Oh my god, you have no idea how good it is to reunite with a fellow hometown hero slash celebrity friend like Margot Robbie. I mean, the girl is a bonafide global star, but the fact that she still has time for her dear friends like me, on the Goldie, is one of my favourite things about her.

While Margot was actually my friend’s little sister’s friend, we got to hanging out in the kitchen on sleepovers eating vegemite toast – as good Australian’s do – and planning our ascesion to Hollywood royalty.

We were both dominating the high school drama game with our talent and je ne sais quoi, but knew we were destined for greatness. I know my Hollywood staying power dates back to the ‘20s, however I had to assume a new identity after my thirteenth deportation. It truly was the lucky one, since I met Margs.

Given I was still trying to find a way to return to Hollywood, I suggested Margot takes over Australia instead. That led to Neighbours, which led to a Logie which always leads to a role opposite my dear friend Leo in a film by my friend Marty. Then came Allison, an Oscar nomination and no doubt that Margot was even more of a Gold Coast legend than me.

Sadly Margot and I haven’t seen each other since her Byron wedding – the first time I went back after Annelie and Miley had the cage-fight accident – but truly beautiful friendships can always pick back up as if no time has past.

We laughed, we gossiped about Quentin’s tenth and final movie – she thinks she can get him to drop the restraining order and give me a role – and most importantly smashed a pick batch of Pistachimargot Macarobbie.

Sweet like Margot, nutty like me, these little babies are essentially the culinary equivalent of a best friend bracelet and you, my friends, can finally get in on the action. And you should, because we are cool and the macarons are delicious.

Pistachimargot Macarobbie
Serves: 2 besties.

Ingredients
¾ cup almond meal
½ cup pistachio meal
1 ½ cups icing sugar
4 egg whites
¼ cup raw caster sugar
¼ cup finely chopped pistachios
3 drops green food colouring
100g white chocolate, chopped
2 tbsp double cream

Method
Sift almond and pistachio meals together with the icing sugar in a medium bowl. Set aside.

Place the whites in a clean, dry electric mixer and beat until soft peaks form. Add the caster sugar one tablespoon at a time and beat until dissolved. Then add food colouring and beat until just combined. Remove from the mixer and gently fold through the meals until just combined, thick and glossy.

Transfer mixture to a piping bag and pipe into 4cm rounds on lined baking sheets. Sprinkle with chopped pistachios and tap on the bench to remove air bubbles. Leave to set for an hour.

Preheat oven to 130°C.

Place the cookies in the oven, one tray at a time, and back for twenty minutes, or until the tops are firm. Remove to cool on the tray on wire racks.

While they’re cooking, place the chocolate and cream in a microwave-safe bowl and cook for a minute, or until the chocolate has melted. Stir to combine and transfer to the fridge for ten minutes, or until thick yet spreadable.

Spoon mixture into a large snaplock bag. Snip 1cm from 1 corner of bag. Pipe 4cm rounds of mixture onto prepared trays, 4cm apart. Sprinkle each macaron with pistachio. Tap trays on bench to remove air bubbles. Set aside for 1 hour.

To assemble, place a small dollop of icing on the flat side of a cookie and sandwich with another. Repeat the process until done and leave to set for an hour or so. Or just devour, I don’t mind.

Once Upon a Time on … the Goldy

I hope that you’re as shocked as I am that I have now gone three weeks in a row consistently documenting my celebrity catch-ups slash commiseration cooking for reality losers.

And while my triumphant return needed one of my most iconic friends on board – love you Ames – and week two called for a steamy date with my beloved Sterling, I wanted week three to feel a little bit more like home. Which is why the divine Margot Robbie is dropping by this week.

Marg and I have known each other for well over fifteen years, after growing up together on the Gold Coast. Fun fact: coming from the Gold Coast legally requires you to aggressively talk about being from the Gold Coast whenever you aren’t on the Gold Coast. But that is another story for another time.

What says I am not angry that I wasn’t invited to the Once Upon a Time in … Hollywood premiere – Quentin is a few months away from dropping my restraining order, I feel it – slash can you finally get me a job on Neighbours?

Ryan Cosling and Avocado Salad

Golden Globe Gold, Golden Globe Gold: Goldy Bird, Salad, Side, Snack

Hey Girl, you didn’t think there was anyone I’d rather kick off this (new) year’s Golden Globe celebrations with than my dear friend Ryan Gosling, did you? I mean between the fact we’ve known each other for decades after co-starring on The Mickey Mouse Club – obvi I was a mouseketeer – and that he won his globe after five noms, he is best place to help me run the odds this year.

Normally I like to show you the other sides of my celebrity friends however when it comes to Ry, what you see is what you get. He is an absolute babe-town slash sweetheart, is a loyal friend and is just thoroughly delightful.

I mean, he was so worried about how I would take him getting with Eva and starting a family – we dated in the early noughts – so he took me on a friend vacay where we watched her movies with a critical eye until I softened enough to her and he was sure that I wouldn’t feel slighted by the relationship.

While I obviously flew off the handle when I realised talking smack about Eva’s performance in the classic film Urban Legends: Final Cut – the film’s only weakness IMO – wasn’t foreplay, we quickly won me back by having personally edited the locker scene from Crazy, Stupid, Love and his Blue Valentine nude scene in a 14 hour loop to help calm me down.

