Oh my goodness, Carnie Wilson is seriously the absolute sweetest thing.

And that isn’t even a reference to her soon to be launched, as seen on The Real Housewives of Beverly Hills business Love Bites by Carnie. Simply put, she is an absolute delight.

I first met Carnie in 1968, Bel Air … when she was born. You see, I’m a dear dear friend of her parents – or Mama and Papa, as her bandmate Chynna would say – and Brian asked me to be at the hospital so that I could be among the first people to meet my dear, sweet goddaughter.

As you can imagine, I played quite the integral role in shaping her career and encouraged her and Wen to create the greatest band of all time, Wilson Phillips.

So yep, you’re very welcome. Particularly you, Kristen Wiig … we all know Bridesmaids wouldn’t have been as successful without Hold On. Fun fact: I am the one that pushed the girls to cameo at the end, but that is another story for another time.

Despite being a very diligent godfather, we grew to also be closest of friends and I am so proud of the woman she has become and her ability to forgive my many transgressions.

(I should probs mention that I was once deported for sending death threats to Chris Farley for bullying her on SNL … I’m like Trump before Trump. My lawyers have also advised that I should reiterate that I had nothing to do with his murderdeath).

Anyway, I reached out to Carnie over the weekend to offer her some unsolicited advice about the culinary industry and despite her pointing out that her yet-to-be-launched business is already more successful than this majestic, anthropological/culinary study … she was so sweet about it, that I couldn’t even bring myself to start a feud.

And obvi, I did what I do best and convinced her that if Love Bites by Carnie were ever to move into the trash-party-canape scene, that she would engage we to come up with the recipes, including but not limited to, my Pastel de Carnie Wilson.

 

 

¿Que es un pastel de carne, bobo? Un pastel de carne es no pastel pastel, pero un pastel … de carne ¿ves?

Entonces – sorry, I didn’t even realise I had slipped into Spanish – despite this dish having a Spanish name, it is firmly an Australian classic … that Carnie would beg me to make every time I was babysitting her in the ‘70s.

Rich and hearty, these babies are like a warm hug from a dear friend – like Carnie – when you’re in pain, locked up in these chains … shit, I’m talking in lyrics again. Soz.

Pastel de Carnie Wilson
Serves: 6.

Ingredients
olive oil
1 onion, finely diced
3 cloves of garlic, minced
500g beef mince
2 tbsp flour
½ cup beef stock
400g can crushed tomatoes
2 tbsp tomato paste
2 tbsp Worcestershire sauce
2 tbsp muscovado sugar
1 tsp smoked paprika
salt and pepper
2 sheets shortcrust pastry, each cut into three (mine are oval shaped … so yours may cut differently)
2 sheets puff pastry, each cut into three (as above, yo)
1 egg, beaten

Method
Heat a lug of oil in a large pan over medium heat. Add the onion and garlic and cook for about five minutes, or until soft and sweet. Add the mince and cook for a further five minutes, breaking up with the back of a wooden spoon as you go.

Add the flour and cook for a further minute before slowly stirring through the stock, canned tomatoes, paste, worcestershire, muscovado and paprika. Reduce to low and cook for a further fifteen minutes, or until thickened and reduced. Season heartily and allow to cool, off the heat, for about fifteen minutes.

Preheat oven to 200°C.

Line six individual pie dishes with the shortcrust pastry, trimming the edges as you go and placing on a lined baking sheet. Divide the mixture between the dishes – if I have extra, I just make pastie-esque pockets that are delicious and grotesque – and brush the edges with some egg. Top with a piece of puff pastry, press the edges to join and roll up any excess so it looks decorative … because who wants to waste puff?

Brush the pies with egg wash, cut a hole in the top of each pie and bake for 20 minutes.

Allow to rest for ten minutes before popping out of the tin and devouring, slathered in tommie sauce.

Slash Browns

Despite the doomsday and dramatic names of his albums, my dear friend Slash is the kind of person that fills me with an overwhelming sense of calm. Given everything I’ve done over the years, it is quite clear that is rare as well as a good thing.

