Last weekend’s public memorial for Caz and Debs – which I couldn’t attend because Trump has banned me from the U.S. for having a beard … or being gay, I don’t know – reminded me that despite having so many friends on the A-list, I have still experienced so much A-list loss.

So obvi, before the service had even concluded, I grabbed out my collection of celebrity funeral booklets and picked out my dear Etta James’ at random, locking in the date with Ets and my time machine.

I first met Ets in the early 50s – Stockard Channing would therefore have been in her 60s at the time – when she and her biological mother moved to the Fillmore District of San Francisco. As soon as I heard her voice, I knew she was destined for greatness and hitched myself to her wagon.

Hitched is probably an understatement, it was more like fused … but anyway.

While we were close her entire life, we spent most of our time together in the late 60s while preparing her debut album, so I knew that that was the best time to go back to visit for our date.

Fun fact: At Last was written about me.

As always, it was equal parts joy and pain to be back visiting my deceased friend. The release of At Last was such a wonderful time in our lives and it was so great to be able to experience it again over some Whipped Fetta James, our favourite dip of the time.

 

 

If you have never had whipped feta before, you haven’t lived. A little bit tart, a little bit sweet and completely fluffy, it is the easiest dip to whip up when you’re hungry / in desperate need of comfort.

Whipped Fetta James
Serves: 1. No judgement.

Ingredients
300g feta cheese, at room temperature
100g cream cheese, at room temperature

Method
Place the feta and cream cheese in a food processor and blitz the shit out of it for about five minutes.

Transfer to a bowl, cover and chill for about half an hour. If you can. Otherwise, devour straight away.

Waffadele Burger

Main, Oscar Gold, Oscar Gold MMXVII: Gold with the Wind, Party Food

So speaking of Beyonce – one woman’s curse via recipe is another woman’s gain … and that woman making the gains was none other than my dear frenemy Adele.

Uggggghhhhhhhh. And contrary to what some may think of me, that wasn’t a shady comment about weight. Glass houses and all, you know?

Also let me start by saying that firstly, I love Adele … but the slag can fucking drink me under the table and I hate to lose – particularly if said competition I am losing is based on alcohol consumption – so as such, she is more frenemy than friend.

Plus – she keeps winning things and Jesus loves winners and if she is winning, maybe sometimes that means I’m losing. Which is terrible.

Anyway the ol shagger has not only won a shit tonne of Grammys but is also the proud owner of an Academy Award for Best Original Song which is, quite possibly, my favourite category (because when I’m nominated in 7 years, I get to perform the song on stage the same night I win 15 awards).

I should probably tell you about my past with Adele though, shouldn’t I? I first met Adsy ten years ago when I stumbled upon her busking on the tube or something – I was big into bath salts at the time so don’t remember much. I do remember she had talent though and took her under my wing and decided I would one day make her a d-list star to rival Kathy Griffin (read: they are both red(ish)heads).

Halfway through my tutelage of her I sobered up and realised that she is just someone that is skilled at writing sad music and holding notes – I must remember to see Chris Martin one day soon – and told her that she should give up on her dreams, lest she wanted my forehead to chase itself into the pavement.

It inspired her hit song and gave her a career … but did I get any thanks? No. Which is another reason we are frenemies. I also inspired her Oscar winning song Skyfall – it was about balls and is meant to be part of Lil Whorephan Andy – but that is another story for another time.

As much as I’ve complained about Ads, it was such a treat to see her and her 6000 new Grammys and to discuss something she is far less skilled at, the world of celebrity and the Holy Grail of awards ceremonies.

Lucky for this year’s race for Best Original Song is a two horse-one batch of nominees race between the two nominated hits from La La Land. I mean sure, in any other year Lin Manuel would be polishing the EGOT label on his future tombstone … but La La Land was a gem celebrating old Hollywood that was also more cerebral than most people give it credit for, meaning it is pretty much unbeatable in this category above all else. And even Adele can see that.

I mean, it is a musical for christ sake – we can ignore that Another Day in the Sun and Someone in the Crowd are infinitely superior songs.

