After being reminded of my once close relationship with Elton – yep, you know we went there – I thought I would reach out to one of our favourite outside-the-boudoir collaborators, Tim Rice.

Yeah, I should have also won for Can You Feel the Love Tonight but Elton had my name struck from the record – maybe that is why our feud started?

My friendship with Timmy pre-dates Elty, having first met working as law clerks in London in the 60s. Our mutual love of music and my passion for theatrics, meant writing musicals was something we were born to do culminating in our first collab with David Gest’s doppelgänger ALW on Joseph and the Amazing Technicolour Dreamcoat.

While I got into huge feud with ALW after he refused to focus on Doll’s coat over Joseph’s – our feud inspired the rivalry between Sheff and ALW in The Nanny – my close relationship with Tim was unbreakable and has lasted through all of my later feuds.

Timmy had far fewer aggressive opinions about this year’s Original Song nominees, wanting them all to win(!), but eventually caved to agree with me that Lady Gaga and Sam Smith are the absolute worst and have no place on the Oscars stage … and that Fifty Shades of Grey was a film full of nuance, that was understated, elegant and cerebral.

Needing to fuel such a spirited conversation (to help me firm up my bets), I opted for my Tim Rice Paper Rolls.

Fresh, delicate and delicious – these rice paper rolls hit all the right notes without making you feel like death afterwards. I mean, Mac and Cheese is great but it is hard to focus on your gambling, on such a full stomach.

Good luck nominees – hopefully Gaga doesn’t rob someone more deserving again (K-Dunst forever)! How good would it be for The Weeknd to do something that his ex-future-father-in-law D-Bag Foster hasn’t been able to?!

Tim Rice Paper Rolls
Makes: 12.

Ingredients
500g chicken breast
1 lime, zested and juiced
2 cloves garlic, finely chopped
1 tbsp olive oil
1 cup wombok, finely shredded
1 small red capsicum, thinly sliced
1 carrot, grated
2 shallots, sliced
1 lebanese cucumber, cut into matchsticks
¼ cup mint leaves
¼ cup crushed peanuts
1 tsp fish sauce
1 tbsp sweet chilli sauce, plus extra, to serve
12 rice paper rounds

Method
Heat the oil in a non-stick frying pan over medium heat. Add the chicken breast, cooking for five minutes on each side or until cooked through. Remove from the heat and mix the garlic and lime juice through the still hot pan and stand to until it is cool enough to handle, then shred the meat.

Place the shredded chicken, lime zest, wombok, capsicum, carrot, shallots, cucumber, mint, nuts fish sauce and sweet chilli sauce into a large bowl aka everything excluding the wrappers, and mix to combine.

To assemble the rice paper rolls, soak a sheet of rice paper in warm water for 30 seconds, until it softens.

Place the rice paper onto a flat surface and place about ⅓ cup of the mixture halfway between the bottom and the centre, then turn up the bottom of the wrapper to cover the filling. Holding the filling in place, fold in the two sides, then roll up. Repeat until you’re out of wrappers. Any leftover filling goes alright as a salad.

Devour slathered in sriracha, hoisin or soy.

My poor, sweet Darnell – oh how my heart bleeds for you!

Despite what Fransesqua would have you believe, there is nothing worse than being the first boot. I mean, not only did we learn that the first cut is the deepest from my ex-lover Cat but in Survivor it also means that you don’t make the merge and NOBODY wants to date you if you don’t make the merge.

This may come as a surprise, but I am friends with – or at the very least a frenemy of – the entire cast of the current season, so witnessing one of my closest friends entering loser lodge on day three was always going to be tough. But Darnell? He is one of my top five BFFs in the cast!

We first connected a couple of years back when I was doing research for a script I was developing for a live action Postman Pat movie. I had some success with my early research while following Diane Ogden for six months, but Darnie was like a breath of fresh air after the horror that was the six hours I spent trundling about with Dan Foley.

The bond with Darnell was instant and while delivering the mail together over those few months, I learned that our friendship would always be there, neither snow nor rain nor heat nor gloom of night could get in the way.

He learned that shitting is natural and it is more than ok to do it right out the front of your house. I just didn’t think he would take my advice with him on the show and aqua dump just outside the shelter.

