Previously on RuPaul’s Drag Race UK the inaugural batch of queens well and truly knocked it out of the park, slaying the competition from start to finish. And, in my not-humble opinion, served up the best season of Drag Race since All Stars 2. Let’s just take time to remember the highlights – Scaredy Kat shat out her own head, Michelle thought The Vivienne was rocking a fake nose, much betta, the combination of Trump and Thatcher in Snatch Game, Frock Destroyers storming the charts, Sum Ting’s stamp look, Crystal grinding her garment, hodge podge, Gothy’s rawr, Cheryl’s iconic bottom spree and yes, yes, I know it was part of the Frock Destroyers, but DDC’s epic whistle tones.

While The Vivienne rightly took the crown, the entire cast won my heart. Meaning these new girls are either going to blow me away or … nope, good vibes only – they are going to blow us away. I can feel it in my Maxine Waters, by way of Monique Heart.

The parade of new queens kicked off with Scotland’s own Lawrence Chaney in all technicolour wonder, as iconic as the Loch Ness monster. She then likened herself to Susan Boyle and well, that’s enough to love her. Cherry Valentine almost knocked herself out as her headpiece smacked the doorway on her way in. Thankfully she slayed her second try and I love her and how funny she found her fuck-up. She has only done drag for 12 months and it is one of three jobs, including mental health nurse and she is the BEST. Tia Kofi was up next in cheetah glory and doesn’t care how she looks, she just wants to slay with the performances. They were joined by Bimini Bon Boulash in full Barbarella realness.

Oh and she is a vegan, which we were reminded of multiple times. Oh and she describes herself as super slutty and I love her. As did Lawrence, as she quickly adopted her.

Ginny Lemon was up next and was camp, crazy and full neon yellow and I love her and she needs to win. She is wacky, OTT and well, I think she and Baga would be best friends. Ellie Diamond was up next serving pastel pink babydoll realness, with Lawrence heartbroken to share the title of first Scottish queen in the competition. Oh and she makes everything she wears despite being a baby and I live. Could she be the UK Trixie? Sister Sister was next and flooded my basement out of drag and was camp, perfectly styled and I’m so excited for her. Tayce was next on the scene serving supermodel realness and given she lives for Cruella de Vil, I live for her like Ginny lives for her accent.

Next was Joe Black, clocking herself for being the second coming of Glenn Close before I had the chance and instantly, she has become my favourite. They were joined by Veronica Green who described herself as Goolum to glamourous and well, now she is my favourite. She is a super nerd out of drag – in a v hot way – and is stunning in and I need her to succeed at everything given she is so delightful. Next was Asttina Mandella serving tailored glamour before throwing down, telling everyone that she is the best dancer and can turn a lip sync. Rounding out the cast is A’Whora serving slutty Dorothy realness and I live for her look, despite Tia alluding to the fact that she is not well liked among the queens on the scene.

Their jubilant celebrations about making the cut were interrupted by Ru who arrived to announce that the first mini challenge of the season would see the girls pose in a glorious Wimbledon inspired photoshoot, serving Wimbled-hun realness. With the new and improved Pit Crew, much to the delight of sweet Veronica.

Lawrence was hoping to turn her lack of athletic prowess into a total serve, which she did, given her charm and penchant for the f-bomb. Tayce went full model eleganza, Bimini was a neon, slutty dream, Joe Black proved turbans are like hats by keeping hers on, Cherry Valentine was a smutty, moaning icon, Ellie Diamond begged for the balls and sold me on the fact she is Pearl and Trixie’s love child.

Ginny was an absolute bonkers delight, Asttina cared only about the photo and well, it turned out amazing, so it paid off. Veronica Green continued to work her way further into my heart and I want to adopt her because she is the damn sweetest. Sister Sister served Heathers realness, A’Whora was an ‘80s workout dream, Tia Kofi deserved the win for catching tennis balls in her wig before directing the Brit Crew to elevate her. Despite a dozen strong performances, it was Lawrence Chaney that ultimately took out victory. Looking an absolute mess, in her own words.