We both agreed that City of Stars is the safest bet for the gong and that a Waffadele Burger is the perfect feed for such robust debate.

And drinking.

I know, I know – a waffle burger is gimmicky … but this one is pure perfection. I mean it is a copycat Big Mac, served on waffles. It is a better McGangbang than the McGangbang and dipping fries into a sundae.

I’d tell you to enjoy but I know there is no getting around it! Now off to greet my fave writer/director …

Waffadele Burger
Serves: 4.

Ingredients
1/2 cup mayonnaise
2 tbsp French dressing
1 tbsp sweet gherkin relish
1 onion, finely minced – ½ for the sauce, ½ for the burgers
1 tsp white vinegar
1 tsp sugar
½ tsp smoked paprika
1 tsp garlic powder
500g beef mince
salt and pepper, to taste
12 waffle *Spoiler alert* aka 12 waffles, I don’t mind if you buy … for now
cooking oil of your choosing
iceberg lettuce, roughly chopped
8 slices American cheese
pickles, thinly sliced

Method
Combine the mayo through garlic powder in a small bowl with a good season, stir and place in the fridge to chill.

Meanwhile squeeze out excess moisture (read: blood) from the mince and transfer to a bowl. Season generously, combine with your hands and shape into eight balls and flatten to make thin patties. Leave to rest while you heat up a large skillet over high heat.

While that is happening, start toasting the waffles in a toaster and transferring to a plate.

When the skillet is nice and hot, reduce heat to medium, brush with some cooking oil and cook the patties for a minute or two each side. Transfer to a plate and repeat until they are done.

To assemble, place a waffle on a plate, smear generously with special sauce, top with a pinch of the reserved chopped onion, add the lettuce, top with a slice of cheese and a pattie, followed by the centre waffle. Then smear with sauce, top with onion, lettuce, a few pickle slices, cheese – because I believe it needs two slices – the pattie and another waffle.

Push down, grab in one hand – if you can, Ads and I have big hands like Donald Trump, obvi – and devour.

Zach Braffogato

Drink, Grammy Gold, Grammy Gold: Golden Little Pill, Sweets

No doubt your first thought when you heard about Grammy Gold was finally, Ben’s friendship with Zach Braff is finally going to get the coverage it deserves.

So yes, I’ve opted not to zig or zag and instead do as you predicted and include my dear friend and famed Grammy winner, TV actor and director Zachy B in this Grammy celebration … despite our infamous falling out after my name was mysteriously struck from the Garden State soundtrack credits, losing me my chance at a Grammy.

Despite promising that neither he nor his other bestie/Scrubs co-star Donald Faison were involved, it begged the question, why even mention Don?

What resulted was a bitter decade-long feud – on my part – with me trying to bring him down at every opportunity. However after successfully getting Scrubs axed in 2010 and blocking studios from funding his follow-up film Wish I was Here, I felt unfulfilled and donated $100,000 of my grifted funds to help him make his movie and rekindled our friendship in the process.

It was a slow process to rebuild our relationship – particularly with him forbidding me from getting back with my ex / his new frequent collaborator James Franco – but we’ve finally got back to how it was in the good old days and he jumped at the opportunity to drop by, chat the Grammys – he is backing Straight Outta Compton (named after a song I co-wrote) to take out his old category – and catch-up over a perky nana Zach Braffogato.

Ice cream in coffee aka an affogato is delicious and perfect – the ice cream makes it sweet and thick and balances with the sharp coffee. Perfect, right? Well try coffee ice cream in your coffee … that is truly perfect.

Ingredients
double shot of freshly poured espresso
a scoop of coffee ice cream

Method
Pour the espresso in the cup – bucking the traditional method, I know – and add in a dollop of ice cream.

Salt-n-Pepa Squid

While Elts and I weren’t up for pushing it – sexually or the limits of our tenuous reconciliation – I didn’t let it get me down, knowing that my dear friends Salt-n-Pepa were joining me for day two of Grammy Gold.