As you could see, Darnie was quite emotional and confused as to why they kept Bye (F)Alecia another week (I tried to save him with the worm but it didn’t work), but after a batch of my Darnell HamilWontons he was back to the upbeat guy I know, encouraging me to go for my dreams. I don’t know if he knew that my dream is to marry Probst though, in his defence – again Jeff, sorry for storming your tent, with my own pitched tent.

Spicy, sweet and glorious – these wontons are calling to be devoured in their soft, pillowy homes. As aggressive as that description sounds. Darnell said his gut doesn’t lie … he just didn’t realise that it was saying the wontons were done and to come drown your sorrows with me, not to shit out the front.

Darnell HamilWonton
Makes: 60.

Ingredients
500g chicken mince
6 shiitake mushrooms, finely chopped
5 shallots, finely chopped
2 garlic cloves, crushed
1 tbsp grated ginger
¼ cup coriander, finely chopped
1 tsp Chinese five-spice
1 tbsp soy sauce
1 tsp fish sauce
1 tsp honey
60 round wonton wrappers

Method
Now listen carefully because this is pretty complex. You ready?

Place everything but the wonton wrappers in a large bowl, mixing well to combine.

Place the wonton wrappers on a clean surface, keeping covered with a damp cloth to avoid them drying out and going as crusty as the Brains think Debbie and Joe are. Working one at a time, place about a teaspoon of the filling in the centre of each wrapper.

Slightly wet the edges, pull the edges in to create a coin purse or meat filled sack (honestly I tried to avoid that being dirty but couldn’t) and twist the around to seal at the top. Place on a lined plate or tray while you repeat the process until you run out of meat, or wrappers.

When you’re ready to cook, place a large pan/pot filled without about an inch of water over high heat and bring to the boil. While heating, line a steamer (bamboo or metal) with baking paper. When the water is ready, place the steamer in the pot and fill with about 8-10 dumplings, depending on the size of the steamer. Cover with a lid and steam for about 8 minutes or until cooked through.

Serve with sriracha, soy, hoisin or sweet chilli and let the pain of following in Diane Ogden’s footsteps and being the first boot disappear.

Jeremiso Chicken Collins

We have a winner! Ben and I are so thrilled to be the first on set to celebrate a landslide victory with our old friend, Jeremy. To be perfectly honest, Jeremy would not have brought home the bacon this week if it wasn’t for Ben and I.

Luckily for Jeremy, our paths crossed quite some time ago. Ben and I had just bought shares in Danoz Direct and had just launched our first brilliant product to the lucky viewers at home.

Jeremy was one of the first lucky people to purchase and learn our patented trademarked copyrighted as-seen-on-tv buy-one-get-one-free ball handling system. The fine motor skills and digit dexterity he learned as a result of our extensive training is the only reason he was able to win the final immunity challenge. It also naturally assisted with getting the gorgeous Val Collins knocked up with her million dollar baby.

Congratulations Jeremy – you deserve the win!

Despite his newly-minted millionaire status, Jeremy is a man of simple tastes. The Jeremiso Chicken Collins provides the classic comfort of flame grilled chicken, marinated in delicious miso.

And is far more appropriate for a Sole Survivor than a Jeremiso Collins Soup!

Jeremiso Chicken Collins
Makes: 4.

Ingredients
4 skinless chicken breast halves
4 tbsp miso paste
2 tbsp sesame oil
2 tsp minced garlic
2 tsp minced ginger
1 tbsp soy sauce
1 tbsp brown sugar
Mixed green vegetables to serve

Method
Combine miso, sesame oil, garlic, ginger, soy sauce and brown sugar in a large zip-lock bag. Add the chicken breasts and refrigerate. Marinate for at least four hours.

Heat a griddle pan or barbeque grill until very hot. Grill chicken, turning regularly, until cooked through. Serve with mixed greens.

Oy vey – why oh why did we have to lose our dear, sweet Chaos Kass?

We’ve been friends with the breakout Cagayan star slash villain turned Second Chances hero since our old law school days. Kass was a shy, retiring type in college so we took her under our wings and became her unwanted life coaches.