Before Ru departed he announced that for this week’s Maxi Challenge the queens would need to stomp the runway serving UK Gay Icon realness. Oh and then turn a second look, showcasing why they’re the queen of their hometown. With that the girls ran around chaotically to secure a workstation before de-dragging. Much to Tia’s delight. A’Whora quickly fangirled over Joe Black, talking about how much of an icon she is with Joe sharing she applied to challenge herself and show something different about her.

Meanwhile Lawrence still hadn’t taken off her make-up, admitting that she isn’t very confident as a boy and doesn’t feel conventionally beautiful and as such, was scared to show herself to the girls. Thankfully the queens reminded her that she is a charming, fun, beautiful delight and not to be hard on herself. And I love them all.

Elimination Day rolled around with everyone splitting up to get to work on their first looks before Bimini pointed out that Tayce and Asttina had both opted for Naomi Campbell for their UK Gay Icon. Though rather than having a fight, they spoke about the fact they didn’t have many people of colour to look up to growing up and as such, it is a nice statement for both of them to stick with it and hopefully become gay icons for the future generations. Talk turned to the looming elimination, with A’Whora speculating Asttina and Tia will likely be the first and damn, I love when a queen leans into being the villain. It is just such a joyful edge, so let’s hope it stays in this light and shady way.

On the Mainstage Ru, Michelle and Graham were joined by the stunning Elizabeth Hurley and urgh, I love her. For the gay icon runway, Joe Black served David Bowie realness and I loved everything she did. Asttina was glorious and stunning as runway Naomi, Ginny rocked Kate Bush and I love her before Tia Kofi swerved with an Alan Turning look and I love me a nerdy, history queen. Bimini was a sexy, punk Princess Julia, Lawrence honoured my lovely Diana Rigg – may she rest in peace – Cherry was a glorious Freddie Mercury, Veronica was adorable as Boy George in Boy George’s second hand shoes. Despite them not fitting. A’Whore was a messy Vivienne Westwould, Sister Sister was adorably chaste as Dusty Springfield, Ellie Diamond slayed as Lily Savage and Tayce also served as Naomi.

Though I do have to say, Asttina had the better look.

On the hometown runway, Joe Black’s Brighton look was meant to honour the pavilion though I couldn’t really see it. Asttina served East London streetwear – in the best way possible – while Ginny rocked Worcestershire Sauce realness in a mustard suit, Tia was stunning as Robin Hood realness, Bimini was amazing as a slutty football fan, Lawrence was a pop art wonder in ode to stained glasswork, Cherry was smoking as a train. Or a clock, I don’t know. Veronica Green wore a glorious red ball gown, A’Whora also went with Robin Hood realness in a stunning elfen number before Sister slayed as a scouse housewife running errands. And then Ellie Diamond was inspired by Dundee’s Dennis the Menace but looked like the hottest Freddy Kreuger ever, And then Tayce was literally a Welsh Dragon and I live.

Particularly when Liz Hurley quoted AUSTIN POWERS.

Ginny, Tia, Cherry, Veronica, A’Whora and Tayce were quickly deemed safe, leaving the tops and bottoms to find out how they did on their first try. While Joe Black looked stunning, the judges didn’t think that either of her looks were iconic enough to come through. Except for Liz who loves some history. Asttina received universal praise for everything she did and the judges look forward to seeing how she mixes it up next. They loved Bimini’s slutty Norwich look but felt her personality wasn’t coming through. Lawrence was universally beloved by the judges, with Michelle quickly identifying her as the one to watch. Sister’s Dusty look was deemed a little lacklustre and while Graham and Elizabeth loved her hometown look, Michelle thought it should have been bigger. Oh and then Ellie was praised for being beat to the gods and tailoring such glorious outfits.

