To be blunt, a TV comedy vicar is quite possibly the best person to go to for spiritual guidance and emotional sustenance.

The Meggstravaganza really takes a lot out of me, not even taking into account the post ritual peyote withdrawals I suffer. I really needed something to provide me with support and love, and thankfully Dawny is always up to act as my human bra. Both literally and figuratively.

She likes soft pecs, that’s for sure.

But I’ve digressed – it was such a thrill to see Dawn and recharge the batteries with such a close friend.

We gossiped over the upcoming Ab Fab movie  in which we both have cameos and my ongoing feud with Ruby Wax (she knows what she did and a saint like Dawn won’t change my mind – this girl is going to stay on top), before she begged me to pass on a script she had worked on to star in alongside Judi Dench.

While I told her I would, I am clearly going to doctor the script, re-write her role to be for me and pass it off as my own work before Judi’s deteriorating eyes never get a chance to see it.

I’ll write in a cameo for her though, as I am such a bloody delight.

We all know that Dawny has a very well publicised obsession/love for pasties and as much as I enjoy being antagonistic with my friends, I just couldn’t bring myself to make one based solely on carrots. Plus, they act like whoopee in my guts and that would just be a disgusting disaster … thus I went with her second favourite meal, my Dawn French Toast.

This may come as a shock but sweet breakfasts aren’t really my thing, as who can go past bacon. Now I know that bacon goes well with sweet things, like French Toast, but I generally opt for haloumi and/or mushroom and/or (who am I kidding … they are all ands) hash browns.

Once again, I’ve digressed. Given that Dawn is one of my sweetest friends and she starred in an hilarious and underrated comedy named after a Marie Antoinette misquote that should have referenced brioche, I felt it was appropriate to dip my toe in the sweet breakfast pool and slather the fluffy, custardy bread in a good, hearty dollop of Cinnamonica Seles Apples.

Oh, and carrots … but I don’t think she actually noticed them. Enjoy!

Dawn French Toast
Serves: 2.

Ingredients
2 eggs
⅓ cup cream
1 tsp vanilla essence
1 tbsp brown sugar
4-6 thick slices Briocher Bünsberg (but in loaf form, ok?)
30g butter

Method
Whisk the eggs, cream, vanilla and sugar together in a large, flat bowl.

Melt the butter in a large non-stick pan over medium heat until it is foamy and beautiful.

Dip the brioche into egg mixture, flip over and allow excess to dip off before placing into the hot pan. Cook for a minute or so, flip and cook for a further minute, or until golden and crisp.

Serve and slather with the condiments of your choosing, bacon and some maple is good … but the Cinnamonica Seles Apples are better.

The Visit of Dibley

After a busy week focusing on the ritual to rebirth Meg Ryan’s career, I started to crave a religious experience and since I’ve been blacklisted from six niche religions I felt the smartest move would be to reach out to my dear friend, the Vicar of Dibley herself – Dawn French.

Obviously I met Frenchie in the 70s while attending the Central School of Speech and Drama with Jenny Saunds, obviously we became the best of friends (they are part of my European best friend trio – the British equivalent of Amy and Teens), obviously I inspired numerous of the characters they created on French & Saunders and obviously they have stood by during my countless scandals.

It has been a few years since last catching up with Frenchie. You see, Dawn had tried to assist me in rigging Australia’s Got Talent but when I realised that I actually had no talent that could transfer to TV, I orchestrated the show’s second axing. Feeling awkward, I’ve kept a low profile with Dawn, JIC she holds it against me.

Given some of the other things she has forgiven though, I doubt she will.

What says sorry I got AGT axed for a year resulting in you spending time with Timomatic for no real reason?

Strawberry Plaza Jam

Condiment, Dip

One of, nay, the greatest tragedy of celebrating Treat. Yo. Self.’ Week last year, is that I couldn’t fit in catch-ups with the entire cast, who I am extremely close with.

