Despite the doomsday and dramatic names of his albums, my dear friend Slash is the kind of person that fills me with an overwhelming sense of calm. Given everything I’ve done over the years, it is quite clear that is rare as well as a good thing.

While … except there was that one time Slash wasn’t able to keep my epic temper in check which ultimately led to him leaving Guns N’ Roses.

But I should probably take you back a bit further right?

I first met Slash many years ago in England when part of Bowie’s entourage. Slash’s mother used to design costumes for Dave and when we’d drop by I was always drawn to the beautiful sound of guitar in the other room.

From those very first days, I knew that he was destined for greatness and as such made my first attempt at momagering him.

(Oh FYI, I tried to adopt him … thus my plan failing, despite his success).

I then introduced him to Axl in the ‘80s and, as you know, designed what would become the majesty that in Guns N’ Roses. You’re welcome.

While I was a diligent Chief Groupie Advisor and muse – when not in prison – I did get angry with Ax when he opted not to sleep with me after a gig and swiftly went to Slash to quit the band. I was irate, he was loyal – and probably scared – and stepped away. All’s well that ends well though, as I was able to convince him to rejoin the band last year.

Given how busy the boys have been since reforming, I haven’t been able to see much of Slash so it was such a treat to spend a bit of time with him. While we sadly didn’t reconnect in the physical persuasion, I still made him our morning after Slash Browns and for that he is forever grateful.

 

 

Make no mistake, Slash is comforting and delightful … but that pales in comparison to how potato makes you feel. Particularly – and I feel like I say this for any potato recipe – when it comes in the form of a hash brown. Crisp on the outside, light and fluffy on the inside … and complete perfection.

Slash Browns
Makes: 8.

Ingredients
4 potatoes, peeled and parboiled
1 egg, lightly whisked
2 tbsp milk powder
⅓ cup flour
¼ tsp smoked paprika
salt, pepper and caster sugar, to taste
butter or vegetable oil, for frying

Method
Grate the parboiled potatoes and press in a sieve to remove as much liquid as possible. Once dry(ish), place the potato in a bowl to cool.

Once cool, add the egg, milk powder, flour, smoked paprika, salt, pepper and a pinch of sugar, and scrunch with your hands to combine.

Press a small handful of mixture into a hash brown shape, place on a lined baking sheet and continue until done. Cover and place in the fridge for an hour or so.

Once the hash browns have chilled, heat a good knob of butter or lug of oil in a large frying pan over medium heat. When it is nice and hot, place a couple of hash browns in the pan and cook for a couple of minutes either side, or until golden and crisp.

Repeat until done, then devour. With or without eggs and/or Slash.

Parphaedra Parks

Dessert, Snack, Sweets

There is nothing more soothing than having a sassy catch-up with my dear friend Shade-ra Parks. Particularly after her stellar performance on this week’s housewives, letting Porsha plant herself directly under a bus whilst chugging back wine.

This, my friends, is peak Phaedra and this is why we are the absolute best of friends. Wine and shade.

I first met Phaedra while she was in law school. As you can probably guess, I was running a scam pretending to be a lecturer – fun fact, my lawyer lecturer persona inspired Annalise Keating. Phaedra, as my brightest and shadiest student uncovered my duplicity and forced me out of the profession.

Being such a sweet christian girl however, Phaedra took me under he wing and taught me to lead a good, southern christian life whilst also being hella sexy.

Given Phae has been so busy lately with the boys, her business and general feuding with her Atlanta friends, I haven’t seen her since Apollo went to priz. It was such a treat to reconnect, catch-up and most importantly talking about the remainder of the season over a delicious Parphaedra Parks.

Being as Phaedra is literally the sweetest thing in the world, I first whipped this up to show my appreciation and make up for the fact that I am not as kind as her. That said, she is sweet but she is also great at throwing shade and is a little nutty, so I had to include some cherry and almonds to get the point across.

