Guess Who's Coming to Dinner, America's Next Top Model, America's Next Top Model 24

Shit Ben says to his dates for $2000, Alex?

*Pause for applause, laughter and hushed can-you-believe-he-said-its*

After much deliberation and a verbal beat-down from my girl Ty-Ty, I have agreed to use my powers of time-travel for good and head back to the filming of ANTM cycle 24 to sooth the pain of failing at panel.

Join me Saturday – but usually Friday – as I whip up a model-meal for the first one bumped …

Pumpkim Richartta Rolls

Main, Party Food, Side, Snack, Vegetarian

Given the troubles Kimmy has had the last couple of years, it was such a joy to catch up with her and see for myself how well she is doing. Particularly because I feel responsible for leading her down the path she is on.

Of course, my sweet, sweet Kimmy doesn’t see it that way.

I sadly haven’t seen much of Kim since the tragic passing of her dear ex and my beloved friend Monty. As soon as we saw each other, we ran into the other’s’ arms and sobbed for her loss before spending the afternoon reminiscing about the good times with Monty and how proud of her she would be.

While Andy Cohen would be extremely disappointed with my inability to convince her to return to the housewives full time – I still think she needs time to heal – he (and Rinna) would be happy that I was able to get her to accept the infamous bunny for Hucksley’s first birthday.

After achieving the near impossible, I decided to push my luck and talk to her about the sequel-reboot of Witch Mountain … which she just LOVED, though I sadly can’t talk about it due to Disney’s hella watertight confidentiality agreements (the slut pigs).

Given how much ground we had to cover, we needed something light, hearty and soothing – that I could also sneak a drink in a mug with – to give us sustinance. No doubt you know where this is going – given it is our simplest pun yet and isn’t shoehorned in at all – we shared my famed Pumpkim Richartta Rolls.

A little bit spicy, soothingly sweet and the earthy combination of pumpkin and the ricotta work to create a delightful vegetarian alternative to sausage rolls that doesn’t include spinach.

Enjoy!

Pumpkim Richartta Rolls
Makes: 12.

Ingredients
500g butternut pumpkin, diced and roasted
500g ricotta cheese
2 cloves garlic, minced
2 eggs , lightly whisked
½ – 1 cup breadcrumbs
2 tbsp ground cumin
1 tbsp dried oregano, plus extra to garnish
1 tbsp plain flour
¼ cup grated parmesan
3 sheets puff pastry
salt and pepper, to taste
milk, to glaze

Method
Preheat oven to 180°C.

Combine the pumpkin, ricotta, garlic, eggs, breadcrumbs, cumin, oregano, flour and parmesan in a food processor with a good whack of salt and pepper, and blitz until smooth(ish) and combined. Add more breadcrumbs if it is too wet.

Cut each sheet of pastry in half, place a long strip of the mixture in the middle of each pastry half and roll over to enclose.

Cut each in half, transfer to a lined baking sheet and brush with milk before sprinkling with some extra oregano. Place in the oven and bake for about twenty minutes, or until golden and crispy. Then, obviously, devour like, again, a slut pig.

Voom Voom Sha-Bang

Guess Who's Coming to Dinner

As you know, I’ve long been a friend of the Richards-Hilton-Umansky sisters.

While one of my big-breaks came from being Kyle’s stunt double on Halloween, I actually connected with the girls during my previous big-break working as Kim’s stunt double on Nanny and the Professor and Escape to Witch Mountain.

Given my stunted height, Kimmy outgrew me but being the kind soul that she is, hooked me up to do Kyle’s stunts and we transitioned to being the best of friends slash drinking buddies.

What do I make that says, I’m so happy you’re doing so well and I’m sorry I introduced you to alcohol and the term slut pig?