Now before you start hurling insults at me like I’m Larry Garry Jerry Barry Terry Gergich, please understand that cuts had to be made last year and people like my beloved Aubrey Plaza missed the cut (I went with full-fledged, paid season 1 Parks Department employees and sadly as an intern, she missed my cut).

Aubrey is one of my closest friends and despite her surly demeanour, wasn’t bothered by my slight at all.

I first connected with Aubrey in the very-early 90s, when I was touring Delaware trying to launch my comedy career. While it failed, on account of the fact I had one joke and it required me to be in a restaurant … in Delaware – Delaware the hell is my waiter? – I ran into Aubrey and we were bonded by our general disgust for people and interacting with them.

We spent our time sullenly around Wilmington (not that one) until inspiring the PTB at MTV to create a show based on our exploits. And that, my friends, is how Daria was born (as you expected)?

Aubs and I try to get together and smack talk as often as possible, over something sweet enough to cut through the acid we are spewing … meaning my Strawberry Plaza Jam is always the perfect accompaniment.

At the risk of putting my neck out, I am one of those rare people that dislike strawberries as the seeds feel weird on your tongue (this led to me believing a chef’s request for me to de-seed a strawberry) and the fake flavour is just foul. I can’t however, go past a good strawberry jam (and freeze-dried strawberries too but they weren’t a thing when I was making my toddler judgments); sticky, sweet and rich, there is something about them all softened that makes me like them.

I assume it is all the sugar. Enjoy!

Strawberry Plaza Jam
Makes: Up to 2 cups.

Ingredients
1kg strawberries
1kg sugar
1 vanilla pod, seeds scraped out

Method
Hull the strawberries and place in a heavy based saucepan with the sugar and bring to the boil over a medium heat, stirring constantly.

When the mixture starts to bubble add the vanilla, gradually turn the heat up and cook for 15-20 minutes, stirring constantly until it turns shiny and sticky. Trust your gut with the jam, you’re better off under cooking the jam as without pectin it takes longer to cook … which in turn can make it closer to a toffee, than a jam.

Remove from heat and ladle into sterilised jars and leave to cool. Seal and refrigerate.

Andy Sambergers

Given the fact we both have dark, curly hair and well, that is it (but hey, it was enough to get me the job as his body-double), my torrid love affair with Andy Samberg is the closest I’ve ever come to twincest but that isn’t the greatest thing our love bore – Dick in a Box.

Originally co-written as a celebratory post-coital jam Dick in a Box, in the previous timeline, would have gone on to be a gay anthem that we likely would have submitted to Eurovision to be sung by Engelbert Humperdinck in the UK. Instead, I had to give up our love affair when travelling back in time but knew that the world needed that song so dropped hints for Andy to include a different version during his time on SNL.

While Andy sometimes doesn’t believe our past affair in the alternate timeline, we have always been close friends and collaborators with him insisting my personality inspired the best aspects of both Jake Peralta and Gina Linetti on his current hit show, Brooklyn Nine Nine.

Being close friends with his wife in this timeline (I taught her harp and encouraged Melbourne to use her song for their infamous ad), I always try and catch up with the first couple I ever married when I get the chance. Don’t tell them I’m not actually allowed to officiate marriages, I wanted to keep my options with Andy open …

Sadly Jo was out of town – how strange that Andy forgot to mention that tidbit – so it was just a good old fashioned sausage fest. While our ideas of a good old fashioned sausage fest differ greatly, I was able to whip up a batch of my Andy Sambergers to get us off for us to enjoy.

Sweet, soft round buns with a thick piece of hot, spicy meat covered in a nice creamy load of bernaise, you’d be forgiven for thinking we were in the OG timeline but with onions.

I would explain to you the laws of our time-travel but I need to go cool myself down – enjoy!

Andy Sambergers
Serves: 6.

