As you should be aware by now, I’ve known most of my celebrity friends for a long, long time and am – not meaning to blow my own trumpet – the reason that 99% of them are even famous/successful.

My dear Merrill aka Peaches, however, is the exception.

You see, I only met Peaches in 2007 when she was playing Big Day Out. Picture it, Gold Coast, 2007 – which I literally just told you. A young, sexy ingenue was killing it on the d-floor of the Boiler Room to Shake Your Tits before collapsing to the ground due from sheer exhaustion from their dance majesty.

That young ingenue, was me.

Peaches quickly sprung into action, I assume due to her pre-fame teaching days, diving of the stage, taking me in her arms and pouring water over my head to wake me up. Side note, that inspired me to travel back in time and write slash choreograph the hit movie Flashdance.

Cutting the set short, Peaches took me backstage to recuperate and we quickly bonded over our mutual love of filthy song lyrics. The following nine years are arguably the best years of my life, as I got to experience the joy of forming such a beautiful friendship.

We both been super busy lately, what with her doing herself, appearing on the (finally) Emmy winning program Orphan Black and releasing a new album and with me, well, being busy, ok, so haven’t been able to see much of each other recently. This almost-milestone date, truly is an absolute blessing.

Now I know that this is only technically my 249th documented catch-up, but I’m just going to pretend this is my moment due to the inconsistent scheduling of Australian Survivor causing problems. Plus, I agreed to catch-up with Peaches when I thought she was going to be the magical 250th visitor, so I needed to treat the occasion like it was.

Plus, Peaches Cobbler is the ultimate party food, so why deny it?

Sweet, rustic and deceptively decadent – the sweet peaches, work beautifully  with the earthy walnuts and the pillowy dough to fill your stomach, and heart, with unending joy.

Plus, you can slather it in ice cream. What is not to love – fruity nuts, dripping in a sweet, white liquid? Enjoy!

Peaches Cobbler
Serves: 4-6.

Ingredients
4 cups peeled, sliced peaches
2 cups raw caster sugar, divided
½ cup water
1 tsp vanilla bean paste
100g walnuts nuts
1 cup flour
2 tsp baking powder
50g muscovado sugar
pinch of sea salt
125g unsalted butter, chilled
vanilla ice cream, to serve

Method
Preheat oven to 180°C.

Combine the sliced peaches, sugar and water in a large saucepan over medium heat and bring to the boil. Once boiling, reduce heat to low and simmer for about ten minutes, stirring occasionally. Remove from heat, stir through the vanilla paste and get cobblin’.

Blitz the walnuts in a food processor for a couple of seconds. Now you can either add all the other ingredients and blitz until the mixture resembles wet sand. Obviously I prefer the hand approach, if you do to decant the roughly blitzed walnuts to a bowl and combine with the flour, baking powder, sugar and salt. Chop the butter into small cubes, add the bowl and rub through the mix … until it resembles wet sand.

Now for the fun – add the peaches and liquid into a small baking dish, grab large balls of the dough and haphazardly place around the top to almost seal it.

Place it in the oven and bake for 20-30 minutes, or until golden, crisp and bubbly.

Remove from the oven and serve immediately, generously topped with ice cream. It may not look best that way, but it certainly makes it taste good.

Cydney Goujons

Main, Poultry, Snack, Survivor: Kaôh Rōng

Previously on Survivor Darnell crapped, Jen had worms whispering in her ear, Liz the robot malfunctioned, Caleb almost died, Alecia was bullied, Anna was screwed by the swap, Peter was screwed by his smarm, Neal almost died, Nick was a pretty girl, Debbie worked hard, Scot was nah-bro’d, Julia was run over in the middle of the road, Sargsonyle was vanquished and Joe ate too much meat … and almost died.

And then there was four … well five including the breakout star of the season #MarkTheChicken.

We opened with Tai and Aubry planning how to reclaim the numbers after Joe’s bowels had a beef with him, before Probsty’s took us straight to a reward challenge where Aubry’s underrated stint as challenge beast finally resulted in an individual win. Knowing that she needed to woo (not him) Cyd back to their side, Aubry chose to share her reward with Cyd and give them better odds of beating Michele in the next immunity challenge.

