After spending the last few days catching up with the current shining stars of television – hey there current nominee Christina Applegate, and rising stars Riz and Tatiana! – I decided Emmy Gold: Golden Family needed some gravitas in the form of some TV royalty. So I picked up the phone and invited myself over to celebrate Shelley ma’ fuckin’ Long.

While yes, she is still working hard with killer runs on Modern Family and less recently – and my favourite – playing Carol Brady in The Brady Bunch movies, her Emmy winning turn as Diane in Cheers is truly the stuff of TV legend.

I mean, her and zaddy Ted Danson’s will-they-won’t-they romance is enough to flood my basement even now.

Obviously Shell was honoured to finally get the call up to appear on this patch of cyberspace and introduce herself to a new audience. While our relationship started out quite rocky thanks to the meddling ways of the morally corrupt Kelsey Grammer, Rhea Perlman – the saint that she is – was able to sit us down, make us see sense and finally end our feud in 1987 before Shelley departed Cheers.

Did I mention I was a featured barfly in Cheers? Because I was.

Anyway, given she starred in one of the most iconic comedies of all time, I got her to help me run the odds for Outstanding Comedy Series, hoping that this category provides a well-deserved surprise slash great return on gambling investment. While Veep, Barry, The Marvelous Mrs. Maisel and Fleabag are generating the most chatter to take out the win, this is the category that I could honestly make a case for every nominee taking it out. Russian Doll was bold and moving, The Good Place is the greatest exploration of morality ever committed to screen and Schitt’s Creek is a remarkable show filled with hope and joy.

While my heart wants Schit’s Creek to take it out and Shelley thinks The Good Place deserves it, I think it will go to Fleabag. But given Schitt’s has the worst odds, am betting it all on them for a good return on investment. While Shelley tried to suggest I go for a safer bet, I didn’t listen and drowned out her wise words by smashing a big Stuffed Shelly Long Bake.

 

 

There is nothing better than pasta … except kitsch foods, so using that logic, this baby is the holy grail. Large shell pasta bake full of rich, creamy spinach and cheese floating through a sea of spicy tomato sauce like the SS Noms? Sign me up.

Stuffed Shelly Long Bake
Serves: 6.

Ingredients
300g jumbo pasta shells, cooked per packet instructions
olive oil
4 garlic cloves, minced
1 onion, diced
250g spinach, roughly chopped
500g ricotta cheese
1 cup mozzarella cheese
½ cup Parmesan cheese, grated
1 egg, lightly whisked
a small handful fresh basil, roughly chopped
salt and pepper, to taste
2 cups marinara sauce
1 tbsp chilli flakes

Method
Preheat oven to 180C.

Heat a good lug of olive oil in a skillet and sweat the onion and garlic for five minutes, or until soft and sweet. Add the spinach, remove from heat and cook, stirring for a minute or so, or until the residual heat has wilted the spinach. Transfer to a bowl and allow to cool.

Once the onion, garlic and spinach are pretty much tepid, add the ricotta, mozzarella, parmesan, egg, basil and a good whack of salt and pepper, and stir to combine.

To assemble, pour marinara sauce in the bottom of a baking dish and stir through the chilli flakes. Stuff each shell with the cheese mixture and place randomly in the baking dish. Repeat the process until the pasta and/or cheese is all used up.

Dot with any remaining cheese mixture, sprinkle with a little extra parmesan and transfer to the oven to bake for 30 minutes. Or until gloopy and glorious.

Leave to rest for five minutes before serving and devouring. Triumphantly like an icon.

Grammy Gold, Grammy Gold: Somebody That I Used to Gold, Main, Poultry, Snack

It was such a treat to see this year’s GO recipient Lady Gaga to kick off this year’s Grammy Gold celebration – Somebody That I Used To Gold – that I couldn’t quit the film world completely. As such I grabbed the phone and as a twist of fate, my dear friend Olivia Newton John was free to catch up.

Despite being on death’s door according to the tabloids.

I’ve known Liv since the mid-70s while she and Pat Carroll where working the nightclub scene. Unbeknownst to them, they were once booked for a strip club and while it came as a shock, it led to us meeting. Which gave her “the most beautiful friendship of my life,” so she is pleased by how things turned out.

Given she is most well known for her star making turn in Grease, Liv was thrilled to help me run the Music for Visual Media odds. While she thinks our Hugh will snatch Best Compilation Soundtrack for Visual Media, my heart will always for for Call Me by Your Name though the clarinets of Lady Bird do fill my heart with joy. For Best Score Soundtrack I think Black Panther  has it in the bag, while Liv is rooting for The Shape of Water. And rounding things out, we agree that Gaga will continue her sting of wins for Shallow in Best Song, however a Mystery of Love win would make me sob happy tears by a fireplace.

With the most important job of all out of the way, we hung out in the kitchen, laughed, cried and smashed a huge batch of Chicken & Olivia Newton John Patties.

 

 

If you haven’t realised by now, I have a passionate, unadulterated love for rissoles. And these babies are no exception, sweet, tarty and packing a punch, they’re the perfect nourishing mid-week meal that doesn’t make you want to cry. Doesn’t everyone cry during dinner on hump day? No, just me? Awks.

