Bless little Matty – he is such a doll!

While he doesn’t enjoy being upstaged by my animatronic pet chimpanzees or Matt Pez’s … sarcastic punchlines, he is a ride or die friend. Fun fact, our friendship inspired the entire Fast and or Furious saga – RIP Paul Walker (thank you for the Joy Ride your buns gave me).

Sure, as is the custom with being our friend, we have had some rough times after he refused to give his Married … with Children co-star and our legal guardian Christina Applegate a role in Lost in Space (ugh, Heather Grahvom), but he was kind enough to forgive us for advising him that a Joey spin-off was a good idea, so we are even.

Matty really helped put me back on the right path and work through my guilt and grief of what has happened over Christmas – oh, FYI, I am actually Annelie’s evil twin Ennelie.

I’ve had such a busy week – what with hosting Nigella Lawson’s Brisbane Q&A and acting as a mentor to David Sedaris – that I barely had time for poor Matt. Thankfully Nigella gave me the idea for a speedy Mont LeBlanc.

While I have to give credit to dear Nigey for the original express version of a Mont Blanc – I will blow my own trumpet and say that melting the chocolate and whipping it through the chestnut makes for a smoother, sweeter dessert.

Mont LeBlanc
Serves: 4.

Ingredients
100g good-quality dark chocolate
1/4 tsp almond essence
500ml double cream
2 meringue nests
500g sweetened chestnut purée

Method
Break the chocolate into a medium, microwavable bowl and melt in the microwave on high for ten second intervals until down. Leave to cool slightly.

Place the cream in a large bowl and lightly whip it until soft peaks form. Fold through one of the crumbled meringues.

In an electric mixer, whisk the chestnut purée on medium speed and add in the chocolate and almond essence, continuing to whisk for a minute to combine.

Spread the chocolate/chestnut mixture evenly amongst four martini glasses, top with the cream/meringue mixture and crumbled excess meringue.

Devour immediately and pretend you made the purée and meringue from scratch and were very busy.

Cakelyn Jenner

Cake, Dessert, Keeping it Kardashian Khristmas, Sweets

Whether you want to admit it or not, our dear friend Caitlyn Jenner has had a monumental year since coming out as transgender and working towards being the activist she needs to be, given the role would be thrown at her anyway.

We first met Cait in an Olympic training camp in the mid 70s when Annelie was trying to perfect the correct amount of steroids for me to win discus, without being caught. It worked and Annelie went on to provide supplements to Lance Armstrong, but that is another story for another time.

Our bond with Cait was instant and while she was disappointed in our actions, our wit, charm and aggressive sexuality was too much and a four decade friendship was formed.

Cait first told us she was transgender about 18 months ago when we caught up during a fleeting visit to Malibu to egg Yolanda Foster’s house. We were so happy that she felt comfortable enough to share her truth with us and surprisingly, we didn’t run straight to the paps with the information.

Since then, we’ve acted as a trusting, tender ear while Cait has endured the ups and downs of the media scrutiny in the lead up to her interview with Diane Sawyer and were heavily involved in deciding on the now iconic Vanity Fair cover.

Such a stellar year, made Cait deserving of our highest honour, to be the final pre-Christmas hiatus recipe. We like to call it our Cakelyn Jenner.

While you would assume such a landmark year would call for a showy, decadent, Christmas dessert, we wanted the Cakelyn to be a reminder of the true essence of Cait’s year. It was honest and simple; she is a woman, finally able to live as the person she is and that calls for a nice classic sponge.

Cakelyn Jenner
Serves: 8

Ingredients
200g self-raising flour
225g salted butter
175g castor sugar
1 tsp baking powder
4 eggs
1/4 cup milk
1 tsp vanilla extract
300ml thickened cream
Seeds from 1 vanilla bean
½ cup raspberry jam

Method
Preheat oven to 175°C.

Grease, flour and line 2 x 8″ cake pans.

Beat butter and sugar together until pale and creamy. Add eggs one at a time, beating well after each addition. Add vanilla extract and milk and combine.

Sift flour and baking powder into wet ingredients mixture. Gently fold together until just combined. Divide between prepared pans.

Bake for 20-25 minutes or until cakes are risen and spring back when touched. Allow to cool on a wire rack.

Once cakes are completely cool, whip cream to stiff peaks and stir through vanilla seeds.

Spread one half of cake with jam. Top with cream and then other cake. Serve immediately.

