Nutellyrsa Eclairres

Baking, Dessert, Snack, Survivor, Survivor: David vs. Goliath, Sweets, TV Recap

Previously on Survivor, Jabeni were riding high on their egg reward however tragically the protein wasn’t enough to get them immunity, sending them to tribal council. While that appeared to mean certain doom for Lyrsa and Nick, Natalie continued to grate on her tribemates. She then attempted to bully Lyrsa or Nick into giving up their jackets for a cold Angelina to secure themselves safety, which backfired as they all joined together to blindside her while Angelina desperately begged her for her jacket.

Natalie. Natalie. Natalie ..?

The next day Jabeni were feeling positive without Natalie’s negativity to bring them down, while Lyrsa was just shocked to still be there. Angelina apologised for writing Lyrsa, explaining it was all a ploy for the jacket which did not sit well with Lyrsa. They lay around bonding, laughing and reminiscing about Natalie epically ignoring Angelina. Speaking of whom, Mike, Nick and Lyrsa got together to talk smack about Angelina’s desperation at tribal, with them all agreeing that they do not trust her and that she is the next to go. If it gets to that.

Over at Tiva the nerdmance continued to be adorable as Christian explained fishing and Gabby was sweet. Suck it haters who are done with her crying. Wouldn’t you cry if you had to live through multiple cyclones? Anyway, Christian wasn’t successful but he did lure John to the shore and I am moister than an oyster.

Speaking of flooding my basement, Jeff arrived for this week’s reward challenge where the tribes would have a bag of coconuts tethered to one tribe member with the remaining members forced to lug it about as they go through an obstacle course, release four rings and then land their rings on a long, hard pole. Given it was for cooking utensils, spices and kebabs, everyone was salivating and ready to dominate. Alec and Gabby got Vuku and Tiva out to an early lead, as Alec’s junk bounced everywhere. Sadly Alec’s BDE wasn’t enough to land the rings allowing John and Dan to snatch the win for Tiva while Nick snatched second for Jabeni. But they get to look at Alec so everyone got some meat, you know?

Tiva returned to camp to celebrate their victory and cook up their kebabs, and most importantly, the brochachos were feeding each other by hand and I love it. Christian, John and Dan are the throuple we deserve, the latter’s pining for Kara be damned. Gabby and Alison however started to notice that the throuple hooking up was bad for them, so the girls got together and pledged their allegiance to each other. Gabby then started to break down, leading to Alison tearing up and damn I need this tribe to all make the merge. So they can stay dating, obvi.

Though Alison’s plan to blindside Dan is definitely something I can get behind, given a blindside of someone with two idols is always fun.

Meanwhile over at Vuku Kara and Elizabeth seemed to be getting closer again, with Kara trying to massage her back which she injured four weeks before heading out to the island. They then started splitting the bamboo in the shelter in an attempt to make things more comfortable, which Davie and Carl felt was a bad idea given it would be dark soon and the shelter would be uneven. This annoyed Elizabeth, who felt that they were being unfair and she can’t take it anymore, while the boys were frustrated that she was doing it while everyone else was trying to relax. The only person thrilled by the turn of events seemed to be Kara, who knew that should they lose the upcoming immunity challenge, Elizabeth is the most likely target.

Speaking of which, Jeff returned for said challenge where the tribes were required to carry a large heavy saucer to a water tower, fill it with water, carry it through obstacles, pour water into a well, release puzzle pieces and, wait for it, solve said puzzle. Vuku and Tiva got out to an early lead, until Vuku lost most of their water, followed by Jabeni, leaving Tiva to storm ahead. Tiva made quick work of the puzzle, followed by Vuku handing them both immunity before Jabeni even released their puzzle pieces. TBH, it wasn’t easy to watch. Particularly when they dropped their saucer on the third attempt and opted to give up.

Back at camp Mike was feeling emotional about crushing someone’s dreams at the upcoming tribal council. Given there are 7 people left from each of the original tribes and he was anticipating a merge, Mike was growing concerned that he will need to turn on Nick and Lyrsa to save himself moving forward. While Angelina was hoping to work with Lyrsa, the latter still didn’t trust Angelina after jacketgate and as such, Angelina was stuck working with Mike. Angelina approached Mike and locked in the vote for Mike and agreed that they need to get Nick on board. Lyrsa and Mike got together to talk about getting rid of Angelina, with Mike open to the idea while Nick was being worked Angelina to turn on Lyrsa. Rounding out the pairings, Nick and Mike approached each other to decide which way they will go giving Angelina is a bigger threat … but Mike is scared about taking her out and screwing over all of the Goliaths.

At tribal council Nick spoke about how tight the tribe has gotten in such a small time, Mike spoke about loving everyone but being concerned about navigating the next part of the game. Lyrsa agreed that trust and loyalty were the key factors in her decision tonight, while Angelina added strategy which is pretty much a given, no? And kinda just paints a target on her back. Angelina channelled Keith and spoke about sticking to the plan, Lyrsa mentioned everyone has a plan and Nick pledged his loyalty to Jabeni rather than the OG tribes. Angelina then jumped in to sing Nick’s praises which seemed a bit desperate. Thankfully Lyrsa called her out for trying to buy his vote, while Mike reiterated that tonight’s vote will dictate the remainder of the game. With that the tribe voted and it seemed Mike chose to set the game up for the Goliaths – maybe – by taking out Lyrsa and sending her to the jury.

While Lyrsa – the bright, sparkling gem that she is – took her boot in her stride, she wasn’t hella salty about the fact she would be vacationing with Natalie and then has to suffer through sitting next to her at the reunion special. And while I love Natalie with all my heart, I also loved Lyrsa so I let her talk smack about my friend before trying to sweeten the deal with a couple of big fat Nutellyrsa Eclairres.

