Stone the flamin’ crows and get lil VJ on the blower, my dear friend Ada Nicodemou is dropping by!

With all of the Australiana action thanks to Australian Survivor – which thanks to the non-elimination episode gave me the night off from cooking – I’ve been feeling quite patriotic so wanted to get in touch with one of my closest friends, national treasure and Gold Logie winner in 2023.

We first met in the mid-90s while working on Heartbreak High – and by working, I was stalking Alex Dimitriades. Needing a way to get closer to the set without spooking him, I needed to befriend a cast member and Ada seemed as good as any. I mean, we’ve been friends ever since so I clearly made the right choice.

What says thanks for unwittingly helping me get closer to Al all those years ago, be he at home or away?

Mint Julie Delpy

Drink

I was sitting on my balcony, melancholic after Caz’s departure and knowing that the swim events are nearly over and my basement will be dried up.

As the tears streamed down my face, the afternoon sun caught my eye as the cold August – remember, I live in Australia, mate etc. – winds hit my face and brought me back to reality. I need a drink and I need to share it with my second favourite Jujubee.

I reached for my phone as the sun continued to set and conveniently saw a message from the divine Julie Delpy.

Turn around, it read.

Like Liza in SaTC 2, had I manifested her?

“Darling,” (because all European people say darling, right Zsa Zsa / Arianna) “I know how depressed you get with the end of the swim events at the Olympics, so I knew that you needed me.”

Despite being extremely concerned about the fact she so easily broke into my house with me sitting five meters from the door without noticing AND the fact she broke in by using an axe to break down the door, she is an Academy Award nominee, French and I love her, so I ran into her arms and cried about the less skin I will be seeing in week two of the games.

I first met Delps in the 1990s while filming Before Sunrise. I was dating Ethan Hawke at the time, hoping that having a relation of Tennessee Williams inside me would make me great. While it made me feel great, our relationship wouldn’t last as I was too busy running scams / being deported.

Unable to return to the US with Ethan, Delps took me in and cured my heartache as we bonded over a mutual love for day drinking.

While it took Delps a while to pull me out of my latest funk, she reminded me that the 100m sprint was still coming up, Bloom and Bieber may continue their peen off and there were drinks to be made. With a sense of duty, I made my way to the bar to whip us up a Mint Julie Delpy while she ran me through the remaining events with scantily clad men.

Like Delps, these delights are sweet and all at once delicate and strong … but maybe that is my heavy handedness with the shots?

Mint Julie Delpy
Makes: 1.

Ingredients
8 mint leaves, plus a sprig for garnish
1 ½ teaspoons superfine sugar
2 shots bourbon
soda water
ice

Method
Another one of those tough recipes to master today guys!

Place the mint and sugar in the bottom of the glass and muddle together until the leaves are breaking up and releasing their flavour. Add a bit of soda water, add the ice and top with bourbon and soda water to taste. Give it a stir, garnish with a sprig of mint and down.

Carrie Fisher’n’Chips

Oh my goodness – my stomach is in agony! No i’m not into some odd masturbatory technique, I just haven’t stopped laughing for the last 24 hours.

It was such a treat to have Carrie over and reenact a good / funny version of SaTC with the part of New York dutifully played by my kitchen / television.

As you know, we met in rehab and were bonded instantly due the fact we were both poised to be celebrated writers and we had complex relationships with our Hollywood mothers. While my issues stemmed from the fact that I was generally running a scam at their expense, Carrie grew up in the limelight of the Reynolds-Fisher dynasty and drama which gave her a very different childhood … and me a reason to befriend her to get to Debs to form an alliance against Liz.

Obviously she stole two of her husbands from me … but that is another story for another time.

So back on track, I quickly ingratiated myself with the Reynolds-Fishers (often despite Caz’s better judgement) and have been a confidante to Caz ever since, filling each other’s lives with so much joy and laughter.

I can’t say enough about how beautiful and close our friendship is.

As I mentioned and I’m sure Star TrekWars fans would be aware, Caz just wrapped on the latest movie and was completely pooped so relished the opportunity to pull up a seat next to me in our twin recliners and make sassy, forced, attention grabbing statements about the semi-clad swimmers who were dutifully flooding our basements.

To get us in the mood – or to be more accurate, out of it – I whipped up a batch of her favourite / my famous Carrie Fisher’n’Chips.