And to elevate the flavour – enjoy!

Parphaedra Parks
Serves: 8.

Ingredients
500ml cream
150g dark chocolate
1 gelatine leaf
2 egg yolks
75g caster sugar
100g almonds, chopped and toasted
100g pitted cherries, halved

Method
Bring half a cup of cream to the boil in a small saucepan over medium heat. Once boiling over like an international holiday of a housewives franchise, remove from the heat and whisk through the chocolate and gelatine leaf until smoothy and glossy. Set aside to get chill.

Whisk the remaining cream in a large bowl until the ribbon stage. In another bowl – I know, another – mix the eggs and sugar in a stand mixer until light and fluffy.

Fold the chocolate mix into the eggs until smooth, then fold in the cream, almonds and cherries. Transfer to a lined 25cm square cake tin, smooth the top, cover and freeze overnight.

The nek day – as the kids said a few years back – cut into portions. Serve … and devour.

Elton Johnnycakes

Breakfast, Grammy Gold, Grammy Gold: Golden Little Pill, Snack

I know what you’re thinking – did hell freeze over? While technically, the answer is no (as far as we can tell), both Elts and I felt that with Trump’s election, the impossible and stupid is now possible and so our feuding should come to an end.

Despite my pledge to always be his staunchest of rivals.

We started a renewed correspondence back in mid-December to throw shade at the vile pig that was elected as the President of the United States. After a few weeks of back and forth rage, we realised that despite our tumultuous past it was time to unite for the greater good of the world – it is amazing what a mutual enemy does for one’s friendships!

(Yes, I’m now going for a Nobel Peace Prize too – FYI … in lieu of the Oscar he made me lose in the ‘90s).

Wanting to sort out our issues before we both changed our mind – and given the fact he has his own Oscars celebration – I decided to mark our renewed friendship by including him in our Grammy Gold celebrations, rather than wait (or rub salt in the wounds) for Oscar Gold.

While it was obviously, extremely awkward for a good twenty minutes or so as we both circled each other hurling back-handed compliments, until I softened and mentioned his spawn, softening his heart and allowing us to truly connect like in the good old days.

Well, almost – he hadn’t had a post-flight colonic. Which reminds me, he obvs wrote Benny and the Jets about me during happier times.

Not to let that dampen the mood, I quickly whipped up a batch of my Elton Johnnycakes – for the first time post feud – which was our go to post-coitus (or colonic) snack.

Pancakes are good and all, but how can you go past a option that is thicker, juicer and packed full of a different flavour. Gah – I think I missed Elts in our time apart, don’t tell anyone.

Elton Johnnycakes
Serves: 4.

Ingredients
150g polenta
100g flour
1 tbsp baking powder
1 tbsp raw caster sugar
pinch of salt
2 eggs
300ml milk
30g butter, melted

Method
Combine the dry ingredients in a large bowl and whisk together the milk and eggs in a jug. Stirring constantly, whisk the wet ingredients into the dry until some and combined. Finally, whisk in the butter.

Meanwhile heat a skillet over medium heat. Melt a small lug of butter and when foamy, add in a ¼ cup of batter into the pan. After a minute or so, flip over the cake and cook for a further minute. Transfer to a plate.

Repeat until done and devour in bed, alone or with a dear friend (in the ‘70s obvs, not now).

Riza Weil Pudding

Dessert, Oy with the turkeys already!, Snack, Sweets

If I ever got involved in hardcore, life-enveloping BDSM akin to 50 Shades of Beige it would come down to the beautiful aggression of Paris Geller and that all comes down to the wonderful performance of my dear friend Liza Weil in the role.

While ASP based Luke’s cantankerous spirit on me, she blessed Paris with most of my (at time terrifying) other qualities and when it came time to cast the role I knew that Liza was the only one we should cast.