While our advice generally resulted in lawsuits against her rather, she remembered we were Survivor super fans when she was cast in Cagayan and re-enlisted our services due to our cut-throat, callous and heavily deranged behaviour where we coached her to third place.

We would have gotten her the win (using a combination of bribes and sexual favours on our part), if it wasn’t for that meddling kid, our (now) friend, Woo.

Kass came into Cambodia with arguably the biggest target on her back but was able to woo (no pun intended) people to her side with her truly kind and loving nature – thankfully she avoided tribal for such a long time that she was able to connect with everyone!

As usual, the merge episode was complete and utter bedlam with alliances shifting and people trying to find their place to secure their path to the final tribal however this season instead of targeting the biggest, physical threats the two smallest women were the targets.

Obviously because they were the two smartest players left. Oh and I’m guessing that has something to do with the fact that Spencer desperately wants to swing with Joe? I don’t usually like Spencer, however I have to admire his exquisite taste in men – and I mean, the thirst is real, so why would anyone target our current bae?

So while Kind/Kumbaya/Kalm Kass made her exit to Ponderosa, she was buoyed by the fact that she was able improve upon her placement from her last season to become the Queen of the Jury, rather than the last loser on the jury. You just know that called for a jubilantly, sorrowful Kass McChickllen.

This is may come as a shock to you, but this recipe is an homage to the famous burger from our friend Bozo the Bush and his Golden Arches … and a pretty good one at that.

Spicy, sweet, lovely and a little bit naughty this is everything our dear Kass brings to the game and more – thankfully we get to enjoy her for the rest of the season, giving Eliza Orlins sass from the loser’s bench. We can dream, right?

While we are dreaming, can we have Third time’s the Charm greenlit yet? You can even just send this cast back out again, I don’t mind!

Kass McChickllen
Serves: 4

Ingredients
500g chicken mince
1 egg
1 cup water
1 cup plain flour
2 tsp salt
1 tsp onion powder
¼ tsp ground black pepper
⅛ tsp garlic powder
4 sesame seed hamburger buns
iceberg lettuce, chopped
vegetable oil, for “shallow” frying

Sauce
60ml mayonnaise
⅛ tsp onion powder

Method
Place the chicken mince in a large bowl and season generously with salt and pepper. Divide into four patties and place in the fridge to set for at least an hour. While you’re refrigerating things, combine the sauce ingredients and refrigerate until needed.

Beat the egg and stir with the water in a large, shallow bowl and combine the flour, salt, pepper, onion powder and garlic powder in a second bowl.

Grab the patties out of the fridge and coat each with the flour mixture, remove and dredge each filet in the egg mixture, before coating in the flour mix again. Place in a freezer bag and freeze for an hour.

Remove and repeat the flour and dredging process again and leave to rest for about ten minutes.

Heat a generous lug of oil in a large frying pan, I mean crazy generous but not enough to technically consider it shallow frying as you know it scares me. Cook the patties for about 5-6 minutes per side, or until light brown and crispy. As the chicken is frying, toast the buns in a second, smaller frying pan.

To build the burgers, coat each side of the bun with some of the special (but not that … or indeed that, special) sauce, whack a good handful of lettuce on the base of the bun and top with the hot pattie.

Devour and be thankful that Kass is still with us on TV.

Bruce Springsteen Roll

There is nothing quite as joyous and beautiful as catching up with your best friend; while it has been about five years since we last saw Brucey, it felt like no time had passed at all!

After meeting Bruce aka Brucey, Steeny, Springo or pal, in school our bond seemed unbreakable, with he and Annelie touring the bar circuit of New Jersey while I did everything in my power to bring down their rivals via torrid affairs.

While I was successful in ruining many a career on the way to Bruce’s success (without Bruce knowing, he enjoyed competition), our relationship hit a rough patch in 1984 when he invited (then) two-bit floozy Courteney Cox (we are friends, now) up on stage during his film-clip for Dancing in the Dark.

As you would expect, I ran straight to the tabloids to punish him for this indiscretion resulting in an eight-year feud and a string of voodoo and/or arson attempts near the Jersey shorelines.