Backstage Tayce was heartbroken to be safe, though was thrilled to not be in the bottom. A’Whora suggested that the group could have been the tops and bottoms with Tia asking who she would have put in the bottom, with her saying Tia and Asttina should have been in the bottom. Based on only entry looks, because Tia’s hair was thirsty. A’Whora read Asttina for wearing ASOS before Ginny pointed out that they’re just intimidated because she is fierce. The other girls joined them, with Joe talking about how heartbroken she is to be in the bottom and the fact they didn’t get her. The girls were shocked that Asttina was in the top, while Sister was annoyed to be in the bottom. Oh and Bimini was so anxious about lip syncing in ten inch heels, no underwear and arse out.

On the BEEEEEB.

Ultimately Lawrence Chaney was deemed safe as was Ellie Diamond, as Asttina Mandela took out victory – much to A’Whora’s shock, no doubt – while Sister Sister narrowly avoided the bottom two, leaving Joe and Bimini to battle it out to the iconic Relax by Frankie Goes to Hollywood. Both queens slayed the lip sync, getting every damn syllable and being true to their own style. But when Bimini did a headstand and started riding a bike, it was all over. As the sexy queen flooded Liz’s basement and saved herself, sending Joe from the competition.

Poor, poor Joe. While the cabaret legend was positively gutted to exit the competition first, she was thrilled to find her old pal slinking about in the Werk Room. As this little episode was filmed before the pandemic fully put 2020 on ice, I took her into my arms, held her by the face and told her how sickening she is. From about an inch away – isn’t that terrifying to think of doing now?

I first met Joe on the cabaret scene in the early aughts when I was pretending to be the real Sally Bowles. While she and everyone else saw through the very-obvious-in-retrospect lie, she kindly took me under her wing and made sure the others were kind to me. Did our friendship start with me playing the wounded bird act? You betcha, but thankfully the years since have gifted me with one of the most beautiful friendships I could hope for. And as such, I knew the only way to cheer her up was to whip up some Joe Black Olive Tapenade and toast her glorious, tragically short run.

A little bit tart and a whole lot tangy, tapenade may not be everyone’s favourite dip to have but it is a very important part of the classic Italian trio. And I personally love it and its ability to enhance even the most bland recipes. I want to say it is its umami-ness, but I’ve probs misunderstood that flavour because I’m not a masterchef.

Joe Black Olive Tapenade
Serves: 2.

Ingredients
180g kalamata olives, pitted
1 tbsp capers, drained and rinsed
3 anchovy fillets (I hate them too, but they’re necessary)
2 garlic cloves, minced
½ tsp dried oregano
1 tbsp sherry vinegar
1 tbsp olive oil

Method
Now brace yourself, this one is really going to stress you out so make sure you read to the very end of the recipe before you begin.

Place everything in a food processor or blender and blitz until well combined. Serve immediately with crusty bread or transfer to a steralized jar for later.

Michello Williams Shots

Dawson's Creek 20th Anniversary, Dessert, Drink

After spending time with Josh, Katie, Mezza-B, JVDB and Kerr, we’ve come, just like that, to the end of my Dawson’s Creek 20th Anniversary road. Though I guess, really, I should call it a creek, no? Given said anniversary of the premiere falls today and we’re balls deep in awards season, I knew that Mich was the perfect person to act as the jewel in our crown.

Plus – Michelle Williams is a damn saint and is hella iconic, so she is most deserving. I mean, her statement post-Wahlbergate and shout out to Anthony Rapp was perfection.

While I only met Michelle on the Dawson’s set, we quickly became the best of friends and have been each other’s emotional support ever since (even if her close bond with Busy sometimes gets in the way). Fun fact: as Jake and I were engaged at the time of Matilda’s christening and I’m her secret third godparent).

Her career has truly gone from strength to strength since leaving the Creek, raking in a Golden Globe and a quartet of Oscar nominations (… that really should bump up to five after her powerhouse performance, during two different filmings, in All The Money in the World). She kinda is like the millennial version of Meryl, TBH.

Of course she laughed off my lavish praise when we set down to celebrate her role as Queen Jen Lindley and her ongoing success, but deep down I know she appreciated me toasting her with a tray of Michello Williams Shots.