Chicken & Olivia Newton John Patties
Serves: 4.

Ingredients
500g chicken mince
½ cup kalamata olives, roughly chopped
1 lemon, zested
4 garlic cloves, minced
½ cup panko breadcrumbs
¼ cup parmesan cheese, grated
small handful basil leaves, roughly chopped chopped
1 tsp chilli flakes

Method
Preheat oven to 160°C.

Combine everything in a bowl, scrunching with your hands until well combined. Divide into 8 patties and place on a lined baking sheet.

Transfer to the oven to bake for fifteen minutes and devour immediately with a salad. Despite not making friends with it.

Barney Marnhattan

12 days of Festivus for the rest of us, Drink

After kicking the 12 days of Festivus off on a joyous note with the divine Jason Alexander and then being brought back down to earth when checking in with the deceased Susan Ross’ portrayer Heids, I opted to whip out the time machine and check in with my dearly-departed pal Barney Martin.

While he was technically the second man to play Jerry’s dad, Barns will forever be the Morty in my heart.

I first met Barney on the set of The Golden Girls in the ‘80s and we became the fastest of friends, which led to me putting his name forward when they needed to recast Morts. I also got him cast on Full House with Cand as a gag.

As is oft the case when venturing back to hang with friends that have past, it was both uplifting and melancholic. Though it was exciting to pop on our best Morty Floridian shirts, have a laugh and enjoy a very, very festive Barney Marnhattan.

 

 

As my rapidly bloating liver can attest, 90% of Christmas is drinking so I couldn’t go past adding another festively flavour tipple on the menu. But seriously, how can you go wrong with the sticky sweet cherry and some bitters.

You can’t, so enjoy!

 

 

Barney Marnhattan
Serves: 1.

Ingredients
ice
2 ½ shots of bourbon
1 shot vermouth
a hearty dash bitters
maraschino cherries, to taste

Method
Fill a glass with ice.

Pour over the bourbon, vermouth and bitters.

Stir.

Add cherries.

Down.

Repeat.

Candice Burgern

Carnival Week, Main, Party Food

While most people fell in love with Candice Bergen as TV’s erstwhile queen, Murphy Brown, Annelie and I first met and befriended Candi on the set of her Oscar nominated turn in Starting Over where we were working as assistants to our close friend Jill Clayburgh.

We also got our friend Kevie Bacon a role but that is a story for another time.

We saw something special in Candi and she us, and it was only Candice who was able to mend the feud between Annelie and I on set after we realised the other was also sleeping with Burt Reynolds.

Candice was in town to commence work on a gritty-Murphy Brown reboot we envision on Netflix. While we are just in the planning stages, we know Sorkin is interested in finding a project to work on with us, so this could be the ticket.

Planning a future critically acclaimed reboot can be draining work, so we made sure to relax at the Ekka (Candi has always wanted to attend) and refuel with our famous Candice Burgern.

While Australians are apparently terrible at making burgers, we would argue that Candice’s eponymous burger is a pretty simple classic elevated by a Shake Shack inspired sauce that packs a little kick.

Candice Burgern
Serves: 4.

Ingredients
4 hamburger buns
500g beef mince
8 rashers shortcut bacon
8 slices of cheddar, from the block
2 tomatoes, sliced
spinach leaves, to taste
sliced gherkin, to taste

Sauce
½ cup mayonnaise
1 tbsp ketchup
1 tbsp mustard
1 dill pickle
¼ tsp garlic powder
¼ tsp paprika
Pinch cayenne pepper

Method
Place mince in a medium bowl, draining as much excess fluid as possible, and season generously with salt and pepper. Work the mince until it is coming together and form into four equal size patties. Place on a cling-lined plate and refrigerate for 30 mins to an hour.

While burgers are chilling, combine all sauce ingredients in a blender/food processor and work until smooth. Transfer to a small bowl, cover in cling and place in fridge until ready to use.

While the sauce is enjoying the company of the patties, get to work slicing your cheese, tomatoes, gherkin and washing the spinach leaves aka mise en place-ing like a boss.

Remove patties from the fridge and place a large frying pan over medium heat until it is warm. Slice buns in half and fry, face down, until lightly toasted. Transfer to a plate, repeating the process until they are all done.

Fry bacon rashers until crispy and cooked, turning mid-way through. Remove to a plate and keep warm.

Place patties in the fry pan and fry for 3-5 minutes before flipping. Once flipped, cover the cooked side of the patties with cheese and fry for a further 3-5 minutes. Remove the pan from heat.

Now to the annoying part, assembly! I always get anxious when putting burgers together as they have a tendency to fall apart, but this order seems to be less terrible than others I’ve done resulting in the top half sliding on to the floor.

Remove sauce from fridge and liberally coat. each side of the buns. Line the base with sliced tomato and top with spinach leaves. Carefully place the hot, cheesy patty on top of the spinach (this kind of wilts the spinach and helps it stay together), then the bacon and gherkin.

Then quickly close the burger and devour so that you can’t disprove my theory that this order builds a stable burger. Thanks!

Oh, obviously serve generously with freshly cooked fries.