While … except there was that one time Slash wasn’t able to keep my epic temper in check which ultimately led to him leaving Guns N’ Roses.

But I should probably take you back a bit further right?

I first met Slash many years ago in England when part of Bowie’s entourage. Slash’s mother used to design costumes for Dave and when we’d drop by I was always drawn to the beautiful sound of guitar in the other room.

From those very first days, I knew that he was destined for greatness and as such made my first attempt at momagering him.

(Oh FYI, I tried to adopt him … thus my plan failing, despite his success).

I then introduced him to Axl in the ‘80s and, as you know, designed what would become the majesty that in Guns N’ Roses. You’re welcome.

While I was a diligent Chief Groupie Advisor and muse – when not in prison – I did get angry with Ax when he opted not to sleep with me after a gig and swiftly went to Slash to quit the band. I was irate, he was loyal – and probably scared – and stepped away. All’s well that ends well though, as I was able to convince him to rejoin the band last year.

Given how busy the boys have been since reforming, I haven’t been able to see much of Slash so it was such a treat to spend a bit of time with him. While we sadly didn’t reconnect in the physical persuasion, I still made him our morning after Slash Browns and for that he is forever grateful.

 

 

Make no mistake, Slash is comforting and delightful … but that pales in comparison to how potato makes you feel. Particularly – and I feel like I say this for any potato recipe – when it comes in the form of a hash brown. Crisp on the outside, light and fluffy on the inside … and complete perfection.

Slash Browns
Makes: 8.

Ingredients
4 potatoes, peeled and parboiled
1 egg, lightly whisked
2 tbsp milk powder
⅓ cup flour
¼ tsp smoked paprika
salt, pepper and caster sugar, to taste
butter or vegetable oil, for frying

Method
Grate the parboiled potatoes and press in a sieve to remove as much liquid as possible. Once dry(ish), place the potato in a bowl to cool.

Once cool, add the egg, milk powder, flour, smoked paprika, salt, pepper and a pinch of sugar, and scrunch with your hands to combine.

Press a small handful of mixture into a hash brown shape, place on a lined baking sheet and continue until done. Cover and place in the fridge for an hour or so.

Once the hash browns have chilled, heat a good knob of butter or lug of oil in a large frying pan over medium heat. When it is nice and hot, place a couple of hash browns in the pan and cook for a couple of minutes either side, or until golden and crisp.

Repeat until done, then devour. With or without eggs and/or Slash.

Jenna Moussaka

Main, Survivor: Game Changers – Mamanuca Islands

Guys – it is less than two weeks until my girl Sandra returns for her third crown … or to at least block Tony and JT from equaling her record.

Not that I don’t have faith in her ability to snatch the crown again. Can you tell I’m excited for Survivor and Sandy’s return?

Given that my girl is an underrated goddess, despite her perfect game record, I felt it best to honour her third attempt by holding court with another underrated victor, my dear friend Jenna Morasca.

Like Sandy, I would defend Jen and her gameplay to the ends of the earth. Sure she ended Rob C’s hope of ever winning the game and feuded with a deaf person but she also stripped for peanut butter – who wouldn’t TBH – went on an immunity run and even gave away immunity without it sending her home.

Plus, she was sassy as fuck, gives a good sound bite and was probably the best appointed winner to make it far in All Stars hadn’t had to quit to be with her mother.

I first met Jen way back when we were both attending University of Pittsburgh studying zoology – I was going through a weird Brendan Fraser/George of the Jungle phase and thought that a knowledge of animals could help.

Given our sassy attitude and good looks we were immediately drawn to one another and became the best of friends. I was her Heidi before Heidi existed, basically. After my many run-ins with Burnett, I kept our friendship quiet as she auditioned which I would argue got her cast meaning I played an integral part in her victory.

We are such busy little bees that we haven’t been able to see as much of each other as we like, so it was such a treat to sit down, gab about the upcoming season and dreams for her eventual return.

