Previously on Australian Survivor – yes, I have to stipulate that now – Vavau neared extinction after the tribes absorbed resulting in major casualties in sweet, angel Craig and Aganoan goddess Phoebe.

We opened up right on schedule with the melancholic Vavau tribe, now down to three comparing their level of skeletal-ness. I literally can not pick a winner of this competition though.

Thankfully the tribes convened for what they thought was their next challenge where the Vavauns were surprised to discover they’ve been saved from themselves as the tribes actually merged and were treated to the Survivor Auction.

Conner walked away with the first two items, blowing all his money in the process, Sam bought some mediocre looking nachos, Brooke got a very cheap bath – why did no one bid against her? – while Lee got the ultimate prize – an advantage – for only $80, before Nick paid $440 for a covered item … which also turned out to be an advantage in the game.

The tribe arrived at their new camp, the former Vavau tribe, which made the old Saanapuans wistful for their days of opulence over at their camp. Instead they were stuck in the Survivor slums which Kristie and Phoebe attempted to burn to the ground but a week ago.

They immediately got to work scrambling as one tribe, with Flick leading the charge against Conner while Sue rallied the counter alliance to topple Saanapu. I’m not sure who should tell them the immunity challenge hadn’t even occurred yet?

Lee then disappeared to the well to discover his advantage, which is to block someone voting at tribal council.

Nick then disappeared to the well, at a different time, where he discovered he paid $360 more than Lee for an idol clue rather than a guaranteed advantage. Thankfully he found the idol … however sadly it was just after being sprung by Lee who is now wary of him.

The dominant alliance then found a pink piece of cloth and decided friendship bracelets were the best way to highlight the pecking order before they arrived at their first individual immunity challenge.

Sadly I was not competing as I would have dominated, I’ve never met someone that grips a pole quite like me!

After what seemed like an eternity, the poles got wet and slippery – according to JoJo, I didn’t actually see rain and think he was just feeling inspired by Probsty – before Kylie’s memory lapsed and Brooke took out immunity.

We returned to camp for the actual scrambling where we were reintroduced to Flick who seems to struggle with pronunciation before Nick got to work over-explaining a vote split, Sam worked his way into my good books by trying to turn it on Nick and Sue got to work dominating with a plan to screw Nick’s split vote.

The tribe – oh did I mention they called themselves Fia Fia? They did – arrived at tribal with me quite confused as to what would happen. Flick was confident, Nick was quietly confident and Conner was trying his best to throw the target on to someone else.

Anyone.

JoJo then opted to call out the friendship bracelets and attempted to throw them all under the bus as we headed into the vote, however poor Conner ran out of luck and found himself voted out.

While I’m sad that Sue’s plan didn’t come to fruition just for Nick’s tantrum alone, Conner was a legitimate threat and made sense however telling him how much of a scrappy underdog he was, isn’t what he wanted to hear as he stepped out of the game.

I’ve recently been teaching law in Canberra which is where I connected with Conner – seriously, why universities continue to hire me is beyond puzzling. As you can tell from the game, Conner is perceptive and could pick up on the fact I was not a qualified lawyer or professor. Despite this, his kind heart got in the way and we started a friendship despite his better judgement.

Thankfully for him though, that friendship meant I knew exactly what he needed as he exited the game – his favourite, my Arroz Conner Pollo Bethune.

Hearty, warm, spicy and soothing – this dish is the epitome of comfort food while also packing a punch. Delicate saffron, a kick of cumin and the tart olives? Enjoy!

Arroz Conner Pollo Bethune
Serves: 6.

Ingredients
½ cup white wine, or as much as your drinking allows
pinch of saffron threads
6 chicken thighs fillets, diced
1 onion, finely diced
5 garlic cloves, minced
salt and pepper
olive oil
1 tsp ground cumin
1 tsp ground sweet paprika
400g can diced tomatoes
1 tbsp tomato paste
2 dried bay leaves
1 ½ cups short-grain rice
3 cups chicken stock, plus more if needed
1 cup pitted green olives, rinsed and drained
½ cup chargrilled capsicum, drained and roughly chopped
¼ cup parsley, roughly chopped

Method
Combine the wine and saffron in a bowl and allow to steep.

Heat a good lug of oil in a large dutch oven over medium heat and add the onion and garlic and sweat for a couple of minutes before adding the chicken with a good whack of salt and pepper and cook until browned.

