Previously on RuPaul’s Drag Race the producers once again proved to be shady little icons, as the top six starred in Wigloose! The Rusical, mere moments after Anetra sent Marcia Cubed home in the lip sync of the season. After everyone kind of knocked it out of the park and slayed the runway, leaving Ru to jump on the shade train and task his dolls with identifying who should go home for him. Luxx gave an elaborate Ted Talk about how wonderful and unique everyone is except for Loosey, Loosey and Anetra said Salina, Salina returned serve and identified Loosey while Mistress wanted to put an end to Sasha’s meet and greet. Sasha on the other hand wanted to cut Luxx or Loosey for being her biggest threats. Ultimately though another emerged as Anetra took out her second victory, before Loosey defeated Salina and sent her back to WeHo.

Backstage the dolls were disappointed to have lost Salina, well mainly just Sasha, who considers her a friend and shared how proud of her she is. They discovered her mirror message was about her deserving to go home, which obviously made Loosey feel a certain way, given her name was said multiple times too. And you know she felt it just sucked. As they sat down, Mistress laughed about how she could have been mean but didn’t, so hello congeniality era, yet again. Luxx meanwhile doubled down on EVERYTHING she said, with Loosey trying to be calm as she said she will obviously disagree. She bit her tongue as best she could, with Luxx shutting it down, reminding them the end is in sight and that she will be doing nothing but focusing on making it.

The next day the tension was put aside as Mistress assured them she will be winning this week before Ru dropped by to briefly distract them with a little Spill The Tea mini challenge, complete with Norvina. Basically it is a quiz where they have to answer questions guessing who the group thinks will be the most likely answer. If that makes sense, because I really struggled to think that one through. In any event, it was a little bit shady and a whole lot of fun, with everyone kinda feeling their oats and laughing it up, with Loosey even saying she will be the next to go home just to guarantee her victory in the challenge.

After Norvina was swept away, Ru announced that for this week’s maxi challenge the dolls would makeover teachers in honour of his High School drama teacher. And as the winner of the mini challenge Loosey had the power to pair up the queens with their teachers and while she had the opportunity to be shady, she literally paired them up with their most similar person. Well everyone except Luxx, meaning she is either winning or sending Loosey home and there is no in between.

The duos split up to get to know each other with Anetra’s teacher – Mrs Mahoney – a Drag Race superfan absolutely adorable, despite being nervous to walk the stage. Loosey praised Mrs Wallace for being so smiley and happy and they are super similar, so this should be easy for Loosey. Mistress and Miss Tang were essentially twinning and I love that for them, particularly as her teacher broke down as Mistress thanked her for living proudly and vibrantly for her students. Sasha and Mrs Marchbanks – who watches Drag Race with her husband – were ready to go OTT and pad for the Gods, while Luxx just seemed a little awkward, despite Mrs Reyes giving her full control over everything. While Luxx worked on the outfits and completely forgot they needed to form a relationship too. Mistress’ daughter quickly learnt to be as shady as her mama, challenging Loosey’s daughter to a walk off. And while I’d love to say Mistress and her baby won, Loosey’s daughter kinda served. But trust, Mistress was focused on winning when it counts.

Ru dropped by to kiki with the queens with Sasha first up introducing her daughter Ferocity Colbybanks and talking through their sexy Hawaiian looks. Mistress rightly played on her daughter’s name, christening her Madame Thang, with her sharing she will also be whipping up two velvet gowns. Which will be super easy to hide a kitten heel under, just in case Madame can’t walk. Oh and Madame Thang is adorable and I love her. Anetra and her daughter were awkward and giggly, and I love them. As does Ru, so lets hope they both walk that fucking duck. Luxx and Mrs Reyes – aka Asia Azul – were very mismatched and while I want Mrs Reyes to kill it because she is adorbs, I have a bad feeling. While Lala and Loosey LaDuca were going with the vibe of rich ladies at the beach, with Ru getting shady and asking Loosey how she felt about queens saying she should go home. And what do you know, she would have Ru believe that she is completely unbothered.

Oh and before Ru departed she announced that in addition to walking the runway, the newest queens would also be lip syncing. So they have even more work to do. Loosey and Lala were first up to talk through lip syncing and Mrs Wallace is such a delight, I want only good things for her. Sasha was delighted her daughter knew who Leiomy is, Mistress went full Abby Lee on her daughter while Anetra tried to help her find her duck walk. And well, poor Luxx’s teacher was giving mum dancing and it was so sweet and she needs to win just because of that.