Speaking of dreams, my Jenna Moussaka is most definitely one.

Spicy, rich and creamy – this little baby is the ultimate comfort food. Plus, eggplant makes it healthy, so you barely have to feel guilty about the cheesy goodness clogging up your arteries.

Jenna Moussaka
Serves: 8.

Ingredients
a generous lug of olive oil
3 eggplants, cut into half centimetre discs
2 red capsicums, cored and halved
500g beef mince
500g lamb mince
1 tsp ground cumin
1 tsp ground cinnamon
1 tbsp dried oregano
½ tsp ground cardamom
1 tsp chilli flakes
2 onions, finely chopped
4 garlic cloves, minced
800g tinned tomatoes
100g unsalted butter
75g plain flour
3 cups milk
120g parmesan, roughly grated

Method
Preheat the oven to 220˚C.

Place the eggplant discs on a wire rack, over a lined baking sheet, drizzle with olive oil and bake for about half an hour, or until crisp, charred and drying out. Add the capsicum for the last ten minutes to blister their skins.

Reduce oven to 160°C.

While they are cooking, heat a lug of oil in a large pan and cook the mince over medium heat, or until browned. Add the spices, oregano, onion and garlic and cook for a further few minutes. Meanwhile diced up the charred capsicum and add to the pan with the tomatoes. Bring to a simmer, reduce heat to low and cook, stirring occasionally, for about fifteen minutes. Season and allow to rest.

To make the bechamel, melt the butter in a large saucepan. Once foaming, add in the flour and cook until lightly browned and not resembling either butter or flour. Remove from the heat and slowly whisk in the milk until all combined. Return to the heat and cook for a minute or two, or until thickened. Remove from the heat, season and leave to rest.

To assemble, place a third of the meat mixture on the base of a large baking dish. Top with a third of the dried, charred eggplant and repeat the process until both are all gone. Pour over the bechamel, top with the cheese and bake for half an hour, or until golden and bubbly on top. Remove and allow to rest for five minutes before devouring.

Bread, Main, Snack, Survivor: Game Changers – Mamanuca Islands

With only three weeks to go until the premiere of Survivor: Game Changers – Queen Sandra Diaz-Twine’s Triple Crown, I thought it was fitting to mark the occasion with my dear friend and third victor Ethan Zohn.

After the aggressive sex appeal of Colbster in the Outback – not to be confused with Sandra eating at Outback Steakhouse – it was nice to see Africa bringing a calm, kindness to the way Survivor floods my basement.

Ethan was – and still is, FYI – a total babe. Perfect ringlets, kind heart, banging bod – Ethan was everything I didn’t know I wanted from a man and I immediately made it my goal to find and befriend/bed him.

Sadly Burnett had banned me from filming countries during production after the Outback incident but thankfully I found a loophole – identity theft – by the filming of All Stars and found myself in the jungles of Panama with the man of my dreams.

As hard as I tried, I wasn’t able to help this babe achieve a double crown – yes I suggested to Rupert that digging a shelter was a great idea to turn people against him – sadly that wench Jenna Lewis was around though and made sure no winner – not even the babes – had a chance.

I haven’t seen Ethan since his wedding last year, in part because I was busy but mainly because I am heartbroken. Thankfully Ethan was more than keen to reconnect and help win me back.

Even more thankfully, Australia is as hot as hades this week so Eth and I had no choice but to have a minimal clothing catch-up with a sizzling Ethan Calzone.

After poor Eth became the last winner standing in All Stars, I snuck into Loser Lodge and whipped him up a very suggestive calzone. Did you think this cooking for boot things started in Second Chances? Hell no.

I stuffed that soft pillowy dough full of spicy sausage, dripping, creamy cheese and some mushrooms. The mushrooms didn’t add to the innuendo … but it didn’t need. The rest was quite persuasive.

20 days until the premiere – who will join me next week? Lets just say … I love her but we did have a rivalry.

