Carrie Fisher’n’Chips

Main, Seafood

Oh my goodness – my stomach is in agony! No i’m not into some odd masturbatory technique, I just haven’t stopped laughing for the last 24 hours.

It was such a treat to have Carrie over and reenact a good / funny version of SaTC with the part of New York dutifully played by my kitchen / television.

As you know, we met in rehab and were bonded instantly due the fact we were both poised to be celebrated writers and we had complex relationships with our Hollywood mothers. While my issues stemmed from the fact that I was generally running a scam at their expense, Carrie grew up in the limelight of the Reynolds-Fisher dynasty and drama which gave her a very different childhood … and me a reason to befriend her to get to Debs to form an alliance against Liz.

Obviously she stole two of her husbands from me … but that is another story for another time.

So back on track, I quickly ingratiated myself with the Reynolds-Fishers (often despite Caz’s better judgement) and have been a confidante to Caz ever since, filling each other’s lives with so much joy and laughter.

I can’t say enough about how beautiful and close our friendship is.

As I mentioned and I’m sure Star TrekWars fans would be aware, Caz just wrapped on the latest movie and was completely pooped so relished the opportunity to pull up a seat next to me in our twin recliners and make sassy, forced, attention grabbing statements about the semi-clad swimmers who were dutifully flooding our basements.

To get us in the mood – or to be more accurate, out of it – I whipped up a batch of her favourite / my famous Carrie Fisher’n’Chips.

I assume I’ve mentioned it ad nauseam, if not, I fucking hate seafood. Hate it. I mean, they live in their filth (even though someone rightfully argued that they live in a purifying saline solution). Anyway, Carrie loves a good ole Fish and Chips and given that she just wrapped her time in London, I had to make something to help her acclimate back into the real world.

With that, I went heavy with the chilli, lemon and lime to drown the flavour of fish and served it with crispy chips and a delightful harissa mayo that had me *shudder* liking seafood.

Enjoy!

Carrie Fisher’n’Chips
Serves: 4.

Ingredients
8 pieces of hoki portions (I hate seafood, of course I’m going to buy pre-portioned)
2 eggs, whisked
1 cup plain flour
2 cups panko breadcrumbs
¼ cup flat-leaf parsley, finely chopped
1 tbsp chilli flakes
zest of one lime
vegetable oil
One serve of the chips from Friza Minnelli … I don’t think the Dolognese would help the chips

Harissa mayo
1 clove of garlic, finely minced
3 tbsp mayonnaise
4 tsp harissa paste
1 ½ tsp rose water

Tartare
1 cup mayonnaise
zest of one lemon
2 tsp capers, drained, finely chopped
2 gherkins, finely chopped
2 tbsp flat-leaf parsley, chopped

Method
Probs make a start on the chips first. Then when they are in the oven, whisk the eggs in a shallow bowl, the flour in a second shallow bowl and combine the breadcrumbs, parsley, chilli and lime in the third shallow bowl with a good whack of salt and pepper.

Dry the hoki pieces with some paper towel. Working piece by piece, coat the fish in the flour, dip in the egg and coat in the crumb. Rest on a plate and continue until they are all sorted.

Heat a good lug of vegetable oil in a large frying pan over medium heat, when it is nice and hot reduce the heat to low and fry two pieces at a time, 4-5 minutes per side. Remove to some paper towel and repeat until the fish is sorted.

Turn off the oven when the chips are done and place the fish on the lower shelf to keep warm while you quickly whip up the sauces … which are super easy. Place all the ingredients in separate bowls – obviously – and stir to combine.

Serve up the fish and chips with a fat dollop of the sauces and the cut up zested citrus. Devour.

Postcards from the force of Hannah and Her Sisters

Guess Who's Coming to Dinner

Huge news guys!

No, I’m not covering the Olympics despite being crazy sporty. While I’m sure you’re wondering why I’m not there the answer is simple, I am a doctor for the Russian team … so yeah, I’m banned – maybe I’ll be allowed in Tokyo?