Jelley Wentworth

Dessert, Survivor: Cambodia - Second Chance, Sweets

We regret to admit that we’ve had a checkered past with the zero-to-hero, stand-out star of Second Chances Kelley Wentworth. Very checkered history, but thankfully like her stint in game, Wentworth was a true survivor.

You see, and again we regret to admit this, the Wentworth’s were the original target of a farmhouse robbery Annelie and I had planned in the early 90s. We had both read In Cold Blood and while abhorred by the murderous rampage, it gave us the idea to start working as farm hands and swindling the families out of all their money.

Kelley’s dear father @FarmGuy69 fell for our plucky attitudes and hired us on the spot, but Kelley using her killer instincts called us out and won us over with her sneaky sneaky ways, taking the robbery target of her family.

I then entered into a torrid affair Dale which went on to inspire the short story and Academy Award Winning film Brokeback Mountain – I wish he knew how to quit me, but I have moves.

We remained close with the Wentworths throughout the years and played an integral role in helping craft Kelley’s casting campaign and connecting her with the right players going into the season.

If only we had taught her how to effectively handle balls!

There was only one thing we could make to help her move past the crushing, million dollar fumble and that is a nice, boozy Jelley Wentworth.

Jelley Wentworth
Serves: 6.

Ingredients
200ml vodka
100ml peach schnapps
200ml cranberry juice
200ml pineapple juice
5 leave gelatine
1 oranges, flesh diced
1/4 cup glace cherries, finely diced

Method
Combine all of the liquid in a large jug, giving a good stir.

Tear all of the gelatine into small pieces and place in a small ceramic bowl and just cover with hot water. Leave to soften for 15 minutes.

Bring a small saucepan of water to a simmer. Place the bowl of gelatine on top and stir until completely dissolved. This should take about 5 minutes.

Once dissolved, combine with the liquid in the jug. Give it a good stir and decant, through a fine sieve, into 6 containers. Obviously martini glasses are preferred.

Refrigerate until set – about 6 hours should do.

Devour and think tropical, almost a millionaire thoughts.

Keeping it Kardashian Khristmas, Sweets

Although we are putting on a delicious Christmas spread for her, Kenny Jenner actually really owes us one.

Kendall, or Kenny as she goes by with her inner circle, had the honour of featuring on the Victoria’s Secret runway this year. Did she look amazing? Yes. Did she deserve the opportunity to strut her stuff? Totally. Would she have gotten there without us? No way!

You see, Victoria’s Secret had been positioning our nemesis Ariana Grande to take one of the esteemed runway spots this year. Ariana was invited to perform at the 2014 show as a primer for a walking gig in 2015 – a spot Kenny was desperately coveting. As we had insider goss, we came up with a plan so beautiful the likes of it hadn’t been seen since Fabio copped a goose to the face (also our doing).

You guessed it – we got that bitch wing-slapped. Let’s  be honest, no-one wants this face sauntering down the runway. Kenny was officially in for 2015!

While we haven’t decided how she can repay us just yet, it is the season of giving and it is high time to gift Kenny with our glorious presence again.

Rumball Jenner
Makes: 20.

Ingredients
250g marie biscuits
1 x 395g can sweetened condensed milk
4 tbsp unsweetened dutch cocoa
2 tbsp rum
1 tsp vanilla extract
1 cup coconut, divided in half

Method
In a food processor, process marie biscuits until fine crumbs form. Add cocoa and half of coconut and pulse until just combined. Tip mixture into a large bowl.

Add rum, sweetened condensed milk and vanilla extract to dry mixture and stir until combined.

Roll heaped tablespoons of mixture into balls and roll in extra coconut. Refrigerate until firm.

Fruit Mince Pylie Jenner

As the youngest member of the Kardashian-Jenner empire, Kylie has a lot of fantastic role models to look up to but she still looks to us for guidance and support, as her beloved god-parents.

Kylie was such a sweet angel when she was born and you just knew she was destined for greatness.

When Annelie was contemplating pursuing medicine, it was only Kyles who was able to provide her with a rational ear, great advice and the lips to see if she would be interested in going into plastics.

You see, she actually only lied about having surgery to avoid getting Annelie in trouble for using C-grade construction cement before even getting into med. Talk about a ride or (nearly) die friend!

Kyles was only able to take a brief amount  of time out of her busy hair-extension and lip contouring schedule to drop by and celebrate Khristmas with her godparents, so we opted for a sweet treat of our Fruite Mince Pylie Jenners.

I used to loathe fruit mince pies on account of their odd mouth feel and the irrational decision that they were filled with just dried fruit and beef or aspic; then I had fresh ones and my life was changed.