Ethan Calzone
Serves: 4.

Ingredients
7g sachet instant dried yeast
¼ tsp salt
1 tsp caster sugar
¾ cup warm water
2 cups plain flour
2 tbsp olive oil
⅔ cup passata
2 chicken breasts, diced and fried
2 chorizos, cut and fried
handful of mushrooms, sliced
120g chargrilled capsicum, roughly chopped
4 cloves garlic, minced
handful of basil leaves
2 tsp chilli flakes
200g feta, crumbled
mozzarella, just to make it hella cheesy

Method
Combine the yeast, salt, sugar and warm water in a jug. Give a quick stir and leave to get all foamy for about ten minutes.

Please the flour in the bowl of a stand mixer, add the yeast mixture and oil, and need with a dough hook for ten minutes. Transfer to a large oiled bowl, cover and leave to prove for an hour, or until doubled in size.

While the dough is proving, prep the filling and preheat the oven to 200°C.

Punch back the dough, split in four and roll each out into a 30cm (ish) round). Smear a half moon of passata on each piece of dough. Top with the chicken, chorizo, mushroom, capsicum, garlic, basil, chilli and cheeses. Fold the dough over on itself, pushing out as much air as possible and seal the edges.

Place the calzones on a lined baking sheet and transfer to the oven and bake for fifteen to twenty minutes, or until golden and crisp.

Devour immediately, trying to avoid burning yourself on the hot cheese.

Beygel Knowles

Baking, Grammy Gold, Grammy Gold: Golden Little Pill, Side, Snack, Vegetarian

We’ve made it to the end of the Grammy Gold road and it has been nothing short of an emotional rollercoaster. Between Elts and I ending a decades long feud, Salt-n-Peps shooping over to down some squid, Braff and I also working to rekindle a friendship, Nells dropping by to convince me she was still making music and well, barely surviving the sexual tension between groffsauce and I, I am absolutely spent.

But hold up, that doesn’t mean our final visit was going to be cancelled so get in formation – my favourite Knowles-Z, Beyoncé, is finally dropping by for a visit!

As you know, I’ve been a close member of the Knowles clan since starting a fight club in (Whitney) Houston and Bey and I have been best friends ever since.

That being said, I sadly haven’t seen Bey in the flesh since the infamous Met Ball of 2014 … though I was the first to find out about her latest pregnancy. Also yes, the rumours are true – if they are both girls, she will be calling them Kelly and Michelle and if they are boys … Ben and Jamin.

Anywho, Bey appeared – nay, manifested – under the cover of darkness to avoid alerting the media to her pre-Grammy visit and ran straight into my arms.

“Ben, they don’t love you like I love you. You’re irreplaceable, I’ve missed you my little Sasha Fierce.”

“You liked it, well you should have put a ring on it my Dreamgirl!”

We held each other like best friends do and laughed – though I think a part of her was serious – in front of a large wall of imported flowers, covered in a veil, while discussing the upcoming awards.

I’d like to make one thing clear – yes, even Bey thinks she is going to sweep the pool. But who can really blame her? I mean, she has already won 20 Grammys and we both know that the academy is terrified of getting yelled out by our mutual friend Kanye.

Despite it being an evening catch-up, Bey had one pregnant craving she needed me to help with, so I gladly whipped up a big batch of my Beygel Knowles.

I love bagels. Love them. So much. I mean, if you could marry a food I would have put a ring on it already.

My favourite, like these babies, are cinnamon and raisin. I mean, they are a gift from the gods … like Queen Bey. So get boilin’ and bakin’ and get in formation to celebrate her upcoming nine new Grammys.

Beygel Knowles
Serves: one pregnant angel and her babin’ chum. I am the babin’ chum, FYI. Also FYI, it makes 8.