Reduce the heat to low and add the tinned tomatoes and paste and cook stirring for a minute. Add the wine/saffron and bay leaves and cook until reduced slightly, about five-ten minutes.

Stir in the rice and stock, bring to a simmer, reduce the heat to low and cover, cooking for about half an hour stirring occasionally. Or until the liquid has all absorbed.

Remove from the heat, stir through the olives and capsicum and leave to stand for about ten minutes.

Then serve and devour.

Bryam Cranston Balls

Ok – so I know it makes running the odds all the more difficult, I couldn’t bare to hold an Emmy Week without seeing my ex-love and six-time victor Bryan Cranston.

Plus he has won for Best Actor in a Drama and Best Drama on top of his nominations for Best Actor in a Limited Series or Movie, Best Limited Series or Movie and – catch your breath – Best Supporting Actor in a Comedy, meaning he can run a shit tonne of odds with me.

Let’s start with Best Supporting Actor, on account of yesterday’s catch-up with Tone, where Bry (like me and honestly Tone) is going for the well-deserved though underdog Tituss Burgess. I mean, the academy really should make up for the fact he lost last year despite the majesty of Pinot Noir.

Anyway, let me take you back to the early 80s. As you know, I was working with my dear friend Erik Estrada on the set of CHiPs when a young Bry arrived to guest during an episode. Using my keen sense of great talent – I discovered Meryl Streep, did you know? – I knew that he was destined for greatness, kinda dumped E and hitched myself to the Cranston Wagon.

We stayed close through his bit parts on Murder She Wrote, Matlock, Baywatch, The Flash, Seinfeld before I finally got him his big break – via my ex-lover – on Malcolm in the Middle and the rest, as they irritatingly say, is history.

While I was never able to get through the shit stretch of Breaking Bad, I’ve always been Bry’s number one fan and know that he will once again take out the Emmy, this time for Actor in a Limited Series or Movie (I mean, the man won a Tony for the play) – obvs I’m putting a cheeky bet on Hiddleston for the sole reason that he finally broke up with Swifty.

Once again, despite our extremely loud and incredibly close relationship, Bry has opted to go to this year’s Emmys with his wife, although was kind enough to point out that Kit and I would make such a cute twincest couple, albeit with me in the role of low-rent Jon Snow. With such a beautiful compliment, I had to repay him so still whipped up a batch of my Bryam Cranston Balls.

You know that like the egreciously snubbed Jane Krakowski’s alter ego Jenna Maroney, I’m a huge fan of balls. Balls, balls, balls, balls.

Balls, balls, balls, balls, balls, balls, balls. If I can form food into a ball, I will.

So yes, these are just a version of arancini, but arancini is the best, so is that a crime? Add in some yam (or you know, sweet potato in a pinch … I was in a pinch), spinach and goat’s cheese and you’ve got a preemptive seventh Emmy party in yo’ mouth!

Bryam Cranston Balls
Serves: 6.

Ingredients
250g yam (or sweet potato), peeled and cut into 1cm dice
olive oil
3 cups chicken stock
1 onion, finely diced
1 garlic clove, crushed
1 cup arborio rice
½ cup white wine
1 cup baby spinach
100g goat’s cheese, crumbled
2 tbsp sage, finely chopped
1 tbsp dried chilli flakes
½ cup plain flour
2 eggs, lightly whisked
1 cup panko breadcrumbs

Method
Preheat oven to 180°C.

Place the yam on an a baking tray, drizzle with oil and bake for 20 minutes, or until golden and tender.

Bring the stock to a simmer in a saucepan over low heat.

Meanwhile, heat a good lug of oil in a large saucepan over medium heat and saute the onion and garlic for 5 minutes, or until fragrant and soft. Add the rice and cook for a further couple of minutes or until they start to go translucent. Add the wine and cook until it is all absorbed, followed by the stock, half-cup by half-cup until all gone, absorbing between each addition.

Reduce heat to low and cook for about 15 minutes, or until the rice is al dente. Remove from the heat, stir through the baby spinach and allow to cool for an hour.

When it is as frosty as a Daytime Emmy winner at a Primetime Emmy party, stir through the sweet potato, goat’s cheese, sage and chilli.

Line a large baking tray, roll the risotto into 1-2 tablespoon sized balls and place on the tray to rest until the mixture is all gone.