Who knows? Either way, I was crazy moist after watching the Opening Ceremony and decided I needed one of my closest gal pals to drop by while we quench our thirst during the first/best week of the competition – aka swimming / scantily-clad-men-a-palooza.

So obviously I reached out to my closest girlfriend, Carrie Fisher and obviously she said yes!

We’ve know each other since meeting in rehab – I was the inspiration behind Alex in Postcards from the Edge. Like the bonds I made in prison, the bonds you make in rehab are for life and Caz and I have always been a loving support for each other.

Caz recently wrapped on the latest Star Wars movie – fun fact, it was our life goal to never see one of those films but Carrie had to sit through one at a premiere so I am riding solo with that goal (relax Star Wars fans, if Carrie asks me to watch them I will … she doesn’t mind) – so was very keen to relax, reconnect and lecherously watch the swim events.

What says you’re my dearest friend / damn I love watching the swim team?!

Picture source: Publicity shot from a Star Wars, obviously I don’t know which one.

Shirliders MacLaine

Main, Oscar Gold, Oscar Gold MMXVI: Gold Interrupted, Party Food, Snack

To finish off my pre-Oscar celebrations – aka Oscar Gold week – I’ve got to go with one of my oldest, figuratively and literally, and zaniest fellow Academy Award winning friends – Shirls.

And hurly burly what a girly my dear Shirley MacLaine is!

I’ve long been a family friend of the MacLaine-Beatty’s after meeting Shirl in NY in the 50s where I was turning tricks and being a stand-over man around the time Babs made it big. Shirl needed a favour bumping off the actress she was understudying, so I assisted in taking her out by breaking her ankle which went on to inspire both Tonya Harding’s attack on Nancy Kerrigan and the movie Showgirls.

That also contributed to my time in the clink in the 60s.

As I had learnt not to rat out my friends long ago, I kept her involvement quiet and was thrilled to watch her success from the sidelines before reconnecting in the 70s and subsequently became her go-to Oscars date due to my dashing looks and raging homosexuality.

As both Shirls and I are 30-40% psychic, it was less of a discussion about the winners (I spent a lot of time asking about her casting in the live action Little Mermaid film) and more about reading the lettuce leaves left on our plate from my Shirliders MacLaine.

Burgers are arguably my favourite food … but sliders are better. I mean, why have one large burger when you can have 47 mini burgers? As they are tiny, it means you’re not gluttonous!

Enjoy … particularly while you watch Spotlight, Inside Out, George, Leo, Brie, Alicia and my lover, man I’ve body-doubled for and dialect coach Syl take home their Oscars.

Oh – did I mention I am hosting seven separate red-carpet specials (take THAT Rancid), attending as Mark Ruffalo’s seat-double (I need to talk more about my extensive career as a double) and Cate’s date while also live blogging and tweeting (so fucking hip, is this 2008?) the entire thing on Sunday/Monday, timezone dependant?

You should bookmark the page or something and join me while I spill the inside goss and roast the jokers I call my filthy frenemies.

Shirliders MacLaine
Serves: 1 after the red carpet season ends, without judgement.

Ingredients
500g beef mince
salt
pepper
1 onion, finely diced
6-8 streaky bacon rashers, sliced to fit the rolls
150g sharp cheese or your choosing, sliced
iceberg lettuce (down with haters), finely diced
tomatoes, sliced
american mustard
ketchup
mayo
slider rolls (I went with the Briocher Bünsberg and just made them smaller, but not small enough)
olive oil

Method
Squeeze as much liquid (read: blood) from the mince as possible, aiming to avoid squirting it in your eye as that is foul and painful, and place it in a medium bowl with a good whack of salt and pepper.

With you hands, scrunch the mixture until it starts to come together. Break into 8-12 patties, depending on how big you like your sliders/made your buns. Place on a lined plate, cover and refrigerate for an hour or so.

Heat a lug of olive oil in a small saucepan over low heat and sweat the onions until soft, sweet and caramelised.