As you could probably infer from my aggressive sexuality nature, I was heavily involved in writing Let’s Talk About Sex with the girls. Our friendship, however, goes much deeper than that having met in the mid-80s. From the early days, I knew the girls were destined for greatest and immediately tried to hitch my wagon to theirs.

While we lost contact after their disbanding – and by that, I berated Salt for quitting and we stopped talking – we recently reconnected after our second (and final) co-written song Shoop was used on the Deadpool soundtrack.

After watching the disturbingly sexy nude scene, I ran out of the cinema, picked up the phone and we’ve been on the road to renewed best-friendship ever since.

When it came time to organise my inaugural Grammy Gold, I knew that the gals had to be in attendance. Plus – why would I miss out on having my first duo recipe, featuring the first all female hip-hop group to go platinum as part of the first Gram-Go?

Exactly. Plus, Salt-n-Pepa Squid is delicious, even if you’re a seafood hater like me.

Fun fact: this spicy delight is the reason for all of the girls success AND is where their names came from. We were hanging in my crib trying to re-name their band – everyone was getting hangry so I hauled arse to the kitchen, grabbed out some squid and asked what flavour the girls wanted.

Salt and pepper where the first words out of their respective mouths, became their nicknames, and this beautiful dish was born – enjoy!

Also yes, I am claiming to have completely invented salt and pepper squid … and post-its.

Oh – and FYI, Elts, Salt and Peps all agree that Beyonce / Lemonade is going to dominate.

Salt-n-Pepa Squid
Serves: 8-10.

Ingredients
1 tbsp peppercorns
1 tsp chilli flakes
1 tsp chinese five-spice powder
2 tsp sea salt flakes
100g rice flour
lemon, zested and sliced into wedges to serve
10 small squid hoods, cleaned, quartered and scored
2 eggs, lightly beaten
vegetable oil, for frying

Method
Heat a small skillet over medium heat and add the peppercorns, chilli flakes, five-spice and salt and cook, stirring, for a couple of minutes or until fragrant. Remove from the heat and allow to cool slightly before transferring to a mortar and pestle, and bash out your unresolved sexual feelings from yesterday until the spices are a rough powder.

Combine half of the spices with the rice flour and lemon zest. Dip the squid in the eggs and toss through the spice mixture. Repeat until done.

Heat a very generous lug of oil in a large frying pan. When nice and hot, cook the squid a couple at a time for a minute or two, or until crispy and curled. Transfer to paper towels and repeat the process until done. Toss with the remaining spice mixture and serve immediately, with lemon wedges.

Elton Johnnycakes

Breakfast, Grammy Gold, Grammy Gold: Golden Little Pill, Snack

I know what you’re thinking – did hell freeze over? While technically, the answer is no (as far as we can tell), both Elts and I felt that with Trump’s election, the impossible and stupid is now possible and so our feuding should come to an end.

Despite my pledge to always be his staunchest of rivals.

We started a renewed correspondence back in mid-December to throw shade at the vile pig that was elected as the President of the United States. After a few weeks of back and forth rage, we realised that despite our tumultuous past it was time to unite for the greater good of the world – it is amazing what a mutual enemy does for one’s friendships!

(Yes, I’m now going for a Nobel Peace Prize too – FYI … in lieu of the Oscar he made me lose in the ‘90s).

Wanting to sort out our issues before we both changed our mind – and given the fact he has his own Oscars celebration – I decided to mark our renewed friendship by including him in our Grammy Gold celebrations, rather than wait (or rub salt in the wounds) for Oscar Gold.

While it was obviously, extremely awkward for a good twenty minutes or so as we both circled each other hurling back-handed compliments, until I softened and mentioned his spawn, softening his heart and allowing us to truly connect like in the good old days.

Well, almost – he hadn’t had a post-flight colonic. Which reminds me, he obvs wrote Benny and the Jets about me during happier times.

Not to let that dampen the mood, I quickly whipped up a batch of my Elton Johnnycakes – for the first time post feud – which was our go to post-coitus (or colonic) snack.

Pancakes are good and all, but how can you go past a option that is thicker, juicer and packed full of a different flavour. Gah – I think I missed Elts in our time apart, don’t tell anyone.