I assume I’ve mentioned it ad nauseam, if not, I fucking hate seafood. Hate it. I mean, they live in their filth (even though someone rightfully argued that they live in a purifying saline solution). Anyway, Carrie loves a good ole Fish and Chips and given that she just wrapped her time in London, I had to make something to help her acclimate back into the real world.

With that, I went heavy with the chilli, lemon and lime to drown the flavour of fish and served it with crispy chips and a delightful harissa mayo that had me *shudder* liking seafood.

Carrie Fisher’n’Chips
Serves: 4.

Ingredients
8 pieces of hoki portions (I hate seafood, of course I’m going to buy pre-portioned)
2 eggs, whisked
1 cup plain flour
2 cups panko breadcrumbs
¼ cup flat-leaf parsley, finely chopped
1 tbsp chilli flakes
zest of one lime
vegetable oil
One serve of the chips from Friza Minnelli … I don’t think the Dolognese would help the chips

Harissa mayo
1 clove of garlic, finely minced
3 tbsp mayonnaise
4 tsp harissa paste
1 ½ tsp rose water

Tartare
1 cup mayonnaise
zest of one lemon
2 tsp capers, drained, finely chopped
2 gherkins, finely chopped
2 tbsp flat-leaf parsley, chopped

Method
Probs make a start on the chips first. Then when they are in the oven, whisk the eggs in a shallow bowl, the flour in a second shallow bowl and combine the breadcrumbs, parsley, chilli and lime in the third shallow bowl with a good whack of salt and pepper.

Dry the hoki pieces with some paper towel. Working piece by piece, coat the fish in the flour, dip in the egg and coat in the crumb. Rest on a plate and continue until they are all sorted.

Heat a good lug of vegetable oil in a large frying pan over medium heat, when it is nice and hot reduce the heat to low and fry two pieces at a time, 4-5 minutes per side. Remove to some paper towel and repeat until the fish is sorted.

Turn off the oven when the chips are done and place the fish on the lower shelf to keep warm while you quickly whip up the sauces … which are super easy. Place all the ingredients in separate bowls – obviously – and stir to combine.

Serve up the fish and chips with a fat dollop of the sauces and the cut up zested citrus. Devour.

Huge news guys!

No, I’m not covering the Olympics despite being crazy sporty. While I’m sure you’re wondering why I’m not there the answer is simple, I am a doctor for the Russian team … so yeah, I’m banned – maybe I’ll be allowed in Tokyo?

Who knows? Either way, I was crazy moist after watching the Opening Ceremony and decided I needed one of my closest gal pals to drop by while we quench our thirst during the first/best week of the competition – aka swimming / scantily-clad-men-a-palooza.

So obviously I reached out to my closest girlfriend, Carrie Fisher and obviously she said yes!

We’ve know each other since meeting in rehab – I was the inspiration behind Alex in Postcards from the Edge. Like the bonds I made in prison, the bonds you make in rehab are for life and Caz and I have always been a loving support for each other.

Caz recently wrapped on the latest Star Wars movie – fun fact, it was our life goal to never see one of those films but Carrie had to sit through one at a premiere so I am riding solo with that goal (relax Star Wars fans, if Carrie asks me to watch them I will … she doesn’t mind) – so was very keen to relax, reconnect and lecherously watch the swim events.

What says you’re my dearest friend / damn I love watching the swim team?!

Tamale Cyrus

Full disclosure, I forgot corn husks. Then I drowned the dough. Then I burnt my hands. Then I opted for a deconstructed ta … I’m getting ahead of myself.

Let me take you back – picture it, my kitchen, yesterday. My girl, staunch Vegemite fan Miley Cyrus, dropped by after requesting a catch-up.

Having played such an integral role in Annelie’s departure, Miles and I have been in close contact most of the year however she has been too scared to get too close to the scene of the crime. Thankfully Hiddleswift are in town stealing the limelight and showing their true colours, so Miles thought it was time to catch-up and make sure Annelie’s studying-medicine-to-cure-her-ailment was going well.

Miles dropped by after spending the day with Annelie and was disheartened by the fact that her selective amnesia seems here to stay … but was pleased that the silver lining is that she will be a doctor and will hopefully lack enough morals to give us an endless supply of pointless prescriptions and fraudulent medical certificates.

You win some, you lose some I guess.