That or she was hoping a steak would take Cyd out for her like Joe?

But best laid plans, amirite? Cyd didn’t OD on satay and Michele ruined their plans by winning immunity.

There was discussion back at camp as Cyd and Michele tried to turn Tai on Aubry but surprisingly, Tai stuck with his ally and forced a taitie between the girls, and let their fire making skills make the final choice.

Despite getting a few of Alecia’s leftover embryos, Cyd was never able to have a flame take off, sending her to the jury and ending her dreams of paying off her parents mortgage (and breaking hearts across the globe in the process).

Well except Sia’s, I guess as she didn’t give her a cheque. Boo.

Obviously I am a close friend of Cyd’s, having met on the bodybuilding circuit a few years ago. Despite the fact that she refused my steroid regime – if only Crystal Cox had don’t the same – and I was eventually banned from the sport because of my roid abuse (and rage), Cydney stuck by me like the kind spirit that she is.

Cyd was heartbroken (and breaking) as she made her way into Ponderosa and ran straight into my comforting arms. While the first cut is said to be the deepest (or is that the Vytas), I almost feel it is worse to go out just before the finals (ask Wentworth). To come so far and get cut just before having the opportunity to plead your case to the jury is something that only your fourth place prize money / a loving meal can fix.

Given the scandal that came from feeding Joe meat in a spicy liquid, I wanted to give Cyd something soothing, comforting and delicious, with a bit of a kick, to get her in the best headspace before making a million dollar decision. While yes, they are spicy, my Cydney Goujons certainly fit the bill!

There is nothing better than a spicy chicken (not Mark) goujon. I mean, moist chicken with a kick of spice wrapped up in a crunchy coating – perfection. Plus it is gluten free, so less inflammatory meaning it is comforting and sensitive … in light of Mr Joe’s issues.

Cydney Goujons
Serves: 4.

Ingredients
½ tsp paprika
½ tsp chilli
½ tsp smoked paprika
pinch of cayenne pepper
¼ tsp celery salt
¼ tsp onion powder
¼ tsp garlic powder
½ tsp parsley
½ tsp oregano
½ tsp thyme
pepper
1 cup almond meal
1 egg, whisked with a bit of milk
500g chicken breast, sliced into thick strips … that look like goujons

Method
Preheat oven to 180°C. Line a baking sheet with greaseproof paper.

Combine the herbs, spices and almond meal in a large shallow bowl with a good whack of pepper. Whisk the egg in a second shallow bowl.

Dip a strip of chicken into the egg, drain and place it into the spice mix, flipping to coat. Place on the baking sheet. And then, this may come as a shock, repeat the process until all the chicken is done. You can drizzle them with olive oil, but Cyd and I are health conscious / I don’t feel they need it.

Place the chicken in the oven and bake until crisp and golden, or about 15 minutes, flipping once halfway through.

Devour with a plate of steamed veggies … or a massive vat of mash, depending on whether you’re a Cyd or a Ben.

Julia Sokolowsquinoa Salad

Main, Salad, Side, Snack, Survivor: Kaôh Rōng

Previously on Survivor, Tai escaped from the hold of the dark ones … who technically would be the Dark Two, but whatever, semantics. Tai went back to the heroes and gave us a classic Tribal Council moment when he nah bro’d Scot to the jury.

Everyone but Jason/Kyle/Sarge and the beauty girls seemed happy about the switch, particularly Tai and Aubry who spent, what I assume was the entire night making out.

Poor Caleb, first being brutally medevaced, now cheated on by Tai? Tragic.

We then heard Jason/Kyle/Sarge repeat the same confessional sixteen times before we headed to reward where luck was not on what’s-his-face’s side again, missing the opportunity to compete for fried chicken and wine, aka my foreplay. While the castaways were happy, I’m pretty sure that production stole a romantic date Probst had planned for us, so I’m obviously suing CBS.

