Previously on Survivor twenty Americans were marooned on a cyclone ravaged Fijian Island and separated into two biblically themed tribes based on whether they were successful or not. Ironically – I think, Alanis help me out – the first boot wasn’t taken out by a vote but instead Pat was felled by an act of God as a wave sent their arc flying and cracked his back. He was followed out the door by Jessica – after my pizza curse struck again – and Jeremy before Bi up and quit – due to a torn ACL, but don’t tell Jeff –  just as the tribes were switching.

Despite being in a Goliath majority on her newly formed tribe, Natalia became the second and final victim of my pizza curse before Natalie became a victim of herself, exiting without so much as turning to face Angelina as she begged for a jacket, followed by poor Lyrsa who was wondering how in the hell she would tolerate the pre-jury vacay with the boss.

With that the tribes merged and Elizabeth started to accrue a Harem of Hunks, as she was followed into Ponderosa by John, Dan, Alec and Carl before Gabby broke the drought after trying to turn on Christian. Turns out she was one vote too soon, as he followed her out the door before Davie, Alison and Kara arrived to round out the jury.

The final three plead their case to the jury with Angelina completely shut out, no doubt in part because she opted to humiliate Alison on her way out the door – but she gave up her shot at immunity for rice, guys! Despite a strong game Mike proved that Goliath’s always have a weakness, as Nick overpowered him at final tribal council and snatched the title of Sole Survivor slash $1M.

While poor Nick struggled to find his feet in the first few days, Pat’s medevac saved him from the fate of becoming the first one out and allowed him to reset his game. And reset he did, taking control of the original David tribe with Christian, and then manoeuvring out of a minority position on the post-swap Jabeni tribe.

By the time he was playing a pivotal role in snatching back the majority on the merge tribe, keeping a meat shield long enough to avoid being targeted and snatching a string of late game immunity challenges, he pretty much had the game on lock. And what an exciting game it was. And by game, I mean season. This season was great. So great, the only way I could toast his success was splitting a big plate of Nick Blintzon.

 

 

Picture it: crepes, rolled into cheese filled tubes and then fried (or baked). Still with me? Then you dust with icing sugar and go to heaven. Because these are delicious.

Nick Blintzon
Serves: 4-6.

Ingredients
4 eggs
400ml milk
250g flour
1 tsp salt
butter, to grease
1 cup ricotta cheese
250g cream cheese
⅓ cup raw caster sugar
1 lemon, juiced
1 tsp vanilla
icing sugar, to garnish

Method
Whisk three of the eggs and milk together in a small bowl, and the flour and salt in another. Form a well in the dry ingredients and pour in the wet ingredients, whisking continuously, until smooth and combined.

Melt a good knob of butter in a skillet and pour ⅓ cup of mixture into the pan to make a crepe. Repeat the process until the batter is all used. Leave them to cool slightly.

Preheat oven to 160°C.

Beat the remaining egg, ricotta, cream cheese, sugar, lemon juice and vanilla until smooth and combined.

Place a couple of tablespoons in the centre of each crepe and fold like a burrito. Brush with some melted butter, place on a lined baking sheet and transfer to the oven to bake for twenty minutes, or until golden and crisp.

Devour immediately, dusted heavily with icing sugar.

Mike White Chocolate Mud Cake

After toughing it out on a Fijian Island for 39 days without a jacket, begging for idols and scaling the largest cliff face on the planet to snatch an idol to embarrass one of the final jurors, the heroic Angelina’s claim for the title were completely ignored by the jury, despite having a passion for negotiation and persuasion. With that it came down to Hollywood heavyweight Mike White and public defender Nick, with the former toppled by the latter fulfilling the destiny of the season’s theme.

Given the fact that Mike comes from the entertainment industry and is the most well-known celebrity to ever join the cast – and as such has a lot of easy targets to paint on him in a game where any excuse to vote someone out is valid – he never should have made the merge, let alone the final three and be a couple of votes away from winning.

But that is how well my dear friend Mike played.

Obviously I first met Mike while working together on Dawson’s Creek and we quickly bonded over our sardonic wit. As is often the case, I vowed to make him a star however plot twist, when he decided to partner with Jack Black – who I was feuding with at the time – we went our separate ways and I had to watch him succeed without me.

Well until footage of me having a meltdown at work leaked – by me – on the internet, and he reached out to see if I was ok and whether he could base a television show about me. I am passionate about being a muse, so gladly gave him my blessing and Amy Jellicoe slash Enlightened were born and our friendship renewed. You’re welcome.

Anyway Mike’s charm and killer gut instincts that allowed his to wait until just the right moment to make a move played a huge roll in him getting to the end and almost snatching the title of Sole Survivor. And while he was disappointed not to win, he was thrilled to see me in Ponderosa waiting to cheer him up with a big, heavy Mike White Chocolate Mud Cake.

 

 

Obviously this is ridiculously, sickeningly sweet, as mud cake is want to do, but damn is it good. Dense, moist and melt in the mouth, there is nothing better to distract from losing $900k after 39 days on an island.

Mike White Chocolate Mud Cake
Serves: 8-12.

Ingredients
700g white chocolate, roughly chopped
350g unsalted butter, chopped
2 ½ cups raw caster sugar
1 ½ cups milk
2 ⅔ cups plain flour
1 tbsp baking powder
2 tsp vanilla extract
3 eggs
½ cup cream

Method
Preheat oven to 140°C.

Combine 200g of the chocolate in a large saucepan with the butter, sugar and milk, and stir over low heat until smooth and combined. Transfer to a large mixing bowl and leave to cool slightly. Whisk in the flour, vanilla and eggs, and stir until just combined.

Pour into a lined cake tin and bake for 2 hours, though start checking from 1 ½ hours and stop once an inserted skewer comes out clean. Remove from the oven and allow to cool in the pan for about half an hour, before transferring to a wire rack to cool completely.

Once cooled, bring the cream to the boil in a small saucepan and transfer to a bowl. Add the remaining chocolate and stir until smooth. Transfer to the fridge to cool for half an hour, stirring a couple of times.

To assemble, flip the cake upside down, slather with ganache and devour.

Elizapple Jaloulson

Previously on Survivor the semi-newly formed Tiva tribe were divided down gender lines with the brochachos aligning leaving Gabby and Alison left out and aligned by default. Meanwhile over at Vuku Alec turned on Kara and the Goliaths to take out Natalia – or maybe it was the pizza curse – while Elizabeth and Carl continued to feud. Finally Jabeni continued their losing way allowing Mike and Nick to set the tone for the rest of the game, taking out Lyrsa and saving Angelina from herself. Though she still doesn’t have a jacket, so that’s a thing.

