After a hint of Megs and a dash of Shirls, we’ve arrived at the televisual stardom section of my egg-based ritual. And based on her successful post-Precious TV career with The Big C, American Horror Story: Coven through Hotel and Empire, my girl Gabs Sidible was the only person worthy of joining me for day three of this year’s Easter Meggstravaganza.

I’ve known Gabs for years after meeting on the set of Precious: Based on the Novel Push by Sapphire. I was there visiting my part-time lover Lenny Kravtiz and was immediately drawn in by her performance and vowed to make her a star, and get her an Oscar. While she was robbed by my frenemy Sandra Bullock – she should have been robbed by Meryl instead – she never held my inability to bring Bullsy down against me.

Given how busy I’ve been being Miley and the sort, and she is still hard at work on Empire, Gabs and I haven’t had the chance to catch-up in a while. And let me tell you, it was such a treat to see her again.

She was not only so excited to see me again and reconnect, but also help bring Megs the renewed fame she deserves. We laughed, we hugged, we plotted my way into American Horror Story and finally put on our ritualistic robes and devoured a Gaberry Soufflibe.

 

 

Don’t let the terrible photos scare you – the air conditioning really did a number on them – these babies are damned near perfection. Light, sweet and full of berrylicious tang, it is the most fun you can have with your clothes on. Or off, TBH.

Gaberry Soufflibe
Serves: 6.

Ingredients
½ cup raw caster sugar
100g blueberries
100g raspberries
1 tsp vanilla extract
1 tbsp cornflour
2 egg whites
icing sugar, to serve

Method
Preheat oven to 200°C.

Combine the ¼ cup of sugar, berries, vanilla and cornflour in a saucepan over medium heat with 2 tablespoons of water. Bring to a boil over high heat and cook for five minutes or so, or until broken down and thickened. Remove from heat and allow to cool for an hour or so.

When you’re ready to rock and or roll, place the remaining sugar in the bowl of a stand mixer with the egg whites and beat until stiff peaks form. Fold through the berry mixture and pour into 6 small ramekins, place on a lined baking sheet and bake for ten minutes or until risen (like Megs’ career, yo).

Dust with icing sugar and devour.

Winona Spyders

Dessert, Snack, Stranger Feasts, Sweets

Given the fact she is the reason we’re holding this entire Stranger Things slash Halloween celebration, Stranger Feasts, it should come as no surprise that I’m wrapping things up with a date with my dear, dear friend Winona Ryder. Nevermind the fact that Joyce’s love for her son is the heart and soul for the entire show.

It feels like only yesterday that I caught up with Shan, Mil, Gats, Cal, Noah and Finn. Well, it was yesterday for Finn, but you get what I meant!

And by that, I meant to shamelessly cross promote.

I’ve known Winona forever, after we met on the set of Beetlejuice with my other dear friends Alec and Geens. As I was her stunt double slash stand-in we were inseparable on set and thankfully that developed into the closest, dearest friendship of our lives.

Given how long we’ve both been in Hollywood, we have a shit tonne of mutual friends – Leo, Kirsten, Claire, Pete, Al, Brit, Whoopi, Jeff, Simon and Retta, but to shamelessly name drop a few – so it was great to catch-up on all the gossip and throw some shade at their lesser career trajectories.

I mean, not even our biggest scandal could hold us down.

As you would all know, Winona was arrested for shoplifting at Saks Fifth Avenue in Beverly Hills. What you may not know but surely would have guessed by now, I too was caught up in the arrest … and may have been the cause of the entire thing (I wanted a new wardrobe, sue me). And our flimsy ‘method acting’ excuse.

In any event my nemesis Mark Geragos – aka half of the inspiration behind Piper Perabo’s horrid Notorious – did not help the case and Wins completed her community service with me by her side. Despite the fact I wasn’t even convicted thanks to my lawyer John someone? He said something about being shocked that referencing a glove not fitting getting his two worst clients off, but I digress.

I haven’t seen Wins in the last few months, so I am thrilled that she picked up the phone and asked for my promotional skill. Slash to help her celebrate Halloween slash her birthday. Given how many slashes were involved, I knew there was only one thing I could whip up – a big batch of (Chang’s) Winona Spyders.

 

 

While these are quite possibly the most basic thing you could ever make, they are also one of the most delicious. I mean, peanut butter and chocolate. Does it get any better? Yes, yes it does – crunchy noodles.

Winona Spyders
Serves: 6.

