The 12th Annual Easter Meggstravaganza: When Meggy met Eggy

12th Annual Easter Meggstravaganza, Guess Who's Coming to Dinner

Despite another year of our egg based return-to-fame ritual, poor Meggy Ryan wasn’t able to make the triumphant return to the A-list that she so deserved.

As you now know, Annelie and I have been catching up with Megs each Easter for the past decade to bring new life into her shockingly, unfairly stalled career.

While you could argue that a co-starring role with Kiernan Shipka on an ABC Family TV movie is a huge boost to her career, it didn’t set her career alight quite like we had hoped. With Annelie still struggling with cage-fighting induced amnesia, I am assembling the usual classification of friends together to try and finally nudge her back into the stratosphere.

Who will be the struggling musician,  successful TV star,  shockingly-still-living legend and, of course, the hero that I join together with Meg and a dick-load of peyote? To be continued, as the say …

Welcome to The 12th Annual Easter Meggstravaganza! The twelfth time’s the charm, isn’t it?

Alecia Golden Syrup Dumplings

Dessert, Side, Snack, Survivor: Kaôh Rōng, Sweets

Poor, scrappy Alecia!

Not only did she struggle with those embryos a few episodes back and has been consistently bullied by the remaining male Brawns, she was now booted as an afterthought of Survivor’s mother-nature massacre.

After returning from the reward challenge of doom, Alecia tried to defend her dastardly encouragement of her teammates. Shockingly, this fell on deaf ears and she was abused some more before heading off to the immunity challenge. Upon its loss, being delightful, her tribe requested that Probst save them the bother of attending tribal and to just take her back to loser lodge with him.

While Alecia vetoed the idea, it was just delaying the inevitable … and gave her team the opportunity to hurl some more abuse at her, as she made her way out. As I’ve mentioned, I coincidentally was friends with all of the cast members before the show but I will not defend any of the negative and often cruel behaviour some of them are displaying. Even when I know there may be two sides to the story.

I first met dear Alecia as a child, while working with her father. I was a young, up and coming boxer in Philadelphia (my story inspired the Oscar winning film series Rocky) and he was my fight promoter, while she was both my sparring partner and cheerleader. Yes, she could be annoying from time to time but so am I, and so is everyone else … so we never made an issue out of it.

She was disappointed when she made it to Loser Lodge but thankfully still had a positive outlook and took it all on the chin while downing a nice big serving of my Alecia Golden Syrup Dumplings.

alecia-golden-syrup-dumplings-1

While Alecia has a positive, never-say-die attitude I don’t think her post boot sunny disposition was all thanks to that. I mean, these dumplings are sweet. Crazy sweet. But what do you expect when you cook pillowy scone-esque dough in a shit-tonne of sugar?

Either way, devour and be thankful you aren’t the pariah of the Brawn tribe – enjoy!

Alecia Golden Syrup Dumplings
Serves: 6.

Ingredients
1 cup flour
2 tsp baking powder
salt, to taste
80g unsalted butter
1 eggs
50ml milk
1 ½ cup golden syrup
½ cup water
ice cream, to serve

Method
Sift the flour into a bowl with a pinch of salt before rubbing in 20g butter into the flour until it resembles wet sand. Add the egg and milk, stirring to combine and mix till the dough just comes together. Do not overwork it like Caleb in a challenge. Set this aside to rest.

Combine the golden syrup, water and the remaining 60g butter into a large frypan. Bring to the boil to combine and turn down to a gentle simmer.

Roll the dough into walnut sized balls and place into the syrup. Cover the pan with foil and then top with the lid and cook for about 20 minutes, turning once halfway through.

Serve generously with the remaining sauce and ice cream.

Calebonara Reynolds

Main, Pasta, Survivor: Kaôh Rōng

There are a lot of things I love about Jeff Probst, outside of his insane beauty. His number one though, has to be his ability to make all statements smutty (that makes me lust after him even more) … even when half the cast are dying around him.