Nasi Gorinda Medley

13th Annual Easter Meggstravaganza, Breakfast, Main

As much as I love my girl Dorinda Medley and am thrilled that her return to our TV screens with the latest season of RHONY last week is the perfect exclamation mark to her title of successful TV star for purposes of this egg-based ritual – who else feels I should just keep this sentence running on for the duration of the post?! – seeing her reminded me of what we lost last November, when our mutual friend HRC lost the election.

And that hurts.

While seeing her brought up the pain of the election of the devil, Dorinda always makes it nice and as such, we were yacking it up and reconnecting in a matter of no time!

Despite being close friends for decades –  we bonded over having mutual enemies at society events – I haven’t caught up with Dori since she joined the housewives franchise and enjoyed a stratospheric rise to the A-list, so we had much to catch-up on.

After hours of discussing John, Luann’s wedding – that I was viciously banned from for mocking Chic C’est La Vie to TMZ a few years ago – getting the goss on the upcoming season. Sadly she isn’t sure Andy is willing to ‘forgive me’ – HA, he knows what he did – and let me appear on the shows with all of my friends, but she is hopefully that I’ll be able to make it nice.

Just not as nice as her.

As any rational person is, Dori is a huge fan of Megs and was honoured to be called up to assist with the ritual … particularly since it meant she got to devour a Nasi Gorinda Medley, which she has been craving for close to four years now.

Like Dorinda, this nasi goreng is spicy, sweet and a little bit fiery … but comes together to provide comfort to anyone that comes within contact. I don’t want to sound like a broken record, but I definitely made this nice.

And thankfully we didn’t have to sit through timestamped videos of the Berkshires … though I’d be happy to if you need me, Andy.

Enjoy!

Nasi Gorinda Medley
Serves: 4.

Ingredients
sesame oil
4 garlic cloves, crushed
2 tsp grated ginger
3 shallots, thinly sliced
500g chicken mince
3 cups cooked brown rice
2 tbsp soy sauce
¼ cup kecap manis
2 red chillies, thinly sliced
2 carrots, grated
½ small wombok, shredded
handful of coriander leaves, roughly chopped
hot sriracha chilli sauce, to serve
4 eggs

Method
Heat a good lug of oil in a large frying pan – or wok – and fry off the ginger and onion. Once nice and fragrant, add the chicken and cook for about five minutes.

Add the rice, soy, kecap manis, carrot, chilli and wombok, and cook for a further five minutes or so. Remove from the heat and stir through the coriander leaves.

While the coriander is getting fragrant, heat a lug of sesame oil in a small frying pan and cook the eggs until the whites are just done and the yolks are soft.

Divide the mixture between the bowls, drizzle with sriracha and top each with an egg.

Devour.

Parphaedra Parks

Dessert, Snack, Sweets

There is nothing more soothing than having a sassy catch-up with my dear friend Shade-ra Parks. Particularly after her stellar performance on this week’s housewives, letting Porsha plant herself directly under a bus whilst chugging back wine.

This, my friends, is peak Phaedra and this is why we are the absolute best of friends. Wine and shade.

I first met Phaedra while she was in law school. As you can probably guess, I was running a scam pretending to be a lecturer – fun fact, my lawyer lecturer persona inspired Annalise Keating. Phaedra, as my brightest and shadiest student uncovered my duplicity and forced me out of the profession.

Being such a sweet christian girl however, Phaedra took me under he wing and taught me to lead a good, southern christian life whilst also being hella sexy.

Given Phae has been so busy lately with the boys, her business and general feuding with her Atlanta friends, I haven’t seen her since Apollo went to priz. It was such a treat to reconnect, catch-up and most importantly talking about the remainder of the season over a delicious Parphaedra Parks.

Being as Phaedra is literally the sweetest thing in the world, I first whipped this up to show my appreciation and make up for the fact that I am not as kind as her. That said, she is sweet but she is also great at throwing shade and is a little nutty, so I had to include some cherry and almonds to get the point across.

And to elevate the flavour – enjoy!

Serves: 8.

