Previously on Survivor the tribes officially merged into the new Viakana tribe where instead of the smaller OG tribes joining forces against the dominant Luvu group, Shan whipped a mega-alliance together leaving Evvie, Xander and Tiffany alone on the bottom. Well, that, and the fact that the drama of the previous tribal council made them all targets and they were willing to throw each other under the bus to get further. At the immunity challenge Probst offered up a bag of rice for the tribe should four people step out of the challenge, which Shan, Naseer, Xander and Ricard were willing to do. As such, Evvie destroyed the remaining competition and since they were immune and the tribe feared Xander’s idol, poor Tiffany was booted from the game to become the Queen of the Jury.

Though not before Heather created chaos at the second tribal council in a row.

After tribal council Heather was trying to run damage control with Deshawn after setting things off rather than just sticking with their alliance’s plan. While Deshawn assured her that he loves her, he does need her to stop being messy given it is now causing problems between him and Shan. Deshawn then went to Danny and questioned why he didn’t speak up when Shan suggested Heather be the new target, as Shan bitched to her alliance about how Deshawn needs to stop being difficult and put the alliance first. Evvie meanwhile was just thrilled because any time chaos occurs in the game it only can benefit those on the bottom. Like say, them.

The next morning the tribe rallied together to watch the sun rise as Shan and Deshawn finally cleared the air, explaining why they had been hurting each other. And then Shan immediately brought up Erika and Heather being dangerous again and suggested they should get rid of them, making Deshawn nervous again. WIth that, he checked in with Evvie to try and rebuild their relationship so that he has options for when the alliance with Shan inevitably explodes. You know, if it hasn’t already.

We then returned to the camp where Naseer was approaching Heather to assure her that there are no hard feelings about her voting for him the night before, which she vehemently denied. Xander watched on relishing the chaos and staying mum over the fact it was in fact him who cast the vote for Naseer before Heather tried to rope Evvie in to back her up. Who immediately threw her further under the bus. And then backed it up and ran her over again.

As the drama subsided the tribe sat down to feast on their rice where Ricard shared that he is hard of hearing, while sharing with us that it is advantageous in the game, given he is used to reading lips and body language. Sadly Shan is so obvious with her moves, that anyone can see what is happening as she pulled Liana, Deshawn and Danny aside to talk strategy directly in front of Xander and Erika. Which immediately made the duo decide to try and rally the rest of the tribe to take control rather than feuding.

The tribe met Jeffrey on a beach where they were gagged to learn that for this week’s twist, they will be split into two groups with one winner from each being immune at their group’s tribal council. Oh and the person that sticks it out the longest also wins stew for their group. Yes, stew. Wait, I missed the main point – for the challenge, everyone would need to stand on a small perch and hold on to a bar behind their head, with the last one standing winning. Erika, Heather, Shan, Ricard and Naseer were set to face off against each other while the rival group consisted of Evvie, Danny, Deshawn, Liana and Xander.

Despite being the last two standing in the last immunity challenge, Evvie and Heather were the first two out after ten minutes. They were followed by Liana and Shan in quick succession, before Danny and Ricard fell out of nowhere, leaving Erika and Naseer fighting out for one immunity and Deshawn and Xander the other. Naseer suddenly dropped, handing Erika immunity, who just as quickly gave up trying for the stew, giving their rivals a feast as Deshawn and Xander continued to fight. As Liana willed the latter to drop, she bitched about hating his face, which is some passionate language for someone you’ve known for 17 days. Which made it all the more funny when Deshawn dropped after 33 minutes handing Xander victory.

Heather, Shan, Naseer, Ricard and Erika were swiftly sent to the former Ua camp to strategise prior to their tribal council with Naseer feeling firmly in the middle of the duos. Shan meanwhile was frustrated that their easy target was now immune. She approached Naseer to get him to join her and Ricard to get rid of Heather, giving she is Erika’s number two. Naseer being too kind, he approached Heather and Erika to let them know that Heather will be going home tonight and while Erika tried to float different options, he continued to give her a big old hell no. Which made Erika decide that the better plan may be to get rid of Naseer.

As Naseer caught up with Ricard, he was puzzled why people are actually thinking of getting rid of a non-threat like Heather out when somebody threatening like Naseer is still around. This led to Ricard catching up with Heather and Erika to float the idea of working together and making Naseer feel calm enough to not play his idol and get blindsided. And while they were down with the idea, Shan was NOT happy about it given she thinks Naseer is a solid number for her and as such, wanted to keep him around. Which made Ricard grow more and more frustrated as the afternoon progressed.

