldn’t board the rum train.

Plus, how could I bare to quit something so deliciously hot and sour – enjoy!

Tom Yum Everett Soup
Serves: 4.

Ingredients
vegetable oil
500g chickens, cut into small pieces
1 bunch of shallots, trimmed and sliced
2 garlic cloves, finely chopped
1 tbsp tom yum paste
1L chicken stock
2 kaffir lime leaves
4 small red chilli peppers, halved
1 tsp caster sugar
juice of a lime
1 tbsp fish sauce
handful of fresh coriander leaves, roughly chopped
salt and pepper

Method
Heat a lug of oil in a large deep frying pan and cook the chicken for about five minutes, or until browned. Add in the shallots and garlic and cook for a further minute. Stir in the tom yum paste and cook for another further minute.

Stir in the stock, lime leaves and chilli, and simmer gently for about fifteen minutes.

Stir through the sugar, lime juice, fish sauce, coriander leaves and a good whack of salt and pepper. Serve immediately and devour.

The Croque Madame

12th Annual Easter Meggstravaganza, Easter Meggstravaganza, Main

Yes, The Rock is now more widely known as a movie star but let’s be honest he will always be the acclaimed televisual faux-athlete of the WWE … making him, obviously, the perfect fit for the successful TV star of the Meggstravaganza.

Oh, plus he has Ballers that is currently on HBO, so he is firmly in the TV legend realm. Fun fact: Ballers was originally conceived as a romantic comedy about my sexual exploits in the late 90s / earlier 00s, just before he hit the big time.

I first met The Rock while attending the non-shit version of William McKinley High School, where we quickly bonded over being man-children and having to shave in kindergarten. Our love for wrestling also bonded us, although he was less enthusiastic about my Ancient Greece inspired naked/sexy Greco-Roman Wrestling, called Dicko Roman.

While the style didn’t reach the mainstream, I did parlay it into a beautifully scripted porno that, to be honest, should have crossed over to mainstream … like a gay, hardcore Debbie Does Dallas.

The Rock has long been a fan of Meg Ryan’s work (we used to spend our Friday night slumber parties play wrestling and watching her rom-coms), so he was thrilled to be given the opportunity to help her re-ascend to greatness.

He is very busy, what with him currently filming Babe-watch with my on again-on again fling, Zeffy, but was able to take some time out to snack on a rich The Croque Madame.

While this isn’t the most ideal meal to serve someone busy being shirtless and oozing sex appeal like the OG Mitch Buchannon, The Rock just can’t go past the quintessential French brunch version of the grilled cheese. Between the rich white sauce (which admittedly I am very heavy handed with to avoid waste … despite the risk it poses to my heart), the gruyere (which smells like SJP looks, a foot), the whack of dijon and the perfectly fried egg, you can’t help but be there to devour it.

Before a slow-mo run into the water to burn of the extra calories – enjoy!

The Croque Madame
Serves: 2.

Ingredients
30g unsalted butter
1 tbsp flour
1 cup milk
¼ tsp salt
Freshly grated nutmeg
1 cup Gruyere, grated
4 slices sourdough
Dijon mustard
4-6 thin slices of deli ham
2 large eggs
pepper, to taste

Method
Preheat the oven to 180°C.

In small saucepan, melt the butter over high heat until it starts to foam. Whisk in the flour and cook until it is golden and viscose, before adding the milk and salt, whisking constantly until the mixture thickens. Remove from the heat and stir in a pinch of nutmeg and half the cheese.

Lay the slices of bread on a baking sheet, spread with dijon and top with the ham and remaining cheese. Divide half of the bechamel over the top and close the sandwiches.

Melt a lug of unsalted butter in a frying pan over medium heat, add the sandwiches and fry on both sides until golden brown and the cheese is melted and gooey.

Place the sandwiches on the baking sheet, top with remaining bechamel and bake in the oven until it crisps and browns. About ten minutes.

While the sandwiches is becoming gloriously golden, wipe out the frying pan and heat over high heat. When nice and hot, reduce the heat to low and fry the eggs, sunny side up, until the white is gloriously cooked and the yolk soft.

Remove the sandwiches from the oven, plate, top with the fried eggs, season, devour, regret eating so much and run slow-mo into the water, obviously after waiting 15 minutes.

Or you could run in straight away and hope that you hit some trouble and need Zeffy to save you. Which coincidentally is one of our top ten role play situations!