We opened up at Tiva where they were enjoying their morning coffee before they were interrupted by two speed boats bringing Jabeni and Vuku to move in. Yep people, we’ve got a merge. Carl quickly explained that the individual game requires people to play individually – thanks Carl – through he is jonesing to get rid of Elizabeth and down a beer, so that’s that. John too was thrilled to smash some food at the merge feast and reclaim his gains, while Alec died and went to beer heaven. John channeled Kellyn and was hoping to go Goliath strong, however was wanting to save his bestie Christian. Gabby decided to step her game up and surveyed the merge table and signs for an advantage, Carl, Angelina and Nick shared intel from their respective tribes, with Alec’s flip quickly outed. Much to Angelina’s chagrin.

Everyone started laying down for their food coma before Elizabeth suggested the tribe name Kalokalo, much to Carl’s rage. Leading to him slurring his way around the tribe begging them to get rid of her. Nick and Christian reconvened on a water run, thrilled to still be bros before Nick shared that Dan is rumoured to be the proud owner of an idol. Speaking of whom, Dan was reconvening with his girl Kara, sharing that he had found a second idol since they last cuddled and Kara was feeling super confident. Which isn’t ending well, right? Right on cue, Alec arrived for a Goliath reunion where they all gossiped about which David to take out first, with Angelina pushing for Christian and everyone else going for Elizabeth. Alec immediately took the plans back to Christian to commence a beautiful relationship and take over the game.

That night Elizabeth noticed Dan and Kara’s close bond as they chatted and let’s just say, it did not sit well with her.

The next day Mike was gagging for a soy latte while scoping out how best to move forward, locking in an alliance with Alison and Alec, and planning to bring Nick, Christian and Gabby in for a core alliance and TBH, I love it and want it to happen. Alec approached Gabby to gauge her support, with Mike and Nick joining them and it feels like it is happening. But then again, I thought Sandra, Aubry, Malcolm and Tony would actually align in Game Changers.

Not to be outdone, Elizabeth shared her Dan-Kara intel with Nick and Carl in an attempt to turn the tribe against them, despite the fact Carl hates her. She approached Alec to see if he’d be open to flipping and joining the Davids to take them out. Knowing it isn’t the best time for him to flip, he took the information back to Dan and Kara which caused Dan to completely freak out that someone would dare to target him. And the tantrum was not pretty.

My boy Jeff arrived for the first individual immunity challenge of the season where the tribe were required to swing a pendulum around a frame without knocking a statue over in the centre or losing momentum. You know, the one Tessa dominated in Australian Survivor last year. Poor Mike was the first one eliminated, followed quickly by Christian, Carl, Gabby and Kara. TBH it was way to hypnotic to watch closing so let’s just say it came down to Elizabeth and Alison, with Dr Alison following in Dr Tessa’s footsteps, taking out the challenge and snatching immunity.

Back at camp shit quickly hit the fan with Angelina continuing to argue Elizabeth isn’t a big enough threat and that the Goliaths should instead target Christian, unaware that most of the people she is talking to are aligned with him and she is coming across as too powerful. Dan was annoyed by her utilisation of military terminology and continued to seethe since Elizabeth wanted to get rid of him. Meanwhile Gabby was trying to encourage the Davids to come together and take control of their fates … by playing up how weak and terrible they are. Alec and Alison got together, concerned about voting out Christian since it burns all of their bridges. As such, they pulled in Dan and John to flip the vote back to Elizabeth. They then approached Angelina to talk about flipping the vote back which she was extremely open to. Well played girl, wait, no, she then complained to John and Alison about Dan and came across like she was throwing a tantrum because she didn’t get her way.

Despite her earlier plan not to share who they were planning to target, Angelina pulled Elizabeth aside and told her that the Goliaths were coming for her and while I appreciate wanting to win over the jury, I don’t see this ending well. Elizabeth briefly had a breakdown before returning to camp and try and rally the Davids to flip the vote, vowing to destroy them at tribal. Which seems … late?

At tribal council Alison was grateful to be immune, Christian spoke about factorials, Alec alluded to shifting alliances and Angelina continued to struggle at tribal council. Smelling blood in the water, Elizabeth used that moment to go in and out Angelina for letting her know about the fact she was voting her out. Everyone quickly jumped in and called out her early jury management, leading to all the Goliaths whispering amongst themselves and questioning her loyalty. Gabby broke down calling out Angelina for being angry that Elizabeth dared to try and save herself. Seeing the writing on the wall, Angelina whipped out the tears as the Goliaths continued to whisper and she saw the end of her game quickly approaching. Elizabeth continued to go in on Angelina, while Alec and Dan got up to whisper and lock in their plans, while Angelina reiterated that she is voting for Elizabeth and hot damn, she is looking forward to it.

Tragically for my girl Liz, everyone gladly followed suit – and side note, well played Gabby making Angelina look like a demon and slyly locking up Liz’s jury vote before booting her – and sent her out of the game. Thankfully, she was sent to become the Queen of the Jury and if you can’t win the game, that is the real title you want, no? Liz being the absolute saint that she is, my girl took her boot in her stride. Nay, she may have been down, but she pull herself up by her bootstraps, which I think is a country term but am too lazy to google – lemme know if i’m wrong, ok? Anywho, she is bubbling ball of joy and as such, we laughed, cried from so much laughing, then cried from overdoing it with the celebratory-commissatory Elizapple Jaloulson.

 

 

To quote the great Chris Klein, there is nothing better than warm apple pie. Or at least I think that was the take away from American Pie other than don’t stick your junk in an apple pie lest you want third degree burns and well deserved shame? Again anywho, way off track – hot, sticky apple and blueberry encased by flaky strips of pastry are probably a more iconic duo than the Mason-Dixon alliance. Better yet, the strips hopefully have enough sharp edges to ward off a horny Jason Biggs.

Elizapple Jaloulson
Serves: 6-8.

Ingredients
4 granny smith apples, cored and sliced
1 cup frozen blueberries, thawed
1 tsp ground cinnamon
¼ cup muscovado sugar
2 sheets puff pastry, halved
¼ cup almond meal
milk, for brushin’
demerara sugar, for sprinklin’
Vanilla Ice Cream, to serve

Method
Preheat oven to 180°C.

Combine apples, blueberry, cinnamon and sugar in a large bowl and toss until well coated.

Place two pastry halves on a lined baking sheet and spread the almond meal over both, leaving a 1cm border around the edge. Pile the filling on top of each, again leaving the border.