I first met Liz when she guested on The Adventures of Pete and Pete where I was working to get both Pete’s recast to sexier gingers to help launch the Red Hot Project years earlier. While I was unsuccessful and sadly can’t lay claim to the thirst inducing calendars, I did gain a lifetime friend and punishing life coach in the form of Liza.

After all is said and one with the Thanksgiving mainstage, you need something a little sweet to fill that remaining gap in your stomach to ensure you’re adequately engorged … which again, is exactly how I would describe Paris.

You know she is too much, you know it will be punishing but you stick with her anyway as that is what makes life great. Coincidentally my Riza Weil Pudding also makes life great.

Creamy, sweet and spicy, it is everything you need to tide you over before dessert.

Oh … you thought this was dessert? No my dears, no.

No. This is dessert entree – enjoy!

Riza Weil Pudding
Serves: 4-6.

Ingredients
¾ cup uncooked white rice (for creamier pudding use short or medium grain rice)
2 cups milk, divided
⅓ cup raw caster sugar
1 tsp cinnamon
⅔ cup raisins
2 apples, peeled cored and diced
1 egg, beaten
1 tbsp butter
½ tsp vanilla extract

Method
Bring 1 ½ cups water to boil in a large saucepan. When bubbling away, add in the rice and stir. Reduce heat, cover and simmer for 20 minutes. Drain.

Place the drained rice into a fresh, large saucepan with 1 ½ cups of milk, the sugar, cinnamon, apple, raisin and a pinch of salt and cook over medium heat for fifteen minutes.

Whisk the remaining milk and egg together, stir into the mixture and cook for a couple of minutes.

Remove from the heat and stir through butter and vanilla, serve immediately and devour.

Crepe Susan Lucci

Dessert, Snack, Sweets

Say what you want about Susan Lucci – and fuck knows I do – she is one of the brightest, kindest and most generous people I’ve ever been lucky enough to call my friend.

Whether it is taking my acidic barbs like a champ, losing DWTS or more importantly losing the Emmy year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year, after year – break to win – after year, after year, Suze accepts it all and laughs it off knowing that she is a wonder.

I first met Suze in the 70s when I was hired as a soap-fight consultant on All My Children, the success of which led to me being hired by Az in the 80s when Dynasty started. Despite only working together briefly, Suze and I became fast friends and I was always first on hand after her Emmys losses to provide her with love and comfort in the form of cripplingly aggressive humour.

So Rami & I were getting ready to leave Kit’s house, and I L.A. when I gave Suze a buzz to see if she wanted to catch-up. Chuckling, she agreed – knowing the roast she was about to ensue.

“Suze – I just dropped Rami off after we celebrated his Emmy win. Can you believe winning an Emmy on the first go … let alone a Primetime one?!”

“Sarah Paulson broke her streak – she only took six losses before converting one!”

“You know how you lost the Emmy 20 times? Tatianna Maslany won on her second go for playing twenty characters. I guess she is almost as bad as you, right?”

Obviously I actually got cruel and made off colour jokes, but I’d rather keep our aggressive relationship. It truly is way too special to us.

Either way, it truly was a great opportunity to reconnect and provide my commiserations for the axing of Devious Maids and end of her career. Well, until I launch the soap idea I’ve been playing around with.

Oh and get Little Whorephan Andy: The Andy Dick Story on Broadway – I know she’ll be perfect for the role of Andy’s mother.

Anyway, the sweetness wasn’t just relegated to our bond but my famed Crepe Susan Lucci which – fun fact – were the only thing that could cheer her up after her numerous Emmy losses.

Like Suze herself, the crepes are lithe, delicate and humble, and the sauce is hot and full of zest, leaving you happy, content and full of love – can’t wait to see you next Emmys, Suze.

Crepe Susan Lucci
Serves: 4.