Elton Johnnycakes
Serves: 4.

Ingredients
150g polenta
100g flour
1 tbsp baking powder
1 tbsp raw caster sugar
pinch of salt
2 eggs
300ml milk
30g butter, melted

Method
Combine the dry ingredients in a large bowl and whisk together the milk and eggs in a jug. Stirring constantly, whisk the wet ingredients into the dry until some and combined. Finally, whisk in the butter.

Meanwhile heat a skillet over medium heat. Melt a small lug of butter and when foamy, add in a ¼ cup of batter into the pan. After a minute or so, flip over the cake and cook for a further minute. Transfer to a plate.

Repeat until done and devour in bed, alone or with a dear friend (in the ‘70s obvs, not now).

Brandy Custard

Guys *spoiler alert* this is the last regular, non-Survivor, non-festive-spectacular recipe of the year. Can you believe it?

Now before you start applauding and rioting on the Facebook – which if you ask my mother-in-law’s man-friend is the internet – begging for us to be banned from the internet in 2017, just enjoy these last few moments for the year and I’ll let you have a few weeks off before I terrorise your eyes for another year.

Please – I’m just a poor, old, flailing millennial and I need this outlet. Where is Probst to comment on my generation, when I need him?

Anyway – I’ve gotten sufficiently off track … but I feel such a beautiful and talented soul like my dear friend Brandy Norwood is deserving of some long winded preamble, as terrible as said preamble is.

I first met Brandy in the early ‘90s when I hired her as a backing vocalist for my defunct girl group Gurlfriend. It is defunct because the hit Australian girl group Girlfriend sued me for being a blatant rip off.

Which it wasn’t.

I had promised Brands fame and fortune if she took up the role, so to make it up to her I secured her the lead role in Moesha.

Despite a brief falling out after she won a Grammy in ‘99 for That Boy is Mine, which i wrote but was sadly stricken from the credits, we reconnected on the set of Brie Larson’s defunct sitcom Raising Dad in 2002.

Fun fact: to punish her for making me miss out on a Grammy, I went back in time and forced her to star in I Still Know so that I could watch her be survived by JLH. How do you deal, Brands?

While yes, sending her back to star in that trainwreck was cruel, Brandy took it all in her stride and we’ve remained close ever since. She is, no lie, a damn saint.

So I had completely forgotten that you can’t have an Eve Plumb Pudding without a generous helping of Brandy Custard. Thankfully Brandy had a clear schedule – I mean empty, bupkis, zippo – and was able to jump straight on the plane to whip some up with me to help devour the leftovers.

Full disclosure and likely not shocking anyone, I used to be the proud owner of an irrational fear of brandy custard. As far as I’m concerned though, anyone that has suffered through the cartoned crap should.

Brands finally wore me down and convinced me to whip her up a batch and now I have a passionate love for the boozy, velvety delight – enjoy!

Brandy Custard
Serves: 8.

Ingredients
6 egg yolks
⅓ cup raw caster sugar
2 tbsp cornflour
⅔ cup milk
3 cups double cream
¼ cup brandy
1 tsp vanilla bean paste

Method
Combine the yolks and sugar in  one bowl and the cornflour and milk in another.

Heat the cream in a saucepan over low heat and slowly whisk in the egg and cornflour mixtures, followed by the brandy and vanilla bean. Continue whisking for a couple of minutes, or until thick and glorious. Serve warm with Eve Plumb Pudding.

Kenny Rogerk Chicken

You have no idea the sense of absolute calm and serenity that has washed over me after seeing Kenny – obviously I was not shocked! Ever since I met him, I have felt peace unknown.

He is such a doll – no pun intended – and even though we never got to experience a lengthy love affair, we’ve been friends for such a long time that I never held that against him or tried to absolutely destroy his life. You know, like I usually do.

To catch you up, as I didn’t go into much detail when sharing my relationship with Kim, I was a part of The New Christy Minstrels. I wrote the classic song This Land Is Your Land in the 40s – obvs Stockard Channing was 50 – so I was kind of a big deal in the group and seeing their talent, took young Kenny and Kim under my wing and mentored their early careers.