Gently fold each of the remaining halves in half lengthways and cut – along the folded side – on an angle to form geometric slits, stopping 1cm from the edges. Gently unfold and lay over the heaped fruit, crimping the edges to join.

Brush with milk, sprinkle with demerara and transfer to the oven to bake for 20 minutes, or until golden and crisp.

Serve piping hot – safety first, obvi – with a generous dollop of Vanilla Ice Cream.

Nutellyrsa Eclairres

Previously on Survivor, Jabeni were riding high on their egg reward however tragically the protein wasn’t enough to get them immunity, sending them to tribal council. While that appeared to mean certain doom for Lyrsa and Nick, Natalie continued to grate on her tribemates. She then attempted to bully Lyrsa or Nick into giving up their jackets for a cold Angelina to secure themselves safety, which backfired as they all joined together to blindside her while Angelina desperately begged her for her jacket.

Natalie. Natalie. Natalie ..?

The next day Jabeni were feeling positive without Natalie’s negativity to bring them down, while Lyrsa was just shocked to still be there. Angelina apologised for writing Lyrsa, explaining it was all a ploy for the jacket which did not sit well with Lyrsa. They lay around bonding, laughing and reminiscing about Natalie epically ignoring Angelina. Speaking of whom, Mike, Nick and Lyrsa got together to talk smack about Angelina’s desperation at tribal, with them all agreeing that they do not trust her and that she is the next to go. If it gets to that.

Over at Tiva the nerdmance continued to be adorable as Christian explained fishing and Gabby was sweet. Suck it haters who are done with her crying. Wouldn’t you cry if you had to live through multiple cyclones? Anyway, Christian wasn’t successful but he did lure John to the shore and I am moister than an oyster.

Speaking of flooding my basement, Jeff arrived for this week’s reward challenge where the tribes would have a bag of coconuts tethered to one tribe member with the remaining members forced to lug it about as they go through an obstacle course, release four rings and then land their rings on a long, hard pole. Given it was for cooking utensils, spices and kebabs, everyone was salivating and ready to dominate. Alec and Gabby got Vuku and Tiva out to an early lead, as Alec’s junk bounced everywhere. Sadly Alec’s BDE wasn’t enough to land the rings allowing John and Dan to snatch the win for Tiva while Nick snatched second for Jabeni. But they get to look at Alec so everyone got some meat, you know?

Tiva returned to camp to celebrate their victory and cook up their kebabs, and most importantly, the brochachos were feeding each other by hand and I love it. Christian, John and Dan are the throuple we deserve, the latter’s pining for Kara be damned. Gabby and Alison however started to notice that the throuple hooking up was bad for them, so the girls got together and pledged their allegiance to each other. Gabby then started to break down, leading to Alison tearing up and damn I need this tribe to all make the merge. So they can stay dating, obvi.

Though Alison’s plan to blindside Dan is definitely something I can get behind, given a blindside of someone with two idols is always fun.

Meanwhile over at Vuku Kara and Elizabeth seemed to be getting closer again, with Kara trying to massage her back which she injured four weeks before heading out to the island. They then started splitting the bamboo in the shelter in an attempt to make things more comfortable, which Davie and Carl felt was a bad idea given it would be dark soon and the shelter would be uneven. This annoyed Elizabeth, who felt that they were being unfair and she can’t take it anymore, while the boys were frustrated that she was doing it while everyone else was trying to relax. The only person thrilled by the turn of events seemed to be Kara, who knew that should they lose the upcoming immunity challenge, Elizabeth is the most likely target.

Speaking of which, Jeff returned for said challenge where the tribes were required to carry a large heavy saucer to a water tower, fill it with water, carry it through obstacles, pour water into a well, release puzzle pieces and, wait for it, solve said puzzle. Vuku and Tiva got out to an early lead, until Vuku lost most of their water, followed by Jabeni, leaving Tiva to storm ahead. Tiva made quick work of the puzzle, followed by Vuku handing them both immunity before Jabeni even released their puzzle pieces. TBH, it wasn’t easy to watch. Particularly when they dropped their saucer on the third attempt and opted to give up.

Back at camp Mike was feeling emotional about crushing someone’s dreams at the upcoming tribal council. Given there are 7 people left from each of the original tribes and he was anticipating a merge, Mike was growing concerned that he will need to turn on Nick and Lyrsa to save himself moving forward. While Angelina was hoping to work with Lyrsa, the latter still didn’t trust Angelina after jacketgate and as such, Angelina was stuck working with Mike. Angelina approached Mike and locked in the vote for Mike and agreed that they need to get Nick on board. Lyrsa and Mike got together to talk about getting rid of Angelina, with Mike open to the idea while Nick was being worked Angelina to turn on Lyrsa. Rounding out the pairings, Nick and Mike approached each other to decide which way they will go giving Angelina is a bigger threat … but Mike is scared about taking her out and screwing over all of the Goliaths.

At tribal council Nick spoke about how tight the tribe has gotten in such a small time, Mike spoke about loving everyone but being concerned about navigating the next part of the game. Lyrsa agreed that trust and loyalty were the key factors in her decision tonight, while Angelina added strategy which is pretty much a given, no? And kinda just paints a target on her back. Angelina channelled Keith and spoke about sticking to the plan, Lyrsa mentioned everyone has a plan and Nick pledged his loyalty to Jabeni rather than the OG tribes. Angelina then jumped in to sing Nick’s praises which seemed a bit desperate. Thankfully Lyrsa called her out for trying to buy his vote, while Mike reiterated that tonight’s vote will dictate the remainder of the game. With that the tribe voted and it seemed Mike chose to set the game up for the Goliaths – maybe – by taking out Lyrsa and sending her to the jury.

While Lyrsa – the bright, sparkling gem that she is – took her boot in her stride, she wasn’t hella salty about the fact she would be vacationing with Natalie and then has to suffer through sitting next to her at the reunion special. And while I love Natalie with all my heart, I also loved Lyrsa so I let her talk smack about my friend before trying to sweeten the deal with a couple of big fat Nutellyrsa Eclairres.

 

 

Eclairs are perfect. Nutella too, is perfect. So therefore it should go without saying that Nutella flavoured eclairs are perfect, however I do have that theory that two hot people can have a really ugly baby? In any event, this is delicious. Like the random hot child born of two classically unattractive peeps. Though this isn’t random, since eclairs and nutella. I’ll stop talking.

Nutellyrsa Eclairres
Serves: 1 salty boot, or 12 happy peeps.

Ingredients
1 batch Eclair Danes, including crème pâtissière but not the chocolate glaze
1 cup nutella
½ cup roasted hazelnuts, roughly chopped

Method
Prep the eclairs as per Claire’s recipe, up to filling the pastry but before you glaze.