At tribal council Ricard played up how tight he is with Shan and Naseer, with Heather joining in to point out that she is clearly the only option to go and as such, she knows she is going home. Erika jumped in to point out that having no advantages creates barriers to moving forward before Jeff questioned why everyone knows about all the advantages before Shan and Naseer reminded him that they had to say stupid phrases to activate everything. Ricard spoke about the madness of navigating around all those advantages while Naseer spoke about how hard it is going to be to vote out Heather given they are so close.

Heather then gave the performance of a lifetime, breaking down about not being ready to go given she has learnt more and more about herself each day, eliciting sympathy from Erika and an unwitting Naseer. With that the tribe voted and everyone held on to their idols as the votes piled up 3-3 between Heather and Naseer after Shan used her extra vote. They then revoted between the duo with poor, sweet Naseer blindsided from the game. Begging the question, what exactly inspired Shan to waste her extra vote if they were all working together to eliminate him.

In any event, after Naseer exited the jury bench he was awkwardly sent to after his boot and officially entered Ponderosa, I pulled him in for a big hug and sobbed over losing him from the game. But, you know, given he is a total sweetheart he quickly told me that he has had the best time on the show and I shouldn’t be sad. Because he is so happy. Though did admit that he would be happier if I were able to whip him up my famous Naseared Garlic Buttalif Steak.

I’ve had a long, difficult history with steak. As a kid, all I wanted in the meat-family were sausages – and look at me now! – but after a traumatic three week recovery from wisdom teeth surgery without eating (and missing the 2005 Big Day Out), all I wanted was steak. This led to me successfully having my first. I then moved out of home the following year and since my dad is the only person that can cook steak well, I never made it myself. Well until this. Buttery, crusty and packed with flavour, this is the perfect way to try cooking your own steak (if you’re still a child like me.

Naseared Garlic Buttalif Steak
Serves: 2.

Ingredients
2 ribeye steaks
1 tbsp vegetable oil
75g unsalted butter
salt and pepper, to taste
6 sprigs rosemary
8 garlic cloves, peeled and smashed

Method
Get your steaks out of the fridge a good half an hour to an hour before cooking, to come to room temperature.

Pop the oil in a heavy-based skillet and place over high heat until scorching hot. Dry each steak with paper towels, season generously (or to taste) and place in the skillet for cook for two minutes or until the seasoning forms a gorgeous crust.

Flip the steak and cook for a minute before adding the butter, garlic and rosemary. Baste the steaks with butter and cook for a further minute or two, depending on doneness.

Remove the steaks from the pan to rest for ten minutes, covered in foil before serving with mash (or your favourite sides) and with the crisp garlic, rosemary and a generous heaping of browned butter.

Then, obvi, devour.

Harry Phillsy Cheesteak Pizza

Previously on Australian Survivor the final twelve met Jonathan on the top of a hill where they learnt that they had (finally) made the merge. Despite having the numbers, David decided it would be a good idea to mind-fuck the outnumbered Vakama 2.0 tribe members. After being eliminated early in the reward challenge, he told Brooke and AK how he was at the bottom of new Mokuta and that he should be able to pull Zach over with him to give themselves the new majority. In actuality though, he was all in with Moana and the duo decided now would be the perfect time to get rid of Locky. Since Queen Shonee won the first immunity challenge like the damn boss that she is. At tribal council Locky desperately urged everyone to make a move and kick things off with a blindside, which sadly came to fruition. Just against him as he was booted from the tribe to become the King of the Jury.

The next day Jacqui was whipping up some breakfast and offering to deliver it to David in bed, who we learnt is well and truly falling apart from a chesty cold and a spider bite on his butt check. Which sadly wasn’t shown to us for proof.

Meanwhile by the fire Moana was congratulating Tarzan and Jacqui on the fact that they essentially secured themselves a place in the top seven. She then approached David and Sharn to congratulate each other on taking control and keeping their secret alliance alive. On the flipside, Brooke and Shonee were feeling disappointed to find themselves on the outs, though being the icon she is, Shonee encouraged them to be resilient and positive. Not feeling positive though is their ally Harry, who was back at camp with the Mokuta seven, seething about David and Zach’s treachery. This awoke the ol’ dirty in Harry, who vowed to take his revenge.

Speaking of revenge, David told us that his plan for All Stars has always been about playing a bold game, and taking revenge on anyone that wronged him in his original season. And now Harry is the last name on his Arya Stark list. Remember when Shonee had a revenge list? A list that she efficiently completed in three episodes. Like a damn icon. But enough about the superiority of Shonee, Moana was gossiping with Sharn, Lee, David and Jacqui by the well, telling them that Harry was arrogant about having taken David out on their previous season. While Harry watched on from behind some trees. Continuing to display her epic social game, Moana yelled out to him and told him to show himself and that since they are just doing washing, he is welcome to join them.