Elimination Day arrived with everyone split up to get their daughters in drag, wth Anetra proud hers wants a resting bitch face. They then bonded over wanting to find a place to escape reality, before Anetra asked if she believes people can unlearn bigotry and even just hearing Mrs Mahoney talk about how she definitely thinks things can always get better, I am filled with hope. Luxx’s teacher asked if she had experienced homophobia, with her opening up to Luxx that she left her church because she couldn’t stand them not accepting her children. Like a damn boss. Mistress’ daughter was nervous about walking the runway but distracted herself by getting shady, asking everyone to talk about their track records. With Loosey continuing to believe mini challenges matter. Mistress pointed out that Lala looks exactly like Loosey before they taught the dolls some slang. While poor Asia Azul looked bored and sad. While Loosey felt Mistress’ teacher looked like a Disney Villain, which is basically Mistresses vibe, so win.

Ru, Michelle and Ross were joined on the panel by Hayley Kiyoko as Sasha and Ferocity Colby walked the runway looking absolutely perfect. They were twinning, they were glam and oh so confident, and I love it. Loosey and Lala gave girls-trip realness, Mistress and Madame were full on glamazons before Luxx and Asia looked beautiful but gave zero family resemblance. And well, then Anetra and Alektra gave sexy Dr Evil and Mini Me realness and well, crown them now. 

The judges gave Sasha nothing but praise for giving complete family resemblance and clearly vibing. Ferocity meanwhile loved being padded. Loosey was praised for looking alike, though Michelle felt they weren’t on the same page on the runway while Ross wished that Lala’s shoes had been stoned for the occasion. Mistress was beloved for dripping in chemistry and attitude, before Luxx was praised for making Asia look so stunning – and giving off Jennifer Coolidge – before being read for doing absolutely nothing to give resemblance. Oh and then Anetra was praised for knocking everything this week completely out of the park, particularly for inventing the arm foreskin. And by the time she praised her teacher for bringing all the queerness to the classroom, it was clear it was another win for her.

Before sending the queens backstage, Ru put the teachers through their paces in their first lip sync for their lives to Ru’s Champion and well, they were all so amazing and living their best lives. And yeah, I love them. Particularly since Mrs Reyes is basically Jennifer Coolidge when she moves too.

Backstage the dolls toasted themselves for making the top five before Luxx announced that she knows she will be lip syncing. But trust and believe, she is ready for a fight and good luck to whoever she faces. She then pointed out Loosey is likely lip syncing with her, with Loosey agreeing, though quickly pointing out that she disagrees completely with the judges opinions and thinks she doesn’t belong in the bottom. Luxx accepted all of her critiques, though pointed out her teacher was living and having star quality is clearly their family resemblance. She then asked Loosey why she was shady with the allocations, with her trying to say it was because she was competition before admitting it was also because she was rude to her, leading to some epic tension. For ages. Before Mistress turned things positive, praising Anetra and Sasha for doing so well.

Talk turned to the teachers with Luxx living for how lovely Asia is as a parent, protecting her queer kids and supporting them to live their authentic lives. Loosey asked her sisters about their drag families, with Sasha pointing out they can provide all the love and support that queer people often miss out from their bio families. Sasha then got a call from the iconic Kerri Colby and ugh, I love her so much. And how much she is riding for Sasha to take out the win, which is correct. Loosey was up next with a call from her family and friends, breaking down as she got the unconditional love and support she had clearly needed. She then opened up how hard it is to be away from her family, apologising for being robotic due to being so focused on the competition.

The teachers dropped by to join their mothers who brought a lovely energy to the room, with Mistress explaining why Loosey and Luxx were rehearsing. Sasha’s teacher thanked her for making her dreams come true and then asked to stay in touch and ugh, I am so damn jealous she gets to be Sasha’s friend.

Ultimately Mistress and Sasha were sent to safety before Anetra rightly took out her third win of the season, leaving Loosey to lip sync for her life against her nemesis Luxx. And well, maybe she shouldn’t have set up Luxx, because she can turn it. That being said, you know that Loosey felt she didn’t belong in the bottom and was angry. So angry, she was ready to demolish Hayley Kiyoko’s For the Girls. As Loosey fought valiantly, giving camp and sass, Luxx was all fire, giving tricks, energy and all the sex and ugh, it was good. But sadly, once again track record took precedence as Luxx was sent to safety leaving Loosey to exit. In tears. 