Eclairs are perfect. Nutella too, is perfect. So therefore it should go without saying that Nutella flavoured eclairs are perfect, however I do have that theory that two hot people can have a really ugly baby? In any event, this is delicious. Like the random hot child born of two classically unattractive peeps. Though this isn’t random, since eclairs and nutella. I’ll stop talking.

Enjoy!

Nutellyrsa Eclairres
Serves: 1 salty boot, or 12 happy peeps.

Ingredients
1 batch Eclair Danes, including crème pâtissière but not the chocolate glaze
1 cup nutella
½ cup roasted hazelnuts, roughly chopped

Method
Prep the eclairs as per Claire’s recipe, up to filling the pastry but before you glaze.

Once that is done, fill a piping bag with nutella and chill for half an hour or so.

Pipe on to the top of the eclairs, sprinkle with hazelnuts and devour. Knowing that cutting out the difficult part of the recipe on this page lulled you into a false sense of security.

Sharnold Palmer Coombes

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Drink, TV Recap

Previously on Australian Survivor, the final three returned back at camp after taking out the final Contender and congratulated themselves on a job well done. The next day they were surprised to receive a family visit ahead of the fallen comrades section, where we were reminded of the majesty of the Contender boys penchant for nudity, the horror of Benji eating nachos and Shonella just being the greatest. With that out of the way Sharn defeated Shane and Brian in a hard fought final immunity challenge, before dispatching of Brian as the final juror despite him reminding her that he is by far the easier win.

The final two returned back to camp with Shane proud to be waking up on day 50 and still being a stone cold champion at 61. She reminded us that when she held every world record, there wasn’t a lot of money in swimming and she had to fight tooth and nail for everything she has got. That being said, she was terrified about having to face off against a crown prosecutor at final tribal. On the flipside, Sharn was proud of being a dominant physical force throughout the game and looked forward to doing what she does best in front of the jury. They snuffed the fire for the final time before grabbing their torches and heading out to tribal where Shane tried to find the resolve to defeat Sharn.

Jonathan welcomed them to final tribal and called in Robbie, Mat, Sam, Benji, Steve, Fenella, Monika, Shonee and Brian to form the jury, before announcing the new final tribal council format, where the jury questions would become an open forum discussion. Shane kicked things off like she was in a speech and drama competition in primary school crossed with Sophia Petrillo. She spoke about not knowing what to expect at the start and having to learn on the go to overcome being a liability at the start. She then spoke about playing an idol – unlike most of the jury – jumping ship from a sinking alliance to take out Jackie, who was a big threat, leading to her becoming a double agent for Mat and co. Tragically neglecting to mention the Lydia blindside.

Sharn opted for a different approach, saying she shouldn’t still be there given she has been a threat since the first post-merge immunity challenge. She spoke about playing from the bottom since the final 7 and making it to the end by being a trusted ear for her allies, and being open to those she wasn’t aligned with. She then told them that if they don’t vote for her, they’re doing the wrong thing. Essentially.

With that Jonathan handed things over to the jury, with Fenella kicking things off asking Sharn why the hell she took Shane to the end and why she is going to fight? Sharn played up her loyalty to Shane, with Robbie confused about how that loyalty exemplified her superior game. She brought up her ability to save herself post-swap, blindsiding Sam and almost saving Mat from being booted, she then played up taking out the contenders and bonding with Shonee to make it to the end.

Benji asked Shane about her gameplay, with the icon talking about how she actively tried to avoid becoming a target like the rest of them, while working hard around camp to gain intel from people. Sam wasn’t really sold, asking her to articulate her active gameplay throughout the season. She kinda rambled before Benji tried to get her back on point, ultimately leading to her claiming Jackie and Lydia’s scalps as her biggest moves. And let’s be honest, working against Lydia while the challenge was happening was masterful.

Mat jumped in, admitting he loves them both but would have to pick one person, so asked them to explain their games. Sharn started to struggle as she tried to articulate her how loyalty was the defining feature of her game, before Brian jumped in and asked why if she was so loyal to Mat, why didn’t she warn him that he was about to be blindsided? She said that she didn’t have the opportunity to talk to him, nor did know whether he had an idol. Brian then questioned whether not telling him is actually disloyal, leading to her stuttering through an attempted response which clearly upset Mat. Benji then jumped in to question why loyalty is her major card and as such, Sharn continued to flounder.

Brian then addressed Shane, asking her to finally bring some honesty to final tribal council and answer who played the more loyal game out of the final two. While she tried to dance around the question, Brian pushed her and she admitted that she was more loyal and that loyalty was clever as it built a shield for her to hide behind. Shonee too addressed Shane, asking if she even has any clue where she lives since she is praising her ability to get to know people. Shane then shocked her, pointing out she lives in London most of the time and Noosa the rest, and was offended as she is actually the one that saved Shonee after the tribe swap. Mat jumped in to vouch for the move, giving Shonee the cutest smile. She then secured Fenella’s vote, taking the time to praise her killer game and the way she goaded Brian to keep herself safe. Sam asked Shane whether if things come down to loyalty, they shouldn’t vote for Sharn over the Mat move which she agreed to. Poor Sharn then looked like a kicked puppy and desperately pleaded with the jury to see past her one mistake … ignoring the bungled idol find at the challenge, obvi.

With that the jury voted, Jonathan collected the votes and took them back to Australia, somehow in the middle on the desert, jumping in a jeep before arriving at the finale stage. Jonathan checked in with the finalists, with Sharn proud of how they played and Shane saying the wait was more nerve wracking than an Olympic final and she’d just like the votes read. As such, Jonathan started reading them, counting two for Shane, followed by four for Sharn before Shane tied things up four apiece. With that, Jonathan was left to count the final vote, handing Shane the victory and title of Sole Survivor.

