Nasi Gorinda Medley

13th Annual Easter Meggstravaganza, Breakfast, Main

As much as I love my girl Dorinda Medley and am thrilled that her return to our TV screens with the latest season of RHONY last week is the perfect exclamation mark to her title of successful TV star for purposes of this egg-based ritual – who else feels I should just keep this sentence running on for the duration of the post?! – seeing her reminded me of what we lost last November, when our mutual friend HRC lost the election.

And that hurts.

While seeing her brought up the pain of the election of the devil, Dorinda always makes it nice and as such, we were yacking it up and reconnecting in a matter of no time!

Despite being close friends for decades –  we bonded over having mutual enemies at society events – I haven’t caught up with Dori since she joined the housewives franchise and enjoyed a stratospheric rise to the A-list, so we had much to catch-up on.

After hours of discussing John, Luann’s wedding – that I was viciously banned from for mocking Chic C’est La Vie to TMZ a few years ago – getting the goss on the upcoming season. Sadly she isn’t sure Andy is willing to ‘forgive me’ – HA, he knows what he did – and let me appear on the shows with all of my friends, but she is hopefully that I’ll be able to make it nice.

Just not as nice as her.

As any rational person is, Dori is a huge fan of Megs and was honoured to be called up to assist with the ritual … particularly since it meant she got to devour a Nasi Gorinda Medley, which she has been craving for close to four years now.

Like Dorinda, this nasi goreng is spicy, sweet and a little bit fiery … but comes together to provide comfort to anyone that comes within contact. I don’t want to sound like a broken record, but I definitely made this nice.

And thankfully we didn’t have to sit through timestamped videos of the Berkshires … though I’d be happy to if you need me, Andy.

Enjoy!

Nasi Gorinda Medley
Serves: 4.

Ingredients
sesame oil
4 garlic cloves, crushed
2 tsp grated ginger
3 shallots, thinly sliced
500g chicken mince
3 cups cooked brown rice
2 tbsp soy sauce
¼ cup kecap manis
2 red chillies, thinly sliced
2 carrots, grated
½ small wombok, shredded
handful of coriander leaves, roughly chopped
hot sriracha chilli sauce, to serve
4 eggs

Method
Heat a good lug of oil in a large frying pan – or wok – and fry off the ginger and onion. Once nice and fragrant, add the chicken and cook for about five minutes.

Add the rice, soy, kecap manis, carrot, chilli and wombok, and cook for a further five minutes or so. Remove from the heat and stir through the coriander leaves.

While the coriander is getting fragrant, heat a lug of sesame oil in a small frying pan and cook the eggs until the whites are just done and the yolks are soft.

Divide the mixture between the bowls, drizzle with sriracha and top each with an egg.

Devour.

Natalie Crembruglia

13th Annual Easter Meggstravaganza, Dessert, Snack, Sweets

Well hot diggity damn – guess what today’s recipe marks? No Captain EyebrowsObvious, I’m not just drawing attention to day two of the Easter Meggstravaganza … it is our 350th recipe.

Can you believe it? More importantly, do you want to believe it?

Now while my dear friend Natalie Imbruglia wasn’t thrilled to be referred to as a struggling musician, she was honoured that it coincided with a milestone recipe.

Oh – and I totally lied and said it was an ironic title. And she bought it.

I first met Nat while working on Neighbours, she started in the mid-90s and I took her under wing after becoming top-dog on set as Madge’s cigarette lighter. As is often the case, I recognised pretty quickly that she was destined for greatness and made it my goal to make her the next Kylie Minogue.

Who I was feuding with at the time.

She left Neighbours and within a year or so released her debut single Torn. Despite completely ignoring my vocal coaching to sing with an aggressively ocker, Australian accent, it somehow became a hit and she went on to enjoy a successful career.

Flash forward 18 years and she released an album of covers I didn’t even know existed before perusing her Wikipedia entry pre-visit, thus cementing her status as a struggling musician … for the sake of this exercise.

(Don’t let the shade take away from her classic album White Lilies Islands, which I’d defend until the end of time).

After working through her discomfort with the struggling part of her label, she gladly sat down to dinner know that she was actively contributing to potentially returning Meg Ryan to fame/the status quo of the world by way of egg-based culinary sacrifices.

And a big old Natalie Crembruglia doesn’t hurt to sweeten the deal either!

Smooth and sweet, this is the perfect dish to woo the universe to give Meg Ryan a(nother) break. Plus – how can it (the universe) not appreciate cracking a hard exterior to get to the creamy liquid inside.

Enjoy!

Natalie Crembruglia
Serves: 4-6.

Ingredients
300ml double cream
1 vanilla pod, seeds scraped out
4 egg yolks
2 tbsp caster sugar
demerara sugar, to top

Method
Combine the cream and vanilla in a saucepan and almost bring to the boil, ensuring not to actually let it boil.