As she found me back in the Werk Room, I pulled her in for a massive hug and praised her for giving such a dominating performance across the season. While her sisters – and maybe the producers – kinda trolled her or didn’t give her the flowers she often deserved, there is no denying she is a killer queen. Just sadly sometimes she was a little too polished, which appears to be triggering for Ru. I assured her that she did an amazing job throughout the season and reminded her that while queens like her often get trolled in regular seasons, they are usually the ones that dominate All Stars. Which is something I definitely see in her future, like a young DeLa for instance. And with that reference of BenDeLaChrist, she was once again her happy bubbly self and ready to tackle the world with a belly full of Loosey LaDucanut Cake.

Coconut has a very special place in my heart and I’ve spent years hunting for the ultimate coconut cake recipe, with this coming the closest to perfection I personally can muster. Sweet and flavourful, with a gorgeously light icing coated in chewy coconut, it is truly glorious.

Loosey LaDucanut Cake
Serves: 2 dear friends, 1 being a future All Stars winner.

Ingredients
550g unsalted butter, at room temperature
2 cups raw caster sugar
5 eggs, at room temperature
3 tsp vanilla extract
1 tsp coconut essence
3 cups flour
1 tsp baking powder
½ tsp baking soda
½ tsp kosher salt
1 cup milk
300g shredded coconut, toasted
450g cream cheese, at room temperature
1 tsp almond extract
450g icing sugar

Method
Preheat the oven to 180C and grease two round 23cm cake tins.

Using a stand mixer, cream 350g of the butter and the raw caster sugar on medium speed until light and fluffy. About five minutes. Add the eggs one at a time, allowing the batter to come back together before adding the next, followed by 2 teaspoons of the vanilla extract and the coconut essence. It may look curdled at this point, but keep calm and carry on.

Remove from the stand mixer and sift in the flour, baking powder and soda, followed by the salt – which probs won’t sift – before folding into the batter, slowly adding milk as you go until it is all just combined. Return to the mixer and beat on low for a minute or two to ensure it is all together. Remove again, fold through 120g of the shredded coconut until just combined.

Divide the batter between the pans and transfer to the oven to bake for 45 minutes, or until golden and an inserted skewer comes out clean. Transfer to a baking rack to cool for half an hour before turning out and cooling completely.

As the cake gets chills, cream the cream cheese and remaining butter with the remaining vanilla and almond extract for a couple of minutes. Slowly add in the icing sugar and mix until smooth and combined.

When the cakes are cold enough to not ruin your hard work, pop a cake on a serving platter and spoon some icing on top to give about ½ centimetre layer once the second cake is stacked on top. Ice the top and sides of the cake before pressing with the remaining shredded coconut (and any extra, if desired) to coat the cake. Then devour, greedily.

Previously on Drag Race, Ru had a case of the guilts over sending dolls home before the two groups came together, so brought Orion and Daya Betty back to the competition. And to welcome them back, Ru decided to throw not one but two balls (aka one theme for each OG group). On the designed runway, June hid her dress behind flowers and refused to show off her handiwork while Maddy was read for being basic. On the other end of the spectrum, Angeria and DeJa were absolute stars but it was Willow who received universal praise and snatched her first victory. While Maddy and June battled valiantly to save themselves, it was Maddy who lived to see another day as June became the real first boot of the season.

The queens returned to the Werk Room with Angeria heartbroken to have lost her sister, while Maddy was feeling guilty to have sent someone home. Despite all the girls reminding her not to feel bad about it. Daya meanwhile felt she needed to show a little more personality if she wanted to make it further, which is rich coming from someone who lip synced to Pink by choice. After sitting down, Kornbread led the group in congratulating her sister Willow on the win before Orion asked the queens if anyone felt they should have won instead. Which obviously led to a very long monologue from Jasmine before she broke down over being safe. Which obviously elicited an eye roll from Bosco, before Alyssa admitted that she too was disappointed she didn’t do better.

Though without theatrical tears.

Jasmine was far happier the next day, as was Willow who had already forgotten that she won money for taking out the ball. Oh and then Kerri spoke for all of us, asking Jasmine why she doesn’t stop talking. As Jasmine tried to explain herself, Kornbread jumped in and pointed out that as someone who loves to talk, she thinks the difference between them is the fact Jasmine monologues and doesn’t listen, while Kornbread talks with  people. Which made the dolls awkward, despite them all agreeing something needed to be said.