Once that is done, fill a piping bag with nutella and chill for half an hour or so.

Pipe on to the top of the eclairs, sprinkle with hazelnuts and devour. Knowing that cutting out the difficult part of the recipe on this page lulled you into a false sense of security.

Benjami Drops Wilson

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Baking, Dessert, Snack, Sweets

Previously on Australian Survivor Shonee purchased a jar of lollies and a vote steal at the merge auction, while Benji remained the only person left with an idol after winning immunity at the last channel. I mean, Sharn found a hidden immunity at said challenge, however crapped it out and lead to Benji flushing it out, While she tried to play it on Mat who was getting blindsided by Benji’s insurgence, he managed to take her down and forced her to play it on herself. That of course led to the successful blindside of Mat, leaving Benji to return to camp with a ropeable Sharn, Steve and Shane.

Back at camp things were hella tense and while Benji, Brian, Shonella and Monika were thrilled, zaddy Steve held Shane and Sharn close and comforted them over their loss. Benji then gloated about being the new godfather while Steve and Sharn were in tears, making me hopefully for his downfall after serving his chaos purpose. Thankfully Benji’s hardcore play stoked a fire in Shane and she vowed to channel Russ-hole and sabotage the fire and bring an end to the game. The next day Queen Shonee noted that there was a post blindside shift and while she was worried about it, Queen Shane reminded us not to fuck with Shane Gould and hot damn I need that final two to happen right now.

Everyone tried to pull together, congratulating each other on making it as far as they have until it got hella awkward as Steve and Sharn awoke and Benji tried to be pleasant with them. Sharn then shared about how torn she was, to be screwed by Benji and feeling so alone despite being a strong as shit woman. Albeit, stuck on the bottom. She decided that getting Brian and Monika back on board was her only chance for survival, so approach Grubs to return to the Champion strong mentality and get rid of Benji. While he was awkwardly trying to dance around, she played the bottom perfectly and assured him that Mat’s blindside doesn’t impact on their relationship, and she is willing to use her past with Benji to benefit him and Monika. Sadly Brian saw right through the attempt and vowed not to buy her pledge. Brian took the intel back to the Mighty Ducks alliance and Benji’s ego continued to grow, pushing for loyalty and taking out his ex-ally Sharn.

My boy JoJo and the belly-flop structure of Monika’s nightmare returned for the reward challenge where the tribe would be split in half and race to jump off a tower, grab a ball a shoot as basket, with the first to three snatch fried chicken, chips and softies and DAMN it is worth it, no. Benji and Shane were team captains, with Benji snagging a team of Steve, Fenella, and Shonee leaving Shane to take Brian, Sharn and Monika. Tragically Shane lost the first point to Fenella, despite being a boss. Next up were Benji and Bellyflopika who pencilled dived her way to safety while Benji scored a second point for his team. Brian peed from the platform before battling Steve – and maybe a UTI – who didn’t bellyflop his way to the end, unlike Brian who punched it to the end and got the other team on the board. Lucky he unloaded, right? Shonee and Sharn were next, with Sharn tragically slaying Queen Shonee and tying things up. Shane and Fenella returned to play for victory with Shane nudging the ball out in front and snatching victory like a boss, leaving Fenella desperate for some swimming lessons and Steve in awe of her mad skillz.

Benji and the losers returned to camp with Shonella just glad to get a double portion of rice, while Steve quietly sat and observed what was happening. Benji went for a walk with Shonee, where she shared her vote-steal secret with him, hoping to use it to go from Indian to Chief which is problematic but I feel like it wasn’t meant to be malicious. Meanwhile at the reward, fried chicken proved to be the great equaliser, bringing Brian and Monika back into the Sharn and Shane fold. Shane knew it was her shot and used the time to find a way to undermine the Benji alliance, while Sharn completely missed an idol clue in the ice bucket at the reward. The four agreed to put the previous tribal behind them and to instead focus on taking out the biggest threat in Benji, with Sharn floating a blindside at the upcoming tribal. Shane and Sharn continued to downplay their betrayal to try and bring everyone back together, with them hopeful about succeeding … despite Shane not trusting Brian. Not to be outdone, he made a song and dance about searching for an idol clue, only to casually find an idol at the reward without anyone noticing.

Forgoing any camp action, JoJo returned for the immunity challenge where the tribe were required to bounce a ball on a disc while standing on a box, with Queen Shon hopeful Mat’s departure could even things up for everyone. Tragically Shonee and Monika were out almost instantaneously, before Fenella dropped her ball and joined them. They were then joined by Sharn, leaving Shane and the boys to battle it out for ten minutes. Tragically Queen Shane was next to fall, leaving Brian to try and distract Steve and talk about who is more skilled with balls. Spoiler alert: I am. After an hour, JoJo transitioned them to one hand with Benji dropping, followed closely by zaddy Steve, handing Brian with his first immunity.

Back at camp Benji was feeling super confident about his place in the game, which Sharn pulled Brian and Monika aside to lock in a vote against Benji. Despite Sharn not trusting Brian. The remaining Contenders caught up by the shore, with Benji admitting to feeling nervous about the upcoming vote. He then approached Monika to share that the Contenders were planning to use Shonee’s vote steal and that they would be tying things up if she didn’t jump. Zaddy Steve then got in on the act with Monika filling him in on the plan as they tried to figure out a way to possibly save Sharn. Steve and Sharn caught up, with our two twin-esque heroes struggling to find a way to save her and get to the end. Sharn in particular, struggling with the idea of going out.

The Mighty Ducks alliance were catching up over coconut as Sharn and a sneaky Brian loitered around trying to find some intel. Knowing that Brian is the key to their success, Shonee and Benji pulled Brian aside with Benji saying that Sharn was planning to vote him out … DESPITE THE FACT HE IS IMMUNE. Shonee was obviously ropeable, knowing Benji’s stupidity likely cost them another blindside as they madly tried to pretends she was planning to take him out in the future.

At tribal council Jonathan was quick to remind Sharn of her idol fuck-up at the last tribal council, with Sharn admitting Benji rattled her and cost Mat his game. Benji admitted he only told her to play it for herself to avoid his Mat blindside being ruined. Steve spoke about being heartbroken by the vote, while Benji and Brian gloated about how great a move it was. While Mat was pissed in the jury. Shane gave him kudos for the gameplay but admitted she was pissed … and then sabotaged the tribe but destroying the fire and being an absolute Queen. Reminder: don’t fuck with Shane Gould.