Oh and David did some bad math, sharing that getting rid of Harry was critical to his final tribal council, given Harry has currently played 82 consecutive days – which is untrue, given he was voted out one day before the end of a season – and if he makes it to the end, he can say that he played for 84 consecutive days. Which again, is wrong since he was also voted out. Plus, Lee and Sharn played 55 and 50 days in their OG seasons and genuinely can say that the days moving forward are consecutive, given they were never voted out. But whatever.

Fully aware of how well David has been playing, Harry pulled Shonee, Brooke and AK aside to try and find a way to weaken him. Given he has successfully surrounded himself with buffers, the group decided to get rid of one of the weaker players and as such, decided targeting Jacqui would be their best shot. With that, Harry and AK got to work trying to pull Zach and Lee to their side. Harry handed over a banana to Zach before launching into the pitch and while Zach agreed that he was open to the idea, he also wanted to play smarter this time around. With a semi-committal, Harry approached Lee and well, I just feel like Lee is interested. But maybe I am wrong?

My love Jonathan made an early return for the immunity challenge, which Harry identified as the final immunity challenge from last season as he walked in. But this time, with three sets of stumps to balance on – each smaller than the one before – while holding two sandbags up via ropes. After a short moment of struggle AK became the first person to drop from the challenge before Moana opted to step out, followed closely by Queen Shonee. After 15 minutes Zach fell off his pegs, followed closely by Sharn and Tarzan. The remaining castaways then transitioned to a skinnier peg, which caused Jacqui to drop after 45 minutes in the challenge. The final four each made it to the smallest pegs, with them quickly forcing David to drop out. He then used his time on the bench to suggest to Sharn that should Harry win immunity, they need to get rid of Brooke instead. After more than 90 minutes however, the pain became too much for him and he dropped out of the challenge. He and Shonee started throwing out options moving forward, agreeing that taking out AK and Brooke may be their only hope. However the latter wasn’t an option, given Lee dropped from the challenge and handed her immunity.

After popping immunity around her shoulders, Jonathan announced that they would not be going back to camp and would instead need to scramble on the way to tribal council. With that, the two factions split up by torchlight and got to work identifying their targets. Mokuta quickly locked in their vote for Harry, with a couple of dummy votes on AK just in case. Meanwhile the underdogs of former Vakama were still hopeful that they would be able to convince Lee and Zach to flip to them to get rid of Jacqui. Brooke and Shonee begged for them to be honest with them, asking if there is any chance of them making a move. And given Lee played a minimal game in his first go around, the former cricketer was more than keen to prove himself. And you know, build a resume. Lee and Zach mentioned being nervous about how Dave would react, which gave Harry the chance to be shady about their complete lack of agency in the game.

At tribal council Brooke was repulsed by Locky’s facial hair before AK spoke about how nerve racking it is to have had no time to strategise. Jacqui spoke about the importance of staying calm and sticking with what you know, which is exactly what you do when you’re in the majority. Moana reiterated that she trusts who she trusts and is looking forward to riding with them until the end. Lee was coy about pre-planning for situations like tonight, which Dave agreed with, given he and his alliance all know what they want to happen. Oh and the scrambling was super boring to him. Tarzan quoted Keith Nale and said that he will be sticking to the plan, while Zach agreed that he knows what he is meant to do in the plan. This gave Harry hope, so he pleaded with the people in the middle to make the right decision for their – and his – games and to start building their resume. Lee agreed that he needs to play differently if he wants to win this time, leading to Zach joining the fray and reminding him that you need to make a move at the right time. Which Brooke reiterated is right now.

Sharn tried to slyly counter the pitch, encouraging the people that Vakama are appealing to have a decision to make tonight. Which they can’t come back from. This led to Harry reminding everyone that they need to make a move before there aren’t enough people to help them make said moves. And it is never too early to build a resume, right? With that the tribe voted and despite working hard to save himself, Dirty Harry was vanquished to join Locky on the jury.

While my arms may not have been as cute and comforting as his sweet son Oscar – remember Oscie? – he was thrilled to once again see me in the Jury Villa after he suffered the indignity of being tortured in the challenge from hell.

“I know you’re not my biggest fan Ben, but I’m so glad to see you here – I could really use a big ol’ bowl of that mac and cheese.”

My heart sank. Had I truly made him feel so awful for trying to cross Pia that he believed I didn’t love him? Or did Queen Shonee rightfully explain that my low self-esteem means that a bit of flattery will get you everywhere with me. With that, I put my pants back on – Locky and I were reenacting his famous challenge from season 2/4, and headed to the kitchen to make him something even more triumphant than mac, in the form of my Harry Phillsy Cheesesteak Pizza.