Ru made his return to task the dolls with producing two super-tease commercials for their maxi challenge, serving drama, glamour and shade. Since Willow won and Maddy survived the lip sync, the duo were deemed team captains with Willow selecting Kornbread, Lady Camden, Bosco, Kerri and Jorgeous to join her crew while Maddy opted for DeJa, Daya, Angeria, Alyssa and Orion. And the left out Jasmine was allowed to choose her own group, ultimately selecting Willow’s team, despite the fact she and Kornbread aren’t good Judy’s.

The groups split up to start working on their commercials with Jasmine wanting to prove to her sisters she is a team player but more importantly, Willow is keen to be inspired by Drop Dead Gorgeous. Which is *chef’s kiss*. Kerri was happy to play stupid but wanted to stay pretty, while Bosco wanted to be a baby slut. Jorgeous meanwhile was in her head. Kornbread continued to just be completely over Jasmine, likening her to oatmeal raisin cookies when you want a snickerdoodle, which honestly speaks to me on a deep and profound level. Jasmine suggested that maybe she, Kornbread and Kerri should play out their fight in the ad and ohhhh girl, there is tension and this could be brilliant.

Over with the other girls, things were far more congenial as Angeria was ready to act, Maddy was re-working iconic lines from the series and everyone was just having the best time and supporting each other. Though not really living for any of Alyssa’s suggestions.

Team Willow first up to film with Carson and Michelle, with Jasmine sadly not talking at the one time that everyone needed her to. Well, until the second take where she finally found her feet. When it came to their stint in untucked, Willow really shon as she realised she was on the wrong show. Bosco was ridiculous and slutty while Kerri continued to be self-aware and charming, despite struggling with her lines. And Jorgeous was just fun and charming. Oh and Kornbread doing Silky was a little bit triggering, and I’m not sure if it will land.

Team Maddy meanwhile were perfection from the start with Angeria and DeJa slaying their fight and being completely ridiculous. I mean, Maddy spoke about her dad’s disowning her when she came out as straight and getting disowned. On the other hand, Alyssa kept forgetting the cues, ultimately messing things up for her sisters. 

Elimination Day arrived with the dolls splitting up to get ready for their Night of 1000 J Lo’s runway, which filled Jorgeous with confidence given she has done J Lo looks before. Daya and Bosco meanwhile were checking in with Jasmine, admitting they were shocked she chose to work with Kornbread though Bosco was glad they were able to work so well together in the challenge. Maddy and Alyssa meanwhile were bonding over their fathers, with Maddy not sure how her dad feels about him doing drag. Alyssa’s dad meanwhile came out to her when she found Alyssa’s dial-up porn and ugh, it is so damn sweet. 

Kerri meanwhile was thirsting over Alyssa’s package while she and her fellow aunties Angeria and Kornbread were laughing it up and had Lady Camden in hysterics as she learnt all the new lingo. The queens were interrupted by a little message from J Lo herself where she gave the queens some advice for the rest of the competition. Which was essentially quoting her lyrics and ugh, it was basic But I love it.

Ru, Michelle and Ross were joined by Loni Love on the judges panel as Willow slayed the runway in an ugly-stunning fitted baby blue number J Lo rocked at a ‘90s Grammy ceremony. Kornbread took me to church in the 2018 Met Gala look while Camden was stunning and sporty in the 2019 CFA awards ceremony, giving all the I Dream of Genie teas. Bosco served in the wet golden, golden globe look, Kerri gave us the iconic Versace runway dress aka the look that launched Google Image search. Like, the actual dress though. Somehow.

Jorgeous was perfect in a mirrored bodysuit inspired by J Lo’s superbowl show while Jasmine was pink perfection in a Dior inspired look while Maddy stole the show in the J Lo does the  Inauguration look. DeJa was gold, blue and stunning in a VMA performance inspired look. Daya gave a pink and black rocker look from J Lo’s super bowl show before Angeria shut it down in a silver, glittering  2019 Met Gala inspired number. Alyssa Hunter meanwhile slayed in a white suit with a bedazzled corset underneath as Orion gave her signature tired/bored – in a good way – look in a red velvet number.

Team Willow’s commercial was up first with Camden hilariously playing an American imposter, while Willow was perfectly bizarre, Kerri was hilarious and Bosco, honestly, stole the damn show. Team Maddy’s was even more demented from start to finish, with their scenes feeling like actual things that would happen in the show, and well, they all did great, though Angeria once again proved she is an absolute star.