Despite playing an extremely strong, strategic game, and keeping the target off her for the last few weeks of the game, Sharn proved to be no match for the seasoned Champion Shane at final tribal and narrowly missed out on the title of Sole Survivor.

While most people would need a nice stiff drink to wash away the pain of bombing what they do best and losing half a mill in the process, Sharn is an absolute positive, delight and as such took it in her stride, was proud of her dear friend Shane and gladly toasted her with a Sharnold Palmer Coombes.

Now I normally prefer my drinks like I like peens, but it is hard to argue against the majesty of this soft concoction. Or soft concoctions in general. TBH, I just love any and all concoctions. Anyway, let’s focus on the beauty of ice tea and lemonade, mingling together to fill you with joy.

Don’t you love when a concoction does that? Enjoy!

Sharnold Palmer Coombes

ice
1 ½ cups iced tea

Laceberry Sherbet

Dessert, Snack, Sweets, That Is So Fetch Week

Today marks the end of our first publicised Mean Girls day celebration, That’s So Fetch Week. And while that is probably going to leave you with a feeling of crushing emptiness, be glad that you got to experience the joys of celebrating with Mands, Dan Fran, Jono, Lizzy, Rachel and now Lacey.

Well, by association at least.

I’ve known Lacey for over two decades after meeting through Susan and Kelly on the set of All My Children. As with Mands and Lizzy, I was blown away by her talent and vowed to make her a star.

That led to Party of Five and The Wild Thornberrys, which would have been enough of a success without throwing in the role of a lifetime in Gretchen Weiners. Heiress of toaster strudels and key player in making fetch happen.

Given her current status as the queen of Lifetime Christmas movies, I am super proud of Lacey and can’t even be mad that we don’t see each other as often as we like. As soon as she walked off the plane we ran into each other’s arms, sped to my home and caught up on this year’s crop of Lifetime films over a big bowl of Laceberry Sherbet.

While it appears to be a bit too healthy for my liking, I assure you that this sherbert is hella delicious. Not the powdered type like Michelle Sherbert, this frozen fruit delight packs a strong raspberry flavour and fills you with boundless joy. Which is not an overstatement.

Enjoy!

Laceberry Sherbet
Serves: 6-8.

Ingredients
500g raspberries, thawed
1 ½ cups milk
⅔ cup raw caster sugar
1 lemon, juiced

Method
Blitz everything in a food processor until smooth.

Strain through a sieve to get rids of any leftover solids or seeds.

Transfer to an ice cream maker and churn for twenty minutes or until the consistency of soft serve. Transfer to a container and freeze overnight, before devouring.

Chocolate Crackelly Ripa

Dessert, Snack

Gaaaaaah, it was such a joy to be able to have my celebrity Fame Hungry superfan and dear friend Kelly Ripa over. I mean, the look of joy on her face from the moment she stepped off the plane to when she sat down for her requisite – and now signature – food-smeared face photo is something that will stay with me for all of time.

Knowing that I was making such a dear friend so happy was but icing on the cake of a wonderful date.

As you know, I met through Kell when visiting Susan Lucci on the set of All My Children and we instantly hit it off with our joie de vivre and wicked senses of humour. And despite her sweeping Mark off his feet at the time I was desperate to woo the zaddy for myself, we have always remained the best of friends.

And as an aside, she is beautiful and perfect and she and Mark make the best couple, so screw you jealous trolls!

Anyway – I was casually dating Regis Philbin in the early ‘00s when Kathie Lee Gifford quit Live! and reminded him about their chemistry during her previous appearances. The rest, as they say, is history. Oh, and you’re welcome America.

But back to the date, while she didn’t give any any spoilers from the upcoming season of Riverdale or think my All My Children reboot would work, we still had a lovely time. Though how could you not when you’re surrounded by mounds of Chocolate Crackelly Ripa.

Given these bake-sale staples are so well known that the recipe is pretty much open source at this point, credit where credit is due so thank you Kellogg’s! Crunchy, sweet and oh so moreish, there is nothing I’d rather make to honour my girl Kell!

Enjoy!

Chocolate Crackelly Ripa
Serves: 8-12.

Ingredients
4 cups rice bubbles
1 cup icing sugar
1 cup desiccated coconut
250g copha, melted
¼ cup cocoa

Method
Chuck everything in a large bowl and stir to combine.

Portion in to patty cases.

Set in the fridge for a couple of hours.

Devour.

Mat Rojersey Caramels

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Dessert, Snack, Sweets, TV Recap

Previously on Australian Survivor Mat continued to dominate and started to chip away at Benji’s ego. Not to be outdone, Benji wooed Sam to try and take a shot at Mat and finally take control of an episode let alone the game. He and Sam went to work lining up the numbers … only for Mat to dominant in a killer immunity challenge and saving himself. Meanwhile things went from bad to worse for Sam as his plan was exposed and well and truly backfired as he found himself becoming the second member of the jury. Complete with a sympathy hug from little JoJo.

We returned to camp where the newly clean Brian decided to spread the love, relocating in the shelter to be closer to his new friends Shonella. Knowing that Shonella = Life and getting in with them will either be good for the game, or just make you a kween. Well, not as far as Mat or Shane are concerned however, as they grew tired of his comedy routine and spent the evening throwing him daggers and plotting his downfall.

The next day Brian continued his comedy, rocking a snorkel mask to avoid the smoke from the fire, earning the ire of Mat, Steve and Shane. Meanwhile Benji and Shonee were catching-up to find a way to go from being a power-bottom, to a power-top … begging the question, what is wrong with being vers? Anyway – Shonee decided that in order to take out Mat, they would need to pull in Brian so off they went to get things sorted. Benji approached Mat to clear the air from the previous tribal and thank him for saving him at the last tribal. Mat too was feeling paranoid, so thought that in order to move forward he needed to take out the shifty Brian and pulling in Benji would unite him and the outstanding Contenders.