Beat the yolks and caster sugar together in a bowl and very slowly, still stirring, pour in the cream. Once combined, transfer it back to the pan and cook over low heat until it thickens. This shouldn’t take longer than 10 minutes.

Divide the custard amongst 4-6 ramekins – depending on their size and your greed – and place in a fridge to completely chill.

When you’re ready to eat, sprinkle the tops with sugar and scorch with a blowtorch or under the grill to give a hard, sweet top. Return to the fridge for five minutes (I like to make sure the toffee firms up) … and then devour.

Meggs Benedict Ryan

13th Annual Easter Meggstravaganza, Breakfast

I know I came off like a sad sack on Saturday, but it just breaks my heart so completely to think that Megs hasn’t returned to her 80s-90s glory. The woman is a damn saint and deserves it … more than anyone!

Any
one.

I was so sure that Ithaca would be her ticket back last year but sadly it barely registered on anyone’s radars. I’m not saying it deserved to be the third movie involved in the Best Picture brouhaha of 2017 … but I’m not not saying it either.

Once again, Megs was an absolute delight and downplayed the necessity of the catch-up.

“Ben – you don’t have to do this, honestly, you’ve tried. Maybe I’m not meant to be on the A-list anymore.”

Um … over my dead body Megs!

“Plus my dear, sweet Ben – I can’t be the first person to have a hat trick of dates on your highly-lauded, prestigious, future-award-winning and meaningful anthropological documentation of your close, personal relationships with celebrities told in a culinary fashion.”

Again, it took a few hours and our wine went warm before she finally agreed to give the Meggstravaganza another shot!

But honestly, who could refuse a freshly cooked Meggs Benedict Ryan?

I know the ritual only calls for five celebs, but I figured whipping up a gang bang of celebrity recipes to make Eggs Benedict could not hurt.

Plus there is nothing than a fresh benny served on Jon English Muffins with a tart heaping of Hollandaise Taylor.

To Meg, her career and the perfectly poached chicken period – enjoy!

Meggs Benedict Ryan
Serves: 2.

Ingredients
a dash of white vinegar
4 rashers of streaky bacon
handful of baby spinach
2 Jon English Muffins
avocado, mashed
1 quantity of Hollandaise Taylor
4 eggs

Method
Place a large pot of water and a dash of vinegar over high heat and bring to the boil.

While that is getting hot hot hot, heat a skillet over medium heat and fry the bacon until crispy. Remove to some paper towel and keep warm. Quickly wilt the baby spinach in the same pan, removing from the heat when done.

Split the muffins and toast and smear with avocado. You could use butter … but why? Top with some wilted spinach and bacon and leave to rest.

Also, whip up the Hollandaise Taylor as per the recipe.

When the water is boiling, reduce to a simmer and carefully crack the eggs into the water, folding the whites around the yolk with a slotted spoon to keep them beautiful and together. Cook until your desired doneness – which should be just completely cooked whites, FYI – and remove with a slotted spoon. Place on top of the bacon and drown the entire thing in hollandaise before devouring.

Megs, Megs, Megs all I want is Megs (to be famous again)

13th Annual Easter Meggstravaganza, Easter Meggstravaganza, Guess Who's Coming to Dinner

I am so sick of doing the Easter Meggstravaganza.

Don’t get me wrong, I love Meg and would do anything for her – anything – but how has the woman not had a bonafide hit to return her to the A-list in the previous 12 years of completing the egg based ritual?

Surely this year will be lucky number 13, right?

(Though with nothing on the horizon, the ritual has its work cut out for it).

Sit back and relax – you (should) know the drill – as I assemble Megs, a struggling musician, a successful TV star, a shockingly still living legend and a hero, to complete the ritual … and save the world.

Because a world without Meg headlining a movie is a world in need of fixing.

Welcome to the 13th Annual Easter Meggstravaganza – Megs, Megs, Megs, all I want is Megs (to be famous again)!

Peppermint Patti Smith

Dessert, Snack, Sweets

Despite the fact that Pats and I created the punk scene in 70s NYC, a wild and rebellious genre in the time before Giuliani cleaned up the streets – I would say when the world was more dangerous … but let’s be honest, the world is fucked – we’ve always had a calm and almost ethereal nature to our friendship.

Think Cate Blanchett and Julie Anne Smith.

Thank fuck for that because we had some shit we needed to work through and if it was any other friend, we likely would have had a public spat and taken Lohan out of the news cycle.

Pats was hurt that – despite admitting singing with Bono was horrifically wrong – she was always willing to forgive me for making mistakes, I couldn’t give her the same respect.

Obviously my first impulse would normally be to burn my building to the ground and vow to never speak to her again … probably calling for a plague on her house in the process, but that calming force she has over me made me see sense and accept that what she was saying, was the truth.