Ultimately Lady Camden, Bosco, Jorgeous, Jasmine, Maddy, Daya and Orion were sent to safety and once backstage, Jasmine immediately shared how grateful she is to be safe. A marked difference from her reaction last week. Jorgeous meanwhile was super emotional though as she felt so disappointed in herself during the challenge and she is just so shocked to be safe. As is becoming tradition, Camden stepped in to give her a beautiful pep talk and praised her commitment and willingness to give everything a try. Jasmine meanwhile praised Orion for looking a million bucks before Bosco congratulated Maddy for doing such a good job leading her team.

Daya jumped in to reiterate how great it was to work with Maddy and how supportive and helpful she was, while Maddy was happy to be safe despite wanting to have that star moment leading the team to victory could have given her. Camden opened up about being terrified of the challenge and how she spent most of the week in her head, though realised that she needs to just put aside her fears, stop holding back and let herself shine. Jasmine agreed that she tried to challenge herself this week, with Bosco congratulating her for trying to adapt her behaviour and make friends.

Meanwhile on the Mainstage, Willow was praised for her commitment in the ad and serving the ridiculous. And for giving a look outside what people would expect from the theme. Kornbread’s outfit meanwhile received universal praise though she was read for being one note in the challenge, with Loni encouraging her to stop relying on fat jokes. Kornbread broke down on the runway, explaining that the competition has brought up a lot of traumas from her past but that she is ready to heal. With the love and support of Ru. Kerri received universal praise for J Lo’s iconic green dress, though Michelle begged Kerri to let go and allow herself to be ugly because that is how she will star.

DeJa received universal praise for everything she did in the challenge and on the runway, as did Angeria with the judges proud of how she managed to land every single one of her very big swings. And while Alyssa’s runway was beloved, the judges felt she was too one note, despite being ready to go for it. She too started to break down, admitting that she has struggled with the language barriers she has come up against in the competition. And well, it was heartbreaking.

The tops and bottoms joined the vers girls with Kornbread admitted it is her, Kerri and Alyssa that are vying for the two lip sync slots. Kornbread meanwhile suggested DeJa should be getting her first victory this week and when she tried to open up, Kornbread spoke about how she was okay with the critiques she got as everything she got was simply little tweaks here and there. Angeria congratulated Willow on slaying the game, with Willow admitting that she thinks Angeria or DeJa are definitely winning because their video was way better. Which led to the girls all praising her for dominating the competition.

Alyssa opened up about struggling to get on her sister’s levels to be funny in the competition and was certain she would be lip syncing against Kerri. She then thanked her sisters for being so loving and supportive and ugh, I just love all of the dolls. Kerri opened up about being disappointed to land in the bottom though was ready to slay the lip sync and put her critiques into practice. Though she may need to borrow her sister’s ugly clothes, since her looks are all perfect. As Jorgeous started to break down, Kornbread cut her off and told her to believe in herself, accept that she is safe and know that the judges see something in her. And as such, she should too.

As the bottoms split up to learn the lip sync, Maddy pulled Alyssa aside to apologise for her landing in the bottom as she felt responsible as the team captain. With Alyssa assuring her that she is not responsible and she was so glad to be on her team. And ugh, again, the dolls are all so sweet with each other this season. 

Back on the mainstage, DeJa was the first to be sent to safety before Angeria took out another, very well-earned victory. That meant Willow was also safe, before Kornbread was saved from the bottom two, leaving Kerri and Alyssa to face off to J Lo’s Play. And oh my God, did Kerri serve despite how scared she was to ruin the dress. Alyssa was flipping and dancing around the stage but by the time she grabbed her money gun and it didn’t work, she fell flat. Kerri was funny, charming, cheeky and gave casual voguing and well, I know I love her, but she well and truly earnt the right to survive. As poor Alyssa pulled out her candy bar where she discovered it was once again, just chocolate. And then they literally inserted a sad trombone as she exited the competition.

Backstage poor Alyssa was emotional to leave so soon but I quickly reminded her that while she left early, she did get to show the world how flawless her drag is and honestly, she is the perfect kind of queen to come back and totally dominate an All Stars season. With that, with laughed, we cried and quickly demolished an icy Alyssacado Hunterrine.