We were also reminded about Mat’s idol, meaning she is going down this episode, no?

Benji and Sharn went into the jungle for a pow-wow, with Sharn immediately assuring him that his Contenders are safe and that she wants to get rid of Brian ASAP. Sharn went for a walk, giddy with her growing power, only to discover a clue for a hidden immunity idol at the next challenge. Kween. Kween Sharn. While Sharn was missing, Benji got to work telling Brian that Mat was targeting him and Monika that Mat asked him to spy on her. Sadly for him, Brian wasn’t buying shit. Well, until he mentioned that Sharn was on board and he and Monika immediately jumped on board and King Brian vowed to take control.

My boy Jonathan returned to the screen for the immunity challenge where the tribe was required to dig under a log, with six moving on to solve a puzzle … with the top three playing Survivor snooker for immunity. Steve and Benji were first through to the second round followed by Mat, Shonee, Brian and Shane, who pulled a come from behind win and killed Sharn’s chance at an idol. Well, unless she is daring. Anyway, Brian, Shonee and Benji moved on to the final stage, and hot damn I need Shonee to snatch immunity just for being a saint. The final round was neck and neck, between the boys and not Shonee, with Benji – UGGGGHHHHH – snatching immunity. Not to be outdone, Sharn was a boss grabbed the hidden immunity idol. Well, boss … until she dropped it in front of the entire tribe.

Back at camp Sharn was forced to attempt some slapstick comedy to deflect from the fact her idol was outed as she crapped it out in front of the tribe. Mat however, was thrilled by the turn of events as it managed to deflect from his idol. Mat, Sharn and Shane got together to lock in the vote for Brian before Mat approached Monika to secure her loyalty, with he vowing that she can act and keep the blindside up. Though sadly for him, Brian doesn’t seem to be her target. Shonella and Benji also agreed to take out Brian to his face, but Benji was itching to finally take a shot at Mat and take control of the game.

The Contender trio caught up to discuss whether Brian and Monika could be trusted, with the duo wandering upon them and vowing their undying loyalty. With the power going to his head, Benji decided that now would be the ultimate time to flush Sharn’s idol. He approached his secret ally and told her that playing her idol would be the best case scenario, to get the target off her back and gain some trust back. Sadly for him, Mat interrupted their pow-wow … though not before making her nervous enough to consider flushing her idol to save herself and not Mat.

Steve also made a Brianside joke, and damn, purple zaddy is life.

At tribal council Jonathan was quick to point out that Mat and his alliance were dominating the game, kinda making him nervous about his place in the game, concerned about how information can travel and how it could bite him. Benji gave a vague explanation about taking out threats, Monika shaded Sharn for her shitty/ing idol find. Brian speculated about the remaining idols left in the game, Mat shaded Russ-hole – rightly – for being overconfident and underestimating his opponents. Monika spoke – AGAIN – about idols placing a target on your back, low-key pushing for her to play the idol and flush it out with the blindside. She then spoke – AGAIN again – saying this vote, for her, is an easy won, Fenella spoke about following the numbers – which Sam and Robbie didn’t buy – while Benji was hopeful that he was trusting in the right people tonight. This appeared to make Mat nervous, with him issuing a veiled threat about being the next out if you make a play and miss.

With that, the tribe voted and Sharn opted to play her not so hidden immunity idol ON MAT leave Benji in utter shock, desperate and shitting himself like Sharn’s idol at the challenge. The votes then rolled in – like Benji’s waves of regret – wait no, Benji told her not to play it on Mat and instead told her to play it for herself to avoid going to a revote. She then played it for herself, confusedly so, as Steve anxiously watched Mat and the votes rolled him, sending him from the game to become the third juror.

Given Mat is arguably one of the nicest people to walk the planet, it was really hard to watch him be so blinded by his confidence and NOT to play his idol, when Sharn’s attempt to play her’s clearly highlighted that something was afoot. Thank being said, it was also really easy to watch his boot because the tribal council was lit and Benji convincing her to revoke her idol play and direct it to herself was masterful, despite me wanting him out next thanks to Shane’s wrath.

Anyway – MAT. I’ve known Mat for years, thanks to my long association with football. I mean, my dad played three – yes THREE – first grade games for the Roosters, I swindled the old lady in the neighbouring corporate box at Seagulls to hand over all of her soft drinks and have the thighs of a front rower. As I was saying, I took Mat and I became friends and because I loved him so, I introduced him to Chloe and hot damn did Jeans West fit best. Given how grateful they were, we’ve been the best of friends ever since and catch-up fortnightly to be besties and smash a shit tonne of Mat Rojersey Caramels.

Are Jersey Caramels something I used to tease my co-worker for eating because they are old people snacks? Sure. But TBH, they are also freaking delicious. Sweet and chewy, this edited version of the most basic recipe I could find on Taste.com is the perfect way to get rid of the bitter taste of a killer blindside.

Enjoy!

Mat Rojersey Caramels
Serves: 6-12.

Ingredients
395g can sweetened condensed milk
1 cup muscovado sugar
1 tbsp glucose syrup
3 tbsp golden syrup
125g butter, roughly chopped
200g white chocolate, finely chopped
icing sugar, for kneading
500g fondant
1 tsp vanilla extract

Method
Combine the half of all the condensed milk, sugar, glucose, golden syrup and butter in a large saucepan and cook over low heat until the sugar and butter have melted. Up the heat and bring to a simmer, while stirring constantly, for five minutes, or until the mixture has started to thicken. Remove from the heat and fold through half the chocolate, and pour into a lined square baking pan. Smooth the top and leave to cool for about 20 minutes.