Oh and then I apologised for cursing him for his second game. Damn you pizza!

Delicately charred beef – is that possible? – sweet peppers and the earthiness of the provolone are three of my favourite things. Add to that some mushrooms and you’ve got a sandie-j come pizza that is so damn good, you don’t even care about the fact an ancient curse felled your game while I was recipe planning.

Harry Phillsy Cheesteak Pizza
Serves: 2.

Ingredients
olive oil
500g beef loin, trimmed and cut into thin strips
salt and pepper, to taste
2 tsp butter
250g mushrooms, thinly sliced
1 onion, sliced
½ red capsicum, cored, seeded and sliced
½ green capsicum, cored, seeded and sliced
2 bases as per Pizsa Zsa Gabor
½ cup passata
handful of fresh Italian herbs, roughly chopped
1-2 cups provolone cheese, grated

Method
Prep the bases as per Zsa Zsa’s instructions.

While Zsa Zsa is proving herself, get to work prepping the toppings. Start by heating a lug of olive oil in a skillet over medium and cook the beef strips until medium. Remove from heat and leave to rest.

In another skillet, melt the butter over medium heat and cook the mushrooms until soft, shiny and they have reabsorbed all of the liquid. Remove the mushrooms to a plate. In the same pan, add another lug of olive oil and cook the onion for about five minutes, or until soft and sweet. Transfer it to a plate before adding the capsicum to the pan and cook for a couple of minutes, or until soft and sweet. Remove from the heat.

Preheat the oven to 180°C.

To assemble, smear the bases with passata and herbs. Top with the onion, followed by the capsicum, mushroom and steak. Sprinkle with a generous amount of provolone, transfer to the oven and bake for fifteen minutes, or until bubbly and golden.

Devour immediately, thankful this recipe wasn’t lined up for Shonee. Or did I deliberately enact the curse?

Steak Diana Piessana

Main, Oscar Gold, Oscar Gold XCII: Gold Basketball, Pie

In the melancholy of honouring such a dear, recently departed friend, I didn’t even notice that we’re now past the halfway point of this year’s Oscar Gold celebration, Gold Basketball. While Quentin and Nat were more joyous occasions, seeing Kobe yesterday was so bittersweet, that I needed to see my lovely writing pal, Diana Ossana.

While I didn’t meet Di until filming of Brokeback Mountain – when I was a part of Michelle’s entourage – we became truly close, as she valued my experiences as a gay farmer to shape production.

Thankfully she never found out about the fact I lied about being a gay farmer and we’ve been the best of friends ever since.

Di has been busy writing her latest movie with Larry, so we haven’t been able to catch-up as much as we would like. It was such a joy to finally see her in the flesh again, share a hug and run the screenwriting odds for this year’s Oscars.

Like me, Di doesn’t believe anything will beat Parasite for Best Original Screenplay. Well, unless he wins Best Director, in which case I think Quen will get it for Once Upon a Time in Hollywood. As far as Adapted Screenplay goes, my heart desperately wants to call it for Greta Gerwig for the best adaptation of Little Women of all time (at the risk of sounding like Kanye). However Di’s logic for backing Taika Waititi is solid, given Jojo Rabbit is coming off a killer run in the key precursors.

With that settled, we took a seat together, toasted our ongoing successes and put all our good energy into a Greta win – despite how much I love Taika too – and demolished a big serve of Steak Diana Piessana.

 

 

Like the great Oscar winning meal of Steak Diane Keaton, this baby is so damn comforting. Hearty chunks of beef, the sweet mix of shallots and brandy and a kick of parsley freshness work together to make a beautiful gravy. That is only improved by the inclusion of mash and pastry.

Steak Diana Piessana
Serves: 4.

Ingredients
1 tbsp butter
1 tbsp olive oil
500g beef, diced
3 shallots, sliced
3 garlic cloves, minced
¼ cup flour
salt and pepper, to taste
¼ cup brandy
1 cup beef stock
1 tbsp dijon mustard
2 tsp worcestershire sauce
¼ cup cream
¼ cup parsley, roughly chopped
500g potatoes, diced
500g pumpkin, diced
1 sheet puff pastry
1 egg, whisked

Method
Preheat oven to 180°C.

Place a large pot of salted water with potatoes and pumpkin over high heat and bring to the boil, once rolicking, reduce to a low and leave to simmer for 5-10 minutes, or until tender. Mash as you normally would and leave covered while you cook the rest.

Combine the butter and olive oil in a dutch oven and place over medium heat. Add the beef, shallots and garlic, and cook, stirring, for a couple of minutes. Add the flour and a good whack of salt and pepper, and cook for a further couple of minutes.