Much as been mentioned online (read: reddit) about what could Kaoh Rong this season and this is where Cambodia hit back and answered.

After a brief stint of Obama being sad, we went straight into the reward challenge where Probst focused on finding balls and sticking things into holes before the drama hit.

Debbie was first to fall thanks to the blistering heat but as biological cooling mechanic is one of her past jobs, she was fine. As she was recovering, Cydney and and my dear friend and rumoured (started by me) lover Caleb Reynolds went down in quick succession, with the later sadly being taken out by Survivor’s version of the Red Wedding.

It was fucking scary but who hasn’t almost died just to earn a cup of coffee, amirite Gilmore Girls?

I first met Caleb while he was on a tour of duty, where I was doing a sexy version of the USO Show. Despite what surfaced during his appearance on Big Brother, Caleb has been nothing but supportive of my aggressive homosexuality the entire time we’ve been friends.

Make no mistakes, Caleb was in a very bad way when he was taken out of the game but thankfully I was on hand to look after him and nurse him back to health, with some Tai-style stolen kisses and a big bowl of my Calebonara Reynolds.

calebonara-reynolds-1

Pasta is the ultimate comfort food, particularly with a delicate carbonara sauce and a good whack of parmesan cheese. But why have delicate and good, when you can add lemon and parsley to take it to the next level?

Exactly … and I mean, Caleb is back to full health, so yeah, case in point. It works. Enjoy!

Serves: 2 greedily, 4 appropriately.

Ingredients
150g pancetta, diced
sea salt
freshly ground black pepper
455g dried linguine
4 large free-range egg yolks, preferably from Tai’s remaining chickens
100ml double cream
50g Parmesan cheese, freshly grated
1 lemon, zested
1 sprig fresh flat-leaf parsley, chopped
extra virgin olive oil

Method
Heat a lug of olive oil in large frying pan, add the pancetta and fry for a couple of minutes, until golden and crispy.

In the meantime, bring a large pot of salted water to the boil and cook the pasta to packet instructions. I know, I know, I should have made the pasta but it is a labour of love and I didn’t have time given I was nursing someone to health in Cambodia!

When the pasta is cooking, whisk together the egg yolks, cream, Parmesan, the lemon zest and parsley in a large bowl. When the pasta is ready, drain it and reserve a little of the cooking water. Place the pasta back in the pan (off the heat) and quickly stir through the egg mixture. Once it has delicately cooked, add the pancetta and toss everything together.

The goal is for the sauce to cook delicately, but if it ends up claggy, or say scrambled, add a few spoonfuls of the reserved cooking water to loosen it slightly.

Serve and sprinkle over / coat with a thick layer of parmesan and devour, happily … and healthily.

Jennifer Parmesanetti Buns

Baking, Side, Snack, Survivor: Kaôh Rōng

Call it what you will – brain snap, brain fart, complete mental collapse, non-mental giantism – but that doesn’t matter, all that does is that my dear, dear friend Jennifer Lanzetti had one and was swiftly sent packing.

As you could probably guess, Jenny and I first crossed paths many years ago while both of us were drug addicts. While she credits me with getting her addicted, I am very thankful to be able to credit her with getting me sober … well, one of the times at least.

After the first episode, Jen had set herself up well, squarely in the majority of the Luzon 2.0 / Matsing 3.0 tribe however proceeded to shoot herself in the foot and get herself sent into my loving arms at loser lodge. As much as I love Jen, I am glad that my almost sister and mental giant, Alecia Holden lived to see another day.

Maybe she sacrificed something to the embryos of fire on the beach?

While this week didn’t involve any worms trying to get intimate with brains (not the brains), the trees did get their revenge on Tai for last week by slashing his legs open. Lucky he had his dreamy pal, who can also walk on water, Caleb to make him feel good.