Either way, we opted out of having a friendly cage fight and instead gabbed about our Hemsworths – he’s Thor? I’m so thor I can barely shi … nevermind – discussed our dear Dolly and reminisced about the wondrous time of our lives that was Hannah Montana (she is unaware I had an affair with Billy Ray while working on the set – don’t tell her).

As I alluded to up front, this week’s meal didn’t go to plan. I wanted something fun, spicy and comforting – not knowing how she’d take Annelie’s continued amnesia – so I went with her fave, my Tamale Cyrus.

Then my forgetfulness – do I also have amnesia – laziness and patience got in the way (read: I bought mince instead of pork butt and forgot corn husks to wrap them), resulting in a deconstructed Tamale Cyrus. But the thing is, I actually loved them!

I mean sure, there is nothing better than wrapping your meat in some warm pillowy dough … but sometimes it is just as satisfying to slap it on top of said dough and slather it in your special sauces.

Enjoy – you know I did!

Tamale Cyrus
Serves: 6.

Ingredients
Meat
vegetable oil
2 onions onion, finely chopped
6 cloves garlic, minced
1kg pork mince
¼ cup chili powder
2 tbsp salt
1 tbsp pepper
1 tbsp paprika
1 tbsp smoked paprika
2 tsp cayenne pepper
1 tsp ground cumin
3 cups chicken stock
1 jalapeno pepper, minced (removed the seeds if you don’t like heat)

Corn(flat)bread
5 cups cornmeal
1 ½ tbsp salt
1 tbsp baking powder
200g unsalted butter
cooking broth

Method
Heat a lug of oil over medium heat in a large, deep pot and saute the onions and garlic for a couple of minutes. Add the meat, breaking up with a spoon as you go – if you accidentally buy mince, dems the breaks – and cook until lightly browned.

Add the spices and jalapeno and cook for a minute, to release the flavours. Then, add the stock, crank up the heat and bring to a boil. Once it is getting lively, reduce the heat to low and simmer for about an hour.

Once everything has literally simmered in its juices, remove from the heat and allow to cool slightly.

Preheat the oven to 180C.

Once cooled, strain off the liquid from the meat and leave the meat to rest while you cook the bread.

See why real pork would have been better than mince? Nigella once told me to embrace the failures though, so I’m making it work!

Anyway, combine the dry cornbread ingredients in a large bowl. Using your hands, rub through the butter until it resembles wet sand on a terrible beach with mega coarse sand. Once combined, gradually add the stock while stirring until the dough is thick and moist – how good is that word, moist, MOIST – but not wet. Trust your judgement, not mine.

Press the dough into a large baking sheet – like one you’d use for making cookies – until it is a smooth 5mm layer and bake for 10-20 minutes, or until golden and cooked but not to hard. Again, use your judgement – Miley and I were pretty wasted at this point so it may have taken anywhere from 5 minutes to 6 hours – you want it to be soft yet squishy, like a polenta chip.

Once it is what you would deem ready, carve the bread into squares, place one on your plate, top with your meat and then top with another piece of dough. Who doesn’t love their meat in a sandwich?

Then top with guac, sour cream and more chilli sauce if you need it. Or not … but who doesn’t love a special sauce?

Also, sorry – I won’t cook drunk again for a few weeks. Promise.

Way back when, I hopped off the plane at L.A.X. with a dream and my cardigan. Welcome to the land of fame, excess, whoa! Am I gonna fit in?

(Yes – obviously).

Jumped in the cab, there for the first time. Look to my right, and I see the Cyrus clan. This is all so achy-breaky, everybody is so famous. My tummy was turnin’ and I was feelin’ kinda sick.

(I assumed I was pregnant with Billy Ray’s lovechild – dreams).

Turns out it was too much pressure (on my waist – In’n’Out just proves to tempting) and I was nervous we’d fall out. That’s when the taxi man turned on the radio.

And the Jay-Z song was on.

And the Jay-Zucchini Bake came to mind. But the Jay-Zucchini Bake wasn’t on (in the oven).

So I put my hands up, she’s coming along. Miley Cy is flying my way. She asked to visit and I nodded my head like, yeah! And am movin’ my hips to the kitchen, there!

Got my hands up, she’ll probs bring her bong and now I’m gonna be okay (maybe she will trigger Annelie’s memories).

Yeah! It’s a party with Mi-ley-ley!