When ready to devour, over high heat, heat a large frying pan, griddle or barbecue, whichever you prefer. When hot, reduce to low, halve the buns and fry the open sides until toasty and golden.

Wipe out any crumbs and fry bacon until crisp and remove to some papertowel. Place patties on the hot pan/griddle/barbecue, flatten with a spatula and drizzle each with about ½ tsp of mustard. After a minute or so, flip the patties, watching for spitting mustard (which hurts like hell), and place a slice of cheese on top to melt. Cook for a further minute or so, depending on your tastes, and remove from the heat.

To assemble the sliders, butter the bottom of the buns with a generous smear of mayo, top with bacon, some caramelised onions, a slice of tomato, some iceberg lettuce and the molten hot cheesy, mustard patties, a squirt of ketchup if you want, and who doesn’t, before topping with the rest of the bun.

Serve with sweet potato fries on a large platter and gorge, with or without friends.

Meryl Streeped Fruits

Condiment, Dessert, Sauce, Side, Snack

The festive season is right around the corner and more importantly, our festive spectacular commences on Monday however being festive as fuck, we just knew that we had to catch up with our girl Meryl before we get blackout drunk and put on 50kgs.

For anyone desperate to claim fame for themselves by befriending and swindling celebrities (like how we originally started, now we’re indifferent to our fame/infamy), Meryl is your white whale; thrice awarded by The Academy, one time love interest to Rick Springfield and Allison Janney and lucky enough to have starred opposite the incomparable Roseanne Barr.

Plus she is so talented, that you couldn’t even tell that she was in excruciating pain listening to Pierce screech in Mamma Mia!

Meryl is a global treasure and the greatest thing to happen to the thespian community ever (well until my film debut in the film adaptation of my Tony Award winning Little Whorephan Andy: The Musical) and we are so honoured to be able to call her our friend.

We first met Meryl in rehab while she was researching her role in Postcards from the Edge – thanks to our advice, Mez was lucky enough to earn her ninth Academy Award nomination and our relationship was cemented by her eternal thanks. She didn’t realise it at the time but we had also inspired our girl Carrie to write Postcards from the Edge while in rehab together, giving us unparalleled perspective on the characters, as they were based on our numerous personalities.

Throughout the years, Meryl has stood by us; supporting us when we were in and out of jail/rehab/anger management, helping connect us with countless friends to help get our stories on the silver screen and letting us hang with her hundreds of awards, despite the fact we generally put them on eBay.

We haven’t seen Meryl in about a year due to the post traumatic stress disorder we got from watching the sixteen hour song that opened her rare flop, Into the Woods. (Seriously though, just get in the fucking woods and stop running your mouths). But Christmas is the time for forgiving and forgetting, and we are so glad Meryl was willing to drop by and help us with this year’s edible gift Meryl Streeped Fruits … and to move past the trauma.

Meryl Streeped Fruits_1

Meryl is so down to earth and is a live wire, meaning her namesake needed to be something boozy, fun, earthy and little bit wild.

Trust us, this fits the bill – enjoy!

Meryl Streeped Fruits_2

Meryl Streeped Fruits
Makes: Enough to fill a 500ml jar.

Ingredients
250g mixed dried fruit, I went with cherries, craisins, currants and raisins
250ml Grand Marnier, plus an extra 100ml

Method
Sterilise your jar/s – the dishwasher is probably your easiest route.

Once they have cooled, place the fruit in the jar and top with the 250ml of Grand Marnier. Seal the jars tightly and place in a cool dark place to steep for about four-five days.

The fruit, like me, will gobble up most of the booze so top it up with the extra Grand Marnier if needed after this time.

Then you’re free to go all Oprah and your loved ones. YOU get a jar! YOU get a jar! YOU get a jar!

We’re going to get BOOOOOOOOOOOOOOOOOOOZZZZZYYYYYY!

Oh and if your filling multiple smaller jars, just spread your fruit and booze evenly amongst the jars. Yes, it is obvious and I’m sure you could figure that out – but what if you couldn’t?