Sharn too was hurt by Benji’s move, Benji tried to downplay the situation as a group move and Shonee explained that had Mat not been destroyed, she and her allies would have been left to wonder who would be next. Sharn spoke about feeling nervous and needing to stay honest, while Benji spoke about finding people to trust and accepting deception is part of the game. Monika spoke about trusting her gut and relying on how she felt when talking to her allies, while Steve shared that it is all about faith and that having faith in people can save you. Before they headed off to vote Shonee played her vote steal, snatching Sharn’s and using it to vote for Sharn … twice. Tragically all it did was tie things up, much to Shonee’s frustration. Though thankfully it lead to the downfall of Benji, ending an epic albeit at times frustrating arc as zaddy Steve giggled like a bae.

Now I KNOW i have given Benji a lot of shit but bitch stole my place on the cast and I am hella jealous. I mean, we are both called Ben, have Sideshow Bob hair and a penchant for flaming out, so I assume that is the only reason I wasn’t there. That being said, he managed to keep this season interesting and without his wild, villainous, oft-nude ride, we’d be pretty bored. Which is what I said as I apologised for yelling at him over some Benjami Drops Wilson.

 

 

A little bit sour and a little bit sweet, these are the perfect food to honour his sneaky, glorious game. On top of that, they’re fucking delicious. Like the rise of villain Queen Shane “don’t-fuck-with-me” Gould.

Benjami Drops Wilson
Serves: 6-12.

Ingredients
250g unsalted butter, softened
¾ cup raw caster sugar
1 tbsp vanilla extract
1 egg
zest of a lemon
2 ⅓ cups flour
⅔ cup raspberry jam

Method
Cream the butter and sugar in a stand mixer for about ten minutes, or until pale and fluffy. Add the vanilla, egg and zest and beat until just combined. Add the flour, fold through, and then beat for a further minute or so, or until the dough comes together. Cover and transfer to the fridge to chill for an hour.

Preheat oven to 160°C.

Roll the dough into golf-ball sized balls, place on a lined baking sheet and flatten to form small discs. Repeat the process until all the dough is gone. Make an indent in each disc, fill with a small dollop of jam and transfer to the oven to bake for twenty minutes.

When lightly golden, remove from the oven and leave to cool slightly before transferring to a wire rack to finish off. Or just devour, whatever you’d rather.

Choc Peanut Butter Aaron Spelting Cookies

And now, the end of The Gold Wing is here and I thought it best to once again go back in time and celebrate with someone that has faced their final curtain – Toto that into My Way, would you? – my dear friend Aaron Spelling.

As you know, I’ve long been a friend of the Spelling Dynasty and my catch-up with Loni – who played Candy in Tori’s hit show So Notorious – reminded me that Aaron has a couple of Emmys to his name, despite creating some of the most iconic TV shows of our time.

I used my time in the purring delorean to finalise my tips for the best series gongs, settling on an ASP clean sweep as The Marvelous Mrs. Maisel takes Comedy, The Handmaid’s Tale goes back-to-back for Drama and The Assassination of Gianni Versace: American Crime Story is honoured for Limited Series. I found things more difficult for Talk and Sketch Series, eventually decided Variety Talk would go to Last Week Tonight with John Oliver and At Home with Amy Sedaris will/should surprise for Variety Sketch.

Oh and I obviously am backing RuPaul’s Drag Race but that should come as a surprise to absolutely no one.

By the time I arrived at the epic Spelling Compound, I was so overjoyed to see Aaron one last time that I didn’t want to let him go. I desperately danced around filling him in on what I had been up to, lest I set off a butterfly effect, eventually shoving Choc Peanut Butter Aaron Spelting Cookies into our mouths to avoid any issues.

 

 

Inspired by a delicious Nigella classic, these babies are decadent, rich and a little bit healthy – yay spelt! – so you can devour them without feeling to guilty. And while that is a total lie, just buy it … because they are worth it.

Choc Peanut Butter Aaron Spelting Cookies
Serves: 2 nostalgic friends, or 6-8 normal people.

Ingredients
150g peanut butter chips
125g dark chocolate
125g spelt flour
25g cocoa
½ tsp bicarb soda
pinch of kosher salt
60g unsalted butter, at room temperature
125g muscovado sugar
2 tsp vanilla extract
2 eggs, still cold

Method
Chuck the peanut butter chips in the freezer and preheat the oven to 160°C.

Melt the dark chocolate in a bowl and leave to cool a little, and combine the flour, cocoa, bicarb and salt in another bowl. In the bowl of your stand mixer, cream the butter, sugar and vanilla for a couple of minutes, or until light and fluffy. Beat in the cooled chocolate until well combined before adding the cold egg. Scrape down the sides, reduce speed to low and carefully add in the dry ingredients, avoiding a mushroom cloud of flour at all costs. Remove from the stand and fold through the peanut butter chips until combined.

Dollop a tablespoon of dough on a lined baking sheet, leaving a large rim for spread, until full. Place the remaining dough in the fridge while you transfer the baking sheet to the oven for ten minutes and bake until just set. Leave to rest on the warm pan for ten minutes before transferring to a wire rack to cool.

Repeat the process until the batter is done, and then devour.

Lena Wafers

Baking, Dessert, Emmy Gold, Emmy Gold: The Gold Wing, Sweets

It is the second last day of this year’s Emmy Gold celebration The Gold Wing, can you believe? And something something segue Gaz, Marg, Ava, Rami and Rhea something, I am thrilled to catch-up with my dear friend and semi-freshly minted Emmy winner Lena Waithe.

Given she won her Emmy with my (problematic) friend Aziz for the beautiful Thanksgiving episode of Master of None, it should come as no surprise that he is the reason we became friends.

I was visiting the set during season 1 and Lena and I got to talking about our coming out experiences, and Aziz suggested that they write it into the second season. So you’re welcome, because that episode was perfection and he and Lena truly deserved that Emmy and I can’t even begrudge them for not including me in the writing process.

Since her victory, Len’s career has absolutely exploded and while it means we don’t get to see each other as often as we’d like, I’m so proud of her. And it makes our fleeting dates even more special. As a fellow writer, I knew that she would be best placed to go through the writing categories with me. Obviously she agreed that The Marvelous Mrs. Maisel’s auteur Amy Sherman-Palladino would snag it for Comedy. Continuing our agreeance, we both backed Phoebe Waller-Bridge for Killing Eve, Steve Martin and Martin Short for their Netflix special and William Bridges and Charlie Brooker will snag it for USS Callister.

With the formalities out of the way, we toasted her success and got to work demolishing a big batch of Lena Wafers.