 

 

Since we are both – yes, BOTH – hella classy, I didn’t want my jello shots to be a technicolour monstrosity that burnt from your esophagus right to your soul. So instead of that, I went with a dignified sparkling, berry and chambord combination which truly gives you life. Consider this the Oscar version compared to the usual Golden Globe-esque jello shot.

Michello Williams Shots
Serves: 6.

Ingredients
750ml bottle of sparkling, I went with Prosecco because Sonja Morgan is my low-key role-model
6 leaves Gelatine
¼ cup raw caster sugar
1 lemon, juiced
1 shot chambord
½ cup blueberries or raspberries, rinsed and drained

Method
Cut the gelatine into the top of a double boiler, cover with the sparkling and leave to sit for fifteen minutes, or until hella soft. Fill the bottom of the double boiler with water and simmer over a medium heat until the gelatin has completely melted. Whisk in the sugar and lemon juice until the sugar has dissolved. Remove from the heat and allow to cool slightly. Pour the remaining sparkling into a bowl with the chambord and add the gelatin-sparkling mixture through a sieve.

Chuck a couple of berries in each shot glass – this could honestly fill 18-24. So just set any remaining liquid in a jelly mould or even a bowl – fill with jelly and transfer to the fridge to set for a couple of hours.

Once set, grab then out and devour, greedily.

Alan Cumin Chicken

You know how special it is when you’re watching an Academy Award winning performance and just marvel at the perfection unfolding on screen? Think, Cate Blanchett in Blue Jasmine, Heath Ledger in The Dark Knight … and Meryl in everything.

Take that majesty, multiply it by 73, carry the fourteen, square root the power of three and you have a fraction of how electric it is to witness a Tony Award winning performance on Broad-way. And my dear part-time lover Alan Cumming’s performance in Cabaret gave me all the tingles in all the ways … in all the places.

Now full disclosure, I’ve only seen his performance as the MC in its most recent revival given the drunken stupor in which I navigated the 90s – opposite my girl, Academy Award winner Emma Stone, no less – which didn’t actually earn him the Tony Gold … but it was still as electric and sexual as always. Plus, dat arse has not quit in the time away from the role.

Despite the fact I almost got kicked out from the showing after befriending two wild, tipsy women from Washington, I screamed out to Alan that security were manhandling me, he recognised my moans, worked it into the show and got me backstage.

Oh – I should probably mentioned that we hadn’t spoken since having an epic lover’s quarrel at Natasha Richardson’s funeral, so the fact that he saved me getting the boot and allowed me backstage was quite the olive branch. Though we had been friends since meeting on the set of GoldenEye – I was in Sean Bean’s entourage at the time – and I had helped his career reach the next level, so I shouldn’t have been too shocked.

We quickly got reacquainted backstage after the show and have been in regular contact ever since. He was thrilled that I had finally found another way to bow down at the altar of the great white way with Tony Gold, so jumped at the chance to celebrate and run the male performance odds.

Like with Ang, we both agreed that Ben Platt and Nathan Lane would take out Leading Actor in a Musical and Featured Actor in a Play respectively, we couldn’t reach consensus with the others. While he favoured Corey Hawkins for Leading Actor in a Play, I went with Chris Cooper and for Featured Actor in a Musical, I couldn’t go past my lover Andrew Rannells … which piqued his interest when we sat down to my Alan Cumin Chicken.

 

 

I know what you’re thinking – cumin, just fucking cumin? Are you kidding mate? The answer is a firm no, no I am not … as this is delicious. Just spicy enough to be exciting, but not too overpowering to make you want to vom and run out of the kitchen in tears.

What a freaking salesman – enjoy!

 

 

Alan Cumin Chicken
Serves: 4.

Ingredients
500g chicken breasts, cut into pieces
3 tbsp ground cumin
juice and zest of a lemon
a clove of garlic, minced
¼ cup olive oil
salt and pepper, to taste

Method
Combine the cumin, lemon, garlic and oil in a small bowl. Add the chicken to the mixture, toss, cover and allow to baste for an hour of so.