Ingredients
1/3 cup crunchy peanut butter
400g milk chocolate
200g Chang’s Fried Noodles

Method
Place the peanut butter and chocolate in a heatproof bowl and melt in the microwave until combined.

Fold through the noodles.

Spoon a tablespoon (or two) of the mixture into muffin cases and place on a baking sheet. Once done, place in the fridge and chill until set.

Then devour, greedily.

Rachel Bilsonta Hats

You can’t celebrate the 12 Days of Chrismukkah without my dear friend, the pocket-rocket portrayer of the gloriously rage-filled Summer Roberts … Rachel Bilson.

Deep breath – what a freaking (long/terrible) sentence, amirite?

I first met Rach – and spotted her talent – in early 2003 on the set of Buffy The Vampire Slayer. I was part of SMG’s entourage at the time but was taken in by Rachel’s spunk. As soon as I saw her perform, I knew that she was the only person that could play the role of Summer and do just to her season 1 catch-phrase “ew.”

While we had a brief falling out after I tried to set her trailer on fire after she began dating Adam Brody (I had fantasised about us becoming a twincesty couple), she understood my complete lack of logic/basis in reality and forgave me within a week.

The girl, it needs to be said, is a damn saint.

(Her sweet, forgiving nature is the only way I could forgive her for marrying Hayden Christensen, who broke my heart on the set of Life as a House when he wouldn’t play sweet dixie with my behind… but that is another story for another time. Plus I worked that line into Hart of Dixie, so how could I stay mad?).

I haven’t been able to see much of Rachel since Hart of Dixie was egregiously axed – which is actually about my life as a small town Alabama doctor falling for a myriad of similar looking men – given how busy she is with my dear god-daughter Briar Rose Christensen, so it was such a treat to be able to reconnect over some festively appropriate Rachel Bilsonta Hats!

Sweet, delicious, kind-healthy (yay whole strawberry!) and completely kitsch, these little babies are the perfect festive bake for those dreaded office Christmas morning teas.

Or as a gift for people you actually like. Like the Bilson-Christensens – enjoy!

Rachel Bilsonta Hats
Serves: 8.

Ingredients
2 cups plain flour
¼ cup valrhona cocoa
1 tsp bicarb soda
1 ½ cups raw caster sugar
¾ tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp cloves
¼ tsp allspice
1 cup buttermilk
200g unsalted butter, melted
2 eggs
1 tbsp white vinegar
1 tsp vanilla extract
1 tbsp red food colouring
Icing
500g cream cheese, at room temperature
2 cups icing sugar
120g butter, at room temperature
1 tsp vanilla bean paste
strawberries, tops sliced off

Method
Preheat oven to 170°C and line muffin muffin pans with paper cases – quantity will depend on the size you want, but I can make 8 Texans.

Sift all the dry ingredients into a bowl and whisk the wet ingredients in a large jug until combined.

Make a well in the centre of the dry ingredients and stir through the wet ingredients until just combined. Then stir through the food colouring. You can use a stand mixer – like I do, because I’m lazy – but just remember that the best muffins are the ones that are barely mixed, so just do it on the lowest setting and only for as long as it needs.

Divide the mixture among your pans and bake for 20 minutes or until a skewer inserted into the centres comes out clean. Remove from the oven, transfer to a wire rack and allow to cool completely.

While they are getting chill, combine the icing ingredients – sans strawbs – in a stand mixer and beat until smooth and fluffy.

To assemble, smear each cupcake generously with icing, top with an upturned strawberry and top said strawberry with a dollop of icing. Ta dah – bilsonta hats!

Devour.

Don’t you hate a tease?

I mean, I know I dragged Con out for a catch-up to give me the goss about her Nashville departure and then gloated about it to you, but since I can’t actually share said spoilers with you I’ve acted like a tease, so I’m sorry. Kind of.

Either way, you’re just going to have to move on, ok?

I first met Con in the late 80s while she was studying at the Beijing Normal University. I was in the midst of yet another of my educational institution scams but abandoned the grifting to form a friendship with Con and Kirsten Gillibrand.

Fun fact, it was I that pushed for Con to get into acting and after she graduated we moved to New York, where she studied theatre and I studied the male form in the meat packing district.

After falling out briefly in the early 90s, I won her back over after recommending her to my dear friend Michael J. Fox for a role in Spin City and I’m very proud to say that we’ve been trouble free ever since.

Con was exhausted when she arrived – which was to be expected after I pulled her off set after an all night shoot – but knew that my potential Rayna-less induced panic couldn’t be quelled by anything but time with her.