Reduce heat to low and add the brandy, stirring as you go to avoid large lumps forming. Follow that with the stock, dijon and Worcestershire, and cook, stirring, for a further half an hour, or until the sauce has thickened.

Remove from the heat and stir through the cream and parsley.

Transfer the meat and gravy to a pie dish, top with the mash and top with the pastry. Brush with the whisked egg, cut a slit into the top and transfer to the oven to bake for half an hour, or until golden and crisp.

Leave to rest for five minutes, before devouring. Greedily.

Shane Goulash

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Main, TV Recap

Previously on Australian Survivor, 23 Aussies and 1 three-time American loser were marooned in the lush jungles of Fiji for the non-biblical battle between top dogs and underdogs. Despite getting out to a strong start in the opening challenge, the Contenders were first to suffer a loss with Matt giving an extremely patronising speech at tribal leading to him becoming the first boot. He was followed out of the game by self-appointed King Russell Hantz, Damien, Steve K, Jenna – yep, doing this – Moana, Anita, Zach, Paige, Jackie, Tegan and Heath.

In honour of the Spicys, two became one and the tribes merged, leading to the downfalls of Lydia, Robbie, Sam, Mat, Benji, Steve, Fenella, Monika, Shonee and Brian before Shane defeated Sharn the prosecutor in front of the jury.

Despite being fairly low down the totem pole early in the season, Shane managed to find her way into the main alliance and make it to the merge where she truly flourished, while not being able to be fucked with. From finding idols, to dominating around camp, spying for allies, fostering critical bonds, orchestrating pivotal blindsides and being a damn boss, Shane managed to defy expectations for the older female archetype and played, arguably, the showiest game of our three victors.

And prove that Shane Gould will always be a champion. Obvi one that is never to be fucked with.

The only fear I have about Shane’s victory, is that we’re going to have to suffer through Dawn Fraser next season and let’s be honest, Dawn is no Shane. And I don’t want to fuck(ing deal) with Dawn Fraser.

After giving a rousing toast as she left the island, I raised her arm in triumph and congratulated her with a big, hearty, piping-bloody-hot and victorious Shane Goulash. Huzzah for Shane Gould, iconic, Queen of Australian Survivor: Champions vs. Contenders.

 

 

Packing a powerful paprika punch, this goulash is the perfect thing to renew your energy after 50 days starving on an island. Rich hunks of beef melt in your mouth, while the spicy sauce is like a warm hug. Throw in some mash, and you’re in heaven like Shonella smashing margs or Benji doing whatever he does to a plate of nachos.

Shane Goulash
Serves: 4-6.

Ingredients
olive oil
salt and pepper, to taste
1kg chuck steak, cut into large cubes
3 onions, quartered
5 garlic cloves, minced
1 tbsp sweet paprika
2 tsp hot paprika
1 tsp smoked paprika
1 of each red, yellow and green capsicums, cored, seeded and cut into chunks
3 bay leaves
1 tbsp tomato paste
400g canned diced tomatoes
1L beef stock

Method
Preheat the oven to 160°C.

Heat a lug of oil in a large dutch oven and season the beef with a whack of salt and pepper. Add the beef to the pan in a couple of batches and cook until sealed. Remove from the pan, reduce heat to low and cook the onions for ten minutes or so, or until soft and sweet. Add the garlic and sweat for a minute.

Bring the heat back to medium and return the beef to the pan with any leaky juices with the three paprikas and the three capsicums and cook for a minute or so. Add the paste and bay leaves, stirring until well combined. Add the tomatoes and stock, stir and bring to a simmer.

Remove from the heat, chuck the lid on the dutch oven and transfer to the oven to cook for 2.5-3 hours, or until tender and your house smells like it is not to be fucked with. Like Shane Gould.

Serve with a shit tonne of Gabriel Mash, sour cream and chives. Then devour, like the ultimate champ that you are.

Karl Stroganovic

While he didn’t explicitly say it, my boy Karl desperately needed a cuddle and a catch-up to pick him up and get him through the final few weeks of the year. Given the stress he’s been under, he hasn’t been the breakfast mainstay that we’ve come to know and love this last year, and I am heartbroken to admit, that that has really gotten him down.

“Ben, my dearest best Ben-friend after Fordo. I just feel like I’ve let my Today family, and everyone, down.”

Gaaaahhhh, how heartbreaking is that?

I held him close and told him that everything would be ok and the public would soon be distracted by another shiny scandal … and that he is beautiful, looks like a model, like Linda Evangelista. Look at that smile etc. While he was confused about that little outburst before I explained that Stan, part of the Nine stable, is Australia’s RPDR champion, he held me for a few moments, soaking in the unconditional love of his dear friend. And surprisingly, that soaking is figuratively. For once.