Heat a griddle on high until scorching, reduce heat to low and cook the chicken for about five minutes each side, or until cooked through.

Serve on a platter with some natural yoghurt and fresh coriander … to devour.

Frijoley Fisher Dip

It is so hard being a close friend of celebrity dynasties. I mean, you catch up with one of your dearest friends and next thing you know, their kid half-sister is calling begging to reconnect as well!

Sure I would consider Joely Fisher a dear friend but just because I needed some soul affirming love from Carrie doesn’t mean I need to field over 100 missed calls a day from Jo, begging to catch-up.

After a quick call from my service provider begging me to just take the damn calls and free up their network, I relented and offered her a quick weekend slot to tide her over and help me soften up after the infuriating desperation of her calls.

As you can probably guess, I first met Jo through Caz after connecting in rehab and like the rest of the broader Reynolds-Fisher Dynasty, is a complete triple threat. Obviously being the youngest that I’m friends with, our duelling talents led to a friendly rivalry that would go on to inspire the hit movie Drop Dead Gorgeous.

Despite this, we have always remained close so I didn’t verbally assault her for the incessant calls.

Joels hasn’t be overly busy recently – aside from a guest stint on Tim Allen’s show and Drag Race U – so honestly, I was wary that this catch-up was an attempt to get back in the spotlight. Thankfully I was wrong and bless her heart, she truly just wanted some down time with a dear friend.

After learning that, I threw out my laxative-laced treat and quickly whipped up our favourite from our old vegas days, my Frijoley Fisher Dip.

Beans and by extension, bean dip, often get a bad rap for the music the oft inspire – which is not a probs if you’re singing and dancing 8 shows a week in Vegas – but this dip is killer. Maybe that has something to do with the shit tonne of cheese?

Warm, creamy and spicy – it is the perfect accompaniment to reconnecting with a friend.

Frijoley Fisher Dip
Makes: 2 cups.

Ingredients
800g canned pinto beans
⅓ cup cream cheese
1 cup cheddar cheese, grated
2 tsp cumin
2 tsp chili powder
2 tbsp diced pickled jalapeños
1-2 shallots, finely sliced
extra cheddar and/or sour cream, to garnish

Method
Chuck beans and cream cheese in a food processor. Blitz.

Transfer to a small saucepan over medium heat, add other ingredients, stir to combine and heat until until all combined.

Top with shallots, grated cheese and/or a dollop of sour cream.

Devour.

Basil Gnudi Dench

Dame Judi ‘J-dawg’ Dench is an absolute, deadset legend of a person and is, quite frankly, the best gambling partner a young chap could ask for.

After working through her rage of being egged in the late 60s, Jude worked on fulfilling her My Fair Laddy fantasy by turning me into an upstanding citizen who wore pants that covered his arse. Sadly my powers were too strong for her and we went through a reverse of the tale, where I systematically worked through making Jude as debaucherous, raucous and offensive as possible.

That is where her love of black-market gambling first came about.

While some may argue that the awards season are an excuse for famous people to either turn up to receive trophies from aging journalists and critics that want a good photo-op or for them to masturbate about their gripping performances, Judes and I are firmly of the belief that aside from being more important than Nobel prizes etc. they are a fantastic betting opportunity.

Yes, we will always be team Cate, Kate and Fassy – for obvious (NSFW) reasons, with the last one – we have to follow the money during awards season and spent most of our catch-up discussing the pros and cons of each nominee and whose bookie had the better odds.

Obviously we needed serious sustenance for such a consequential discussion, enter stage left my Basil Gnudi Dench.

Gnudi is gnocchi’s easier to make cousin, being that you don’t have to bother with mashing any potatoes … because let’s be honest, you never leave the potatoes to cool long enough and end up with third degree burns when rolling them. Or is that just me?

Either way, they were perfect for our catch-up as nothing says illegal gambling quite like a delicate dish with fresh basil, tangy lemon and creamy cheese.

Basil Gnudi Dench
Serves: 4.