Wanting to make amends after a stint in rehab, as well as the completion of a court-ordered anger management course, I reached out to Bruce and once again became his muse … eventually leading to an Academy Award for the song The Streets of Philadelphia.

We pulled up to the airport to pick-up Bruce to see him standing out front looking all dreamy, like the cover of Born on the USA – I mean, we would have taken him home and fought to the death for him, even if he wasn’t our friend.

I don’t know what it is about reminiscing about school, but it is something that definitely needs liquor, which in turns means you need drinking snacks at the ready – obviously our delicious Bruce Springsteen Rolls made the menu!

These little snacks pack the right amount of sweetness and spice and are the perfect accompaniment for an afternoon of being serenaded by your close friend over a beer.

Bruce Springsteen Roll_2

 

Bruce Springsteen Roll
Serves: 50.

Ingredients
1 tbsp soy sauce
1 tsp sake
2 tbsp oyster sauce
freshly ground black pepper
1 tsp cornflour
2 tbsp cooking oil, aka anything with a low smoke-point
2 cloves garlic, finely minced
1 tsp grated fresh ginger
3 shallots, finely sliced
2 carrots, grated
½ head of chinese cabbage, shredded
1 red chilli, finely sliced
100g shitake mushrooms, finely sliced
500g chicken mince
50g vermicelli noodles, soaked in water and drained
3 tbsp toasted peanuts, crushed
1 tbsp five spice powder
50 spring roll wrappers, defrosted
extra cooking oil, for brushing

Method
Combine the soy, sake, oyster sauce, pepper and the teaspoon of cornflour in a measuring jug; leave aside.

Heat a large pan over high heat, adding in the oil and swirling when hot. Quickly add the shallots, garlic and ginger and toss for 30 seconds, taking care not to burn them. Stirring well, add in the carrots, cabbage, chilli and mushroom, before reducing the heat to medium-high. Stir fry the vegetables for 2 minutes, or until the carrots have softened.

Remove cooked vegetables to a dish and add the chicken mince to the pan, breaking up the meat as you brown it. When the chicken is done, add the soy liquid, noodles and vegetables to the pan and combine. Remove from heat and allow to cool. When cooled, drain out any liquid.

Preheat oven to 180C and line two baking sheets.

Open the packet of spring roll wrappers, covering with a just damp towel to prevent drying out. Pour some cold water into a glass for brushing.

Place a wrapper out on the bench, add a tablespoon of the mixture in the middle at one end in a cigar shape. Roll wrapper over to cover the filling, fold both sides in and roll the spring roll up (this video has another wrapping technique, if I make no sense). Brush with water and place on baking sheet, covering with another just damp cloth.

Repeat the process until you run out of wrappers or filling.

Once done, remove the cloth, brush all of the rolls with oil and bake for 15-20 minutes, or until golden and crisp.

Devour with your favourite condiment, trying to avoid flinging sriracha all over your kitchen when shaking the bottle. Unless these are for a Halloween party in which case, boom, instant bloodbath decoration!

Monica Padilla Thai

While we were sad for Monica’s premature exit from second chances, it is always good to be in the company of kindred spirits.

Unsurprisingly, Monica and I both rely heavily on our exceptional looks and charm to get by in life. In our younger years, we went head to head in a college flirt-off. While Monica was shimmying, winking and pouting her way into the hearts and minds of many, my attempts were mistaken for an out-of-control epileptic episode.

While Monica may have won many years ago, I’ve been refining my technique in order to score the ultimate prize – Jeff McDreamy Dreamboat. Every post-second chances exit meal shared with our friends is another step closer to the Holy Probst (well unless Spencer’s experience being on the bottom gets in the way)! It is also a chance to bathe in the delicious irony that her love of the clam was ultimately her undoing.

How can we ensure Monica doesn’t win the great race to Probsty’s heart?  Carbs!

The Monica Padilla Thai offers a delicious, spicy kick, comfortingly swaddled in an enormous pile of rice noodles.

Monica Padilla Thai
Serves: 4

Ingredients
200g dried flat rice noodles
400g chicken breast, thinly sliced
2 eggs, beaten
100g bean sprouts
2 cloves minced garlic
2 tablespoons fish sauce
2 tablespoons sugar
1 tablespoon sesame oil
Juice of 1 lime
2 shallots, thinly sliced
1 red chilli, thinly sliced
Roasted chopped peanuts, to garnish

Method
Cook rice noodles as per packet directions and drain. Set aside.