Ingredients
500g 00 flour
¼ cup caster sugar
1½ tsp table salt
7g dried yeast
1 tbsp ground cinnamon
125g raisins (or sultanas but they are as juicy as I feel around Jon)
1 egg, beaten

Method
Combine the flour, sugar, salt, yeast, cinnamon and raisins in a large bowl for the stand mixer. Using the dough hook by hand, slowly stir in 300ml of warm water until everything is wet. Transfer to the stand mixer and knead for about 10 minutes, or until smooth and elastic. If you need more water, add it a tablespoon at a time. Place the dough in a large oiled bowl and allow to prove for an hour or so, or until doubled in size.

While it is proving itself preheat the oven to 180°C.

When the dough is as big for its britches as Tay Tay when she beat Bey – remember that controversy? – knock it back to size and break into 8 equal pieces. Roll them into balls and push a finger through the centre to form a ring. Place on a lined baking tray and allow to prove for half an hour.

While they are proving again, bring a pot of water to boil.

Once the bagels have double in size, drop them into the water one at a time, and cook for thirty seconds each side. Transfer to a wire rack and continue until done.

Transfer them to a lined baking sheet, brush with the egg and bake for about fifteen minutes, or until golden brown.

Devour, slathered in butter or cream cheese. Like a Queen.

Elton Johnnycakes

Breakfast, Grammy Gold, Grammy Gold: Golden Little Pill, Snack

I know what you’re thinking – did hell freeze over? While technically, the answer is no (as far as we can tell), both Elts and I felt that with Trump’s election, the impossible and stupid is now possible and so our feuding should come to an end.

Despite my pledge to always be his staunchest of rivals.

We started a renewed correspondence back in mid-December to throw shade at the vile pig that was elected as the President of the United States. After a few weeks of back and forth rage, we realised that despite our tumultuous past it was time to unite for the greater good of the world – it is amazing what a mutual enemy does for one’s friendships!

(Yes, I’m now going for a Nobel Peace Prize too – FYI … in lieu of the Oscar he made me lose in the ‘90s).

Wanting to sort out our issues before we both changed our mind – and given the fact he has his own Oscars celebration – I decided to mark our renewed friendship by including him in our Grammy Gold celebrations, rather than wait (or rub salt in the wounds) for Oscar Gold.

While it was obviously, extremely awkward for a good twenty minutes or so as we both circled each other hurling back-handed compliments, until I softened and mentioned his spawn, softening his heart and allowing us to truly connect like in the good old days.

Well, almost – he hadn’t had a post-flight colonic. Which reminds me, he obvs wrote Benny and the Jets about me during happier times.

Not to let that dampen the mood, I quickly whipped up a batch of my Elton Johnnycakes – for the first time post feud – which was our go to post-coitus (or colonic) snack.

Pancakes are good and all, but how can you go past a option that is thicker, juicer and packed full of a different flavour. Gah – I think I missed Elts in our time apart, don’t tell anyone.

Elton Johnnycakes
Serves: 4.

Ingredients
150g polenta
100g flour
1 tbsp baking powder
1 tbsp raw caster sugar
pinch of salt
2 eggs
300ml milk
30g butter, melted

Method
Combine the dry ingredients in a large bowl and whisk together the milk and eggs in a jug. Stirring constantly, whisk the wet ingredients into the dry until some and combined. Finally, whisk in the butter.

Meanwhile heat a skillet over medium heat. Melt a small lug of butter and when foamy, add in a ¼ cup of batter into the pan. After a minute or so, flip over the cake and cook for a further minute. Transfer to a plate.

Repeat until done and devour in bed, alone or with a dear friend (in the ‘70s obvs, not now).

Piper Perapoutine

A decade of saying so, Gravy, Main, Party Food, Side, Snack

While Loz got me thinking about the beauty of Because I Said So – it is like a La La Land before its time … in that they were both snubbed by the SAGs for best ensemble cast – it was Ads that sealed the deal last week as we spoke fondly of our dear friend Piper Perabo.