We lost touch for a decade or so – when they both achieved more fame than me – but were thankfully reunited by Dolly who wanted us (read: me) to bury the hatchet. The rest is now history – we made up, wrote The Gambler and have remained friends ever since.

I have been so busy lately with my reality TV coverage. Between the time spent in LA for RuPaul’s Drag Race All Stars, Samoa for Australian Survivor and Fiji for Survivor: Millennials vs. Gen X, I am almost running on empty so just having the chance to spend time with such a close friend gives me the strength to persevere.

What a hero, amirite?

Anyway, Ken surprised me with a big proposal – no, not marriage – that we collaborate with Dolly and Kim to record his tenth Christmas album. While we probably won’t get it into stores this year, I immediately said yes – stay tuned for next year and got to work whipping up a celebratory Kenny Rogerk Chicken

Like Ken, this is hot, spicy and fills even the most insatiable of holes. The succulent chicken, the sweet cinnamon and fiery chillies dance together and really sing – think the culinary equivalent of Islands in the Stream.

Add in some Condoleezza Rice and Beans and a Michael Flatley Bread and you have true majesty – enjoy!

Kenny Rogerk Chicken
Serves: 4.

Ingredients
1 tbsp sea salt
2 tsp black pepper
2 onions, diced
2 tbsp fresh thyme, chopped
3 tbsp olive oil
1 tbsp allspice
2 tsp ground cinnamon
½ tsp ground nutmeg
thumb of ginger, finely grated
2 tsp muscovado sugar
⅓ cup lime juice
¼ cup rice vinegar
3 habanero chillies, chopped
4 cloves garlic, minced
4 chicken breasts
lime wedges and natural yoghurt, to serve

Method
Start by blitzing everything but the chicken – and obviously the lime and yoghurt for serving – in a food processor until it forms a paste. Decant it into a large bowl, add the chicken and coat generously – make sure to avoid touching it, habaneros are hot, yo.

Cover and place in the fridge to marinade for a couple of hours, take it out to come to temperature for ten minutes before you want to cook it.

Heat a griddle over high heat, reducing to medium when searingly hot, brush the pan with a bit of extra olive oil and fry for about 20 minutes, flipping once, or until cooked through.

Remove, allow to rest for five minutes and devour with lime wedges, yoghurt and a shit tonne of rice and beans.

Guess Who's Coming to Dinner

Breaking news guys! No Donald Trump didn’t grab me by the pussy like the misogynistic turd that he is, my dear, dear, dearest friend Kenny Rogers called to see if I was free to catch-up and find some peace unknown.

But seriously, how adorable – my door is always open to Kenny! Back included.

Now while you probably assume I met Kenny via my best friend in the entire world, Dolly Parton, it was actually Kim Carnes who introduced us.

However it was Doll who convinced me to gamble on winning his heart.

It didn’t lead to true love, but still gave us a couple of passionate nights and inspired us to co-write his classic song The Gambler.

So what says know when to hold ‘em, know when to fold ‘em, know when to walk away, know when to run … culinarily speaking, of course?

Philly Collins Cheesesteak

It was always going to be an awkward start to my peace feast with Phil, what with the viral infection injection thing. Oh, and the whole gag I sold to South Park about his obsession with his Oscar – FYI, that was totally true and I’m 30% sure he had it on him when he dropped by – and well, I can’t talk about everything else I’ve done to him due to the lingering lawsuits and payouts.

Just trust me when I say that Phil was on the receiving end of one of my top ten most vicious moments.

But then it wasn’t awkward, not even at all. Time apparently heals all wounds as Phil took me in his arms as soon as he walked into the house. I cried, he cried, then he sobbed, I pretended to sob to avoid it being awkward and then I apologised.

Literally two minutes in and my epic apology monologue – it rivalled Cersei’s revenge monologue for epicness – wasn’t even needed. Thankfully I’ve burnt a lot of bridges so I’ll be able to use it again, I’m sure.