These pillowy delights are heavenly, sweet and full of tart cranberries that make them sing. But well, not like Kris.

Fruit Mince Pylie Jenner_2

 

Fruit Mince Pylie Jenner
Makes: 48(ish). Aka heaps.

Ingredients
Mincemeat
60ml brandy
75g muscovado sugar
300g cranberries
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground cloves
75g currants
75g raisins
30g dried cranberries
finely grated zest and juice of 1 orange
25ml brandy
3 drops almond extract
½ tsp vanilla extract
2 tbsp honey

Pastry
250g plain flour
50g icing sugar
125g cold unsalted butter, cubed
1 egg
milk (splash)

Method
Mincemeat
In a large pan, dissolve the sugar in the brandy (60ml) over a gentle heat before adding the fresh (aka frozen in Australia) cranberries, cinnamon, ginger, cloves, currants, raisins, dried cranberries and the zest and juice of the orange.

Bring to a gentle simmer and cook for 20 minutes, or until the fruit has started to soften and has absorbed most of the liquid in the pan. Remove from the heat and allow to cool.

Add the remaining brandy, almond extract, vanilla extract and honey and stir well with a wooden spoon to mash the mixture down into a paste. Spoon the mincemeat into sterilised jars (you know the drill thanks to Meryl) and store in the fridge for up to two weeks.

Pastry
Sieve the flour and icing sugar into a large mixing bowl.

Using your fingertips, gently rub the butter into the flour and sugar until it starts to resemble wet sand.

Add the egg and a dash of milk, and work together until you have a ball. Be careful not to overwork it.

Pat the ball into a thick round disc, wrap in cling film and leave to rest in the fridge for 30 minutes.

Pies
To make the pies you will need a mini tart tin, a small circular object for cutting (we use an upturned shot glass) and a miniature star cutter (just to be like Nigella).

Preheat the oven to 220°C.

When the 30 minutes is up, remove it from the fridge and roll it out on a lightly dusted surface until it is roughly 5mm thick.

Cut out the circles a little wider than the indentations in the tart tins, so that they are tall enough in the tart tins, gently pressing them into shape as you go. Once the tray is full of pastry, add roughly a teaspoon of mincemeat to each pie before topping with a mini pastry star.

Bake in the oven for 10–15 minutes, keeping an eye on them to avoid burning.

Remove from the oven and empty the pies out of the tin and onto a cooling rack. Continue the process until you run out of pastry, storing the leftover mincemeat for future baking or to have with icecream.

When they are all done and cooled, whack some icing sugar in a tea ball and make it look like a winter wonderland … or L.A. in the 80s. Let it snow, let it snow, let it snow!

White Kristmas Jenner

While publicity whoring is something we clearly have in common with the Kardashian-Jenner klan, naturally our history goes back quite some way with mother hen, Kris.

Ben and I first met Kris when we were trying to start yet another ponzi scheme, this time involving somewhat controversial and unorthodox dieting methods. Kris was entering the mainstream after that whole O.J Simpson thing, looking to leverage her personal fame and attempting to launch her new identity, LudaKris.

Ben, LudaKris and I formed a magical business partnership fondly known as Jenny Kraig. Lose 10 pounds in 10 days? That’s LudaKris! Alas, it was ludicrous and we quickly went out of business.

Despite our early failures, LudaKris eventually decided to go sans-Luda and embrace the momager she was destined to be. What klassy treat can we share with our klassy pal?

White Kristmas is everything a festive treat should be – klassic, kolourful and full of kflavour.

White Kristmas
Serves: 16

Ingredients
1 cup shelled pistachios, finely chopped
1 cup dried cranberries
500g white chocolate
2 cups rice bubbles
1 cup shredded coconut
2 teaspoons vanilla extract

Method
Half fill a medium saucepan with water and place on medium heat. Line and grease a rectangular slice tray.

Combine pistachios, cranberries, rice bubbles and coconut in a large bowl.

Place a heatproof metal bowl over saucepan of simmering water. Add white chocolate to bowl and melt over gentle heat. Once just melted stir in vanilla.

Add chocolate and vanilla mixture to dry ingredients and stir until just combined. Pour into prepared pan and refrigerate until set.

Ciera Beesting

It was truly sad to see Ciera idoled out of Survivor: Second Chances. Despite living very different lives (us being super famous and high profile, Ciera never making the final three and therefore being irrelevant), we have always wanted her in our inner circle because, despite her failures, she is a total badass.