 

 

Not your childhood’s technicolour crosshatched biscuits, these wafers may not look as perfect but damn they are delicious. Light, sweet and delightfully crisp, they are the only thing worthy of honouring my girl Lena.

Lena Wafers
Serves: 6.

Ingredients
115g unsalted butter, at room temperature
100g raw caster sugar
1 egg, whisked
2 tbsp vanilla extract
1 tbsp milk
200g flour
1 tsp baking powder
pinch of kosher salt

Method
Preheat the oven to 180C.

Cream the butter and sugar in a stand mixer for a couple of minutes, or until it is light and fluffy. Still going, add the egg, vanilla and milk and continue beating until just combined.

Combine the flour, baking soda and salt in another bowl before folding through the wet ingredients. Cover and transfer to the fridge for half an hour.

When you’re ready to bake, place teaspoon sized bowls on lined baking sheets, leaving plenty of space for spread. Flatten each ball to form a thin disc and transfer to the oven to bake for fifteen minutes, or until golden.

Remove from the oven and allow to cool on the sheets for a couple of minutes before transferring to a wire rack to cool completely.

Once set, devour.

Heath Datevies & Walnut Muffins

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Baking, Cake, Dessert, Snack, Sweets, TV Recap

Previously on Australian Survivor the tribe swap gave the Contenders a brief pause from their pagonging, well for some. As the new Contenders dominated leaving Benji and Robbie in power with their interloping Champs. Meanwhile over at the Champions Shane took control of the tribe with the Champion boys and the Contenders girls plus Brian pushing to get her. Sadly for Tegan and Shonee, she stuck with the boys and booted Tegan from the game. Thanks to another twist Tegan was given the opportunity to be saved from another boot by the other tribe, however with this time Benji and Robbie opting to send her from the game. For realsies.

We opened up with the Champions where Mat was surveying the land and found a massive beehive with Steve and Sam. Not wanting to leave it alone, they decided to try and smoke them out to get the honey giving me My Girl PTSD, because Thomas J will never be able to see without his glasses. Steve turned pyro and I got Firestarter PTSD, as the honeycomb eventually fell and the fire somehow didn’t burn out of control, leaving the Champions with a safe snack.

The next day Shonee was feeling left right out with four athletes and a genius, with no similarities to help her bond. I mean, they spoke about how long it too for wheels to be added to things and Queen Shonee was over it. Like, give me a shit tonne of Antiques Roadshow instead of suffering through this shit. Feeling like she should start contributing to the survival aspect of the tribe, she decided to try her hand at cooking, cleaning and doing things the others have done for a month. And the fact she has gotten away with that is why she is the queen, TBH. Particularly since Mat was all in on working with her.

Meanwhile over at the Contenders Heath and Fenella were feeling left out as Benji and Robbie continued to bond with the Champion girls, gloating about taking out Tegan. When really, they only added salt to her wounds technically. Fenella however was ropeable about their stupidity and hot damn it seems like the other side of Shonella is finally going to bring hell. Her new pal Heath meanwhile was confronting Robbie about how getting rid of Tegan was a good idea before hooking up with Fenella to bitch and try to find a way to get out of the mess of their making. Heath floated the idea of beating them at their own game, get the Champion girls and get rid of Robbie ASAP with Fenella decided that targeting Monika and her girl power to find an in. Fenella joined Mon and Sharn to talk about the possibility of doing a girls alliance as a way to find an in … in NUDE ROBBIE, BRB.

Sorry – all I can remember is Robbie getting his buns out and Fenella declaring game on molls. So yeah, episode of the season.

Sensing my desire slowly swinging to Robbie, JoJo returned for the immunity challenge where the tribes would be required to use a rope to drag buckets full of sandbags, which two tribe members would use to knock blocks off a beam which the remaining two people will use to solve a word puzzle. Steve got the Champions out to an early lead while superwoman Lydia showed her first signs of challenge weakness, with Brian getting the second bucket back before Lydia got the Contenders first. Try as Robbie might, Shane and Mat only continued to extend the Champions lead while Benji and Heath finally closed the gap while lobbing their sacks until they found themselves stuck on one errant block. Sam and Shonee had a nice lead on the puzzle, leaving Sharn and Fenella to desperately try and come from behind. Sadly for them and thankfully for Shonee, Brian solved the puzzle from the viewing area and they just got their letters in before the Contenders, winning immunity and saving Shonee from certain doom.

The Contenders returned to camp with Benji once again talking about killing and being melodramatic about the process of voting someone out. Which is less than what I’d be like if I were out there. He and Robbie locked in a plan to get rid off Heath with the help of the Champion women, with Lydia and Monika quickly swearing allegiance. Sharn too locked in the plan with Benji, however his assurance that she was safe sounded shifty and me thinks she is going to do something about it. Heath was not happy about the possibility of going home, so when the Champion girls spoke about being in the minority he quickly assured them that he was on the outs and was more of a free agent than them. He then channeled Sandra and vowed to vote for anyone but him, before pulling in Fenella is another number as he can’t trust Lydia. Not to be outdone, Fenella approached Monika and Sharn to once again float the possibility of a women’s alliance and the three quickly locked in a vote against Robbie.

Given they are floating in the middle, Sharn and Monika went for a walk to discuss which pair would work out better for them. Unsure which would work out top their advantage. Robbie then checked in with Lydia, who told him that Heath was throwing his name out there filling him with rage. He then approached Heath to see what he thought, with Heath trying to get him to see sense and take out another Champion as they head into the merge and deciding that Monika would be the best option. Despite the fact Lydia is the biggest challenge threat and needs to go.

At tribal council Fenella was thankful for sitting in on the last tribal council and the intel they gained. Heath joined her in putting doubt in the Champion women’s mind, saying the cracks were obvious much to the smirks of Lydia. She tried to call him out but Heath straight up said that Mat and Steve – Lydia’s closest allies – were running the game and Sam was looking forward to working with the Champions come the merge. Benji and his rando accent tried to downplay the OG tribe connections, planning to grab whatever numbers he can to make it further in the game.

Lydia admitted to feeling nervous as the odd one out on the tribe, though played up how hard she and her fellow Champs worked to help the tribe. Without seeing that was playing up her status as a threat. Robbie tried to emphasise how close they had gotten, with Monika working the social game to try and make herself less of a target. Sharn was concerned that despite joining to kick out Tegan, the tribe may still be split and would turn on the Champs. Everyone alluded to trust without saying much before Robbie committed that this vote was about who he wanted to work the merge with and Sharn spoke about getting rid of threats come the merge, before Jonathan tried to paint the target on Lydia’s back given she is a beast. Robbie downplayed the importance of strength before Heath and Monika admitted that they are confident they’re in on the plan ala Keith Nale. Sadly like Heath, it backfired as he found himself following his ally Tegan out the door. Just before the merge.