Sprinkle the icing sugar on a clean, dry working surface and knead the fondant until smooth and malleable. Add the vanilla and continue kneading until smooth and well combined. Roll the fondant and carefully lay over the caramel, pressing to join.

Repeat the caramel process with the remaining ingredients and spoon over the fondant. Smooth the top and leave to set for half an hour, before covering with cling and placing in the fridge to set overnight.

Remove and cut into cubes before devouring. Or, you know, just bite off junks. No judgement.

Choc Peanut Butter Aaron Spelting Cookies

Baking, Dessert, Emmy Gold, Emmy Gold: The Gold Wing, Snack

And now, the end of The Gold Wing is here and I thought it best to once again go back in time and celebrate with someone that has faced their final curtain – Toto that into My Way, would you? – my dear friend Aaron Spelling.

As you know, I’ve long been a friend of the Spelling Dynasty and my catch-up with Loni – who played Candy in Tori’s hit show So Notorious – reminded me that Aaron has a couple of Emmys to his name, despite creating some of the most iconic TV shows of our time.

I used my time in the purring delorean to finalise my tips for the best series gongs, settling on an ASP clean sweep as The Marvelous Mrs. Maisel takes Comedy, The Handmaid’s Tale goes back-to-back for Drama and The Assassination of Gianni Versace: American Crime Story is honoured for Limited Series. I found things more difficult for Talk and Sketch Series, eventually decided Variety Talk would go to Last Week Tonight with John Oliver and At Home with Amy Sedaris will/should surprise for Variety Sketch.

Oh and I obviously am backing RuPaul’s Drag Race but that should come as a surprise to absolutely no one.

By the time I arrived at the epic Spelling Compound, I was so overjoyed to see Aaron one last time that I didn’t want to let him go. I desperately danced around filling him in on what I had been up to, lest I set off a butterfly effect, eventually shoving Choc Peanut Butter Aaron Spelting Cookies into our mouths to avoid any issues.

Inspired by a delicious Nigella classic, these babies are decadent, rich and a little bit healthy – yay spelt! – so you can devour them without feeling to guilty. And while that is a total lie, just buy it … because they are worth it.

Enjoy!

Choc Peanut Butter Aaron Spelting Cookies
Serves: 2 nostalgic friends, or 6-8 normal people.

Ingredients
150g peanut butter chips
125g dark chocolate
125g spelt flour
25g cocoa
½ tsp bicarb soda
pinch of kosher salt
60g unsalted butter, at room temperature
125g muscovado sugar
2 tsp vanilla extract
2 eggs, still cold

Method
Chuck the peanut butter chips in the freezer and preheat the oven to 160°C.

Melt the dark chocolate in a bowl and leave to cool a little, and combine the flour, cocoa, bicarb and salt in another bowl. In the bowl of your stand mixer, cream the butter, sugar and vanilla for a couple of minutes, or until light and fluffy. Beat in the cooled chocolate until well combined before adding the cold egg. Scrape down the sides, reduce speed to low and carefully add in the dry ingredients, avoiding a mushroom cloud of flour at all costs. Remove from the stand and fold through the peanut butter chips until combined.

Dollop a tablespoon of dough on a lined baking sheet, leaving a large rim for spread, until full. Place the remaining dough in the fridge while you transfer the baking sheet to the oven for ten minutes and bake until just set. Leave to rest on the warm pan for ten minutes before transferring to a wire rack to cool.

Repeat the process until the batter is done, and then devour.

Lena Wafers

Baking, Dessert, Emmy Gold, Emmy Gold: The Gold Wing, Sweets

It is the second last day of this year’s Emmy Gold celebration The Gold Wing, can you believe? And something something segue Gaz, Marg, Ava, Rami and Rhea something, I am thrilled to catch-up with my dear friend and semi-freshly minted Emmy winner Lena Waithe.

Given she won her Emmy with my (problematic) friend Aziz for the beautiful Thanksgiving episode of Master of None, it should come as no surprise that he is the reason we became friends.

I was visiting the set during season 1 and Lena and I got to talking about our coming out experiences, and Aziz suggested that they write it into the second season. So you’re welcome, because that episode was perfection and he and Lena truly deserved that Emmy and I can’t even begrudge them for not including me in the writing process.

Since her victory, Len’s career has absolutely exploded and while it means we don’t get to see each other as often as we’d like, I’m so proud of her. And it makes our fleeting dates even more special. As a fellow writer, I knew that she would be best placed to go through the writing categories with me. Obviously she agreed that The Marvelous Mrs. Maisel’s auteur Amy Sherman-Palladino would snag it for Comedy. Continuing our agreeance, we both backed Phoebe Waller-Bridge for Killing Eve, Steve Martin and Martin Short for their Netflix special and William Bridges and Charlie Brooker will snag it for USS Callister.

With the formalities out of the way, we toasted her success and got to work demolishing a big batch of Lena Wafers.

Not your childhood’s technicolour crosshatched biscuits, these wafers may not look as perfect but damn they are delicious. Light, sweet and delightfully crisp, they are the only thing worthy of honouring my girl Lena.

Enjoy!

Lena Wafers
Serves: 6.

Ingredients
115g unsalted butter, at room temperature
100g raw caster sugar
1 egg, whisked
2 tbsp vanilla extract
1 tbsp milk
200g flour
1 tsp baking powder
pinch of kosher salt

Method
Preheat the oven to 180C.

Cream the butter and sugar in a stand mixer for a couple of minutes, or until it is light and fluffy. Still going, add the egg, vanilla and milk and continue beating until just combined.

Combine the flour, baking soda and salt in another bowl before folding through the wet ingredients. Cover and transfer to the fridge for half an hour.

When you’re ready to bake, place teaspoon sized bowls on lined baking sheets, leaving plenty of space for spread. Flatten each ball to form a thin disc and transfer to the oven to bake for fifteen minutes, or until golden.