While the third/second coming of the Black Widow Brigade and The Witches Coven respectively were away on reward with a random dog, no joke, Sargsonle once again spoke about how screwed he was while Julia salivated at the thought of booting Tai and murdering fan-favourite Mark the Chicken – who has had more screentime than Rudy 2.0 all season.

Little did she know how soon she’d be getting to eat as, once again, the castaways went a bit crazy and turned on my dear friend and protege, Julia Sokolowski after Tai dotted his T and crossed his I to save himself. Well technically, Aubs has kind of had it out for her for a few weeks now. But she was legitimately #Blindsided, so I still chalk it up to a bit of Kaoh Rong cuckoo.

Oh and Michelle won immunity spelling blindside before blindsided her closest ally and the second place finisher of the challenge, so that is pretty ironic. Maybe. More than Alanis’ examples were.

Probably.

I first met Jules last year and despite not knowing her for long, she has quickly become one of my closest friends and I am endeavouring to mould her into being a kind, rational and completed grounded person, just like me!

You see, JuJuSki is lucky enough to not only attend my Alma Mater, Boston University, but also to have pledged my sorority Alpha Phi.

As a former president of Alpha Phi in the mid-90s (there was a campus serial killer at the time which inspired both Scream 2 and Scream Queens … but I’ll tell you about it later), I like to provide support and guidance to my new sisters and help shape the minds of the future. JuJu is a shining star and as soon as I saw her, I knew that she had to be my latest mentee.

Ju was sad to make her way to Ponderosa, but as a super fan, was able to respect the gameplay. Plus I had a big bowl of my Julia Sokolowsquinoa Salad on hand to distract her from her boot slash not eating Mark the Chicken.

Full disclosure, I spilt some wine and Julia shed some tears into the pot while cooking the quinoa so it is a bit soggier than normal. Obviously, we expect no judgement. Plus, even if you tried, Julia would just straight up turn around and walk out mid-way through your sentence like she did to Jeff mid-snuff. Girl is tough.

Despite the hiccup, this salad is seriously good! The sweetness of the pumpkin works perfectly with the nuttiness of the goat’s cheese and the tang on the orange. Plus, quinoa is healthy so you can feel totally smug after eating it.

Julia Sokolowsquinoa Salad
Serves: 4.

Ingredients
450g can whole baby beetroot, rinsed and drained (You could use fresh, trimmed, scrubbed, wrapped in foil and baked for 30mins. But who can be bothered in the middle of the Cambodian jungle?)
¼ cup extra virgin olive oil, plus extra for drizzling
800g pumpkin, peeled, cut into 3cm pieces
1 tsp cumin
1 tbsp fresh thyme
400g white quinoa, rinsed thoroughly
2 oranges
1 tbsp honey
1 tsp wholegrain mustard
⅓ cup flat-leaf parsley leaves, chopped
½ cup walnuts, toasted, chopped
120g goat’s cheese, crumbled

Method
Preheat oven to 180C. Spread pumpkin out on a lined baking sheet, drizzle with extra oil, the cumin, a good whack of salt and pepper and bake for about 30 minutes, or golden and cooked through.

Cook quinoa following packet directions, avoiding to overcook or drown in booze/tears like we did – maybe you like mushy, soggy food? Either way, when it is cooked to your liking, set it aside to cool.

Peel and segment the oranges over a large bowl to catch all of the juice and combine with the honey, mustard and oil. Stirring to combine.

Cut beetroot into wedges and add to the orange and dressing with the pumpkin, quinoa, parsley, walnuts and cheese.

Devour and let your post blindside rage disappear.

Peter Baklavenstos

Running into an ex is always awkward, but when it is seeing the person that broke your heart after getting them on the show … after they were just voted out is kinda satisfying.

Scrap that, it is fucking glorious.

This week we started with Petey trying to woo Tai into his third showmance in six episodes while over on Chanloh, part-time model Debbie and her adonis Nick engaged in, what on the island was, the filthiest and most explicit romance since Ozzy and Amanda in Micronesia.