Ingredients
500ml cream
150g dark chocolate
1 gelatine leaf
2 egg yolks
75g caster sugar
100g almonds, chopped and toasted
100g pitted cherries, halved

Method
Bring half a cup of cream to the boil in a small saucepan over medium heat. Once boiling over like an international holiday of a housewives franchise, remove from the heat and whisk through the chocolate and gelatine leaf until smoothy and glossy. Set aside to get chill.

Whisk the remaining cream in a large bowl until the ribbon stage. In another bowl – I know, another – mix the eggs and sugar in a stand mixer until light and fluffy.

Fold the chocolate mix into the eggs until smooth, then fold in the cream, almonds and cherries. Transfer to a lined 25cm square cake tin, smooth the top, cover and freeze overnight.

The nek day – as the kids said a few years back – cut into portions. Serve … and devour.

You can’t always get what you want, but she can

Guess Who's Coming to Dinner

Mmmm child, let me tell you celebrating the tenth anniversary of Because I Said So and our first Grammy Gold in honour of Queen Bey’s inevitable slayage is exhausting.

And of course my dear friend, the ultimate Southern Belle Phaedra Parks reached out to catch-up and make sure that I am ok.

Side note: you have no idea how exhausting life is on the A-list.

Anywho, I jumped at Phae’s offer knowing she has been going through a rough time lately what with the bomb-threats and a dear friend is just what we both need.

Plus I need her to spill the tea ahead of the next reunion. What says who do you need me to throw shade at on the line?

Michelderflower and Raspberry Fitzjelly

Dessert, Survivor: Kaôh Rōng, Sweets

Ding, ding, ding – we have a winner!!

Yes, the secret – which I’ve surprisingly kept for the last twelve months after stealing the urn from Probst and counting the votes – is finally out and my dear friend and ex-colleague Michele Fitzgerald has officially been crowned the Sole Survivor of Kaoh Rong: Near-Death Island.

I first connected with Mich a couple of years back when we were both tending bar in Jersey where we bonded over our mutual love of Harry Potter. While I eventually left the bar to work as the Giudice’s financial advisor, our experiences did inspire me to travel back in time and write the screenplay to the hit 80s film Cocktail.

Poor Mich’s win has been quite polarising – hell, even I’m still debating whether Aubry was robbed of the title – but the fact of the matter is, she gave a strong final tribal council performance and won the vote. Convincingly.

Thanks to what people are calling a jury full of people that are helly-jelly of Aubry’s game, Michele was able to articulate her impressive, low-key game and convince them she was deserving of the title. In honour of the haters, I had to make her a Michelderflower and Raspberry Fitzjelly.

Haters are gonna hate … unless you serve them up this floral, tart and delightful dessert. While I will always be team Aubry – in honour of our dark curls, cool glasses and nerd behaviour – Mich played a hard, subtle game and her skill at connecting with others and making moves when she needed to was underestimated by us at home.

Congratulations Michele – while Aubry was also a deserving candidate, you completely earned your win. Enjoy your victory jelly!

Michelderflower and Raspberry Fitzjelly
Serves: 6.

Ingredients
150ml elderflower cordial
250ml water
100ml vodka
5 leaves gelatine
125g fresh raspberries

Method
Combine the cordial, water and vodka in a large jug.

Break the gelatine up into pieces in a heatproof bowl, covering with a dash of the liquid and leave to soak for 10-15 minutes. If needed, place the bowl over a pot of lightly simmering water and stir until completely dissolved.

While the gelatine is soaking, rinse the raspberries.

Pour the gelatine liquid into the jug and stir to combine. Half-fill whatever you’re using as a mould – I went with margarita  glasses as this is a victory dessert and I’m not an animal – dot a couple of raspberries in each and place in the fridge to set for a couple of hours. Leave the remaining mixture at room temperature.

Repeat the process with the liquid and fruit, and return to the fridge to set for a further few hours.

Devour in honour of our reigned champ – well done Mich!