Phil has been super busy since coming out … of retirement early last year, remastering his old albums, writing new material and planning a tour. Oh and he signed a book deal and will be releasing his autobiography in October … and when I heard that, everything became clear – he wants me to ghostwrite the book.

While I’m pretty pissed he expects me to plug it out in a mere matter of months, given the countless ways I ruined his life I really couldn’t say no. Plus, at least I can manage my image in the story, you know?

Either way, Phil got a ghostwriter, I got some undeserved forgiveness and we both rekindled our friendship over my famed – and his favourite – Philly Collins Cheesesteak.

I’ve made no secret of my love for warm meat, slathered in creamy cheese … but these really get me salivating. I mean, tender slices of steak on a soft pillowy bun and cheese, my favourite, cheese – it doesn’t get any better. Oh yeah, it does – sweet onions, earthy mushrooms, hot mustard and peppers.

It really does get better – enjoy!

Philly Collins Cheesesteak
Serves: 6.

Ingredients
6 hoagie rolls
6-12 slices provolone
1kg loin steaks, trimmed and sliced into thin strips
olive oil
salt and pepper, to taste
1 tbsp worcestershire sauce
hot english mustard

Sauteed mushrooms
2tbsp unsalted butter
500g button mushrooms, roughly chopped
salt and pepper, to taste

Caramelised onions
2 tbsp unsalted butter
2 large brown onions, thinly sliced
salt and pepper, you guessed it – to taste!

Peppers aka capsicum
2 tbsp olive oil
1 green capsicum, thinly sliced
1 red capsicum, thinly sliced
1/16 tbsps of salt and precisely 6.3g freshly ground black pepper, but seriously … to taste

Method
Place the steak in the freezer for about half an hour while you get to work on all of the other elements.

Start with the mushrooms and melt the butter in a frying pan over high heat until foamy. Reduce heat to medium, add the mushrooms and cook until they are soft, silky and browned.

Then move to the onions and start again by melting the butter over high heat until foamy. Reduce the heat, this time to low, and cook the onions slowly until they are soft and caramelised – about half an hour. Keep an eye on the onions, but move on to the peppers now, ok?

In another pan – how many pans do I expect you to own? Maybe decant the mushrooms to a dish and keep warm, wipe out the mushroom pan and heat, this time the oil, over high heat. Add the capsicums and stir-fry for a minute or so, or until they are soft and vibrant.

Now that they are sorted, remove the steak from the freezer and slice very thinly. Heat a griddle over high heat, brush with oil and cook for about a minute per side. Remove to a dish, pour over the worcestershire, season and keep warm.

Now for the fun to start – split the hoagies, butter generously (if you like heat) with hot english mustard, spoon in mushrooms, onions and peppers, top with the piping hot meat and layer with cheese. Hopefully your cheese will melt from the heat more than mine did, but hey it is cold for Brisbane at the moment.

Then, don’t think twice – devour.

Coming back to me, against all odds

Guess Who's Coming to Dinner

So I’ve been seeing a lot of buses promoting the upcoming Legend of Tarzan movie and in addition to being wildly aroused, it got me feeling all nostalgic about my dear frenemy Phil Collins.

While we started off as close friends after co-writing In the Air Tonight in ‘81, we haven’t spoken after a period of ugliness in the late 90s/early 00s – he deemed my contribution to You’ll Be in My Heart non-existent and had my name struck from the credit (losing me yet another Oscar) and in revenge I injected a virus into an ear causing him to become partially deaf.

Don’t worry, sadly the wonders of 00s medicine cured the deafness … so really, I don’t get why he chose to hold a grudge?

Anyway, if OITNB taught me anything it is that life is too short and knowing that I’ll be seeing a couple of hours of Skarsy’s naked torso in a matter of weeks, I decided to reach out and spread my preemptive joy with Phil, and finally end our feud.

Shockingly, he agreed to drop by!

What says sorry I tried to ruin your career and end your passion by making you deaf in revenge for removing my name from the credit of our Oscar winning song that I didn’t contribute to in the slightest?