Chillian AnderCon Queso Dip

Full disclosure, I have never seen an episode of The X-Files.

Yes, I spent a lot of time on the set due to my friendship and subsequent affair with David Duchovny and to gather intel for the script of the porn parody I was working on, which was obviously called The Sex-Files.

Despite being quite busy being … occupied by David and my research, I was able to connect with the delightful, elegant and downright badass Gillian Anderson.

Gills and I connected over our shared Chicago heritage – she was born there, I inspired the role of Velma Kelly – and she quickly took me under her wing, I assume to “fix” me. Clearly she didn’t know who she was dealing with!

Either way, I continued to be an obnoxious, hyper-sexual, alcoholic, junky, felon and G loved me, either in spite of or because of my flaws.

G has been very busy lately, what with The X-Files reboot, her creepy turn in Hannibal and starring in the critically acclaimed The Fall, which she won’t let me near. Yes, Jamie Dornan does have a restraining order out against me, but I know that if she just got me close enough I’d be able to explain why I was caught rubbing his hair while he slept. I mean, it was only the one time after all.

Obvs I would then get a role as Christian’s lover in 50 Shades of Gay … which is what he will demand the sequels become to celebrate both our love and our kinks.

Anyway, it has been ages since we last caught up so I made sure I blocked out some time in her calendar months ago so that we could reconnect and I could work on the Jamie sitch, and nothing says reconnection quite like a big ol’ bowl of Chillian AnderCon Queso Dip.

I make no secret of my unbridled love of cheese: cottage, gouda, roquefort, camembert, pamesan, feta, dick, cheddar, philly, swiss – you name it, I’ll gobbleeat it. Add my other fave, chilli, and you’ve got a warm, thick white liquid that you want to take straight in the mouth … on a chip, right?

Either way, enjoy!

Chillian AnderCon Queso Dip
Serves: 6-8.

Ingredients
225g vintage cheddar cheese
125g colby cheese
100g queso quesadilla
340g  cream cheese
3 fresh tomatoes, chopped
6 spring onions, finely chopped
6 jalapeños, chopped
3 garlic cloves, minced
½ cup fresh coriander, chopped
salt and pepper, to taste

Method
Melt cheeses together in a saucepan over low heat.

Stir in all other ingredients.

Devour, warm, with corn chips. Or even better, Tortéa Leoni Chips?

Lemon Merrin Dungey Pie

When I first met Merrin Dungey – aka Mezza – she was cracking jokes with some of the lower members of the cast of Deep Impact. Despite being quite the high roller on set as T’s best-friend, I was drawn to her infectious joy and decided to take her under my wing.

Let me tell you, Mez is just what the doctor ordered – I feel joyous again!

Jubilant even.

Mez has long been someone I’ve relied on to lift my mood and in exchange, I’ve lifted her up the Hollywood ladder. After Deep Impact, I quickly introduced her to Sorks and got her a brief role on The West Wing, landed her a part with my – and I guess the world’s – Friends and bounced her too Chrissie Apps on Jesse before landing her the big fish that was Alias opposite my then boyfriend Bradley Cooper.

It had been a couple of years since we last caught up – I may have caused a scene on the set of Trophy Wife when she was guesting and was scared I had embarrassed her. Thankfully, I hadn’t but sadly that meant I had to struggle with my mood these last few years.

Mezza is trying to relax and make the most of her free time before reporting to the set of her new show, Conviction, so was down to party and bring the joy … which she did.

As did my Lemon Merrin Dungey Pie.

I like my lemon curd like I like to act to attract men – tarty, smooth and soft and warm inside. Add the culinary equivalent of Merrin / valium, pastry, and a generous dollop of mallowy meringue and you’ve got the perfect dessert to eat away your feelings.

Lemon Merrin Dungey Pie
Serves: 8.

Ingredients
Pastry
1 ½ cups plain flour
2 tbsp icing sugar mixture
125g butter, chilled, coarsely chopped
2 ½ tbsp iced water

Filling and meringue aka all the rest
Lemon Kurd Cobain
1 cup cold water
¼ cup cornflour
8 large eggs, whites only
⅔ cups sugar
¼ teaspoon coarse salt

Method
In a larger bowl, sift the flour and icing sugar together. Using your fingertips, rub the butter into the flour until the mixture resembles wet sand. Add the water and mix with your hands until it just comes together … just.