But that was all filler, the brawn tribe once again lost a hardcore physical challenge, I assume as a protest to the BvBvB concept while highlighting the fact that they are smarter than given credit for, and made their way back to my lover Jeff in the tribal council village (oh if the walls of those villas could talk).

Once there, Jen proceeded to shoot herself in the foot, face and knee-cap … repeatedly, like the creep my lover Paul Bettany played in The Da Vinci Code (our sex-tape – he was in character – inspired EL James to turn it into the straight-washed disaster known as 50 Shades).

With that, this tribal council marked the second time a grave-digger has made an epic blunder, leading to their departure. And once again, our marker-confused, mental giant, embryo helper lives to fight another day.

Who knows what that worm did to her brain – did it eat part of it? Was it trying to take her as a lover, like a puzzle laying down for Debbie? Was it telling her that my Jennifer Parmesanetti Buns were waiting for her in Ponderosa? That is the only thing that makes any sort of sense.

jennifer-parmesanetti-buns-1

These buns are like crack. I don’t know whether it the cheese, all the herbs or the pillowy dough, but these are good. Real good.

Fun fact: you actually missed the part of tribal where she offered to take off her clothes for the buns, to give her motivation to stay. It failed, but at least I had them waiting for her in Loser Lodge.

Enjoy!

Jennifer Parmesanetti Buns
Makes: 16.

Ingredients
Dough
3 ½ cups plain flour
2 tsp coarse salt
¼ cup warm water
3 tbsp caster sugar
2 ¼ tsp active dry yeast
6 large eggs, room temperature
1 tsp lemon zest
1 clove garlic, finely chopped
3 tbsp sage, finely chopped
1 tbsp thyme, finely chopped
170g unsalted butter, room temperature, cut into 6 pieces

Baking
85g unsalted butter, room temperature
1 cup Parmesan, grated
½ cup flat-leaf parsley, finely chopped
20ml thyme, chopped
1 tsp lemon zest
½ tsp freshly ground pepper

Method
Dough
In a large bowl, whisk together the flour and salt. In the bowl of a mixer, combine warm water, sugar, and yeast and leave stand to get all foamy and frothy, about five minutes.

Add eggs, zest, garlic, herbs and flour mixture to the foamy yeast mixture and beat with a dough hook on medium-high speed until dough pulls away from sides of bowl, about 5 minutes.

Beat in butter, one piece at a time, while beating until fully combined and dough is shiny and smooth, about 5 minutes more. Cover with cling wrap and leave to prove, like Alecia with the fire, until doubled in size, about 1 hour.

Place in the fridge for an hour, punch down and return to the fridge for another hour.

Baking
In a bowl, combine everything but the butter.

Split the dough in half. Roll one of them out on a lightly floured surface into a large rectangle, about 30x15cm. Spread half the butter over dough, leaving a slight border, and sprinkle with half of cheese mixture, pressing it into the butter. Starting on a long side, roll the dough up to form a cylindrical shape and cut into eight equal disks. Place the disks on a lined baking sheet. Repeat the process with the remaining dough, cheese and butter – you know, all the remaining stuff.

Cover all of the rolls with cling wrap and leave to rise in a warm spot until doubled in bulk, about an hour or two.

Preheat oven to 190°C.

When the oven is at temperature, place the rolls in the oven and bake until golden brown, about 20 minutes.

Remove from oven and allow to cool slightly and then devour. They are glorious warm.

Spencer Bledsoba

Main, Survivor: Cambodia - Second Chance

Spenny Bleds, I can’t say I am sad to see you go from Second Chances – despite our pivotal role in your creation as the robot/human hybrid that you are.

You see, SpenBot, as his prototype was named, was the subject of an undercover experiment Ben and I conducted during our mid 1980’s mad scientist phase (doesn’t everyone have one?).

We were tasked with designing a higher level robot being, with the emotional and intellectual might to save mankind from themselves. Unsurprisingly, as Ben and I actually aren’t legit scientific geniuses, we took a few shortcuts and ended up with a strange hybrid of trusty educational robot 2-XL and toy-of-the-moment Jennie Gymnast.