Place the flour in a shallow bowl, the eggs in another and the breadcrumbs in another. One by one, roll each ball in the flour, then the egg, followed by the breadcrumbs. Return to tray and repeat until all done. Place the tray in the fridge to chill for half an hour.

Remove the tray from the fridge, drizzle with oil and bake for 30 minutes, flipping once, or until golden and crisp.

Devour.

Condoleezza Rice and Beans

What a day to catch up with Condy! Despite our different political views, joining together to watch Hillary become the first woman secure to a major party’s presidential nomination in the US was so exciting for feminist, political scientists like us.

As you know, Condoleezza and I first connected in university and have stayed in close contact ever since. Yes, GBJ is the worst but that shouldn’t take away from the brilliant mind and kind heart that Condy possesses.

I haven’t shared much about my past in politics but amongst my stints in rehab, the arrests and my fluctuating periods of fame, I became a fierce political animal and have been involved in all major political decisions in the US, the EU, Canada and the Cook Islands in the past three decades, in an advisory or dictatorial capacity.

But a great political mind like mine can’t do it alone and that is where Condy and I work so well together, discussing the issues and generally being dominant bosses.

I hadn’t seen Condy since the email scandal broke – full disclosure, I told Hizza to use her personal email AND dob in Condy and Colly – and was a bit nervous about how my betrayal would be received.

I was also very nervous as I hadn’t brushed up on my Russian and that is the only language we communicate in. Again, like bosses.

Thankfully I had nothing to worry about with Condy giving me the warmest of embraces when she arrived, so excited to watch the results roll in / discuss War and Peace, again / devour a bowl of our college era favourite, Condoleezza Rice & Beans.

Being a poor student, you have to get creative with your meals if you want to eat well. I had just come off a stint coaching the Jamaican bobsled team to victory – yes, I inspired Cool Runnings – when I connected with Condy, so I was very into creole flavours.

The rice and beans are brought together with the silkiness of the coconut milk and the sharp kick of spices. Condoleecious!

Condoleezza Rice & Beans
Serves: 2 pals, or 4-6 as a side.

Ingredients
400ml coconut milk
1 jalapeno, finely sliced
3 spring onions, sliced
2 tsp salt
1 tbsp creole spice (who doesn’t trust Emeril?)
4 garlic cloves, crushed
3 sprigs thyme, leaves removed
1½ cups brown rice, rinsed, drained
400g kidney beans, rinsed, drained
lime, quartered to garnish and taste

Method
Place coconut milk in a large saucepan with a cup of water, the chilli, spring onions and salt, and bring to the boil.

Add the creole spice, garlic, thyme leaves, rice and kidney beans, cover, reduce heat to low and simmer for 20 minutes or until the rice is tender.

Remove from the heat, season with a whack of pepper and squeeze of lime and devour.

Or serve it with … well that is another catch-up for another time.

Aubrie and Mushroom Bracotto

Main, Survivor: Kaôh Rōng

It pains me to say this … absolutely pains me, the runner-up / first loser of Survivor: Kaoh Rong, is the undisputed queen of the island Aubry Bracco.

While I agree that Michele earned her win, laying low and moving when she needed to, building relationships and winning some well-timed challenges – Aubry was the dominant force of the season, reading the situation perfectly and dictating the votes at every tribal she attended.

Thankfully – and I use that term loosely – losing Neal didn’t impact on her placement, so I guess it makes it easier to accept.

Well, easier to accept than the O.J. verdict at the very least.

I’ve long been friends with Aubs, having attended Brown University together with Summer Roberts where we connected over her love of drawing with crayons and my love of finger painting.

While I returned to Australia (following one of my deportations), we stayed in close contact throughout the years via our passion for social media.

Aubs was feeling defeated when she made it to Ponderosa after reading the vibe of the jury and knowing that she’d have to wait an entire year for her second place cheque. Thankfully I had a nice big bowl of my Aubrie and Mushroom Bracotto, as a chaser to my warm embrace of course.

Like Aubs’ run in the game, the risotto packs a punch and overcomes some strong flavours to result in a smooth, delicate dish that is fit for a winner.

The winner that should’ve been – enjoy!

Aubrie and Mushroom Bracotto
Serves: 4.