In a hot pan, pour beaten eggs and cook until firm. Remove from pan and chop into small pieces.

Add chicken to the hot pan and stirfry until cooked through. Add garlic, fish sauce, lime juice, half of chilli, sesame oil and sugar and cook until combined.

Add noodles, egg and beansprouts and toss through chicken mixture. Serve garnished with chilli, shallots and roasted peanuts.

Rebecca De Chicken Mornay

As you’ve heard us rant many a time, working with Tom Cruise is the absolute worst but as our friend Ralph (may have) said, “when it is dark enough, you can see the stars,” and boy did we ever when first meeting the delightful Bec!

While she wasn’t a star back then, our friendship shone brightly and filled our lives with so much joy during such a dark time. After successfully working through our feelings thanks to our Survivors of Tom Cruise support group slash tactical revenge cult, Annelie got her first taste of momagering with Bec and lead to her casting in the classic A Trip to Bountiful.

We were briefly able to share the spotlight, attending the Oscars with Bec, partying at the Chateau, before Annelie gave me the opportunity to co-momager Bec, when our addictions got the better of us and she ended up ruined by the forgettable 1987 live action version of Beauty and the Beast.

This led to a brief feud between us and Bec, before she graciously forgave us during a family visit to Promises while we were in rehab. She desperately wanted to help us with our comeback and, thankfully, we were able to get her back on the A-List with a role in The Hand That Rocks the Cradle (I slept with Curtis Hanson while in rehab, I don’t know who he was meant to be visiting).

Bec was in town for the AGM and wanted something comforting and warm, like our beautiful decades-long friendship (that even survived her appearance in American Reunion against our advice) – obviously that meant a giant vat of Rebecca De Chicken Mornay.

While the kitsch, 80s classic is generally made with tuna, we all find that filthy fish disgusting (tuna is to Tom, what the gerbil is to Richard Gere – don’t ask) so opt for chicken instead. Plus, tuna is the chicken of the sea anyway, right?

Rebecca De Chicken Mornay
Serves: 8.

Ingredients
2 chicken breasts, diced
olive oil
500g macaroni
100g butter
1 cup corn kernels
2 medium carrots, diced small
2 onions, diced
½ cup plain flour
4 cups milk
4 tablespoons Dijon mustard
2 cups grated tasty cheese
salt and pepper, to taste
parmesan, to top
fresh chives, finely sliced

Method
Put a large pot of water on to boil and preheat the oven to 180°C.

While they are coming to temperature heat a large pan over medium heat, add a lug of olive oil and cook the chicken until browned.

Once the water has come to the boil, add the macaroni and cook to packet instructions. Drain.

In a large saucepan over medium heat, melt the butter and saute the corn, carrot and onion, until the carrots are soft. Add the flour and stir until the vegetables are coated.

Add the milk half a cup at a time, stirring after each addition until the sauce starts to thicken, repeating until it is all gone. Cook for a further minute before stirring in the mustard, grated cheese, chicken and pasta, stirring until the cheese has melted. Season to taste.

Place into a large baking tray and top with a scattering of parmesan and bake for 25 minutes or until golden.  Top with snipped chives and devour.

Peih-Gee Lawsagne

Poor sweet, scrappy Peih-Gee – just when she felt safe, our dear friend Abi-Maria (we met after getting kicked out of the same anger management course) flipped the game and orchestrated her blindside.

Let this be a warning to all of the remaining players, do not cross the Brazilian beauty … she will boot you!

We first met our (other) dear friend Peih-Gee while working as back-up dancers during Madonna’s performance at the 1998 MTV Music Awards (where I once again displayed twerking to the masses before Miley did). A fast bond was formed upon discovering that she was heiress to a jewellery dynasty, hoping she would go full Patty Hearst and help us rob the family business following a period of brainwashing.

While that didn’t happen, on account of her superior morals and strong will, she was kind enough to keep us blinged out with her superior jewellery designs.