Ingredients
2 large bunches of basil, leaves picked
250g ricotta
125g grated parmesan
2 large eggs, plus 1 eggstra yolk
100g plain flour, plus a little extra
Semolina, for dusting
15g butter
1 lemon
2 tsp chilli flakes
30g grated pecorino, to serve

Method
Heat a pan over a low heat and add a splash of water with two-thirds of the basil leaves and heat until wilted. Remove from the heat and allow to cool, squeezing out any excess water.

Chuck the leaves in a blender with about a quarter of the ricotta and blitz to a purée. Empty into a large bowl and combine with the remaining ricotta, parmesan and eggs, and whisk vigorously, until light and fluffy.

Fold the flour into the ricotta mixture using a large, metal spoon until it is soft and moist. If it is too wet (nothing suss), add a bit more flour and relax. Trust your judgement.

Meanwhile, spread a layer of semolina over a baking tray and fill a piping bag with a 1.5cm opening with the ricotta mixture. Pipe long strips of the gnudi the length of the tray, leaving about a centimetre in between.

Dust the strips with a thick layer of semolina, cut them into 2–3cm pieces, making sure they are well coated in the flour. Cover the tray with cling film and pop it in the fridge for a few hours or ideally overnight, but who ever remembers to do that?

To cook your gnudi, remove the tray from the fridge and let it to come up to room temperature.

While nature is heating things up again, melt the butter in a pan over a low heat and the reserved basil leaves. Cook for 1–2 minutes, until the butter starts to foam and the leaves have crisped up. Finely grate in the zest of the lemon, add the chilli flakes and season well. Remove from the heat to rest.

Bring a large pan of salted water to the boil over a medium heat and gently place the gnudi into the pan. When they float to the surface, they’re cooked.

Drain the gnudi and gently toss in the chilli lemon basil butter. Divide between bowls and serve with grated pecorino with lemon halves on the side to squeeze over.

Awards season is now in full swing, with Giuliana desperately combing her scripts to avoid racially offensive jokes and Brad Goreski commandeering all loafers in the Southern Cali area while Gary attempts to make him witty. As such, it is well and truly time for me to start connecting with some of my fellow lauded friends.

FYI, I win an Academy Award in 2036.

The Baftas are this weekend, so I thought it best to make a quick jaunt across the pond and catch up with my dear friend, Academy Award winner and survivor of co-starring with Gwyneth, Dame Judi Dench.

I first met Judes in the late 60s where I suffered my first crushing rebuke at playing a highly sexualised version of the Emcee, in the original West End production of Cabaret. While I am sure constantly being pummeled by eggs when entering or exiting the theatre wasn’t fun, Judi was a good sport and took me under her wing and tried to teach me to tone down my sexuality.

While it clearly didn’t work, we’ve remained close for the last half century and are the first to be there for each other whenever there is a milestone to celebrate or an awards season to gossip about.

What is worthy of a Dame while we run the odds of the upcoming Academy Awards?

Friza Minnelli (Friza with a Z)

If any of our friends can hold a candle to our razzle dazzle, it is Liza. Obviously that has a lot to do with my Triple Threat Tutelage (I must copyright that name), but I do believe she could have achieved fame on the z-list without me.

I mean it is Liza with a Z, after all.

While I trained dear Liza, we have sadly never had the opportunity to work together onscreen. Well we did, but Fosse the freak fucked it up. You see, I was originally cast in the role of the Emcee in the movie version of Cabaret however was fired for refusing to wear the comparatively demure costume that Joel Grey ended up wearing in his Oscar winning turn.

After the travesty, I hit the prescription drugs pretty hard and eventually took both Annelie and Liza with me where we became bonded for life.

Liza dropped by yesterday at dusk, when thankfully lighting is kinder, and immediately found her way to the balcony to bust out an epic tune to anyone that would listen. (It was fantastic, FYI). Thankfully she has recovered from her vertigo (which was written into Arrested Development) and we didn’t lose another treasure!

After wowing the wider neighbourhood, we quickly got to work gossiping about all of our mutual nemeses – Sienna Miller really had no place being in the latest Cabaret revival on Broadway, I mean, where is her Academy Award Nomination – and whipping up a batch of our favourite bitching food, Friza Minnelli.