Remove from the oven and allow to cool on the sheets for a couple of minutes before transferring to a wire rack to cool completely.

Once set, devour.

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Drink, Snack, TV Recap

Previously on Australian Survivor 11 champions, 11 contenders, a three-time loser and a washed-up gladiator were sent to the islands of Fiji and forced to compete against each other in the ultimate game of survival. Thus the name, Survivor. Anyway, Matt D, Russell, Damien, Steve K, Jenna, Moana, Anita, Zach, Paige, Jackie, Tegan and Heath were all voted out and based on the preview, we’re about to merge yo! Oh and I should explain that Queen Shane was in the power position at the new Champions, while Benji and Robbie had joined the Champion girls on the new Contenders to eliminate Heath at the last tribal council. So yeah, it seems like shit is about to go down.

Getting straight into the action, the tribes met Jonathan in the middle of the jungle where the Champions were shocked to discover that Heath had been booted at the previous tribal council. Mat spoke about his fears for the Champion girls who all seemed awkward about him mentioning it, before Sam tried to downplay the sitch. Thankfully it didn’t really matter, as everyone was told to drop their buffs because this is a damn merge yo! Benji was proud about how he has played thus far, Steve was nervous though thrilled to be in his colour and Shonella were just thrilled to be united as icons deserve to be with icons.

Once everyone was draped in new, fresh buffs Jonathan announced that in lieu of a merge feast they’d be participating in a Survivor Auction, with Shonee thrilled about the possibility of having a burg. Which is super relatable. First up was a choccie milk – not the Choccie Milk – which was purchased by Sam for $80. Sam, Benji and Shane went hard for a covered item, with Shane spending $250 dollars to … exit the auction and sit at a beggars table, forced to request scraps from everyone. And given Sam gave her a sip of milk straight up, it seemed she is the true winner. Poached eggs, toast and tomato went to Fenella for $200 – with Shane going halfsies – Sharn snagged a pav, not parvlova, for $320, Brian also spent $320 on a hidden bowl of rice, $460 snagged Benji a burger, fries and coke, and Shonee dropped $500 on a huge fucking lolly jar. Oh, and a clue to a hidden immunity idol. Brian snagged a bed with Shane for three nights, Lydia evidently got a pizza without fanfare and then bam, it was all over.

The newly merge tribe returned to camp with Shane thrilled to have made it so far and to be that much closer to victory. And willing to get as cutthroat as she needs to be, vowing to do whatever it takes to win. She then bonded with Fenella and hot damn, I hope Shanella are the final three. Shonella went for a walk into the jungle with Fenella spilling the tea on Robbie’s vapid concerns – though if he is nude, who cares, you know – and Shonee whinging about the trauma of listening to discussions about workout efficacy. Meanwhile Robbie and Benji followed Mat around like lost puppies, hoping to throw enough metaphors about battle and sport analogies to win him over. While Mat pretended to want to protect them for protecting Sharn and Lydia, I feel like that is not going to happen.

Mat approached Sharn to see what exactly they had promised to stay in the game, with Sharn pointing out she was desperately but her allegiances have not changed. Lydia checked in with Mat and dictated that Fenella needed to be the next person out, with Mat agreeing and turning his attention on keeping Brian on his side and making sure he doesn’t flip. Sadly he was sharing a bed with Shane and I ship them taking over. Before we got to see if Brian and Shane could take over, Sam and Lydia went for a late night wander to reconnect, with Sam highlighting how big a target she has resting on her back now that the merge has arrived.

The tribe went wandering for pawpaws the next day, much to the disgust of Shonee who used the alone time to snatch her clue and find out if I was right about it being for a hidden immunity idol. While I was tragically wrong, it did allow her the chance to steal someone’s vote at tribal and hot damn, I want Shonee to win. Particularly after she threw out that the prisoners are about to overthrow the guards.

We arrived at the first individual immunity challenge where the new Koro Savu tribe would all be required to hold on to a long hard pole as long as possible. Like Brooke, Parvati, Ozzy and a slew of other icons of the game. As soon as the challenge started, Shane opted out and decided to save her energy until she needed it – iconic – followed closely by Monika who requested a ladder as she was too scared to belly flop onto sand. Brian too couldn’t see himself winning so instead checked out, giving Shane the opportunity to float a Lydia blindside with Brian and Monika on the loser bench and pull in Shonee and Fenella. After an hour the remaining participants moved to the narrower footholds, with Robbie, Steve, Benji and Shonee all quickly dropping out.

After two hours poor Fenella couldn’t hold out any longer, followed by Mat leaving Sam, Sharn and Lydia to battle it out. While they battled, Shane continued to rally the troops for a Lydia blindside with Steve and Mat seemingly buying in and rallying Sharn for the win. After three hours they dropped to the skinniest foot holds with Sam dropping almost instantly, leaving Sharn and Lydia to battle it out. And battle they did, while Sam tried to keep the Champions from blindsiding Lydia. Which is a possibility, since the rain rolled in and she slid down the pole and handed immunity to Sharn.

Back at camp Shane quickly got to work lining up the numbers, concerned about how focused she was during the challenge when she didn’t even need it. Shane and Monika worked on keeping Mat loyal to the plan, with Shonee being looped in and Sam seemingly on board. Despite thinking that Fenella needs to go. Speaking of which, Robbie, Benji, Sharn and Lydia locked in their plan to take out Fenella, leaving Brian concerned about how to spell her name. Feeling like he may not have the numbers to get rid of Lydia, Mat approached Sharn about turning on her closest ally.