Going into Second Chance, we felt that Peeg (as her closest friends call her) was well placed to succeed being a lone representative from a middle season however sadly our little firecracker Abi took an immediate dislike to our pocket rocket and she was doomed to join our other (loser) friends on the pre-jury vacay while we hung out in Ponderosa with their more successful peers.

While she was bummed to go out early, she was more than ready to leave the desolate Angkor beach and devour a hearty slice of our famed and noted Peih-Gee Lawsagne.

We first made her the Lawsagne while squatting at her San Franciscan home whilst Annelie was trying to destroy George Lucas for taking away her first love Mark Hamill and I was developing my Castro based, soon to be green-lit Andy Dick Broadway musical Little Whorphan Andy (Harvey Fierstein, give me a call).

Peeg had just returned from her crushing defeat in China (could you imagine how great a Peih-Gee / Courtney finals would have been?) to discover that we had sold most of her possessions and trashed her house – the only thing we could do to apologise, was feed her our delicious, delicious comfort food.

Peih-Gee Lawsagne_2

 

Peih-Gee Lawsagne
Serves: 4-6.

Ingredients
500g chicken mince
1 cup Toni Basil pesto
1 cup green peas
400g ricotta cheese
1 egg
3/4 cup Parmesan
1/2 cup mozzarella
2 cups passata
1/2 cup cream
8-12 fresh lasagne sheets

Method
Heat a large saute pan and cook chicken mince until browned all over. Add cup of peas, cup of pesto and 1/2 cup of water. Cover and simmer for 5 minutes, or until peas are cooked.

While the chicken is cooking, mix together ricotta, egg, 1/4 cup Parmesan and season with salt and pepper. In another bowl, mix passata and cream.

Preheat oven to 180C. In a rectangular baking dish, spread 1/3 of passata mixture. Lay out lasagne sheets and top with a thin layer of ricotta mixture and chicken, and roll up from the short end. Place on top of passata mixture. Continue until all filling and lasagne sheets are used.

Top roll-ups with remaining sauce and sprinkle with remaining Parmesan and mozzarella. Bake for 35 minutes, or until lasagne noodles are soft enough to eat.

After scaring us half to death with the prospect of a private, confidential catch-up, Jamie was on her best behaviour when she dropped by and she was proud of it.

We have been friends with Jamie since our childhood when I appeared as Kyle Richard’s stunt double in Halloween and Annelie was directing films under the pseudonym of John Carpenter.

Given the basis of our first meeting, scaring and pranks formed the basis of our relationship.

While we  have occasionally gone too far, what with the anthrax incident and the time we had her quarantined for Ebola, we’ve only had one serious fight after I was arrested for stalking her godson. I mean, the whole ugliness could have been avoided had she just consented to introducing us/allowing us to trap him in our home.

Despite this setback, we have always enjoyed a close working relationship with Jamie; getting her jobs on Roadgames, My Girl and the critically acclaimed Beverly Hills Chihuahua (although sadly, we couldn’t negotiate for her to keep her role in the sequels) and she keeps us with a bountiful supply of yoghurt and patented diapers.

James was in fine spirits, and surprisingly a shirt, when she dropped over, gushing over her upcoming role in Scream Queens (we know who the killer is, but obvs can’t say anything … other than the fact Billie Lourd is a saint, but look at her mother/grandmother) and how Jake was willing to meet up for mediation.

A return to fame for us and look who comes crawling back!

Wanting to focus on the boozing while she was here, we opted for a generous batch of our famous Chicken & Jamie LeeKurtis Pies.

Decidedly low on yoghurt content, these pies still keep you feeling regular. Obviously “regular” for you needs to mean happy and content with a stomach filled with love.

Enjoy! Also, fun fact, don’t use the line “a stomach filled with love” if you’re on trial for stalking.

Chicken & Jamie LeeKurtis Pies
Serves: 36.

Ingredients
¾ cup chicken stock
½ cup dry white wine
500g chicken breast, diced
20g butter
1 leek, chopped finely
1 stick celery, chopped finely
1 tbsp plain flour
2 tsp fresh thyme leaves
½ cup cream
1 tsp Dijon mustard
salt and freshly ground black pepper
4 sheets shortcrust pastry
4 sheets butter puff pastry
1 egg yolk, beaten lightly
extra thyme leaves

Method
Melt butter in the pan and brown diced chicken for 1-2 minutes. Add the leek and celery and cook, stirring, until soft.