Love, however, isn’t what we watch for … it is all about Probst making a series of ball puns while people were bobbing for them during the reward challenge. Once again, Aubrey continued to be the challenge beast of the season.

Peter spent most of the episode putting a target on his back and being paranoid, before a block almost took out Biden at the challenge. Thankfully he wasn’t evacuated, giving Aubrey another chance to shine when she literally crossed out Julia’s name and changed her vote to Peter.

I don’t know if it was due to budget cuts or they are trying to be green, but I’m thankfully there are limited pieces of parchment for drama’s sake.

I first met Petey on the impersonating circuit where he, obviously, was a Time Square Obama and I was any misc-dark haired celebrity with curls, but was most often recognised as Fred Savage, Ray Martin or aggressive Andy Samberg.

Pete and I, again obviously, fell into a torrid love affair bathed amongst the lights of Bro-ad-way (right near where, I assume, Reed cheated on Josh). Our loving relationship was so strong, he convinced me to don blackface (to upset my nemesis Harry Connick Jr. – he always refused my advances/to whisper my name) and play the Michelle to his Barack.

Mich (who I am also friends with) loved the idea and thankfully deemed my arms perfect enough to play her … lucky I invented that workout system with her in 2014. I must look at releasing it soon, if only I paid Todd Tucker for his work filming it.

Anyway, when I found out Pete was officially going to be on Survivor I quickly tried to call Probst and try to help pre-game for my lover, but his attitude got in the way (I’m team Biden on the circuit, not on the island) and we sadly went our separate ways.

While you may assume that I would handle a break-up with expletives, lighter-fluid and booze, that wasn’t the case when I reconnected with Pete in loser lodge … probably as I was so smug to see him just before the merge, meaning my break-up, once again proves that Kat Mr. Edorsson is a genius – who wants to date someone that doesn’t make the merge?

Thankfully I am very mature and rational and was kind enough to whip it out him up a nice batch of my (usually post-coital) Peter Baklaventos.

Baklava, while time consuming, is one of the easiest sweets you can make but still looks impressive. Obviously this is my favourite kind of recipe – one that gives you the most bang for your buck … particularly if it is for a post bang meal.

Between the pastry, rosewater and sticky nuts dripping in a sweet, moist glaze … this is something you need to have in and around your mouth. ASAP.

Peter Baklavenstos
Makes: About 24 pieces.

Ingredients
250 gm each pistachios and walnuts, finely chopped
100 gm caster sugar
3 tsp ground cinnamon
200 gm butter, coarsely chopped
500 gm filo pastry
Honey syrup
300 gm caster sugar
125 gm honey
1 lemon, finely grated rind and juice only
1 cinnamon quill
4 drops rosewater

Method
Combine nuts, sugar and cinnamon in a bowl and set aside. Melt butter over low heat in a small saucepan, set aside and keep warm. Brush a 24x34cm baking dish with butter. Cut filo sheets to fit tray snugly and cover with a damp tea towel.

Preheat oven to 180°C.

Layer one-third of the filo pastry in tray, brushing butter between each layer. Yes this can be annoying and I generally avoid this set when making filo pies … but this is the one dish you kind of can’t avoid this step, sorry.

Spread half the nut mixture on top, repeat the process with the next third of filo, top with the remaining nuts and do the filo again. Once more, with feeling and refrigerate for about 20 minutes.

Remove from the fridge and cut the dish into 4cm diamonds with a sharp knife, making sure to get through all layers of filo and bake until golden and crisp, about 50 minutes. Cover loosely with foil if the top browns too quickly.

While in the oven, get onto the honey syrup by combining the sugar, honey, lemon rind, cinnamon and 300ml water in a saucepan over medium heat, stirring until the sugar dissolves. Reduce heat to low, simmer for 20 minutes and the flavours have gloriously steeped in the liquid. Remove from heat, strain and stir through the lemon juice and rosewater and set aside.

Cool baklava for about 5 minutes and pour the syrup evenly over the pastry. Set aside at room temperature to cool completely … if you can. Then go crazy and devour it.