We first had the idea fresh out of rehab in the late 70s to do an Italian take on chilli fries and bam, Friza was born. Thankfully we had some leftover Dolognese from last week’s visit, so it was nice and easy to put together with some perfectly cooked oven fries.

Enjoy! But how couldn’t you – what is better than the joining of Dolly and Liza?

Friza Minnelli
Serves: 2.

Ingredients
2 cups Dolognese Parton
4 russet potatoes
extra virgin olive oil
parmesan, grated

Method
Preheat oven to 220°C degrees.

Chop potatoes into matchsticks by cutting the potatoes in half, in half again, then slicing into wedges and then into thin matchsticks. Sounds confusing, but I promise it will make sense when you’re doing it.

Line two baking sheets with greaseproof paper and add the fries with a generous drizzle of EVOO and a good whack of salt and pepper. Toss generously to coat.

Arrange fries in a single layer, avoiding too much overlap if you can. Chuck them in the oven and bake for 25-35 minutes, tossing half way to ensure even crispiness.

When the fries have about 15 minutes left, place the Dolognese Parton in a saucepan and cook over low heat until it comes to temperature.

Once the fries are done, serve evenly between the bowls. Cover with Dolognese and garnish, heavily and aggressively, with parmesan.

Devour.

Empanada Stone

You know what is odd about our friendship with Emma Stone? We didn’t meet her in any kind of institution or other involuntary lock-up that normally leads to such beautiful friendships. Look, Ben did get locked up briefly after befriending two delightful old ducks from Washington and proceeding to get raucously drunk and heckle Emma during a performance of Cabaret – but Ben’s unceremonious turfing out wasn’t Emma’s fault. Despite taking out a restraining order against us, she clearly loved the fuss.

So how did we meet? Emma she had just finished filming Easy A and found that we had a mutual nemesis – the eternally smug-faced Penn Badgley. Penn attempted to steal Ben’s identity when he was majorly internet famous during the Great Moustache Cultivation of 2013. Let’s be honest, you don’t really need a reason to hate Penn Badgley, so having one was a bonus.

While our antics may have gotten Penn sectioned, Ben and I stayed out of involuntary confinement for a change – all in all a great success.

Despite the Cabaret incident, Emma has fond memories of the days of sabotaging Penn. As she now has a vendetta against whoever cast her in Aloha, she wanted to come over for lunch and discuss a glorious new revenge plot. We needed a recipe that would work like our fool-proof schemes – soft and buttery and inviting on the outside, with a fiery inferno waiting within. It had to be Empanada Stones.

Empanada Stone
Serves: 16 empanadas

Ingredients
Dough
2.5 cups plain flour
150g butter, cold
1 teaspoon salt
1 large egg
1 tablespoon white vinegar
iced water, to bind

Filling
500g minced beef
2 eggs, hard boiled and cooled
100g chopped mixed olives
1 brown onion, finely diced
2 cloves garlic, crushed2 tablespoons tomato paste
1  cup beef stock
1 teaspoon cayenne pepper
1 teaspoon cumin
1 tablespoon dried oregano

Egg, additional for washing pastry

Method
Dough
Rub butter into sifted flour. Stir through egg and vinegar, and then add iced water until pastry binds. Knead gently until a disc is formed. Wrap in clingfilm and refrigerate for 30 mins.

Filling
Brown mince and soften onion in a large stove-top casserole dish. Add garlic, tomato paste and spices and cook until aromatic. Add stock and simmer for 30 minutes or until thick.

Stir through olives and chopped egg and allow mixture to cool to room temperature.

Assembly
Heat oven to 180 degrees C. Grease and line a large baking tray.

Roll out pastry to approximately 0.5cm thick and cut rounds of desired size. Fill with 2-3 tablespoons of mixture and press to seal, pressing with a fork along the sealed edge.Brush each empanada lightly with egg wash.

Bake 20-25 mins or until golden and crisp.