You see, we have all disappointed Ciera’s mother/Survivor alumnus Laura Morett through our various types of bad-assery. Ciera made one of the ballsiest moves in Survivor history voting Laura out. Naturally, Laura was pissed but had plenty of admiration for her daughter’s ambitious gameplay.

Rather than voting Laura out, I have never let her in to our highly sought-after inner circle. Recently, Laura attempted to persuade canine political expert and Hilary Clinton advisor Nigella Martha Rodham Hailes (also known as our resident Cavalier King Charles Spaniel) into managing her campaign for Oregon House District 20. Sadly Nigella was busy preparing for Battletoads 2, so it wasn’t to be. Obviously, my constant smack talk about Laura after last year’s amaretti scandal may have influenced this. What kind of monster restricts people to two cookies at a time?

I digress. It is Ciera we are here to comfort on her arrival to Ponderosa. What will provide her some much-needed comfort to ponderova (get it?) where it all went so wrong?

Ciera Beesting
Serves 12

Ingredients
Brioche
¼ cup whole milk
1 tablespoon honey
2 teaspoons active dry yeast
2 large eggs, lightly beaten
1 ¾ cup plain flour
2 tablespoons granulated sugar
½ teaspoon salt
½ cup unsalted butter, at room temperature

Almond topping
½ cup honey
¼ cup brown sugar
½ cup salted butter
¾ cup sliced almonds

Pastry cream filling
1¼ cups milk
1 teaspoon pure vanilla extract or vanilla bean paste
3 large egg yolks
¼ cup caster sugar
2 tablespoons all-purpose flour
2 tablespoons cornflour

Method
In a small saucepan, combine milk and honey and gently heat until just warm. Pour into the bowl of the stand mixer with dough hook attached, add yeast and allow to bloom.

Once yeast has bloomed, add flour, eggs, salt, sugar and butter. Knead with dough attachment until elastic. Cover and allow to rise for 1 hour.

Once proved, butter and line a medium size springform pan. Gently deflate the dough and then add to springform, stretching dough to fill the base of the pan. Allow to rise again for 20 minutes. Preheat oven to 180C.

While dough is proving for the second time, make the almond topping. In a small saucepan, combine honey, butter and brown sugar and stir until combined. Add almonds and pour over risen brioche dough.

Bake in oven for 22-25 minutes or until top springs back and almonds are golden. Leave to cool while you make the pastry cream.

For pastry cream, combine sugar and egg yolks in a medium bowl. Sift in the plain flour and corn flour and gently whisk until mixture is a smooth paste.

In a saucepan, combine milk and vanilla until simmering. Remove from the heat and gently add into the egg/sugar mixture, whisking constantly to temper eggs.

Once all combined, pour back into saucepan and cook over low heat, stirring constantly, until thick.

Once pastry cream is complete, gently split cake with a serrated knife. Place base  back in springform tin, top with pastry cream and then with top of cake. Refrigerate at least 2 hours before serving.

AJ PecLean Pie

When it comes to all-round awesomeness, it is safe to say we have left the best of the BSBs until last. AJ McLean has achieved so many things in his life that we desire, it is hard to be thankful for AJ’s success and not a tad envious.

Ben and I met AJ in the typical fashion – rehab. He was in for a stint for alcohol addiction after bandmate Kevs organised an intervention. We were in there for psychiatric assistance after trying to bump off Jonathan Lipnicki on the premise he had a punchable face.

While we bonded through finger painting and group bingo, AJ shared the tale of his incredible life. Not only had he lived close to Walt Disney World, he had also appeared on the legendary Nickelodeon classics GUTS and Sabrina the Teenage Witch. Swoon.

AJ, thanks for putting our somewhat mediocre lives into perspective. It’s always good to remember that if you haven’t made it on GUTS (or better yet, legends of the hidden temple) you are an unlovable loser who doesn’t deserve happiness.

Today we give thanks for the Gods that are the Backstreet Boys! And for a valid reason to eat delicious, delicious AJ PecLean Pie.

AJ PecLean Pie
Serves: 12.

Ingredients
1 9″ deep dish pie shell
1 cup brown sugar
1 ½ cups golden syrup
⅓ cup melted salted butter
2 teaspoons vanilla extract
4 eggs
2 cups pecans

Method
Preheat oven  to 180C. In a saucepan, combine brown sugar and golden syrup and gently boil for approximately 3 minutes.

While syrup and sugar is cooking, break eggs into bowl of stand mixer and very gently beat until yolks and whites are combined.