Banana Khait Muffins

Again, seriously?! I don’t know how I am going to pay off all my bookies – once again, one of my top winner picks heading into the season was sent to loser lodge (and I am looking to start another ponzi scheme). Poor Anna was dealt a dud hand in the swap and her tribe opted not to hold her but to fold her and let her run away into my arms.

It all started innocently with Obama capitalising on last week’s drama by opening up the Chan Loh trauma centre, lancing potential (and likely, judging from the rusty hook) future medivac Sexy Rudy’s finger, before my frosty dandy got his hand-ys on the hidden immunity before the aforementioned switch up.

After exiling poor Julia to hell beach, with nothing but Darnell’s brown-trout for company, the members of the new tribes jostled for position … or something – let’s be honest, all I heard was something about Obama’s low hanging fruit.

Yep.

I first met Anna a couple of years ago, when I hired her to be my poker coach. You see, I had created a strip-poker group with my celebrity crushes / hot friends and needed to learn to play to get them as naked as possible, as quickly as possible. Anna is an absolute card shark and after helping me find abs-olute pleasure with my friends, she was instantly welcomed to my inner circle.

Fun fact: I actually used time-travel to go back and co-write The Gambler with Kenny Rogers.

After the tribes convened to go fishing and witness a puzzle laying down for Debbie like a lover, a target was firmly set on Anna or Tai’s back … and since Tai has managed to take another island (non-puzzle) lover, Anna was royal flushed from the tribe.

She was very hurt to have made her way to loser lodge this soon but was thrilled to be able to help me make money off the rest of the pre-merge boots in a high stakes game of Cambrodian Fame Hungry Poker (it is aggressive, sexual and involves also winning the opportunity to be Tai’s next bro-mance).

She was even more thrilled to see my Banana Khait Muffins, which I used as currency to pay her when I was her student … which inspired the old rapping meatball lady from my hit movie The Wedding Singer.

Banana muffins are quite possibly the easiest thing to make but since I originally used these as currency, I had to dress them up a bit so caramelised the bananas first and added some nuts … because who doesn’t love a bit of caramel and nut action to up the stakes? The caramel gives you sticky pockets of goodness that leave your stomach feeling like it’s got a very satisfied full house. Or black jack, probably.

Banana Khait Muffins
Serves: 8-12.

Ingredients
200g caster sugar
1 tbsp sea salt
2 bananas, sliced
½ cup walnuts, chopped
350g plain flour
3 tsp baking powder
½ tsp bicarbonate of soda
½ tsp ground cinnamon
135ml grapeseed oil
3 eggs, lightly beaten
100g natural yoghurt

Method
Preheat oven to 170°C, fan-forced.

Pour the sugar into a very clean, medium-sized frying pan over medium heat and leave to melt until a caramel begins to firm. As hypocritical as I may sound, don’t stir it … be patient and let it gloriously melt by itself. Once it is molten, add the salt, banana and walnuts, stirring until they are coated.

Place the dry ingredients in one bowl and the wet … ingredients in the other. Add the caramel/banana mix to your wet ingredients (saving a teaspoon of caramel for each muffin to drizzle on top after they are baked, if you want).

Stir the wet ingredients into the dry until just combined, making sure you avoid overworking it. A) if you do, it makes them dense and b) why put in my effort than you have to?

Spoon the mixture into lined muffin pans and bake for 40 minutes. Cool and drizzle with reserved caramel, if you didn’t eat it while they were baking … which full disclosure, I did.

What can I say, Probst makes me hungry!

Cinnamonica Seles Apples

Straight up, I would like to dispel your knee-jerk assumptions from earlier in the week – I was not involved in the stabbing of Monica Seles … despite being a close friend of Steffi Graf. There is no proof, so don’t even try. I mean, the glove does not fit etc.

That being said, the tragically senseless and violent crime is what led to my first meeting with Monnie. You see, I was serving a community service term as a Candy Stripper (yes, stripper) in the German hospital where she was recuperating after the attack (I was drunk and disorderly at the same tournament the previous year as part of Steffi’s entourage, when I got into a premature fight with Brooke Shields).