That sort of thoughtful gesture is even enough to curb my penchant for holding grudges. As such, we’ve been the best of friends for life.

When I arrived in L.A. I made my way straight over to his home to catch-up. He threw his arms around me – swoon – and told me how desperately he missed me slash how happy it made him to be helping me make my second triumphant return to the interwebs.

As I am wont to do, we laughed, we cried and we talk smack about our frenemies before getting down to running the odds. Given how much I love him, I decided to cover all the motion picture acting nominations with him. For Supporting Actor we agreed that my boy Mahershala is likely to snatch a globe to make up for his snubbery for Moonlight and Supporting Actress will go to Regina King. The leading performances are where we started to disagree, with Ry thinking Christian Bale will take Comedy and Musical while I think Robert Redford will take a surprise victory. For Comedy and Musical Actress, he believes it is Olivia Colman’s to lose, while my gut tells me Crazy Rich Asians will take a win and Constance Wu feels like their best shot. For Drama, he thinks Bradley Cooper will win here – I obvi am Rami all the way, er’ryday – and Lady Gaga will continue A Star is Born’s streak, while I can not move past Glenn Close.

Because she is Glenn Close damnit.

Given he is such a delight, things didn’t get very heated so I didn’t need to cook up anything hearty to ground us – like roast gosling, for instance. Instead, we feasted on a fresh and delightful Ryan Cosling and Avocado Salad.

 

 

I know that I normally push extremely hard in favour of the ‘you don’t win friends with salad rule,’ but this is so good I have to make an exception. Packing a tonne of flavour and healthy enough to make you smugly think that you’re keeping your new year’s resolutions, it is near perfection.

Ryan Cosling and Avocado Salad
Serves: 2

Ingredients
¼ cup greek yoghurt
1 lime, juiced and zested
1 tsp maple syrup
1 tbsp dill, finely chopped
salt and pepper, to taste
2 baby cos, washed, dried and leaves removed
1 avocados, peeled, stoned and sliced
handful of mint leaves

Method
Combine the yoghurt, lime juice and zest, maple syrup, dill and a good whack of salt and pepper in a jug.

Layer the cos on a platter, topped with the avocado slices and a sprinkle of mint.

Drizzle over the dressing.

Devour.

Cheese & Garlic Brad Pittza

Main, Oscar Gold, Oscar Gold XC: The Goldfather, Pizza, Side, Snack, Street Food

I can’t believe that I’m halfway through this year’s Oscar Gold celebration, the Goldfather! It feels like only yesterday I was chatting screenplay with Diablo, back in time pondering tunes while seeing Hen and talking the highly contested director slots with sole female victor Kath. The latter, obvi, because it was yesterday.

Today, however, I am pulling out all the stops  – and during his performances in Thelma & Louise, Legends of the Fall and Troy, well, I pulled other things – by calling on my A++ list friend, Brad Pitt. Yes people, Brad Pitt.

Now I know what you’re thinking – when did Brad Pitt win an Oscar for Best Actor or Best Supporting Actor? Well, good job you! He hasn’t … but he did win one of producing Lupita’s breakout film 12 Years a Slave.

Anyway, circling back a bit, I first met Brad while part of Geena’s entourage. While I’ve gone off him in recent years, he was totally banging in the Thelma & Louise days. One thing led to another, we started a torrid love affair and while it didn’t last, remained the best of friends.

(Don’t tell him I sold the very NSFW images of him on holiday with Gwyneth as revenge).

Back to the task at hand though, I decided to mix things up and run the Best Picture odds before going through the acting categories. Because let’s be honest, who even knows if the Best Picture winner will even be correct after last year.

While my heart – as you can probably tell – has firmly locked Call Me By Your Name in as my number 1, I find it highly unlikely to get up after Moonlight took the prize last year. Though maybe Was and Faye will hand it over no matter what? So despite being the best film of the year, I don’t see it winning. Fact, not opinion. Anyway, rule out Darkest Hour, Phantom Thread, The Post and sadly Dunkirk. That leaves us with Get Out, Lady Bird, The Shape of Water and Three Billboards Outside Ebbing, Missouri, and even then, I feel like Lady Bird’s best chances rest with Greta’s noms. So eeny meeny miny mo, Brad said Three Billboards, I think Get Out will take a surprise victory. Fuck the Armitages, amirite?

Unless Jordan gets Best OG screenplay, then it is The Shape of Water’s win.

Make no mistake, this date was full of some very robust conversation. So robust, we could only be sustained by the cheesy, glorious goodness of my Cheese & Garlic Brad Pittza.

 

 

Cheese, garlic, herbs, dough. Do you really need me to say anything else? I mean the layer of oil and grease when it comes out of the oven may not be the healthiest, but damn is it good.

Cheese & Garlic Brad Pittza
Serves: 1-2.

Ingredients
1 serve Pizsa Zsa Gabor dough
6 garlic cloves, minced
¼ cup parmesan cheese
¼ cup ricotta cheese
¼ cup mozzarella cheese
1 tbsp oregano leaves, chopped
1 tbsp thyme leaves, chopped

Method
Make the dough as per Zsa Zsa’s orders.

Preheat oven to 180C.

Combine the garlic, cheeses and herbs in a bowl. Smear over the dough and chuck in the oven for 20 minutes, or until golden, crisp and bubbling.

Devour.