Ingredients
1 tbsp olive oil
60g unsalted butter
2 onions, finely chopped
2 garlic cloves, finely chopped
1 tsp chilli flakes
2 tbsp finely chopped rosemary leaves
1 ⅓ cups arborio rice
100ml white wine
3 cups chicken stock, warm
100ml pure cream
300g mushrooms
150g brie, torn into pieces

Method
Heat the oil and half the butter in a pan over medium-low heat.

Add the onions, garlic, chilli and half the rosemary, and cook for 5-10 minutes, until the onion is soft and sweet.

Add the rice and stir to coat the grains before adding the wine. Stir and simmer for a minute, or until evaporated. Mix in the stock, a ladleful at a time, allowing each to be absorbed completely before adding the next. Continue cooking, while stirring, for about 15 minutes before adding in the cream and cooking for a further minute. Remove from the heat.

Meanwhile, melt the remaining butter in a skillet over high heat and cook the mushrooms and remaining rosemary until golden, about 5 minutes. Remove from the heat and season.

Add the mushrooms to the risotto, stir to combine and serve immediately, topping generously with pieces of brie.

Brian Austin Green Curry

Donna Martin graduates, Main, Vegetarian

Like David Silver, Brian Austin Green is an under-appreciated talent in the Hills. I mean, who else married Megan Fox slashed worked with the future Cersei Lannister (a character who I continue to argue is a product of the patriarchal society in which she lives/is a feminist icon)?

I first met Bri in the 80s when we both worked on Knot’s Landing and joined Nicolette Sheridan’s entourage of young, brunette male cheerleaders. I was working as a writer/fight choreographer at the time and I was blown away by his immense … talent.

Again, I don’t mean to gloat … but as you probably guessed, I also got Bri the job at Bev Hills. Realistically, I think I am going to have to sue the estate of Aaron Spelling for unpaid wages as I was single-handedly responsible for casting all of the teenagers!

As you should be aware, Bri has been going through quite the difficult time with separating from Meg Fox but thankfully they had some exciting news that we were able to celebrate (while he attempted to help me get Annelie’s memory back) – yes, I’m going to be godfather to another Austin Green Fox spawn!

FYI my obnoxious Instagram is coming – game on Swifty!

It was such an honour to once again be asked to provide spiritual and moral guidance to one of his children (Vanessa Marcil blocked me taking on the role to his first child). And what better way to celebrating an upcoming birth slash militant support, than a Brian Austin Green Curry?

I decided during my yogi dietician phase that vegetarianism was best for Bri – whether he is or not, I don’t care. Either way, whenever we catch-up I ensure that I’m serving up solely vegetarian meals to not let slip that I was strung out on bath salts during that phase of my life.

Thankfully this curry is so delicious, even a staunch meat eater (and who doesn’t love to eat some meat) would fall for its charms. The sweet pumpkin and coconut combination works perfectly with the kick of the curry, provided a delicate dish that hits all the right places. I know it goes without saying, but just like Bri!

Brian Austin Green Curry
Serves: 4.

Ingredients
1 tbsp coconut oil
300g firm tofu, drained and thickly sliced
270ml coconut milk
½ cup water
3 tbsp green curry paste
700g kent pumpkin, deseeded and cut into large pieces
250g beans, topped and halved
3 tbsp muscovado sugar
juice of a fresh lime
brown rice, to serve
fresh coriander leaves, to serve
roasted cashews, roughly chopped, to serve

Method
Heat the oil in a large frying pan over medium heat. When as hot as the handle on the door when Kelly and misc D-character-to-horribly-disfigure got stuck in the bathroom during a fire at a house party, add the tofu and cook for a couple of minutes until golden. Remove to a plate.

Add the curry paste and the coconut milk, stirring, and cook for a minute or two. Add the pumpkin and the water and give a good stir to combine. Reduce the heat, cover and cook for about 10 minutes, or until the pumpkin is tender.

Stir through the beans and sugar, cover and cook for a further couple of minutes, until they are bright, crisp and perfectly cooked.

Remove from the heat and stir through the tofu and lime juice, season and allow to rest for a couple of minutes.

Serve on a bed of rice and garnish with coriander and cashews.

Abi-Maria GoMezze Plate

Let us all pause and have a moment silence as our dear, sweet, feisty Abi-Maria was once again booted a week before the finale. Albeit this time, in an episode marked by dueling golden showers and Demon Tasha aka DT.

Speaking of DT, she has had many moments of insufferability however it was the callous way she cut our beautiful friend Abi AND mocked the dreamiest castaway of the season Keith, that finally cemented her status as the most dislikable cast member. Probably ever.