Once syrup mixture is ready, set stand mixer with eggs on lowest mixing speed. Gently pour in syrup while eggs are mixing, allowing them to temper. Do not let mixture froth up.

Once syrup and eggs are combined, stir in melted butter, vanilla and pecans. Pour filling into prepared pie shell and bake for 40-45 minutes or until just set. Refrigerate for 3-4 hours or until cool. Serve with whipped cream and no regrets.

Butterscotch PecAndrew Savage Cake

Well that was a pleasant little surprise on last night’s episode!

I mean, yes, we are friends with Savage (closer to frenemies) via his Pearl Islands cast-mate and two-time champ Sandra Diaz-Twine, there is nothing we love more than a delightful blindside. Particularly when it involves an idol blindsiding the entire tribe and poor Lil’ Fish, sexy-pants Joe and our favourite Unholy Trinity, Abi, Ciera and Kelley surviving another round.

Let’s not beat around my bush here, Andrew Savage was ropable when he greeted the Queen of Ponderosa and us after his weigh in; shouting expletives about those damn twists that just won’t let him win and how his perfect life, complete with wife, past legal career with Playboy and copious amounts of the money, is now ruined.

Thankfully, Annelie and I knew how to help break him out of his funk and dressed up as Skinny Ryan and Lil and challenged him to a cage-fight to work through him anger.

Once he was calmed, Savage was philosophical about the whole experience; understanding the importance of not everything going his way and feeling remorse for the way he flipped off Abi after she so thoughtfully pointed out he had bettered his place since the Pearl Islands and made the jury.

While he was sad that he will no longer be able to witness Joe’s balls move, and then move a little more resulting in Keith being solid and Joe’s (and probably Probst) having tight forearms, he was thrilled to be attending all future tribals, particularly after a stomach full of our Butterscotch PecAndrew Savage Cake.

This little number is a tweaked version of a Martha Stewart cake that is so rich, decadent and firmly upper-middle class and judgemental of anything different, that we knew it was the perfect pick-me-up for Andy Pandy.

Butterscotch PecAndrew Savage Cake_2

 

Butterscotch PecAndrew Savage Cake
Serves: 10-12. Or a ropeable bootee, a Queen of Ponderosa and two crazies dressed as Ryan Shoulders and Lil.

Ingredients
Cake
3 ¾  cups plain flour
1 ¼  tsp baking powder
¾  tsp baking soda
2 ½  tsp salt
285g unsalted butter, softened
2 ½ cups muscovado sugar
4 large eggs, room temperature
20ml pure vanilla extract
1 ¼ tsp dark rum
1 ¼ cups buttermilk, room temperature

Icing
345g butter, 115g left as a block, 230g cut into small pieces, softened
2 cups muscovado sugar
1 cup double cream
½ tsp salt
570g cream cheese, softened
½ cup icing sugar, sifted

Butterscotch
⅔ cup muscovado sugar
85g butter, cut into pieces
150g raw caster sugar
30ml water
¼ tsp coarse salt
½ cup double cream
2 cups pecan halves, toasted and chopped, plus more halves for garnish

Method
Preheat oven to 160C. Grease three 20cm pans and line the base with baking paper.

In a medium bowl, whisk the flour, baking powder and soda, and salt.

In a large bowl, beat the butter and muscovado sugar using a stand mixer on medium-high speed until pale and fluffy. This is roughly 6 minutes. One at a time, beat in the eggs, beating well after each addition,followed by the vanilla and the rum.

Add half of the flour mixture, removing the paddle to mix through lest you want a massive flour massacre sprayed against your walls, put it back in the stand mixture and put on low before slowly adding half of the buttermilk. Repeat the process with the remaining flour and buttermilk. Increase the speed to medium-high, and beat for a further 2 minutes to completely combine.

Split the batter among the three pans and bake until golden brown and an inserted skewer comes out clean, about 30-40 minutes. Transfer to wire racks, and let cool slightly before turning the cakes out and cooling completely. Emphasis on completely.

While the cakes are cooling, start on the icing by melting the block/chunk of butter in a medium saucepan over medium heat until golden brown, about 8 minutes. Add the muscovado sugar, cream and salt, stirring until sugar is completely dissolved. Bring to the boil, whisking constantly, and cook for 3 minutes. Transfer to a large mixing bowl and leave to cool. If you’re in a rush, pop it in the fridge for twenty minutes, stirring half way through, to help the process along.