Given Heath is an absolute sweetheart and despite the fact he got nude in episode two, I took him into my arms, well his legs at least – not in a suss way, he is super tall – told him how proud of his game I was, how proud his family would be and how much his friendship means to me. It was oddly platonic, which is unnerving I know, but Heath is a delight and I was heartbroken to see him go. With or without a nude scene. Anyway, the fact that that is so off brand for me makes me nervous so I whipped out a big fat Heath Datevies & Walnut Muffins and took it all in my mouth at once.

 

 

While that is totally more on brand, I challenge you to do anything but when faced with these beauties. Caramelly and sticky, lightly spiced and full of nut – sorry – I can’t think of anything else I want to pack into my gob.

Heath Datevies & Walnut Muffins
Serves: 8.

Ingredients
1 ½ cups flour
2 ½ tsp baking powder
⅓ cup muscovado sugar
1 tsp ground cinnamon
½ tsp ground ginger
pinch of freshly grated nutmeg
pinch of allspice
½ tsp salt
½ cup milk
⅓ cup molasses
⅓ cup canola oil
2 eggs, lightly whisked
1 cup walnuts, roughly chopped
1 ½ cup pitted dates, roughly chopped

Method
Preheat oven to 180C and line an 8-hole Texan Muffin pan. Because Heath is a giant and you can’t give him a regular sized muffin.

Combine the flour, baking powder, muscovado sugar, cinnamon, ginger, nutmeg, allspice and salt in a large bowl, and combine the milk, molasses, oil and eggs in another. Stir the wet into the dry ingredients until just combined. Fold through the walnuts and dates.

Divide your batter into the prepared holes – which wasn’t meant to sound suss, but Steve … I’m always prepared – and transfer to the oven to bake for 25 minutes, or until cooked through.

Remove to cool on a wire rack before devouring.

Courtney Love Cake

Oh my god – what a delight it was to see Courts again! I was anxiously waiting at the VIP exit of Brisbane Airport – the one where Schapelle left from! – and ran straight into her arms as soon as I saw her, breaking down in tears from either feuding with a washed up Gladiator or how desperately I missed her.

JK, obvi it was the latter. My feud gives me life.

Now as you know from my time-travel enabled date with Kurt, I’ve known Courtney for years when we were both huge in the Portland gay club scene where I was turning tricks at the time. She realised that I was destined for greatness – well, a different kind of greatness because no judgement – took me under her wing and vowed to make me a star.

While I kept on stumbling, Courts was never disappointed in me and always made me feel loved and appreciated. She truly is the sweetest person, which is why I’m honoured to have introduced her to Kurt.

Anyway I haven’t seen Courts since she toured Australia four years ago, so it was such a treat to see her, reconnect and see whether she believes that Nico and I will ultimately end up together. Well, if things don’t pan out with The Commando, obvi. And if she and Neeks enjoyed their time with Ru and Mish, obvi.

Given the deep love I have for dear Courts, I knew there was only one thing I could make that would do her and our friendship justice. A delicious Courtney Love Cake.

 

 

A traditional Sri Lankan celebration cake, the Love Cake is moist, spicy and sweet and is emblematic of all that is good in the world. Like my dear ride-or-die friend.

Courtney Love Cake
Serves: 8.

Ingredients
350g raw unsalted cashews
1 tbsp rosewater
1 tsp ground cardamom
2 tsp ground cinnamon
½ tsp nutmeg
200g unsalted butter, at room temperature
1 ½ cups raw caster sugar
4 eggs, separated, plus an additional 4 yolks
1 ½ cups semolina
⅓ cup honey
icing sugar, to serve

Method
Preheat oven to 150°C and line a square cake tin with baking paper.

Blitz the cashews in a food processor until finely chopped. Add the rosewater and spices and blitz again until well combined.

Cream the butter and sugar in the large bowl of a stand mixer until light and fluffy, to the point where they appear to be pulsating. You know the look. Add the yolks one at a time, beating well after each addition before folding through the fragrant cashew mixture, semolina and honey.

Using a clean bowl, beat the egg whites in the stand mixer until stiff peaks form. Fold into the semolina mixture, transfer to the cake tin and bake for an hour, or until firm and cooked through.

Remove from the oven and allow to cool. Before carving, dusting in icing sugar and devouring. With your favourite friend.

Australian Survivor, Australian Survivor: Champions vs. Contenders (2018), Baking, Bread, Snack, TV Recap

Previously on Australian Survivor Anita and Tegan battled it out on Exile, with Anita sent from the game and Tegan sent back to roast the people that turned on her. Meanwhile over at the Champions, everyone was loving life, Steve was giving me life and well … we don’t see much from them because they keep winning. As such the Contenders returned to tribal council where somehow, against all odds Benji managed to avoid the epic fallout from his lies, in no small part thanks to Zach just digging his grave and getting himself booted. I mean, you can tell the exact moment Benji and Robbie could tell that Zach had ruined his game.

We opened up at the Champions with my love Steve Willis, tragically doing clothed yoga while Jackie and Brian roasted him for being quiet, sexy and focused on meditating and exercising. I mean, I love Steve because he is the best … but I’m also loving Brian for the sassy commentary. Well, until it dips over to being malicious, then I choose Steve. Forever and always. Brian continued to watch Steve and Lydia doing yoga in his jocks – which yes, is kinda hot – while Jackie praised how well she was set up on her tribe. She has Brian, Monika and Sam – I think – in her pocket, with Shane so scared she’d jump to anyone, and planned to take out Mat or Steve – BACK OFF – ASAP. Mat noticed the fact that Jackie was rallying troops to get him out, so tried to get Monika on side to launch a counterattack and to take control. So I guess congratulations Contenders, you’ve won immunity.

Speaking of which, the ladies of the Contenders were rejoicing in the peace following Zach’s boot. Shonee in particular was glad to no longer have to smell him or hear about his love of protein shakes, chickens and generally being boring. The girls were interrupted from roasting Zach by a random treemail announcing treasure hidden somewhere at their camp. The tribe giddily ran around the island and discovered that they were given the pity prize of their loved items from home. Paige got photos, Benji got a random doll from his nana, Tegan got her son’s bunny – the same as Brian’s daughter and my niece’s – Shonee got a photo of her zaddy husband, Robbie got a picture of his family, Fenella got a picture of her boyf and Heath got some bracelets and a picture of his daughter, and hot damn if you’re not crying you have no soul. Thankfully it brought them all together and it finally seemed like they may be at a turning point.