Anyway, being a total sports fanatic I took Monnie under my wing and acted as her chief security and support. Plus, she also had great meds which I swapped out for placebos … thus her extended break to recover.

Despite the theft of the drugs being discovered (Monnie forgave me knowing I was an addict and supported me through rehab), we’ve been the closest of friends ever since, with me ghostwriting her memoir and advising her to make fantastic career choices like her forays into television with The Nanny and DWTS.

Monnie and I hadn’t seen each other in a couple of years so it was such a delight to catch up with her and participate in my personal favourite past-time, hitting tennis balls off the roof of my building at unsuspecting pedestrians below.

Let me just say, Mon still has it!

After such rigorous exercise, we were definitely in need of some simple sugars that we could pretend were healthy – enter my Cinnamonica Seles Apples.

Cinnamon and sugar as quite possibly the greatest culinary combination, with apples and walnuts being a close second. Obviously when you chuck all the keys into a bowl at the kitchen swingers party and instead end up with a flavour orgy, things can’t go wrong.

Cinnamonica Seles Apples
Serves: 4.

Ingredients
2 royal gala apples
100g walnuts, chopped
1 lemon, juiced
2 tbsp butter
⅓ cup brown sugar
½ tsp ground cinnamon

Method
Core and thickly slice apples, leaving skin on. Toss in lemon juice.

Melt butter in a non-stick pan over a medium heat, add apples and walnuts. Cook, stirring until lightly golden, about 5 minutes.

Add brown sugar and cinnamon, cook until thickened, about 2 minutes. Remove from heat and cover to keep warm.

Sweet Potato and Kourtney Karnashi Pear Gratin

This Christmas, I am really grateful for the likes of Kourtz Kardash. Our friendship has truly withstood the test of time and weathered the storm that comes with being A-list celebrities (well Ben and I are, anyways).

Our friendship with Kourtz literally goes back to when we were all in-utero. After our glorious simultaneous births, we were Kourtz’ newborn baby neighbours in the hospital (I can’t recall which one). Kourtney’s mother LudaKris sniffed out an opportunity with her momaging skills, recruiting Ben, Kourtz and I to star in her reality TV drama, Kribs.

Unfortunately once we had passed through the cute newborn stage, it became apparent that I resembled Baby Sinclair and Ben had a general hatred of people, so we were dropped literally like newborn giraffes from the Kribs cast. Unsurpisingly, without our presence, Kribs never took off – although it did set the tone and general level of emotional intelligence required for the follow-up Keeping Up with the Kardashians.

Despite never making it on-screen together, our friendship with Kourtz has remained strong over the years. Christmas is a great time to catch up over a hearty meal and reminisce on those glorious infantile years.

The Sweet Potato and Kourtney Karnashi Pear Gratin, is both a feat of our culinary and literary skills. It combines festive flavours of maple. walnut and pear with salty bacon and sweet potato, creating a modern Christmas klassic.

Sweet Potato and Kourtney Karnashi Pear Gratin
Serves: 8

Ingredients
750g sweet potato
4 medium nashi pears
100g streaky bacon
100g walnuts, finely chopped
125g butter
1 tbsp rice bran oil
3 tbsp maple syrup

Method
Preheat oven to 200°C.

Peel and finely slice the sweet potato and nashi pears. Set aside in a bowl and cover with iced water.

Meanwhile, melt together 100g butter and 3 tablespoons maple syrup. Finely chop streaky bacon into small pieces.

Heat frypan over medium heat. Once hot, add remaining 25g butter and 1 tablespoon rice bran oil. Saute bacon until golden and crisp. Stir through walnuts. Remove from heat and set aside.

Grease a 6 cup gratin dish with butter. Drain pear and sweet potato slices. Layer sweet potato and pear into the gratin dish alternating each slice. Once the layer is completed, brush with melted butter. Continue layering until all slices are used.

Bake in hot oven for 30 minutes or until just tender. Add walnut and bacon crumble and bake for another 5 minutes or until completely heated through.