Ingredients
750g good quality beef mince
1 cup flat-leaf parsley, chopped
2 tbsp capers
1 tbsp hot pickled peppers, chopped
2 cloves garlic
salt
black pepper
3 large onions, sliced
3 tbsp butter
dijon mustard
Briocher Bünsberg
Tomatoni Braxton Relish
Bernadaise Peters

Method
Place parsley, capers, peppers and garlic in a food processor and blitz to create a rough paste. Add to a large bowl with the beef mince and a good whack of salt and pepper. Mix together and form into 6-8 evenly sized patties, place on a plate lined with cling, cover and refrigerate for an hour or so.

While they are sitting in their juices and becoming delightful, get to work on the onions. Place a medium saucepan over low heat and melt butter until it starts to foam before adding the onions. Cook slowly until soft, caramelised and sweet … or about half an hour. Turn off, cover and leave to rest.

Once the onions are sweet and glorious, heat a large griddle over high heat. When it is nice and hot, toast the halved buns and remove to serving plates. Reduce the temperature to low and brush with oil before added all of the patties. Cook for a few minutes either side until they’re at the desired ‘doneness’, making sure you only flip them once.

Now to get building, smear some dijon on the top of the bun and spread a generous dollop of relish on the bottom. Top with some caramelised onion, then the patty and top with some fresh Bernie.

What the what are we doing posting our week’s schedule a day late, you ask?!

For those who may have been living under a rock, yesterday was the most wonderful day of the year, Oscar Day, and as such, I was muy muy busy, co-hosting the red carpet for E, Bravo, ABC, Retirement Living and four other networks while attending as a major Hollywood A-lister’s date, seat-filling AND live blogging the whole thing for you, and was unable to post this week’s tease as planned.

Never fear! I am back to work with a killer hangover to let you know that I am catching up with my dear friend Andy Samberg before I jet back to Australia.

I first connected with Andy in the early teenies when I was doing a lot of work as a body double, on account of my low-esteem and desire to be adored in place of famous people. During this time an up and comer called Andy Samberg crossed the ditch to headline a series called Cuckoo and a beautiful friendship began.

Through the use of time-travel, I went back to 2005 and gave him pointers to avoid pissing off Lorne Michaels at the SNL auditions and thus, this timeline was born and I saved him from a failed career and savage cocaine addiction. See, I’m not that horrible! I do make positive contributions to society!

What says how do we fix the egregious striking of you name from last year’s Best Original Song nominee, Everything is Awesome?

Chris Rocky Road

Despite all of his pre-show panic and nerves, Chris is going to do such a great job hosting next weekend – he barely even needed me to tart up his script and makes the jokes punchier! He will perfectly balance the important political message of equality with humour and heart … but I’m giving too much away.

Chris and I have always had a very hands-on but not in the way you’d expect from me relationship, standing together during the good times and the bad and helping each other whenever the other is in a personal, professional or spiritual pickle.

I spent the early 90s enjoying life as part of his entourage at 30 Rock while he was on SNL – it was pre-Lorne’s ban – before encouraging him to focus on his fledgling movie career with such hits as the shockingly Oscar-snubbed Sgt. Bilko.

We were kept apart for a decade or so by geography with my many stints in rehab and prison, but that never lessened our bond and when catching-up it is always like no time has passed.

With important work to do finalising his script, I knew there was only one thing to do – make him his favourite Chris Rocky Road.

As I rule, I grew up hating rocky road as jelly was foul and pink marshmallows confused me – I also thought it was spelt Rocklea Road and that angered me. I was, obviously, thrown into a fit of rage when once Chris requested some in the SNL writers room until he explained both the correct spelling and that pink marshmallows can just be binned.

With that I got to work combining all of our favourite things, peanut butter, pretzels and chocolate and the sweet, salty and ultimately glorious Chris Rocky Road was born.

Chris Rocky Road
Makes: 24 large chunks.