Gorgeously smooth and oh so sweet, this dessert terrine has it all. The fresh earthy avocado perfectly blends with the sticky sweetness of the condensed milk. Then when you had in the glory that is some toasted coconut, well, you’re in heaven.

Alyssacado Hunterrine
Serves: 8.

Ingredients
Coconut Macaroon
70g shredded coconut, lightly toasted plus extra to top (which I forgot)
40ml sweetened condensed milk 
2 eggs, separated
1 tbsp raw caster sugar
1 tsp kosher salt
Avocado Mousse
2 large avocadoes
2 tsp gelatin powder dissolved in 2 tbsp of boiling water
160ml sweetened condensed milk 
1 lime, zested and juiced
¼ cup thickened cream 
Coconut Mousse
¼ cup thickened cream 
50ml sweetened condensed milk 
½ cup coconut milk 
2 tsp gelatin powder dissolved in 2 tbsp of boiling water

Method
Start by lining a loaf tin or terrine mold with some plastic wrap and preheating the oven to 180C.

First work on your macaroon log by combining everything in a bowl and stirring until just combined. Spoon into a sheet of baking paper and roll to form a tight, condensed log. Transfer to a lined baking sheet and pop in the oven to bake for 20 minutes, or until starting to golden on the outside. Remove from the oven and allow to cool completely.

To make the avocado mousse, combine the avocados in a blender with the condensed milk, lime zest and juice and cream and blitz until smooth. Add the gelatin and blend until just combined. Pour the mousse into the lined terrine mould, smoothing out the top before gently pressing the macaroon log into the top leaving just above the surface. Cover and transfer to the freezer to set for a few hours or overnight.

Finally combine the thickened cream and condensed milk in the bowl of a stand mixer and whip until soft peaks form. Combine the coconut milk and gelatinous water in a jug, and with the mixer on low, slowly pour in to the thickened cream so it maintains its volume and doesn’t split. Once combined, pour over the top of the avocado mousse, cover and return to the freezer to set for another few hours.

To serve, remove from the freezer to rest for ten minutes before slicing and serving with a sprinkling of toasted coconut. Then devour.

All up in Schitt's Creek Week, Dessert, Snack, Sweets

After a glorious week attending the powerful Golden Globeswith future President Winf- on a table in the front row – and spending time with Eugene, Cath, Em and Dan honouring the triumphant return of Schitt’s Creek, we’ve tragically come to the end of the celebration. And I am so thankful it is with the perennially delightful and delightfully snarky Annie Murphy.

Despite appearing with my friends Mish and Corbs in the TBL pilot, I didn’t connect with Ans until she appeared in an episode of Blue Mountain State. I was part of Denise Richards’ entourage of the time but was quickly taken by her spunky attitude and became the best of friends.

When it came time for Eug and Dan to cast the show, I immediately got Annie on the phone and said – in my best Moira voice – “you simply just have to audition, my dear. It is the role you were born to play!”

I think it goes without saying that I was completely right. Though really, that goes without saying as I’m always right. Just ask my husband!

Like the four that came before her, it was such a treat to get some qual time with my girl – plotting potential ways I could join the cast, laughing about TBL and smashing a tray of my Nannaimurphy Bars.

 

 

A little bit custard, a bit choc and co(conut) – this Canadian classic is near perfection. Sweet, earthy and velvety smooth, I would smear it all over my body if Allez-Vous said it would work.

Nannaimurphy Bar
Makes: 16 squares.

Ingredients
250g unsalted butter, plus 2 tablespoons for the topping
⅓ cup cocoa powder
¼ cup muscovado sugar
1 ¾ cups Lauren Graham Cracker crumbs
1 cup shredded coconut
¼ cup almonds, finely choppedThis Hour Has 22 Minutes
¼ cup walnuts, finely chopped
¼ cup double cream
2 tbsp vanilla custard powder
2 cups icing sugar
2 tsp vanilla
150g milk chocolate

Method
Bring a small saucepan of water to boil over high heat. Place half the butter, the cocoa and muscovado sugar in a large heatproof bowl and heat over the bubbling water until the butter has melted and the mixture is nice and smooth. Obviously if you have a double boiler, use that, bit I’ve never seen one. So, yeah.

Remove from the heat and fold through the graham crackers, coconut, almonds and walnuts until well combined. Press into a lined square baking dish until firmly packet and smooth. Transfer to the fridge to chill while you work on the filling.