And before you even start rumours, no, we had nothing to do with her “near” drowning.

Either way, welcome back to the fold, Dr Joe! What a shame Wigles couldn’t secure as much screen time in her triumphant return.

But I’ve digressed.

As you could easily assume, our history with our close friend Abi-Maria pre-dates her appearances on Survivor after meeting in our Nicki Minaj led anger management. Nicki saw the brilliant, calm natures we all possessed and bonded us like a sisterhood, thankfully without a weird pair of pants for us all to share.

We spent the following years being zen and hanging out before deciding that one if not all of us should compete on Survivor to get closer to Probst’s bed. As Abi was the only one eligible, we through all of our resources behind getting her on the show and rigging a cast of clowns for her to dominate.

Then Annelie and I met Malcolm and tragically for Abi (but wonderfully for us), we fell into bed with him and went about rigging the season with him in mind. We could go on but long story short, we went into court ordered sex therapy, were treated by Denise who then weaseled her way on to the season and stole the win from our true friends by whispering our names to Malcs during final immunity to spook him.

It was a rough few months after the truth came out to Abs, but we felt it only fair that we be dead to her for all the pain and heartache we had caused. Thankfully her kind heart shone through and she forgave us during the Anti-RC AGM.

Going into Second Chances, Abi had the odds stacked against her but thanks to her plucky determination and general charm, she was able to weave her way through the pre-merge game and a horror stint on Angkor to sit pretty behind her witch shield at the merge.

Sadly her sterling resume and on point voting record got the better of her and she was sent to our open arms in Ponderosa as a jury threat to devour our Abi-Maria GoMezze Plate!

Abi-Maria GoMezze Plate
Serves: 6-8, or 1 blindsided juror, her emotionally unstable friends and Savage’s teen headwear.

Ingredients
Hummus
400g can of chickpeas, reserving some of the liquid
2 tsp tahini
1 garlic clove, crushed
½ tsp crushed sea salt
3 tbsp quality extra virgin olive oil
2 tbsp freshly squeezed lemon juice
Smoked paprika, to garnish
Parsley leaves, to garnish

Meatballs
1 kg beef mince
1 large red onion, grated
½ bunch dill, finely chopped
2 tbsp dried spearmint leaves
1 tbsp dried chilli
1 tsp cumin
1 cup short grain rice
1 tsp salt
50 ml olive oil
2 cups passata
1 lemon, juiced

Dolmades (thanks SBS, I had no idea)
220 grams long-grain rice (rinsed)
2 tsps ground allspice
1 tsp chili flakes (dried)
1/2 tsp chili powder
1 tsp dried oregano
1 bunch mint leaves (chopped)
1/2 bunch Italian parsley leaves (chopped)
3 tomatoes (roughly chopped)
1 purple onion (finely chopped)
2 lemon (1 zested, 2 juiced, plus extra wedges, to serve)
80 vine leaves (soaked in cold water for 30 minutes)
185 ml olive oil
4 garlic cloves (peeled)

Lemon & Chili Potatoes
3 small potatoes
clove of garlic, crushed and chopped
1 tbsp chilli flakes
juice of one lemon
2-3 tbsp oil

Haloumi
500g haloumi
Olive oil, for frying
Lemon wedges, to serve
Salt and pepper

Roasted peppers, stripped
Olives
Pita, toasted and cut into strips

Method
Hummus
Rinse the chickpeas in cold water and blitz in a food processor with the tahini, crushed garlic, salt, lemon juice and a generous dash of the reserved chickpea liquid, slowly pouring oil in as you go.

When smooth and at the desired consistency, place into a serving dish. Drizzle with some more extra virgin olive oil and sprinkle with paprika or finely chopped parsley leaves, for colour.

Meatballs
Preheat oven to 180C.

Combine the mince, onion, dill, spearmint, chilli, cumin, rice, salt and olive oil and roll into fat walnut sized balls and placing into a large baking dish.

Cover with the passata and bake for about 40 minutes until meat is cooked.

Remove from the oven and pour over the lemon juice and serve with some of the cooking liquid.

Dolmades
Cook rice in boiling salted water for 8 minutes or until par-cooked. Drain, refresh under cold running water, then drain again. Cool slightly.

Place rice, allspice, chilli flakes and powder, oregano, mint, parsley, tomatoes, onion and lemon zest in a bowl and mix to combine.