I’ve known Karl for years, after meeting in the Nine News Brisbane newsroom in the early ‘00s. While the fact we both had the generic appearance of a young Ray Martin pitted us as competition, our sense(s?) of humour brought us together. We’ve been friends ever since and I’ve proudly celebrated his achievements after all these years.

After working through the darker parts of our years – did I ever tell you about the time someone tried to act offended that I didn’t want to attend a work lunch when I hate crowds/people? – we got to work bringing joy back to our lives. And there is nothing more joyful than my Karl Stroganovic.

 

 

At the risk of sounding like a broken record, I used to have some serious hang-ups about strog due to my mother. While she always tries her best, particularly in the kitchen, ‘90s Tweed Heads was not good for beef strips, nor did she help the sitch with strog. My dear, sweet grandmother used to tell her that me regurgitating the meat was ok because I was masticating the goodness from it, but I wish she just suggested cooking the meat in a manner that made it tender. Like this.

After submerging the beef in the sweet, sweet stroganoff sauce, the meat starts to melt away and make me wish the culinary memories of the ‘90s ent with it. Delicate, tender and oh-so-comforting, this is the perfect dish to get you excited for 2017’s end.

Serves: 6.

Ingredients
75g butter
2 onions, diced
3 cloves garlic
250g white mushrooms, finely sliced
2 tbsp tomato paste
2 tsp Dijon mustard
1 tsp smoked sweet paprika
½ cup beef stock
⅔ cup brandy
1 tbsp Worcestershire sauce
500g beef fillet, cut into strips
salt and pepper, to taste
1 cup sour cream
small handful parsley, finely chopped

Method
Melt half the butter in a large skillet over medium heat until nice and foamy before adding the onion and garlic, and cooking for three minutes, or until soft. Add the mushrooms and cook for a couple of extra minutes. Add the paste, mustard and paprika and cook for a further minute, before stirring through the stock, brandy and Worcestershire sauce. Bring to the boil and simmer for about five minutes.

Add the beef strips to the bubbling sauce, reduce heat to low and simmer for about ten minutes, or until the meat is cooked through. Season, add the sour cream and stir to combine.

Remove from the heat, stir through the parsley and serve on a bed of buttered pasta. Then devour, obvi.

Carne Audrada McDonald Tacos

While Ang is an icon of the stage – well, everywhere TBH – Alan’s performance as the M.C. is in a league of its own, Lena perfectly carried Yitzhak to the Broadway stage and Harves is a Broadway legend, none of them hold a candle to my dear friend Audra McDonald.

I mean, not only as she won the most performance awards at six, she is the only person to take out all four performing categories. You can not argue that when it comes to the Tonys, Audra is the queen – she is essentially the Meryl of Broadway.

When I decided to finally include the Tonys in our slate of highly regarded awards show coverage, I just knew that I had to have Auds by my side to add to the gravitas of my predictions. Yes, add to the gravitas.

Given how busy she has been with Beauty and the Beast and returning to Lady Day at Emerson’s Bar and Grill, I haven’t been able to catch Audra in the last few years so she was thrilled to take a week off sick to fly over and celebrate with her dear friend from Juilliard.

Fun fact: she actually pushed me to apply to Juilliard with her after seeing my star-making turn in the hit, three-performance, high school production of How the West was Warped, where I played the sexy-twin Sheriff. I was amazing, she was sold and together we vowed to take the world by storm.

Since we’ve essentially exhausted all of the acting categories, I instead got her to conduct a thorough audit of all my previous predictions (before taking them to my bookie). Thankfully she agreed with 93.6 percent of my tips, so we could focus solely on reconnecting over Carne Audrada McDonald Tacos.

 

 

It really is no secret that I have a passionate and undying love for all Mexican food – and Tex-Mex – but there is something particularly special about a carne asada taco. The zing of the mojo keeps the meat light and fresh, allowing the guac, lime, lettuce, cheese and salsa to do their thing and make it sing better than Audra.

Don’t worry, she completely agrees – enjoy!

 

 

Carne Audrada McDonald Tacos
Serves: 6.

Ingredients
4 cloves of garlic, minced
1 jalapeno, finely chopped
a handful of fresh coriander, roughly chopped
3 limes, juiced and zested
2 tbsp champagne vinegar
¼ cup olive oil
salt and pepper, to taste
750g flank steak
12 corn tortillas
shredded iceberg lettuce
4 shallots, thinly sliced
1 cups grated cheese
Salsa Struthers
2 avocados, mashed
sour cream, to serve
lime wedges, to serve

Method
Combine the garlic, jalapeno, coriander, limes, champagne vinegar, olive oil and a good whack of salt and pepper in a large shallow dish. Add the steaks, toss to coat, cover and place in the fridge for a couple of hours to marinate.