While we may have built Spencer with the emotional capability of a 1990’s remote-control gymnast (oops), thankfully he also inherited Jennie’s physical prowess. He was able to hold his own during the season’s physical challenges, making it all the way to the final tribal.

Unfortunately for SpenBot, his inner robot really shone out this seasoning, rendering him a seemingly insincere, unlikeable jerkwad worthy of approximately zero votes.

As you can imagine, Spencer was his usual 7/10 emotional flatline when he saw our angelic faces back at Ponderosa. That said, he was hungry and wanted to tuck into something both comforting and healthy. The Spencer Bledsoba is the perfect meal to shed robotic, emotionless tears into.

Method
Boil a large saucepan of water and cook soba noodles as per packet directions. Drain and run cool water over them to separate.

Heat a large fry pan with some cooking oil. Crack eggs into pan and fry until cooked to your liking. Set aside.

In the same pan, add garlic, chilli and ginger and saute for 1-2 minutes. Add soy sauce and soba noodles and stirfry until hot and combined.

Divide noodles between four bowls and top with a fried egg each. Garnish with a tablespoon of sesame seeds per bowl and a sprinkle of shallots.

Monica Padilla Thai

Main, Survivor: Cambodia - Second Chance

While we were sad for Monica’s premature exit from second chances, it is always good to be in the company of kindred spirits.

Unsurprisingly, Monica and I both rely heavily on our exceptional looks and charm to get by in life. In our younger years, we went head to head in a college flirt-off. While Monica was shimmying, winking and pouting her way into the hearts and minds of many, my attempts were mistaken for an out-of-control epileptic episode.

While Monica may have won many years ago, I’ve been refining my technique in order to score the ultimate prize – Jeff McDreamy Dreamboat. Every post-second chances exit meal shared with our friends is another step closer to the Holy Probst (well unless Spencer’s experience being on the bottom gets in the way)! It is also a chance to bathe in the delicious irony that her love of the clam was ultimately her undoing.

How can we ensure Monica doesn’t win the great race to Probsty’s heart?  Carbs!

Bacon and Cheese Erik Estrata

Breakfast

Erik is an absolute sweetheart and it is terrifying how much we value that in him, considering most of our closest friendships are built on a basis of lying, stealing and intimidation.

In Hollywood, it is eat or be eaten and Erik is too good for that.

We “first” met Erik after time-traveling on to the set of CHiPs after hearing about his glorious buns while working on The Nanny in the 90s. We were quickly hired as advisors on the show with our extensive knowledge of high-speed chases (from our time trying to evade arrests), after pitching a plot line involving the entire OJ arrest car-chase.

Time-travel can be really helpful when you want before their time ideas.

We haven’t seen much of Erik since he joined the police force (we didn’t want to put him in an awkward position if we fell into crime again), but got together to brainstorm the best possible way to reboot CHiPs on Netflix. Obviously it will involve me playing his son and deputy, and Annelie our sassy and aggressive Captain.

Needless to say, we had a fully realised outline by the time we finished our Bacon and Cheese Erik Estrata.

Bacon and Cheese Erik Estrata_1

The saltiness of the bacon cuts through the richness of the cheese leaving you with a strata that is light, eggy and warm. So pretty much like a hug from Erik, but with eggs.

Enjoy!

Bacon and Cheese Erik Estrata_2

Bacon and Cheese Erik Estrata
Serves: 4-6.

Ingredients
1 (heading towards stale) baguette, cut into 1-2cm slices
150g mozzarella, grated
60g parmesan, grated
100g cheddar, grated
100ml sour cream
6 free-range eggs
6 rashers bacon, diced
6 shallots, roughly sliced
handful cherry tomatoes, diced

Method
Place the cheeses, sour cream and eggs in a food processor and blend until smooth. If you don’t have a food processor, a large bowl and a stick blender will work ace. Remove the bowl from processor and add the chopped bacon, shallots and tomatoes. Lightly mix with a spoon.