At tribal council Benji downplayed day one alliances, Mat admitted to bonded with Fenella over home designs ala Brad Culpepper before Jonathan pointed out the obvious, that Fenella and the OG Contenders are kinda screwed. Mat agreed that old tribes are dead, though couldn’t seem to remember the new tribe’s name. Sam tried to subtly hint at Mat and Shane that a Lydia blindside wouldn’t work out well for them, before Sharn spoke about her pride at taking out the first victory. Lydia on the other hand sold the challenge as fun, and the nails started to go into her coffin. Brian and Mat alluded to the fake Lydia was a threat, Fenella encouraged people to take out threats while they can while Sharn and Sam tried to defend Lydia and keep the Champions strong. Steve, thankfully, pointed out that getting to the end is the goal and it doesn’t matter how you get there and hot damn, zaddy’s home. Sharn and Lydia tried to downplay their dominance, Shane reiterated why her plan to step out of the challenge was the best move and that she is more than ready to take out the threats and make moves.

Then she led the entire tribe sans Benji and Robbie to prove that stepping down from the challenge was a killer idea, with her loser-bench plan to eliminate Lydia going off without a hitch. Given how competitive Lydia is, she wasn’t exactly thrilled to have been blindsided from the game and miss the jury – right Savage? – however her rage dissipated pretty quickly when she lay eyes on my Lydia Lassila.

Given it is literally her name, it may not be abundantly clear that this is a lassi. Well, except for the image I guess? Anyway, this is sweet, fresh and insanely delicious, and you should defs whip one up next time you’re angry. Or sad. Or happy. The focus is on making one, I guess?

Enjoy!

Heath Datevies & Walnut Muffins

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Baking, Cake, Dessert, Snack, Sweets, TV Recap

Previously on Australian Survivor the tribe swap gave the Contenders a brief pause from their pagonging, well for some. As the new Contenders dominated leaving Benji and Robbie in power with their interloping Champs. Meanwhile over at the Champions Shane took control of the tribe with the Champion boys and the Contenders girls plus Brian pushing to get her. Sadly for Tegan and Shonee, she stuck with the boys and booted Tegan from the game. Thanks to another twist Tegan was given the opportunity to be saved from another boot by the other tribe, however with this time Benji and Robbie opting to send her from the game. For realsies.

We opened up with the Champions where Mat was surveying the land and found a massive beehive with Steve and Sam. Not wanting to leave it alone, they decided to try and smoke them out to get the honey giving me My Girl PTSD, because Thomas J will never be able to see without his glasses. Steve turned pyro and I got Firestarter PTSD, as the honeycomb eventually fell and the fire somehow didn’t burn out of control, leaving the Champions with a safe snack.

The next day Shonee was feeling left right out with four athletes and a genius, with no similarities to help her bond. I mean, they spoke about how long it too for wheels to be added to things and Queen Shonee was over it. Like, give me a shit tonne of Antiques Roadshow instead of suffering through this shit. Feeling like she should start contributing to the survival aspect of the tribe, she decided to try her hand at cooking, cleaning and doing things the others have done for a month. And the fact she has gotten away with that is why she is the queen, TBH. Particularly since Mat was all in on working with her.

Meanwhile over at the Contenders Heath and Fenella were feeling left out as Benji and Robbie continued to bond with the Champion girls, gloating about taking out Tegan. When really, they only added salt to her wounds technically. Fenella however was ropeable about their stupidity and hot damn it seems like the other side of Shonella is finally going to bring hell. Her new pal Heath meanwhile was confronting Robbie about how getting rid of Tegan was a good idea before hooking up with Fenella to bitch and try to find a way to get out of the mess of their making. Heath floated the idea of beating them at their own game, get the Champion girls and get rid of Robbie ASAP with Fenella decided that targeting Monika and her girl power to find an in. Fenella joined Mon and Sharn to talk about the possibility of doing a girls alliance as a way to find an in … in NUDE ROBBIE, BRB.

Sorry – all I can remember is Robbie getting his buns out and Fenella declaring game on molls. So yeah, episode of the season.

Sensing my desire slowly swinging to Robbie, JoJo returned for the immunity challenge where the tribes would be required to use a rope to drag buckets full of sandbags, which two tribe members would use to knock blocks off a beam which the remaining two people will use to solve a word puzzle. Steve got the Champions out to an early lead while superwoman Lydia showed her first signs of challenge weakness, with Brian getting the second bucket back before Lydia got the Contenders first. Try as Robbie might, Shane and Mat only continued to extend the Champions lead while Benji and Heath finally closed the gap while lobbing their sacks until they found themselves stuck on one errant block. Sam and Shonee had a nice lead on the puzzle, leaving Sharn and Fenella to desperately try and come from behind. Sadly for them and thankfully for Shonee, Brian solved the puzzle from the viewing area and they just got their letters in before the Contenders, winning immunity and saving Shonee from certain doom.

The Contenders returned to camp with Benji once again talking about killing and being melodramatic about the process of voting someone out. Which is less than what I’d be like if I were out there. He and Robbie locked in a plan to get rid off Heath with the help of the Champion women, with Lydia and Monika quickly swearing allegiance. Sharn too locked in the plan with Benji, however his assurance that she was safe sounded shifty and me thinks she is going to do something about it. Heath was not happy about the possibility of going home, so when the Champion girls spoke about being in the minority he quickly assured them that he was on the outs and was more of a free agent than them. He then channeled Sandra and vowed to vote for anyone but him, before pulling in Fenella is another number as he can’t trust Lydia. Not to be outdone, Fenella approached Monika and Sharn to once again float the possibility of a women’s alliance and the three quickly locked in a vote against Robbie.

Given they are floating in the middle, Sharn and Monika went for a walk to discuss which pair would work out better for them. Unsure which would work out top their advantage. Robbie then checked in with Lydia, who told him that Heath was throwing his name out there filling him with rage. He then approached Heath to see what he thought, with Heath trying to get him to see sense and take out another Champion as they head into the merge and deciding that Monika would be the best option. Despite the fact Lydia is the biggest challenge threat and needs to go.