Preheat a griddle over high heat. Once piping, reduce heat to medium, brush with some oil and cook the steaks for a few minutes each side, flipping once. Remove from the pan and allow to rest for a few minutes. After it has rested, transfer to a chopping board and thinly slice against the grain.

To serve, heat the tortillas in a skillet for about 30 second each side and layer with salad, salsa, onion, guac, sour cream, cheese and steak. Then, obvi, devour.

Steak Diane Keaton

A decade of saying so, Main

Some would say that Because I Said So is a tragic fall from grace for my dear Academy Award winning friend Diane Keaton. To them I say – and you should probably know where this is going as we’ve hit day three of our decade of saying so celebrations – fuck you.

Saying Because I Said So is a terrible movie or a fall from grace is nothing more than an alternate fact and frankly, fake news. To be honest, it should have won a million, million and a half Oscars.

Anyway, Di jumped at the chance to drop by and hang out – she was chomping at the bit to be included in my last two Oscar Gold celebrations – to celebrate her underrated gem.

I first met Di in the early ‘70s while working on The Godfather – as you know, I’m very close with the Coppola-Cage-Schwartzman Dynasty. I mistakenly thought that  it was a documentary – let’s put it down to the chilling performance rather than casual racism –  and was drawn to Di as she appeared to be the least likely to kill me.

What ensued is a beautiful friendship that has lasted ever since, with only one hiccup – she broke the girl code and played Keanu’s love interest. Thankfully she is so delightful and kind that  she grovelled adequately enough to nip our feud in the bud at seven days, four hours and thirteen minutes.

Like me, Di is a big fan of Because I Said So and her work in it. As such, we spoke at length discussing why the media was so against the clear classic and how to bring about its renaissance a decade on.

So yeah, deep conversation with a lot of work, meaning we earnt every piece of our Steak Diane Keaton.

Despite what you may think, I’m not a huge meat eater. I mean sure, I love me some meat, but I never really got into the culinary equivalent until I had my wisdom teeth removed. After ten days of not eating anything but yoghurt, any chicken loving, white-man-diet enjoying would turn to a steak.

Particularly if is drowned in some delicious diane sauce – enjoy!

Steak Diane Keaton
Serves: 4.

Ingredients
olive oil
4 shallots, trimmed and sliced
150g button mushrooms, sliced
1 tbsp salted butter
3 garlic cloves, peeled and crushed
2 tbsp Worcestershire sauce
1 tbsp Dijon mustard
⅓ cup brandy
1 cup double cream
handful of flat-leaf parsley, roughly chopped
4 sirloin steaks, excess fat removed, size depending on your appetite

Method
Heat a lug of olive oil in a medium skillet and cook the shallots for a minute before adding the mushrooms, butter and garlic and cook for a minute. Stir through the Worcestershire and mustard for a couple of minutes before adding the brandy. Turn up the heat, bring to the boil, then reduce the heat, stir through the cream and simmer for a couple of minutes, or until reduced. Remove from the heat and stir through the parsley.

Season the steaks on both sides and heat a lug of olive oil in a large skillet over medium heat. Sear the steaks on both sides for about three minutes, more or less depending on how you like steak. Just make sure to only flip it once. Remove from the pan to rest for a minute or two before serving, drowned in sauce with some *spoiler alert*.

Philly Collins Cheesesteak

It was always going to be an awkward start to my peace feast with Phil, what with the viral infection injection thing. Oh, and the whole gag I sold to South Park about his obsession with his Oscar – FYI, that was totally true and I’m 30% sure he had it on him when he dropped by – and well, I can’t talk about everything else I’ve done to him due to the lingering lawsuits and payouts.

Just trust me when I say that Phil was on the receiving end of one of my top ten most vicious moments.

But then it wasn’t awkward, not even at all. Time apparently heals all wounds as Phil took me in his arms as soon as he walked into the house. I cried, he cried, then he sobbed, I pretended to sob to avoid it being awkward and then I apologised.

Literally two minutes in and my epic apology monologue – it rivalled Cersei’s revenge monologue for epicness – wasn’t even needed. Thankfully I’ve burnt a lot of bridges so I’ll be able to use it again, I’m sure.

Phil has been super busy since coming out … of retirement early last year, remastering his old albums, writing new material and planning a tour. Oh and he signed a book deal and will be releasing his autobiography in October … and when I heard that, everything became clear – he wants me to ghostwrite the book.