Arrange the baguette slices in a layer or two in a square dish (26cm).

Pour the bacon, cheese and egg mixture over the bread in the dish, cover with cling film, and leave in the fridge to soak overnight.

The next morning, get out of bed, remove the strata from the fridge to rest while you preheat the oven to 180°C. While the oven is preheating you can say some affirmations, read the news or dance like this.

When the oven has come to temperature, place the strata in and bake for 30 minutes, or until cooked through.

Remove from the oven and devour, watching the melted cheese doesn’t burn your face.

Tina Souffle

Dessert, Easter Meggstravaganza

Step five is always a blessing and a curse. As Peter Parker famously said, with being a hero comes great power and great responsibility – so trying to pin down Teenz is always a tad difficult.

After we failed to befriend Amy Poehler through Adam Scott, we travelled back in time to the Delaware County Summer Showtime to befriend Tina in her (our?) younger years. It worked and thankfully, history was rewritten with the four of us being best friends (she totally got us in with Ames). Her love for us knows no bounds and she went on to write 30 Rock with Tracey Jordan and Jenna Maroney being based on us. We were also instrumental in the writing of Mean Girls, which was actually a thinly veiled attack at our less successful co-stars at the County Summer Showtime.

Tina was always keen as mustard to help us out with our blossoming careers. She got us auditions with Saturday Night Live, however Ben was overly keen to sleep his way in (even when this was explicitly not necessary). He peddled one junk-shot too many unfortunately and Lorne Michaels banished both of us from the studio, swearing our names would never be uttered on set again and rendering us the unofficial voldemorts of NBC.

Despite trashing the brilliant opportunities Tina generously found us, she still considers us two of her oldest friends. She is always willing to help out so jumped at the opportunity to help another person in dire straits – Meg Ryan and her pitiful, failing career.

tina 2

As Tina is the gold standard in entertainment, we needed the gold standard of desserts. Chocolatey and rich yet light and delicious like the lady herself, the Tina Souffle ticks all the boxes.

tina 3

Tina Souffle
Serves: 6

Ingredients
6 eggs, separated
180g dark chocolate
50ml cream
50g caster sugar
Butter and caster sugar, for ramekins

Method
Heat oven to 200C. Butter and sugar the ramekins.

Over a low heat, melt the chocolate and cream together and allow to cool slightly before whisking in six egg yolks.

Using a stand mixer, beat egg whites until stiff peaks form and slowly add caster sugar until a thick meringue forms.

Impossible Quiche Richards

Easter Meggstravaganza, Main

In amongst all the frivolity and grandeur that marking the torturous death of a religious figure brings upon us, Ben and I decided that for the good of humanity, and in line with our peyote induced visions, we would honour someone who, by divine intervention or other means, miraculously keeps on kicking.

Yes, Keith Richards is the perfect candidate for step four of our Meggstravaganza ritual.

A pal of ours since our days in the boys soprano trio (aka a barbershop quartet minus one) at Dartford Tech, Keith Richards was undeniably the talentless hack of the group. Ben and I had no choice but to force him out of the prestigious trio and lo and behold he landed directly in the arms of Mick Jagger.

Our relationship with Keith was rocky in the years that passed from the glory quartet-minus-one days. We comforted him after his survivor-esque fall from a coconut tree. We connected over the death of his father, and encouraged him to find comfort in the snorting of his ashes. Yet, he never truly forgave us for ruining the happiest days of his life at Dartford.