Oh and a batch of my Pumpkin and Baconnie Britton Muffins.

You could be forgiven for assuming that I’m a huge fan of the muff, given my penchant for posting recipes this week … but there is truly nothing Con and I would rather share. Salty, sweet and earthy, these muffs are wholly satisfying as a quick breakfast, light snack or full meal if you down the entire batch.

No judgement, just enjoy.

Pumpkin and Baconnie Britton Muffins
Makes: 6 Texan, 12 normal.

Ingredients
2 cups butternut pumpkin, diced
6 rashers streaky bacon, finely diced
2 cups flour
1 tsp baking powder
½ tsp baking soda
salt and pepper, to season
3 eggs
3 rosemary sprigs, leaves removed and finely chopped
½ cup extra virgin olive oil, plus extra for pumpkin
½ cup milk of your choice
150g firm Goat’s cheese, crumbled

Method
Preheat your oven to 180ºC.

Place the pumpkin on a lined baking tray, drizzle with olive oil and bake for about 20 minutes, or until soft and starting to caramelised. Remove from the oven, keeping it on, and cool.

Meanwhile, heat a small frying pan over medium heat and cook the bacon, stirring, until crisp and brown. Remove from heat and allow to cool.

When everything is getting hella chilled, combine flour, bakings powder and soda, salt and pepper together in a large mixing bowl. In another bowl, give the eggs a good whisk before adding the rosemary, oil and milk. Fold the wet ingredients throw the dry and then fold through the pumpkin, bacon and feta.

Divide the mixture evenly amongst a lined muffin tray and bake in the oven for about 20 minutes, or until an inserted skewer comes out clean.

Devour warm, slathered in butter.

There has been much talk in the last week about my dear friend Connie Britton’s reduced role in the upcoming season of Nashville and while I love Con dearly, I almost think I love Queen Ranya and her relationship with lil JuJu B-arnes more.

To put my mind at ease – I haven’t slept since I first caught wind of the rumours – I decided to pull her from the set to catch-up and fill me in on all of the goss from the upcoming season.

She knows I’d never spill a secret, so I don’t see it being a massive issue!

What can I make to soften her up while simultaneously paying tribute to her luscious, shampoo commercial-esque locks?

Strawberry Plaza Jam

One of, nay, the greatest tragedy of celebrating Treat. Yo. Self.’ Week last year, is that I couldn’t fit in catch-ups with the entire cast, who I am extremely close with.

Now before you start hurling insults at me like I’m Larry Garry Jerry Barry Terry Gergich, please understand that cuts had to be made last year and people like my beloved Aubrey Plaza missed the cut (I went with full-fledged, paid season 1 Parks Department employees and sadly as an intern, she missed my cut).

Aubrey is one of my closest friends and despite her surly demeanour, wasn’t bothered by my slight at all.

I first connected with Aubrey in the very-early 90s, when I was touring Delaware trying to launch my comedy career. While it failed, on account of the fact I had one joke and it required me to be in a restaurant … in Delaware – Delaware the hell is my waiter? – I ran into Aubrey and we were bonded by our general disgust for people and interacting with them.

We spent our time sullenly around Wilmington (not that one) until inspiring the PTB at MTV to create a show based on our exploits. And that, my friends, is how Daria was born (as you expected)?

Aubs and I try to get together and smack talk as often as possible, over something sweet enough to cut through the acid we are spewing … meaning my Strawberry Plaza Jam is always the perfect accompaniment.

At the risk of putting my neck out, I am one of those rare people that dislike strawberries as the seeds feel weird on your tongue (this led to me believing a chef’s request for me to de-seed a strawberry) and the fake flavour is just foul. I can’t however, go past a good strawberry jam (and freeze-dried strawberries too but they weren’t a thing when I was making my toddler judgments); sticky, sweet and rich, there is something about them all softened that makes me like them.

I assume it is all the sugar. Enjoy!

Strawberry Plaza Jam
Makes: Up to 2 cups.

Ingredients
1kg strawberries
1kg sugar
1 vanilla pod, seeds scraped out

Method
Hull the strawberries and place in a heavy based saucepan with the sugar and bring to the boil over a medium heat, stirring constantly.

When the mixture starts to bubble add the vanilla, gradually turn the heat up and cook for 15-20 minutes, stirring constantly until it turns shiny and sticky. Trust your gut with the jam, you’re better off under cooking the jam as without pectin it takes longer to cook … which in turn can make it closer to a toffee, than a jam.

Remove from heat and ladle into sterilised jars and leave to cool. Seal and refrigerate.