Backstreet's back give thanks!, Side

Second only to our love of reality TV is our love of all things Disney. It is a little known secret that Ben and I actually first met Kevin Richardson working at Disney World.

You see, Kevin was a character actor at the esteemed Walt Disney World (before they banned facial hair). And he was not just any character, he was Aladdin AND also appeared as several of the Teenage Mutant Ninja Turtles. As you would know, Ben and I had previously failed to secure roles in the Lifetime straight to TV Turtles movie, with our nemesis Woo Hwang stealing the roles from under our noses.

In order to secure the coveted character parts, I was working on a machine that would ensure Kevin met a somewhat un-glamorous end. Meanwhile, Ben was moonlighting as the Little Mermaid in an attempt to get closer to Kevin and lure him into our creepy, dark and terrifying contraption. Kevin eventually took the bait, but instead of smashing his beautiful face into a million pieces he had a fantastic time. Yes – the ride now known as space mountain began as a covert mission to nix Kevsy Richardson.

Anyways, once Kevsy had experienced the thrill of space mountain, he was set on a path of enlightment and purpose. He was recruited into the Backstreet Boys shortly thereafter.

For Thanksgiving, we wanted to transport Kevs back to his days as a caped green crusader. While it isn’t a pepperoni pizza, the Kevin SwissChardson is a verdant tribute to our mutual love of TMNT.

Kevin SwissChardson
Serves: 4

Ingredients
1 large bunch swiss chard
2 tablespoons salted butter
4 tablespoons slivered almonds

Method
Using a sharp knife, carefully remove the stems of the chard and discard

Mix through almonds and serve.

BanAnna Chlumsky Split

Carnival Week, Dessert, Party Food, Sweets

It is probably quite hard to comprehend, but there was once a time when Annelie and I were not on the A-List. I know, crazy.

We first met our friend Anna Chlumsky when we were all extras on Uncle Buck while we were just struggling child stars. Obviously smelling success, Annelie and I hitched our wagon to Macaulay Culkin and commenced a decade long struggle with sobriety as part of his entourage.

But now I’ve gone too far. Two years following our time working together on Uncle Buck, we were reunited on the set of My Girl and formed a close bond with Annie Chlum.

While she disapproved of our addiction and dealing, she was greatly appreciative of our vision quest inspired script re-writes killing off Mac and making her the star. Not to mention writing her the most heartbreaking moment of any movie ever (until that moment in Inside Outside, obviously).

While we wrote the script for My Girl 2, we briefly lost touch on account of our countless deportations and stints in rehab after we failed to snag our first Oscars. Thankfully fate found a way to keep us together and reunited us when we were hired to write aggressive, expletive ridden insults for Armando Iannucci’s scripts and have been extremely close ever since.

Anna thought it best to pop over and relax before the Emmy Awards and visit the Ekka, which she has heard so much about in Hollywood. (Plus, getting her picture with us in Brisbane is a sure way to snag last minute votes).

Wanting to take her back to the innocent(ish) time we shared on the My Girl sets we made our famous BanAnna Chlumsky Split, which was the only thing that could cheer her up after a harrowing day filming Thomas J’s funeral.

While splits are a pretty simple dessert to whip up, we were inspired by Magnolia Bakery’s famous Banana Pudding and found a way to make it, well, better.

We opt out of the ice cream and cream and instead go with the pudding mix two ways. Trust us, you will never go back. With that, we have kindly borrowed the recipe for the mix from Magnolia as there is no way we could ever top it.

BanAnna Chlumsky Split
Serves: 4, with pudding leftover to boot.

Ingredients
4 bananas, peeled and sliced in half
¼ to ½ cup salted peanuts, roughly chopped
8 maraschino cherries
coconut oil, for frying

Pudding
1 ½ cups water
⅔ cup instant vanilla pudding mix
1 395g can sweetened condensed milk
3 cups heavy cream

Hot Fudge Sauce
⅔ cup double cream
½ cup Golden Syrup
⅓ cup dark brown sugar
¼ cup cocoa powder
¼ teaspoon sea salt
175g dark chocolate, chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract

Method
Pudding
Mix together the water, pudding mix and condensed milk until smooth, and refrigerate for about four hours.