Plus, I was still walking in the clouds, albeit gingerly, from my catch-up with Bob.

Anyway, we did some poetry slam, worked through the pain I caused by stealing Mapplethorpe, wrote some music and resolved all of our issues – even the disgusting Bono slight – over a tonne of Peppermint Patti Smith.

Like their namesake, these treats are effortless, sweet and oh so cool, while balancing the dark and light to fill you with contentedness.

And let’s be honest, what more can I say? Enjoy!

Peppermint Patti Smith
Makes: 24.

Ingredients
200g condensed milk
1 tbsp mint extract
4 cups icing sugar, sieved plus extra
100g dark chocolate

Method
Combine the condensed milk and mint extract in a bowl and place in a stand mixer on low to combine.

With the mixer still on, slowly and gently, add the icing sugar – I cannot stress slowly and gently enough, lest you want the kitchen to look like a combined party of an 80s model, Hitler and the KKK – and stir until combine.

Dust a bench with icing sugar and knead the mixture until smooth and pliable … like Gumby, or me when trying to woo back Skarsy.

Line a couple of baking sheets with baking paper, remove golf ball sized chunks from the sugary ball and flatten into a disc. Repeat until the ball is gone and refrigerate until set, aka a couple of hours.

When they are almost done, bring a small pot of water to the boil and break the chocolate into a just larger than the saucepan sized glass bowl. Without the bowl touching the water, place/hold it over the heat and gently melt the chocolate until thick and glossy. Leave to cool for about five minutes.

Once cooled, remove the minty discs from the fridge and brush/rub with the chocolate. Once complete, return to the fridge and leave to set for a couple of hours.

Then devour and let the coolness wash over you. U2 are still the worst, but let the cool, calm mint wash the rage away.

U2, Brute?

Guess Who's Coming to Dinner

There are so many amazing Patti’s in the world – LuPone, Duke, LaBelle, Hearst … pretty much any Patti you can think of outside of Newton (that harpy knows what she did) – but I would have to say that Patti Smith, hands down, is my favourite.

I met Pats in the 70s while I was playing a highly influential role in starting the NYC punk scene. Despite awakening her then lover Robert Mapplethorpe’s sexuality, Patti and I remained close – I assume as no one else was ever as gifted in the punk scene as we were.

Who knows?

I haven’t seen Pats in almost a year, after she slighted me and sang at a U2 concert with my nemesis Bono (don’t have a name so close to boner if you don’t want me to hit on you, jerk).

Last week I got to thinking and in a rare moment of rational, adult behaviour, I realised that if she was able to forgive me for stealing her lover, I should be able to forgive her for singing with a twat. So I reached out – seriously, I was mature for like a good hour guys – and Patti agreed to drop by and clear the air.

What says sorry I cut off contact after the U2 incident … as it was kind of hypocritical?

The 12th Annual Easter Meggstravaganza: When Meggy met Eggy

12th Annual Easter Meggstravaganza, Guess Who's Coming to Dinner

Despite another year of our egg based return-to-fame ritual, poor Meggy Ryan wasn’t able to make the triumphant return to the A-list that she so deserved.

As you now know, Annelie and I have been catching up with Megs each Easter for the past decade to bring new life into her shockingly, unfairly stalled career.

While you could argue that a co-starring role with Kiernan Shipka on an ABC Family TV movie is a huge boost to her career, it didn’t set her career alight quite like we had hoped. With Annelie still struggling with cage-fighting induced amnesia, I am assembling the usual classification of friends together to try and finally nudge her back into the stratosphere.

Who will be the struggling musician,  successful TV star,  shockingly-still-living legend and, of course, the hero that I join together with Meg and a dick-load of peyote? To be continued, as the say …

Welcome to The 12th Annual Easter Meggstravaganza! The twelfth time’s the charm, isn’t it?

The 11th Annual Easter Meggstravaganza

Easter Meggstravaganza, Guess Who's Coming to Dinner

For the last ten years, Annelie and I have been catching up with Meg Ryan around Easter in an effort to breathe new life into our fading careers.

You see Meg had just bombed in the shamefully Oscar-and-audience-snubbed Against the Ropes and we had just been sent back to court ordered rehab in Malibu (we had declared bankruptcy, were homeless and committed a crime to wind up at our home away from home Promises).

Following the bomb/exiting rehab, we all caught up in Palm Springs and went on a peyote triggering vision quest that foretold our return to fame and glory if we performed an annual worship of eggs, lining up with lunar cycles in March/April.

It was a ridiculously specific vision quest and, don’t mean to blow our own trumpets, clearly worked for us. Being scared to lose our fame and wanting to help Meg find redemption, we will continue on with our (now 11th) Annual Easter Meggstravaganza.

Now to line up the remaining ingredients for the ritual; a struggling musician, a successful TV star, a shockingly-still-living legend and, of course, a hero. How do we choose the vital players?