Put the bowl in the stand mixer on low speed, add the cubed butter, a few pieces at a time, and beat on low until incorporated. Increase to medium, and beat for 2 minutes. In another bowl, beat the cream cheese and icing sugar on medium-high until fluffy and smooth, about 3 minutes. Don’t over-beat or the cream cheese will go soft. Add brown-butter mixture to cream cheese, and beat on medium speed until smooth. Cover, and refrigerate until chilled, about 4 hours.

To make the butterscotch, mix the sugars, water, butter and salt in a small saucepan over medium heat, and cook, stirring, until the sugar dissolves. Bring to the boil and cook for a further 2 minutes. Remove from the heat and whisk in the cream before returning to the heat for a further 2 minutes. Leave to cool slightly while you prep the cakes.

Trim the top off two of the cakes and both the top and bottom of third (for the middle) to create flat, absorbent surfaces.

Take the butterscotch and brush about 100ml of the butterscotch on each cut side. Leave to cool.

Remove the icing from the fridge and spread 1 cup of icing on the butterscotch side of the base layer. Place the middle, double-sauced layer on top. Spread 1 cup of icing on the middle layer, then place the final layer on top, sauce side down. Spread 1 cup icing on the top and sides and refrigerate until firm, at least 2 hours (or it may get melty…like the pictures because of the Cambodian heat.

Using a spatula, spread remaining icing (or less, it makes stacks and lets be honest, those offcuts aren’t going to eat themselves so may need some leftover sauce/icing to entice you), on the top and sides of cake. Press chopped pecans on sides and garnish top with halves. Refrigerate for a further 4 hours and devour.

On plates, or as per Probst’s suggestion, on Savage’s naked body. Kass, surprisingly, Annelie and I went for plate option.

Ken is such a doll – you have no idea!

While I had the pleasure of catching up with Ken for drinks at PUMP just after seeing Lisa last year, poor Annelie wasn’t able to attend and, I think, has been struggling with missing our Hollywood father-figure a little more than I do.

As fans would know, Ken is kind, thoughtful and loving man and despite being solo (he didn’t want Giggy to end up in a Pistol and Boo scenario) he filled our house with so much heart!

Ken regaled us with spoilers from the upcoming season of RHOBH (you’ll never guess who Rinna glasses this year), while we gave thanks for our achievements over the last year and brainstormed ideas for the next venue in the Vanderpump-Todd dining dynasty.

Given that our date was to celebrate an early thanksgiving, and Ken is such a sweetie, we had to go with our Spiced PumpKen Todd Muffins.

Pumpkin is probably one of my favourite ingredients, the sweetness mixed with the earthy, rich, woodiness is so versatile and so delicious.

Add it to a cinnamon coated muffin and you’re in heaven. Enjoy!

 

Spiced PumpKen Todd Muffins_2

 

Spiced PumpKen Todd Muffins
Serves: 8.

Ingredients
small butternut pumpkin, baked and blitzed into a puree (you’ll need 1 ¼ cups puree)
140g unsalted butter, room temperature
3 cups plain flour
2 ½ tsp baking powder
¼ tsp baking soda
1 tsp coarse salt
½ tsp ground nutmeg
¼ tsp ground allspice
⅓ cup buttermilk
¾ cup dark brown sugar
2 large eggs
¾ cup raw caster sugar
2 ½ tsp ground cinnamon

Method
Preheat oven to 200°C. Place the pumpkin on a lined tray and baking for about 50 minutes. Remove from the oven, slice in half, seed and leave to cool for about half an hour. Once cooled blitz into a puree in a blender or food processor.

Reduce the heat of the oven to 170°C.

Whisk the flour, baking powder, baking soda, salt, nutmeg, and allspice together in a medium bowl. In a separate bowl, whisk together the buttermilk and pumpkin puree.

In a large bowl, cream the butter and sugar on medium speed of an electric mixer until fluffy and pale brown. Beat in the eggs, one at a time. Reduce the mixer to low and add a third of the flour mixture, then add half the buttermilk-puree hybrid, followed by another third of flour, the rest of the buttermilk-puree and then, you guessed it, the last of the flour.

Divide the mixture evenly amongst 8 lined Texas muffin tins and bake for 30 minutes or until a skewer comes out clean. Let muffins cool for 10 minutes on a wire rack in the pan.

While they are cooling, combine the caster sugar and cinnamon in a small bowl.

One at a time, remove the muffins from the pan and toss in the sugar mixture until coated and place on the wire rack. Repeat until they are done.

Devour.