Ingredients
100g plain flour
salt
2 eggs, 1 whole, 1 yolk only
300ml milk
1 tbsp unsalted butter, melted plus extra to fry

Sauce
100g caster sugar
35g unsalted butter
150ml orange juice
1 orange, zested
3 tbsp Grand Marnier
2 tbsp brandy
ice-cream, to serve

Method
Place all of the crepe ingredients in a jug and blitz with a stick blender until combined and forms a smooth, thin batter. Cover and allow it to sit for 30 minutes.

Once the batter is nice and rested, heat a small frying pan over medium heat, melt a small dob of butter and pour in enough batter to cover the base. Cook for a minute or so, carefully flip and transfer to a plate. Repeat until the crepes are done.

Meanwhile, in another small frying pan over low heat, melt the sugar with a tablespoon of water. Add the butter, increase the heat and cook for about five minutes, or until it is golden brown. Add the juice, zest, liqueur and brandy and simmer for a couple of minutes, stirring. Remove from heat.

Once it has cooled slightly, dip each crepe into the sauce, fold it in half and in half again – aka quarters. Layer a couple on a plate, top with ice cream and devour.

Axl Rosewater Meringues

12th Annual Easter Meggstravaganza, Dessert, Easter Meggstravaganza, Snack, Sweets

As I’ve said, step two is always one of the trickiest aspects to complete of the Meggstravaganza. I mean, no want wants to be classed a struggling musician … unless they are like pre-Usher Bieber. When you’ve enjoyed a successful career however, struggling is quite a down-grade.

Thankfully my dear friend Axl Rose doesn’t let his pride get in the way of helping to reignite careers. Particularly those of the star of his three favourite movies, You’ve Got Mail, Sleepless in Seattle and *cringe* The Women.

I first met Axl in the 80s outside The Troubadour in West Hollywood. I was turning tricks, trying to net myself a musician lover to fund my addiction and my adicktion. While Axl wasn’t interested, he loved my rock and roll attitude and we quickly became friends with me playing an integral part in the ‘85 merger that formed Guns N’ Roses.

We grew apart while I was away in prison and running scams, but I always played an integral part in inspiring the group acting as the Chief Groupie Advisor and muse.

As I said, Axl is a huge Meg fan and was very eager to get into the ritual arriving with a bandana/headress hybrid, some peyote and various useful percussion instruments. Maybe I should have mentioned a KitchenAid Mixer and a dry bowl was all I really needed to make the egg-white sacrifice known as my Axl Rosewater Meringues.

Crusty bakery meringues in the 90s turned me off the treat, until I realised they weren’t meant to have the texture of asbestos powder with similar health benefits.

These little treats are sweet, crusty, gooey and everything you want out of a good meringue. Now with pistachios!

I’m off to the hen house to pick up some more eggs before my TV star friend drops by – enjoy!

Axl Rosewater Meringues
Serves: 8-12.

Ingredients
600g caster sugar
300g egg whites
2 tsp rosewater
Finely chopped pistachios, to garnish

Method
Preheat oven to 110°C.

Place sugar in a small pan over medium-low heat and cook until it starts to dissolve. When it reaches 115°C on a thermometer, place the egg whites in a large mixing bowl and whisk on high speed until the whites just begin to foam like an OD outside the Viper Room in the 80s … aka around a minute.

When the syrup reaches 121°C turn off the heat, increase the mixer to high and with motor running, gradually pour the syrup into meringue. Reduce the speed to medium and continue to beat until cooled to room temperature and thick and glossy.

This takes about 15 minutes, be patient. You want to be hypnotised by its beauty, like Skarsky peen-scene.

Line two trays with baking paper. Use two spoons, shape the meringues into generous, rough quenelles. You can make these as large or as small as you like, Axl for instance loves my little friendship-kisses sized domes, other lovers friends like them realround, thick and juicy. The only three second rule I have is to space them well apart to allow for the growth as they get hard and hot.

Sprinkle meringues with the chopped pistachios and leave to bake for about 2 hours, or until set – firm on the outside and just soft in the centre.

Remove from oven and allow to cool. Devour.