Stir in thyme and flour until bubbling. Add white wine, stirring to combine until slightly thickened before adding the stock, cream and mustard, until mixture boils and thickens. Season to taste with salt and black pepper and remove from heat, cool slightly.

Preheat the oven to 200°C. Grease 3 x 12-hole muffin tins. Cut 36 squares from the shortcrust pastry. Press into prepared pans. Spoon 1 tablespoon of chicken mixture into each pastry case. Cut 36 squares from the puff pastry. Top chicken mixture with the pastry lids, brush with egg yolk and sprinkle with extra thyme leaves.

Bake on the lowest shelf for 15 minutes or until browned.

Annelie and I pride ourselves on having our fingers on the pulse of everything celebrity, fame, entertainment and style, so you can imagine the shame we feel for not realising that a) Lifetime, the greatest film producer on the planet, made a movie about our dear friend Donatells and b) that our other dear friend Gina Gershon played her in said movie.

How on earth did we miss it?

Obviously Gina was hurt that we missed her Emmy-snubbed performance of a life…time and that we didn’t get her in touch with Telly for research, but thankfully our beautiful past and promise of some great collaborations quickly turned the visit around.

(We had to lie through our teeth about her appearance on Glee being good for her image, but you do what you’ve got to do to maintain a friendship).

Gina was very thankful she missed our Carnival Week celebrations (for peasants and hicks, she said). Being a Cali girl, she was loving the mild Brisbane winter and I must say, it really brought the best out of us creatively, both in dance (gotta be warm enough for midriffs and nipple tassels) and scripting (Magic Showgirls XXX is going to win Oscars, guaranteed – obviously if Elizabeth Berkley agrees to reprise Nomi and Annelie and I co-star as rival divas).

With such laborious and meaningful work being undertaken, a big, sentimental meal was required, so we opted for the Chicken ParmiGina Gershon. Funny story, we first made Giny the ParmiGina after getting into a brutal altercation with Jan Draboltchka on the set of Face/Off resulting in him literally losing his face, leading to a re-write of the script and a bump down to co-star for poor Gins.

She is pretty forgiving, but I guess that goes with the territory of being friends with us.

Like Gina, we like our parmies to be smokin’, saucy and to leave you wanting more. We also like them to be liberal with the breast.

Chicken ParmiGina Gershon
Serves: 2-4, breast dependent.

Ingredients
2 large, skinless chicken breasts, halved through the middle
2 eggs
1 cup plain flour
¼ cup breadcrumbs
¼ cup polenta
2 tbsp parmesan, grated
1 tbsp olive oil
3 garlic cloves, crushed
2 cups passata
2 tsp dried oregano
8-12 slices smoked ham
small bunch fresh basil
125g ball mozzarella, sliced

Method
Preheat oven to 180°C.

Beat eggs in a large(ish) bowl. In a second bowl, combine breadcrumbs, polenta and parmesan. Chuck the flour, or you know place it gently, in a third bowl.

Place the halved chicken breasts between cling film sheets and bash out with a rolling pin until they are about 1cm thick (don’t worry too much about this…mine generally end up looking pretty ugly anyway). Dip the fillet in flour, followed by the egg, then the breadcrumb/polenta/parmesan mix. Place in the oven to bake for 20-30 minutes, flipping halfway through.

Heat oil and cook garlic for 1 min, then tip in passata and oregano. Season, generously (even add a pinch of raw sugar if you want) and simmer for 5-10 minutes.

Remove chicken from the oven. Drizzle a thin layer of tomato sauce over the chicken, cover with a few slices of the ham, pour some more tomato sauce over the chicken, place a few basil leaves on top and covered with the sliced mozzarella. I then scatter some extra Parmesan for good measure but that is only because I love me some cheese. Return to the oven and bake for 5-10 minutes or until the sauce is bubbling and the cheese is melted and golden.

Serve with fries. Copious amounts of fries.