Ingredients
100g peanut butter chips
250g dark chocolate
150g milk chocolate
175g soft butter
60ml golden syrup
200g pretzels
150g peanuts
150g freeze-dried strawberries, roughly chopped
100g white marshmallows, chopped
icing sugar, for dusting

Method
Place peanut butter chips in the freezer.

Melt the dark and milk chocolate with the butter and syrup in a heavy bottomed saucepan over a low heat.

Place the pretzels in a freezer bag and bash them with a rolling pin to get a variety of sized pieces.

Empty into a large bowl with the peanuts, strawberries and marshmallows. Take the pan of the heat and mix the chocolate through to combine. Remove the peanut butter chips from the freezer and mix through.

Tip the mix into a lined square baking tray, smoothing it as much as possible. Place in the fridge until firm enough to set and cut, a couple of hours.

Place on a plate, dust with icing sugar and devour.

Everybody hates Chris

Much has been made of the annual #OscarsSoWhite campaign with many of my dear friends missing out on nominations, Will Smith not included – he broke my heart in the 80s when he ended our engagement knows what he did.

Thankfully the great Cheryl Boone Isaacs had the good sense to ignore the overwhelmingly privileged white, middle-aged men that dominate the membership (also, thanks for working to correct the imbalance, Chez) and hire my dear friend and confidante Chris Rock for this year’s hosting gig.

Chris and I first connected in New York in the 80s when we were both being mentored by Eddie Murphy. While I spent more time honing my suggestive outfits rather than my craft – I wanted Eddie to marry me, obviously – Chris was always destined to be a star.

With Chris busy prepping for his role hosting Hollywood’s night of nights, he gave me a buzz to come over and provide him with some much needed moral support (and assistance writing jokes).

What will give us energy to brainstorm while saying break a leg but not literally as it would be in poor taste for me to turn up impersonating you in blackface as a replacement host? Even I know that is not funny or appropriate!

Mont LeBlanc

Bless little Matty – he is such a doll!

While he doesn’t enjoy being upstaged by my animatronic pet chimpanzees or Matt Pez’s … sarcastic punchlines, he is a ride or die friend. Fun fact, our friendship inspired the entire Fast and or Furious saga – RIP Paul Walker (thank you for the Joy Ride your buns gave me).

Sure, as is the custom with being our friend, we have had some rough times after he refused to give his Married … with Children co-star and our legal guardian Christina Applegate a role in Lost in Space (ugh, Heather Grahvom), but he was kind enough to forgive us for advising him that a Joey spin-off was a good idea, so we are even.

Matty really helped put me back on the right path and work through my guilt and grief of what has happened over Christmas – oh, FYI, I am actually Annelie’s evil twin Ennelie.

I’ve had such a busy week – what with hosting Nigella Lawson’s Brisbane Q&A and acting as a mentor to David Sedaris – that I barely had time for poor Matt. Thankfully Nigella gave me the idea for a speedy Mont LeBlanc.

While I have to give credit to dear Nigey for the original express version of a Mont Blanc – I will blow my own trumpet and say that melting the chocolate and whipping it through the chestnut makes for a smoother, sweeter dessert.

Mont LeBlanc
Serves: 4.

Ingredients
100g good-quality dark chocolate
1/4 tsp almond essence
500ml double cream
2 meringue nests
500g sweetened chestnut purée

Method
Break the chocolate into a medium, microwavable bowl and melt in the microwave on high for ten second intervals until down. Leave to cool slightly.

Place the cream in a large bowl and lightly whip it until soft peaks form. Fold through one of the crumbled meringues.

In an electric mixer, whisk the chestnut purée on medium speed and add in the chocolate and almond essence, continuing to whisk for a minute to combine.

Spread the chocolate/chestnut mixture evenly amongst four martini glasses, top with the cream/meringue mixture and crumbled excess meringue.

Devour immediately and pretend you made the purée and meringue from scratch and were very busy.