Four hours later, whip the double cream until soft peaks form. Fold the whipped cream into the pudding mixture in thirds, until well incorporated. Transfer half of the pudding mixture into an airtight container and freeze for about six hours, placing the remaining pudding back in the fridge. Covered with cling, obviously.

Hot Fudge Sauce
Bring the cream, syrup, sugar, cocoa, salt and half of the chocolate to boil in a small saucepan over medium-high heat. Reduce the heat to maintain a low simmer, and cook for five minutes, stirring occasionally.

Remove from the heat and stir in the remaining chocolate, butter, and vanilla extract, until smooth. Let to cool for 20 minutes.

(If you don’t use all of the fudge, which you probably won’t, store in an airtight container in the fridge for about a week).

Bananas and assembly
Preheat a griddle until nice and hot, and lightly oil the pan with coconut oil. While the pan in heating, removing the pudding from both the freezer and the fridge.

Place the banana halves on the hot pan, flat side down and fry for 1-2 minutes. Now, sometimes I ace the next part and other times I just shouldn’t bother. Using a flat spatula, flip the bananas and fry on the other side for a minute or until lightly caramelised. Repeat until all bananas are cooked.

Sometimes the banana gets soft, so don’t worry too much if you make a mess.

Now get to work on with the plating by placing two halves of the bananas in a bowl. Top with two or three generous scoops of the frozen pudding. Drizzle, again generously, with hot fudge sauce and scatter, you guessed it … generously, the peanuts on top.

Then top complete the majesty, dollop on a large scoop of the refrigerated pudding aka pudding, and top with a couple of maraschino cherries.

Devour, messily.

Christoffee Knight Cheesecake

At the risk of sounding like I’ve softened (and that I am potentially repeating myself), Christopher Knight is a gentleman, a scholar and a saint, and the last almost-fifty years of friendship have meant the world to us.

Now that the niceties are out of the way, let me take you back. We first met Chris and all of the Brady kids through our friendship with the Jackson 5. You see, we were choreographing for the Jacksons (and later invented the moonwalk, but I digress) and Michael introduced us to his girlfriend Maureen who got us auditions for two new roles in Season 5 of The Brady Bunch.

We nailed the auditions and came on board as twin cousins of the Bradys and were so universally despised by the audience that the show was put on hiatus after our first episode and retooled to include a different cousin (with all copies of our episodes and scripts burnt to ensure we were forgotten).

Yes, we were a worse option than Cousin Oliver.

After our unceremonious axing, we stayed close with all of the Bradys (family is family, after all) however it was Chris and Mo that were always our closest.

In honour of the celebratory catch-up, we whipped up a quick Christoffee Knight Cheesecake, (fun fact, it is the cake he made to cheer us up after our axing), to devour as we caught up on each others lives.

The bleeding (well melting, but it kinda looks like it is bleeding so I’ll stick with that) toffee cuts through the delicate cake/cheese and with the added crunch of the nuts (nothing suss) you have no other option but to face-plant into the cake and devour.

Or maybe that is just us?

 

Christoffee Knight Cheesecake_2

 

Christoffee Knight Cheesecake
Serves: Well 3 in this case, 6-8 for normal people.

Ingredients
1 cup butternut snap biscuits (something equivalent), crumbed
2 tbsp butter, melted
500g cream cheese
½ raw caster sugar
½ cup thickened cream
3 tsp gelatine powder, dissolved in ¼ cup boiling water
100g peanut brittle, broken into smallish pieces.

Method
Combine the biscuit crumbs and melted butter, and press into the base of a 20cm springform pan and refrigerate while you make the filling.

In an electric mixer, beat the cream cheese until smooth. With the mixer on low speed, add in the sugar, cream and gelatine until smooth and combined.

Fold through most of the peanut brittle. Pour mixture into the chilling pan (obviously remove it from the fridge, yeah) and return to the fridge for a few hours to set.

Remove from fridge about twenty minutes prior to serving and garnish with reserved brittle.