To assemble, place 2 heaped teaspoons of rice mixture in centre of a leaf (leaves should be 12 cm x 12 cm; layer 2 leaves if necessary). Fold in sides and roll up to enclose filling, then place upright in a saucepan. Repeat with remaining rice mixture and leaves, ensuring dolmades are snugly packed in pan.

Whisk lemon juice and oil in a bowl and pour over dolmades. Stuff garlic in between dolmades, then cover and cook over low heat for 1½ hours or until rice and leaves are tender (add extra oil or water if liquid has evaporated). Cool to room temperature, then refrigerate for at least 3 hours or until cold. Serve with extra lemon wedges.

Lemon & Chilli Potatoes
Preheat oven to 200C.

Finely slice potatoes into 5mm half-moon discs, coat in oil and bake in the oven for 15 minutes.

Sprinkle with garlic and chilli and bake for a further 5 minutes. Remove from the oven, pour over the lemon juice and add a good whack of salt and pepper.

Devour.

Haloumi
Cut haloumi into 5mm slices. Heat frying pan up and drizzle with olive oil. Cook haloumi for around 3 minutes, turning just once.

Serve and season with salt and pepper, squeezing lemon juice over the top.

Risottis Redding

I am so thankful that we successfully mastered time travel! Aside from the obvious information we get like the winning lotto numbers and who to bet on at the track on a boozy Wednesday afternoon, it is such a joy to be able to go back and reconnect with our friends that have passed … or to correct condiment catastrophes.

We first met dear Otis Redding while we were children singing in the Vineville Baptist Church choir. Otis is the first person to ever put us on the right path; Annelie and I joined the choir to get close enough to loot the collections after each service but young Otis caught us and instead of sending us to juvie, befriended us and tried to help us lead an honest life up until his untimely death (which inspired us to write the hit and then shit TV series LOST).

During our too-brief friendship, we were able to enjoy a highly successful writing partnership culminating in the hit some (Sittin’ On) The Dock of the Bay … which you know are not the lyrics I was suggesting while we were on a romantic working holiday in Sausalito.

Remembering the time fondly and wanting to stop Otis from getting on the plane, Annelie and I set the time machine to 1967, aka the beautiful time that we wrote the song. Obviously while there, we were also hoping to secure some Bay Area property to avoid being priced out by the tech boom, but it was mainly to see Ot.

Always the gentleman, it was such a thrill to see Otis again! Despite some annoying Hermione-with-the-time-turner logistical issues to start, we were able to talk down our past selves (by paying them off with future money to ultimately buy property. Yep, genius bribe idea) and spend some much need relaxation time with Ots.

He casually strummed his guitar (for once, this is not a euphemism) and put the finishing touches on his beautiful song while we got to work making his favourite meal Risottis Redding (with Annelie and I wishing the other wasn’t there ruining the romantic mood, and in her case, forcing me to cook in clothing).

Like our dearly departed friend, risotto is a homely, delicate dish with so many notes depending on how you make it. Risottis is a very simple version of the Italian classic, with a light mix of herbs and cheese creating a sweet base for the robust and salty prosciutto, topped with some leftover pork meatballs and pesto to give an added kick.

Risottis Redding
Serves: 4.

Ingredients
4 ½ cups chicken stock
2 tbsp olive oil
1 onion, diced
2 cloves garlic, crushed
250g prosciutto
2 cups arborio rice
½ cup white wine
1 tsp salt
2 tbsp unsalted butter
½ cup grated parmesan cheese
black pepper, freshly ground
1 tbsp rosemary, finely chopped
½ batch Christopher Porken Meatballs
Toni Basil Pesto, to taste

Method
Bring the stock to boil in a large saucepan over medium heat and then reduce to a simmer.

Heat the oil in a large frying pan over medium heat and sauté the onion, garlic and prosciutto, stirring, until soft. About 5 minutes.

Pour the rice into the pan and cook, again stirring, for a further three minutes before adding the white wine and salt. Continue to stir until all of the wine has been absorbed. Add a cup of chicken stock and continue to stir vigorously as it absorbs. When it is almost all gone, add another cup and repeat the process until all of the stock is gone.

Reduce heat to low and stir in the butter, parmesan, pepper and rosemary. Season to taste.

Generously ladle into bowls and serve with freshly cooked meatballs and pesto.