Guess Who's Coming to Dinner

No one told me life was gonna be this way, what with Annelie’s amnesia and Miley’s now almost-normal length tongue.

Yes, my job’s a joke (well I treat it as such), I’m broke (compared to a Vanderbilt) and my love life, with Skarsy, is once again DOA.

I was feeling like I was stuck in second gear over the weekend, what with it not having been my day, my week, my month but gosh darn it after getting a call from Matt to catch up, I just know it is going to be my year.

My dear friend, whom I ironically refer to as Shooter as he is packing anything but blanks, Matt and I have been there for each other since meeting on the set of Ed where he was co-starring with my recently purchased chimpanzee Lionel von Shunteece.

Lionel’s impeccable and more believable acting made Matt sad and wanting to be there for him, when the rain started to fall, I gave Lionel to my dear friend Paris Hilton as a sign of solidarity, setting Paris on the path of bizarre and irritating pets.

What says thanks for being there for me too-oo?

Amy Poehlenta Chips

Party Food, Side, Snack, Treat Yo' Self Week

While she may have never participated in the joy and wonder of treat yo’ self day on screen (I would argue Leslie felt her life was a treat anyway), we could look no further than Parks star, Emmy Award snubee, victim of our stalking (rewritten thanks to time travel) and co-best person in the world, Amy Poehler, to finish off Treat Yo’ Self Week.

We have documented our long struggles with trying to secure Ames’ friendship; when stalking / catfishing as Hollywood heavyweight Anneljamin Juddailes via Adam Scott didn’t work, we opted to rewrite history and join her BFF (now one of her BFFs) Teens at the Delaware County Summer Showtime.

After connecting with Ames via Teens at Second City (our nefarious plot worked), we immediately became best friends and have been living the good life with the Queens of Comedy ever since! Oh, you can bet your bottom dollar that we were heavily involved in the successful reshaping of Leslie Knope, all of Amy’s Award Show gags and generally controlling her life like a Momager – she is Kim to our Kris!

While Amy was present for our ugliness with Lorne Michaels and the subsequent lifetime ban at 30 Rock, she was kind enough to base Parks out of L.A. so we could still be involved in her life and members of her entourage. Who else is going to beat the shit out of Edie “Mrs. Soprano” Falco when she crosses her? Exactly.

Ames’ is on a break from filming and between press circuits for the world’s saddest, most soul crushing movie Inside Out and the upcoming Oscar winning, box-office breaking hit Sisters so dropped by to relax and treat herself to our glorious Amy Poehlenta Chips.

Between the sharp cheese, the whack of herbs and the hint of chilli, I have nothing to say other than the fact these are just as glorious as their namesake – love you Ames!

Amy Poehlenta Chips
Serves: 6

Ingredients
2 cups chicken stock
1 cup instant polenta
1 cup parmesan, grated
25g butter
½ cup rosemary leaves, chopped
sea salt and cracked black pepper
200g ricotta
2 tbsp chilli flakes
olive oil
1 tbsp sea salt flakes
1 tbsp sage, chopped

Method
Place the stock in a large saucepan and bring to the boil over medium heat.

Reduce heat to low and while whisking, gradually add the polenta – continuing for a couple of minutes before removing from the heat.

Throw in the parmesan, butter, rosemary and season with salt and pepper, generously with the pepper, and give a good stir. Cover with cling and leave to cool for 15-20 minutes.

Once cooled, fold through the ricotta and place the cheesy, polenta-y goodness in a lined small (20cm-ish) square cake tin and refrigerate until set, about six hours.

Preheat oven to 180C.

Remove the baking paper, and obviously the polenta with it, and slice into 2cm square matchsticks. Layer the chips on a lined baking sheet, drizzled with olive oil and bake for 50-20 minutes, or until golden and crisp.

While the chips are baking, combine the sage and salt. When the chips are done, allow the cool for 5 minutes before coating in the sage salt and devouring. Preferably with some Coolaioli.