How is he still alive? In order to find out the secret to his longevity and give him the opportunity to piggyback off our resurgent fame and Meg’s soon-to-occur-comeback, we decided to invite Keith over for a hearty and nourishing, eggy dinner.

quiche 2

Our choice of meal was, like its namesake, a miracle of modern science – the Impossible Quiche Richards.

quiche 5

Impossible Quiche Richards
Serves: 6

Ingredients

6 eggs
300ml cream
½ cup self raising flour
¼ cup finely chopped chives
400g butternut pumpkin, diced into 1cm cubes
125g smoked ham, roughly chopped
½ cup green peas
1 ½  cups grated cheddar, divided

Method

Preheat the oven to 180 degrees celsius. Line a large baking tray with greased baking paper and roast diced pumpkin for 20 minutes or until tender and golden.

Whisk together eggs, cream, flour and one cup cheese and season to taste. In the bottom of a large quiche dish, scatter half the pumpkin, ham and peas. Pour over half of egg mixture and repeat with remaining dry ingredients and remaining egg mixture. Top with cheese.

Bake for 35-40 minutes until set and golden.

Adam Scottch Eggs

Easter Meggstravaganza, Party Food, Snack

Step three is probably the easiest of Easter Meggstravaganza to follow through with; they aren’t struggling or near death and they aren’t overwhelmed by their hero status.

They are just a TV star (go to 4:08, JLD gets it), after all. Plus, Adam Scott is obsessively in love with both Annelie and I, and would do anything for us.

We first met Adam during our BAT period (Before Amy and Tina) when we were trying to Catfish Amy Poehler into befriending us. Well actually, we were aiming to enter into a polygamist marriage with her, but friendship would have been great. While this particular scheme didn’t bring us to Ames, it did bring us to Adam.

You see, Adam Scott was also catfishing us hoping that he could sleep his way to the top with our persona Anneljamin Juddailes: Record Producer, Hip-Hop Mogul and multiple Academy Award Winner.

It was a messy time for all of us, but after working through our feelings on a scrapped episode of TV Catfish (I refused to both put on pants and be pixellated) we became close friends and well, Adam fell for the people behind the masks.

With Parks and Rec recently finishing Adam called us to let us know that he, and I quote “had some time on his hands and wanted to put them to use,” which was the perfect opportunity for us to all whip up a batch of our famous post-coitus snack, Adam Scottch Eggs and help Meg return to greatness.

Adam Scottch Eggs_1

Scotch Eggs have a reputation for being quite simplistic or unrefined, but with the right blend of herbs and the addition of hot sauce they become the perfect accompaniment for a beer with a generous dollop of Coolaioli. Enjoy!

Adam Scottch Eggs_2

Adam Scottch Eggs
Serves: 8.

Ingredients
10 eggs
800g good pork sausages, skins removed
1 small onion, finely diced
1 small clove garlic
handful of chives, finely chopped
handful of parsley, finely chopped
generous pinch nutmeg
1 tbsp English Mustard
½ tsp smoked paprika
1 tsp Tabasco, or to taste
150g breadcrumbs
1-2 cups plain flour
vegetable oil, for frying

Method
Preheat oven to 160°C.

Place eight of the eggs into a pot of cold water and boil for 3-4 minutes. Transfer to a bowl of cold water, peel when cooled and leave aside to dry.

Put the sausage meat into a large bowl with the herbs, nutmeg, mustard, paprika and tabasco and season with salt and pepper. Mix it all together well and separate into eight patties.

One at a time, flatten out the patties, place an egg inside and wrap the patty around until it is completely coated. Leave aside.

Get three small bowls out and place flour in one, breadcrumbs in another and beat the two eggs in the third.

Again, one at a time, roll each sausage/egg ball in flour, followed by the egg and then the breadcrumbs until they are all crumbed and ready to go.

Pour vegetable oil into a large pan until it is roughly 2cm deep and place on stove over medium-high heat. When the oil has come to heat, cook them in batches until the crumb is crisp and golden and then transfer to a lined baking sheet.

When all eggs have been lightly fried, place tray in the oven and bake for 10-15 minutes or until the eggs are browned and cooked through.

Devour.