Place the remaining butter – sans the 2 tbsp, obvi – in the bowl of a stand mixer with the cream, custard powder, vanilla and icing sugar, and beat on medium until smooth and fluffy. Dare I say it, hella fluffy even. Smooth it over the base and return to the fridge to set.

Get the old poor-man’s double boiler going again – after cleaning it, of course – and melt the chocolate and butter together until well combined. Remove from the heat and allow to cool for about five minutes before pouring over the slice.

Return to the fridge and chill for a couple of hours.

When it is good to go, slice with a warmed knife and promptly devour.

Macarooney Mara

Dessert, Snack, Sweets

Honestly – there aren’t enough kind words in the sixteen most common languages in the cosmos to describe how wonderful Rooney is. I mean, I don’t want to be off brand and sound like i’m gushing … but damn, she is simply the greatest.

Roons and I met each other in the early noughties while attending Fox Lane High School, and quickly bonded over our similar familial backgrounds. She is one of four siblings, I am one of four siblings, in both our cases, there is also an even split of genders … I mean, we’re essentially the same with just that. But let me tell you, it doesn’t stop there – Roons is the heir to the Pittsburgh Steelers / New York Giants dynasties, I was the heir to a fruit and vegetable empire that supplied the food to the production company that does I’m a Celebrity … Get Me Out of Here.

Oh – you’re welcome for feeding the (all too brief) love of Peter Andre and Jordan.

To top of the similarities, she is from a football family and my dad was – for some reason – on a football card. So yeah, we had a shit tonne in common at school before we even realised that we were both hella cool, artistic and destined for Hollywood greatness.

As I’ve already mentioned, we did have a brief period of nastiness when I found out she was working on Lion with my then nemesis Nicky Kids but not only did she win me back, she sorted through mine and Nicole’s issues and made us the best of friends.

Given she is now eligible for sainthood despite being alive, I wanted to make something as pure and sweet as my girl to say thanks. And there is nothing more pure and sweet than my Macarooney Mara.

 

 

Macaroons are quite possibly the easiest thing you could possible make which I think adds to their deliciousness. I mean seriously, if you ever have an extra egg white you can throw together a batch in less than twenty minutes. Plus, they are sweet, toasty coconut – the BEST … like Roons.

Macarooney Mara
Serves: 6-8.

Ingredients
2 egg whites
⅓ cup raw caster sugar
1 tbsp vanilla extract
1 cup desiccated coconut
1 cup shredded coconut

Method
Preheat oven to 140°C.

Whisk the egg, sugar and vanilla until the sugar dissolves. Add the coconut and stir until well combined.

Divide the mixture into golf-ball sized little mounds and place on a lined baking sheet.

Place in the oven and bake for 12 minutes, or until golden and firm.

Remove from the oven and cool completely on the tray before serving … or resign yourself to eating it with a spoon.

White Kristmas Jenner

Keeping it Kardashian Khristmas, Snack, Sweets

While publicity whoring is something we clearly have in common with the Kardashian-Jenner klan, naturally our history goes back quite some way with mother hen, Kris.

Ben and I first met Kris when we were trying to start yet another ponzi scheme, this time involving somewhat controversial and unorthodox dieting methods. Kris was entering the mainstream after that whole O.J Simpson thing, looking to leverage her personal fame and attempting to launch her new identity, LudaKris.

Ben, LudaKris and I formed a magical business partnership fondly known as Jenny Kraig. Lose 10 pounds in 10 days? That’s LudaKris! Alas, it was ludicrous and we quickly went out of business.

Despite our early failures, LudaKris eventually decided to go sans-Luda and embrace the momager she was destined to be. What klassy treat can we share with our klassy pal?

White Kristmas is everything a festive treat should be – klassic, kolourful and full of kflavour.

White Kristmas
Serves: 16

Ingredients
1 cup shelled pistachios, finely chopped
1 cup dried cranberries
500g white chocolate
2 cups rice bubbles
1 cup shredded coconut
2 teaspoons vanilla extract

Method
Half fill a medium saucepan with water and place on medium heat. Line and grease a rectangular slice tray.

Combine pistachios, cranberries, rice bubbles and coconut in a large bowl.

Place a heatproof metal bowl over saucepan of simmering water. Add white chocolate to bowl and melt over gentle heat. Once just melted stir in vanilla.

Add chocolate and vanilla mixture to dry ingredients and stir until just combined. Pour into prepared pan and refrigerate until set.