While I’m pretty pissed he expects me to plug it out in a mere matter of months, given the countless ways I ruined his life I really couldn’t say no. Plus, at least I can manage my image in the story, you know?

Either way, Phil got a ghostwriter, I got some undeserved forgiveness and we both rekindled our friendship over my famed – and his favourite – Philly Collins Cheesesteak.

I’ve made no secret of my love for warm meat, slathered in creamy cheese … but these really get me salivating. I mean, tender slices of steak on a soft pillowy bun and cheese, my favourite, cheese – it doesn’t get any better. Oh yeah, it does – sweet onions, earthy mushrooms, hot mustard and peppers.

It really does get better – enjoy!

Philly Collins Cheesesteak
Serves: 6.

Ingredients
6 hoagie rolls
6-12 slices provolone
1kg loin steaks, trimmed and sliced into thin strips
olive oil
salt and pepper, to taste
1 tbsp worcestershire sauce
hot english mustard

Sauteed mushrooms
2tbsp unsalted butter
500g button mushrooms, roughly chopped
salt and pepper, to taste

Caramelised onions
2 tbsp unsalted butter
2 large brown onions, thinly sliced
salt and pepper, you guessed it – to taste!

Peppers aka capsicum
2 tbsp olive oil
1 green capsicum, thinly sliced
1 red capsicum, thinly sliced
1/16 tbsps of salt and precisely 6.3g freshly ground black pepper, but seriously … to taste

Method
Place the steak in the freezer for about half an hour while you get to work on all of the other elements.

Start with the mushrooms and melt the butter in a frying pan over high heat until foamy. Reduce heat to medium, add the mushrooms and cook until they are soft, silky and browned.

Then move to the onions and start again by melting the butter over high heat until foamy. Reduce the heat, this time to low, and cook the onions slowly until they are soft and caramelised – about half an hour. Keep an eye on the onions, but move on to the peppers now, ok?

In another pan – how many pans do I expect you to own? Maybe decant the mushrooms to a dish and keep warm, wipe out the mushroom pan and heat, this time the oil, over high heat. Add the capsicums and stir-fry for a minute or so, or until they are soft and vibrant.

Now that they are sorted, remove the steak from the freezer and slice very thinly. Heat a griddle over high heat, brush with oil and cook for about a minute per side. Remove to a dish, pour over the worcestershire, season and keep warm.

Now for the fun to start – split the hoagies, butter generously (if you like heat) with hot english mustard, spoon in mushrooms, onions and peppers, top with the piping hot meat and layer with cheese. Hopefully your cheese will melt from the heat more than mine did, but hey it is cold for Brisbane at the moment.

Then, don’t think twice – devour.

Jelley Wentworth

Dessert, Survivor: Cambodia - Second Chance, Sweets

We regret to admit that we’ve had a checkered past with the zero-to-hero, stand-out star of Second Chances Kelley Wentworth. Very checkered history, but thankfully like her stint in game, Wentworth was a true survivor.

You see, and again we regret to admit this, the Wentworth’s were the original target of a farmhouse robbery Annelie and I had planned in the early 90s. We had both read In Cold Blood and while abhorred by the murderous rampage, it gave us the idea to start working as farm hands and swindling the families out of all their money.

Kelley’s dear father @FarmGuy69 fell for our plucky attitudes and hired us on the spot, but Kelley using her killer instincts called us out and won us over with her sneaky sneaky ways, taking the robbery target of her family.

I then entered into a torrid affair Dale which went on to inspire the short story and Academy Award Winning film Brokeback Mountain – I wish he knew how to quit me, but I have moves.

We remained close with the Wentworths throughout the years and played an integral role in helping craft Kelley’s casting campaign and connecting her with the right players going into the season.

If only we had taught her how to effectively handle balls!

There was only one thing we could make to help her move past the crushing, million dollar fumble and that is a nice, boozy Jelley Wentworth.

Jelley Wentworth
Serves: 6.

Ingredients
200ml vodka
100ml peach schnapps
200ml cranberry juice
200ml pineapple juice
5 leave gelatine
1 oranges, flesh diced
1/4 cup glace cherries, finely diced

Method
Combine all of the liquid in a large jug, giving a good stir.

Tear all of the gelatine into small pieces and place in a small ceramic bowl and just cover with hot water. Leave to soften for 15 minutes.

Bring a small saucepan of water to a simmer. Place the bowl of gelatine on top and stir until completely dissolved. This should take about 5 minutes.

Once dissolved, combine with the liquid in the jug. Give it a good stir and decant, through a fine sieve, into 6 containers. Obviously martini glasses are preferred.

Refrigerate until set – about 6 hours should do.

Devour and think tropical, almost a millionaire thoughts.