At tribal council Fenella was thankful for sitting in on the last tribal council and the intel they gained. Heath joined her in putting doubt in the Champion women’s mind, saying the cracks were obvious much to the smirks of Lydia. She tried to call him out but Heath straight up said that Mat and Steve – Lydia’s closest allies – were running the game and Sam was looking forward to working with the Champions come the merge. Benji and his rando accent tried to downplay the OG tribe connections, planning to grab whatever numbers he can to make it further in the game.

Lydia admitted to feeling nervous as the odd one out on the tribe, though played up how hard she and her fellow Champs worked to help the tribe. Without seeing that was playing up her status as a threat. Robbie tried to emphasise how close they had gotten, with Monika working the social game to try and make herself less of a target. Sharn was concerned that despite joining to kick out Tegan, the tribe may still be split and would turn on the Champs. Everyone alluded to trust without saying much before Robbie committed that this vote was about who he wanted to work the merge with and Sharn spoke about getting rid of threats come the merge, before Jonathan tried to paint the target on Lydia’s back given she is a beast. Robbie downplayed the importance of strength before Heath and Monika admitted that they are confident they’re in on the plan ala Keith Nale. Sadly like Heath, it backfired as he found himself following his ally Tegan out the door. Just before the merge.

Given Heath is an absolute sweetheart and despite the fact he got nude in episode two, I took him into my arms, well his legs at least – not in a suss way, he is super tall – told him how proud of his game I was, how proud his family would be and how much his friendship means to me. It was oddly platonic, which is unnerving I know, but Heath is a delight and I was heartbroken to see him go. With or without a nude scene. Anyway, the fact that that is so off brand for me makes me nervous so I whipped out a big fat Heath Datevies & Walnut Muffins and took it all in my mouth at once.

While that is totally more on brand, I challenge you to do anything but when faced with these beauties. Caramelly and sticky, lightly spiced and full of nut – sorry – I can’t think of anything else I want to pack into my gob.

Enjoy!

Heath Datevies & Walnut Muffins
Serves: 8.

Ingredients
1 ½ cups flour
2 ½ tsp baking powder
⅓ cup muscovado sugar
1 tsp ground cinnamon
½ tsp ground ginger
pinch of freshly grated nutmeg
pinch of allspice
½ tsp salt
½ cup milk
⅓ cup molasses
⅓ cup canola oil
2 eggs, lightly whisked
1 cup walnuts, roughly chopped
1 ½ cup pitted dates, roughly chopped

Method
Preheat oven to 180C and line an 8-hole Texan Muffin pan. Because Heath is a giant and you can’t give him a regular sized muffin.

Combine the flour, baking powder, muscovado sugar, cinnamon, ginger, nutmeg, allspice and salt in a large bowl, and combine the milk, molasses, oil and eggs in another. Stir the wet into the dry ingredients until just combined. Fold through the walnuts and dates.

Divide your batter into the prepared holes – which wasn’t meant to sound suss, but Steve … I’m always prepared – and transfer to the oven to bake for 25 minutes, or until cooked through.

Remove to cool on a wire rack before devouring.

Courtney Love Cake

Baking, Cake, Dessert, Snack, Sweets

Oh my god – what a delight it was to see Courts again! I was anxiously waiting at the VIP exit of Brisbane Airport – the one where Schapelle left from! – and ran straight into her arms as soon as I saw her, breaking down in tears from either feuding with a washed up Gladiator or how desperately I missed her.

JK, obvi it was the latter. My feud gives me life.

Now as you know from my time-travel enabled date with Kurt, I’ve known Courtney for years when we were both huge in the Portland gay club scene where I was turning tricks at the time. She realised that I was destined for greatness – well, a different kind of greatness because no judgement – took me under her wing and vowed to make me a star.

While I kept on stumbling, Courts was never disappointed in me and always made me feel loved and appreciated. She truly is the sweetest person, which is why I’m honoured to have introduced her to Kurt.

Anyway I haven’t seen Courts since she toured Australia four years ago, so it was such a treat to see her, reconnect and see whether she believes that Nico and I will ultimately end up together. Well, if things don’t pan out with The Commando, obvi. And if she and Neeks enjoyed their time with Ru and Mish, obvi.

Given the deep love I have for dear Courts, I knew there was only one thing I could make that would do her and our friendship justice. A delicious Courtney Love Cake.

A traditional Sri Lankan celebration cake, the Love Cake is moist, spicy and sweet and is emblematic of all that is good in the world. Like my dear ride-or-die friend.

Enjoy!

Courtney Love Cake
Serves: 8.

Ingredients
350g raw unsalted cashews
1 tbsp rosewater
1 tsp ground cardamom
2 tsp ground cinnamon
½ tsp nutmeg
200g unsalted butter, at room temperature
1 ½ cups raw caster sugar
4 eggs, separated, plus an additional 4 yolks
1 ½ cups semolina
⅓ cup honey
icing sugar, to serve

Method
Preheat oven to 150°C and line a square cake tin with baking paper.

Blitz the cashews in a food processor until finely chopped. Add the rosewater and spices and blitz again until well combined.

Cream the butter and sugar in the large bowl of a stand mixer until light and fluffy, to the point where they appear to be pulsating. You know the look. Add the yolks one at a time, beating well after each addition before folding through the fragrant cashew mixture, semolina and honey.

Using a clean bowl, beat the egg whites in the stand mixer until stiff peaks form. Fold into the semolina mixture, transfer to the cake tin and bake for an hour, or until firm and cooked through.

Remove from the oven and allow to cool. Before carving, dusting in icing sugar and devouring. With your favourite friend.