With all the talk about dominating the Champions at the next challenge, Jonathan returned for said challenge to see if they could put their money where their mouth is. The reward challenge required the tribe to run and climb up a wall, jump off and grab a rope before swimming out to an A-frame and tether themselves on top, with the first tribe to complete getting to smash nachos and fresh margs like Julie Cooper-Nichol. Mat and Steve thankfully were rocking the speedos so I’m not exactly sure what was happening, though I think the Contenders were in front despite Tegan and Robbie belly-flopping. Since Monika completely axed herself. Shane went for gold to try and close the gap, however the Contenders maintained their epic lead while Monika freaked about having to attempt the dive again … while Steve served cake to the camera. Once again, Mon missed the rope while Mat and Steve willed her to finish as the Contenders ascended their A-frame as Monika smashed herself, this time successfully on the third go. Despite a late push for a comeback thanks to Heath and Robbie struggling with the ropes, the Contenders finally secured their first reward while poor Monika cried in pain.

The Contenders were sent out to enjoy their reward with an ominous note and a warning that since it is a family style nachos, they’d have to be prepared to share. Shonee however was too busy being thrilled by the incoming margs and the fact that they won the first challenge after booting Zach, despite him telling them he was the only thing keeping them together.

Back at camp the Champions praised Monika for persevering through the challenge despite continually axing herself. And while I want to mock it, the fact that she took the moment to remind herself that while she isn’t an athlete she deserves to be a champion and has a renewed fire to take out the win.

At the reward, the Contenders discovered that their share meal and drink came with the mother of all shit twists with everyone eating one at a time and forced to eat as much as they want slash see fit until everyone had a turn. Or the food was gone. With everyone jockeying to try and organise the order to suit them, Tegan outplayed Benji and assured him that the girls would eat less and as such should go first … knowing full well an idol would be hidden at the food. While she searched the entire place, she came up empty handed. Fenella and Shonee followed without looking for an idol, while Paige had a cursory glance before Benji arrived and moved the food from the bottom of the platter to discover a clue etched in the wood. He quickly deduced it was hidden on a sandbank, and just like that my heart broke as he smashed the nachos like a pig and desperately tried to hide the clue. Heath arrived and questioned the mutilated nachos, though didn’t appear to notice the clue … however Robbie did. Oh wait, no. He missed it, despite it being completely exposed. Back at camp Benji gazed out at the island, though was stuck in wait until the tide went down. And even then, he was terrified about being caught and having an even bigger target on his back.

My boy Jonathan returned for the latest immunity challenge where two people would hold a net over a log, while the other tribe would try and shoot coconuts into their baskets with the latest person standing securing immunity for their tribe. So yeah, so Zach … the contenders could probs have used you. And I was totally wrong about Contenders snagging immunity. Both tribes focused on loading up the men, with Heath and Steve slowly getting more and more weight while Fenella and Lydia were chillaxing. Ultimately Heath dropped while Steve struggled, leaving Fenella as the only hope against Lydia. Steve continued to take nut after nut until we both dropped our loads and it became a battle of the women as Fenella struggled and Lydia looked like the challenge beast that she is. Obviously before poor Fenella couldn’t hold out much longer – dem nuts, yo – giving immunity to the Champions again on account of Lydia being invincible.

Back at camp Paige was confident in her ability to play the swing vote, instantly making me nervous about her survival. Everyone was feeling dejected about the upcoming vote, with Benji knowing he can’t snatch the idol ahead of tribal council so instead looked to throw the vote to Paige. Shonee was all in as she can’t read Paige … until Benji tried to win back some trust by admitting that he is a millionaire, which made her instantly want to target him. She then went straight back to Fenella and told her they should vote him out, leading to Fenella saying what we’re all thinking – that his accent is total bullshit. Benji and his accent approached Heath to lock him in on the Paige vote, despite neither of them trusting each other. Meanwhile Robbie and Tegan were also talking about getting rid of Paige and leaving the couples in tact for this round. Benji joined them and assured Tegan he wouldn’t screw her over again, though despite the fact she doesn’t trust him she knows she needs to keep him close for this round. And well Paige just hoped the Survivor God’s would shine on her.

At tribal council Jonathan shaded the Contenders on their losing ways, before Tegan and Fenella admitted that they had each found a close ally, as did Robbie before poor Paige tried to get in on the action despite not being meaningfully allied with anyone. Tegan admitted that she needs to put things aside and work with people, even if she doesn’t trust them. Benji tried to pretend he hasn’t been caught up in his messy web of lies, Heath planned to move past prior blindsides, Shonee reminded us that Survivor isn’t the place to hold grudges and, well, Benji just felt confident her won’t be going home. 95% sure, to be exact.

With that the tribe went off to vote and tragically, opted to run over the girl in the middle in Paige rather than knock Benji’s smug face out of the. And boy was she pissed. While she seethed like I did with Zach last night, I quickly won her over with the smell of a freshly baked Paige de Keragne.

 

 

Pain de Campagne is essentially just a fancy way of saying French sourdough, but when it tastes this good you should let me indulge in my smugness. Adapted from a couple of recipes I found because I wanted an easier option, this easier version is still delicious. And light. And gloriously sour and ready for a slathering of butter.

Paige de Keragne
Serves: 4-6.

Ingredients
1kg 00 flour
250g rye flour
2 tsp yeast, crumbled
800ml tap-cold water
15g sea salt

Method
To make the starter, combine 100g of each of the flours in a bowl with ½ tsp of yeast and ½ cup water. Mix until well combined, cover and leave to ferment for at least 12 hours. I started making it back on day 11 when it seemed likely Zach’s anti-woman stance would take her out.

When the starter is adequately fermented, combine the remaining ingredients with the starter in the bowl of a stand mixer and knead with a dough hook on medium speed for about 10 minutes. Or by hand, if you need to work out some Zach anger. Did I mention Zach and I are feuding?

Once the dough is nice and elastic, shape into a ball, cover with a warm damp cloth and leave to prove for an hour or two.

When the dough has doubled in size, knock back, divide into two or three balls, shape and place on a lined baking sheet. Cover the shaped dough and leave to prove for a further hour or so.transfer the baking sheets to the oven and bake for

Preheat oven to 250°C.

Once adequately proven, slice the top with shallow lines feeling your Meryl-in-It’s-Complicated-making-croissants self and place a baking dish of boiling water in the bottom of the oven. Transfer loaves to the oven and bake for 20 minutes, or until golden and crisp.

Devour, freshly sliced, as the butter melts all over the bread.