Shape into a 2cm thick disc, wrap in cling and refrigerate for half an hour.

Preheat the oven to 180°C.

Remove the dough from the fridge and roll out until it is about 5mm thick, lay the dough in a 23cm pie dish, trim excess, line with baking paper and return to the fridge for half an hour.

Then add pastry weights and bake for 15 minutes … and then remove the pastry weights and baking paper and bake for a further 15 minutes, or until golden and crisp. Set aside to cool completely.

That was kind of militant right now, wasn’t it? Sorry.

Anyway, while the crust is cooling, get to work on the curd. Start by whisking together the water and cornflour, then go to the recipe and when it calls for the butter add the cornflour slurry.

Rather than chilling the curd, pour it straight into the crust, smoothing over with the back of a spoon and chill in the fridge for 3-5 hours – the pie, not you – or until it is set.

About half an hour before you’re over the pie chilling preheat the oven to 180°C … again.

While the oven is warming up for you, combine the whites, sugar and salt in a large, dry bowl of an electric mixer and whisk on high until stiff peaks form. Layer the meringue on the pie, sealing in the curd, and bake for about 5-10 minutes, or until the meringue starts to brown.

You could always use a blowtorch in lieu of the oven but I don’t, and nor should anybody else, trust me with a blowtorch.

Either way, once you’re done devour and feel happiness again.

After being thoroughly disappointed by the world for most of last week (until Jay Z dropped by), followed by 13 hours spent watching OITNB season 4 which culminated in a horrific kick to the guts in the second last episode – seriously, I am still llorando – I decided that I needed to focus on the positive and bring a little bit of joy in the world.

But seriously, how fucked up was the end of episode 12?

Anyway, I have decided to become the personification of valium and bring joy, or at the very least a feeling of strange calm, to everyone on the planet.

As I am still reeling from Orlando and the culmination of the fictional prison overcrowding/under-trained guard perfect storm, I wanted to catch-up with someone that brings an infectious joy to my life (rather than infectious disease, FYI) so gave the dear Merrin Dungey a call.

What says while your turn as Ursula made me uncomfortable it will never take away from your majesty on the one-two punch that are Alias and the egregiously Emmy snubbed Summerland?

Jackie (Tom) Collins

Drink

It is was my pal Joanie’s birthday earlier in the week and it reminded me about the rapidly approaching anniversary of her sister, and my dear friend, Jacs’  death. It has been making me feel melancholic and left me unable to adequate celebrate for Jo-Jo, so instead of drowning my sorrows – my go to coping mechanism – I decided to whip out the time machine to say my goodbyes.

As you know, Jac kept her illness secret, even from her two closest confidantes – Joanie and myself – and we only found out a few weeks before she passed and sadly I didn’t make it over in time to say goodbye, which has haunted me ever since.

I first met Jac in the 40s, after working with her big sister in a production of A Doll’s House. Seeing my star turn as Nora Helmer, Jacs was inspired to follow in Joan’s footsteps and become an actress.

Despite a brief falling-out in the 60s when we had a simultaneous affair with Marlon Brando, Jacs and I have enjoyed a close bond, with my mentorship of her acting and later her mentorship of my erotic writing career (to be published, for some reason).

Wanting to get closure, I didn’t travel far back in time to just before her passing so that we could enjoy a last hurrah. While she was so close to the end, Jacs was still so full of life and was as witty and sharp as ever, which just warmed my heart to be able to see and know that she was ready.

As I said, I wasn’t going to drown my sorrows, so instead we joined together to toast a life well lived and a career full of scintillating writing over our drink of choice – a Jackie (Tom) Collins.

As great as it is to witness the Collins girls banter back and forward, I couldn’t risk Joanie throwing a drink in my face and wrestling me in a pool – as we are known to do – so I just kept it to the two of us.

But when you’ve got a raspberry and lemon, gin soaked delight – do you really need anything else (or to be soaked by pool water)?

Jackie (Tom) Collins
Makes: 1.

Ingredients
ice cubes, to serve
raspberries
2 thin lemon slices, halved
30ml gin
1 tsp fresh lemon juice
chilled mineral water, to serve

Method
Place ice, a couple of raspberries and the slices of lemon in the base of your glass. Add the gin and lemon juice and top up with mineral water.

Swizzle and down. Simple and delicious.
