Blondies

Baking, Dessert, Sweets

I honestly couldn’t think of a better way to see out such a triumphant week. I mean, my ex-turned-friend became an Oscar winner, Shonee slayed and was then saved and the OG version of Survivor debuted its all winners season. That is a lot to take in; overwhelming, exhilarating and inappropriately erotic, so it was wonderful to put icing on the cake in the form of my dear friends Blondie.

I first met Blondie in the ‘70s. They were getting there start at CBGBs – fun fact, both Bs stand for me; Ben and bareback. While they were rocking the stage, I was making my cash in the bathrooms, alleyways and near the dumpster, but it never deterred Debs, Chris and the boys for reaching out and making friends with me.

Was it a friendship based on pity, with them buying me dinner after their set? Sure. But I have zero dignity, and gladly played into their desire to help me. And thankfully it developed into a deep, loving, life long friendship.

We haven’t had the chance to catch-up as one big group lately, so it meant so much to me the Debbie tee-d up all our schedules to facilitate and reunite us as one big happy family.

As soon as they arrived at my door, I pulled them in for a big hug and broke into tears, overwhelmed by how much their love means to me. After crying, we turned things around with a lot of love and light, and a big ol’ batch of our – now weedless – Blondies.

Sweet and gooey, there is nothing better than anything in the brownie/blondie family. I mean, who doesn’t love eating cake batter? These puppies are as close as you can get without having to fear e-coli. Add in the caramelly goodness of white chocolate and the tart, tang of raspberries and I am well and truly in heaven.

Enjoy!

Blondies
Serves: 5-7 of the dearest friends, depending on the line-up.

Ingredients
¾ cup unsalted butter
1 ¼ cup muscovado sugar
1 tbsp vanilla extract
2 eggs
1 ½ cups plain flour
150g white chocolate, roughly chopped
100g raspberries

Method
Preheat the oven to 160C.

Combine the butter and sugar in a saucepan over low heat and cook, stirring, until just combined. Transfer to a large mixing bowl and whisk in the vanilla. Leave to cool slightly.

Whisk in the eggs and flour until just combined before folding in the white chocolate and raspberry.

Pour the batter into a lined square baking tin and transfer to the oven to back for 30 minutes, or until golden and set around the edge and the centre is just baked. Remove from the oven and leave to cool completely.

As soon as they are cold, slice, serve and devour. Greedily.

The Tide Is High

Guess Who's Coming to Dinner

With the Oscars done and dusted for another year, and me one step closer to my winning year – remember, I invented time travel and know when I am winning one – and honestly, the emotional highs and lows of the season have my heart feeling like glass.

As such, to eb the rising tide of my emotions, I left a message with my dear Debbie Harry and told her to call me back, post haste.

Picture this, it wasn’t the rapture, as Debs called me back almost instantly and said that she and the boys would be able to come visit me, one way or another.

No prizes for guessing what I’ll be serving, but you’ve got to be dreaming if you think I’ll confirm it before they sit for their ritual mid-meal portrait.

The Supremes Pizza

Main, Pizza, Street Food

Who knew lying about a chemical peel and wearing a veil like Samantha in Sex and the City would be the perfect cover for chloroforming your past self so your future self could catch-up with your friends, The Supremes?

It was so exciting to be back in the swinging ‘60s and to see Flo alive and doing what she does best – well second best to Di, if she is around – and to witness the making of magic.

While the girls had their fair share of drama back in the day – which I co-wrote for Broadway before being stricken from the Playbill – they were in a playful, happy mood and were thrilled to gossip and reminisce, despite only thinking we were talking about current events.

Because time travel, remember?

After laying down the vocals for Where did our love go I quickly hurried the girls up – knowing past me would be close to waking – and took them back to my apartment to whip them up a big, hearty The Supremes Pizza.

I feel like supreme get undeserved shade from people, given it isn’t overly fancy and features controversial pizza ingredient pineapple. Which I am here for, FYI. Sweet, salty and little bit salty, it reads just like my dating bio.

Enjoy!

Where did our love go?

Guess Who's Coming to Dinner

Now I know that I’ve already caught up with my dear, dear friend Diana Ross but I really have been missing her, the girls and all the wonderful times we spent together. So I figured she was more than worthy of a return trip.

Plus, she survived the blog curse so it is safe to see her again.

Given our dear Florence passed a decade after the peak of their success, I backed the Delorean out of the driveway and set the clock for the ‘60s to see her, Di and Mary while they were recording Where did our love go.

Sure it may be awkward explaining how I aged rapidly during the recording process – as I produced the album, obvi – but it is worth it to soak up some of that electric energy.

What do I make for a trio of icons?

Axl Rosewater Meringues

12th Annual Easter Meggstravaganza, Dessert, Easter Meggstravaganza, Snack, Sweets

As I’ve said, step two is always one of the trickiest aspects to complete of the Meggstravaganza. I mean, no want wants to be classed a struggling musician … unless they are like pre-Usher Bieber. When you’ve enjoyed a successful career however, struggling is quite a down-grade.

Thankfully my dear friend Axl Rose doesn’t let his pride get in the way of helping to reignite careers. Particularly those of the star of his three favourite movies, You’ve Got Mail, Sleepless in Seattle and *cringe* The Women.

I first met Axl in the 80s outside The Troubadour in West Hollywood. I was turning tricks, trying to net myself a musician lover to fund my addiction and my adicktion. While Axl wasn’t interested, he loved my rock and roll attitude and we quickly became friends with me playing an integral part in the ‘85 merger that formed Guns N’ Roses.

We grew apart while I was away in prison and running scams, but I always played an integral part in inspiring the group acting as the Chief Groupie Advisor and muse.

As I said, Axl is a huge Meg fan and was very eager to get into the ritual arriving with a bandana/headress hybrid, some peyote and various useful percussion instruments. Maybe I should have mentioned a KitchenAid Mixer and a dry bowl was all I really needed to make the egg-white sacrifice known as my Axl Rosewater Meringues.

Crusty bakery meringues in the 90s turned me off the treat, until I realised they weren’t meant to have the texture of asbestos powder with similar health benefits.

These little treats are sweet, crusty, gooey and everything you want out of a good meringue. Now with pistachios!

I’m off to the hen house to pick up some more eggs before my TV star friend drops by – enjoy!

Axl Rosewater Meringues
Serves: 8-12.

Ingredients
600g caster sugar
300g egg whites
2 tsp rosewater
Finely chopped pistachios, to garnish

Method
Preheat oven to 110°C.

Place sugar in a small pan over medium-low heat and cook until it starts to dissolve. When it reaches 115°C on a thermometer, place the egg whites in a large mixing bowl and whisk on high speed until the whites just begin to foam like an OD outside the Viper Room in the 80s … aka around a minute.

When the syrup reaches 121°C turn off the heat, increase the mixer to high and with motor running, gradually pour the syrup into meringue. Reduce the speed to medium and continue to beat until cooled to room temperature and thick and glossy.

This takes about 15 minutes, be patient. You want to be hypnotised by its beauty, like Skarsky peen-scene.

Line two trays with baking paper. Use two spoons, shape the meringues into generous, rough quenelles. You can make these as large or as small as you like, Axl for instance loves my little friendship-kisses sized domes, other lovers friends like them realround, thick and juicy. The only three second rule I have is to space them well apart to allow for the growth as they get hard and hot.

Sprinkle meringues with the chopped pistachios and leave to bake for about 2 hours, or until set – firm on the outside and just soft in the centre.

Remove from oven and allow to cool. Devour.