I met Pipes on the set of Coyote Ugly where I was performing as Adam’s stand-in and body double. I’m not sure if it was beauty, our mutual hate for LeAnn Rimes – she stole my sixth husband and Pipes had my back – or the fact that love scenes are hella awkward and you’ve got to have a good rapport, but we instantly formed a friendship and I helped jettison her into the stratosphere of fame.

I haven’t been able to catch Pipes lately given her starring role in the underrated, sudsy gem Notorious, but thankfully its likely axing freed up her schedule and allowed her to drop by for a celebratory date.

But seriously, go through Pipes credits and see how many underrated classics she has been in – get this woman another damn hit.

Pipes and I quickly got to work gossiping about LeAnn and Tyra – we got yelled at like Tiffany on set – plotted ways to reboot the Cheaper by the Dozen franchise, bitched about the Don’s worse than even anticipated first week and toasted her classic 2007 film … over a big bowl of comforting Piper Perapoutine.

Yes – poutine would be classified a comfort food, given the generously gooey curds, velvety gravy and, well, potato (when isn’t it comforting?), and this date is meant to be a celebration.

But when your modern classic is rated 5% on Rotten Tomatoes, you sometimes need a little comfort to get you in the mood.

Piper Perapoutine
Serves: 2 sad friends.

Ingredients
500g washed potatoes, russet work best but I’m not a dictator … like Trump
a good lug of olive oil
3 tbsp unsalted butter
3 tbsp flour
1 cup chicken stock
salt and pepper, to taste
a very generous handful of cheese curds (or baby bocconcini in a pinch like I had to, but make no mistake it is not the same)

Method
Preheat oven and two baking sheets to 220C and cut the potatoes into thick batons. When the oven has come to temperature, remove the baking sheets, line them, separate the potatoes across them, coat with a good lug of olive oil and return to the oven. Immediately reduce heat to 180C and bake for fifteen-twenty minutes, or until golden and crisp.

While the fries are baking, melt the butter over medium heat in a small saucepan. Whisk in the flour and cook for a minute or two. Remove from the heat and slowly whisk in stock until combined and smooth – remove it from the heat should avoid lumps, but just in case ok?

Return to the heat and bring to the boil, reduce heat low and simmer until thickened. You may need more stock to get it to the consistency you like, so go nuts and stop whenever it gets to your preference. Season generously and remove from the heat.

By this point your chips should be done, so remove from the oven, lightly salt and transfer to a plate. Top with the curds and drown in gravy – because comfort, duh – and devour.

Adamper Garcia

Baking, Bread, Side, Snack

While Adam was a little bit offended that I called him a diva earlier in (which kind of proves my point, no?), there is nothing more unifying than joint anger. And thankfully we were both enraged and disheartened to find out that neither of us had won – let alone been nominated for – Australian of the Year.

I mean, sure neither of us are scientists that have made massive contributions to society, but Coyote Ugly is a modern classic and this blog is giving the under-connected a glimpse at life on the A-list. I don’t think the Australian of the Year committee are fully appreciating our value.

Anyway, we are both insanely offended, which meant the committee distracted Ads from my shade and we were able to celebrate ourselves – because evidently no one else was – and our country – who evidently hates us – like it were the good old days.

Not that I’m bitter though, or anything.

Ads and I haven’t seen each other in about a year, after he had to pull out of the stage production of Singin’ in the Rain due to a leg injury. I took over the role – at his request FYI, this isn’t a Showgirls situation – and our friendship had to play out over Skype only, while talking smack about our annoying co-stars.

After quickly reconnecting – sadly not physically, now that he is married – I got to work whipping up something delicious for our catch up. Given my love of his pillowy buns and the need to make something horrifically Australian, I just couldn’t go past a simple, classic Adamper Garcia.

Make no mistake, damper may be simply but it is insane delicious … though maybe that has a lot to do with the fact that they are essentially a giant scone. Doughy and salty, it is the perfect thing to sop up some butter and honey or golden syrup.

So yes Latrice, damper is essentially a biscuit – enjoy!

Ingredients
3 cups flour
2 tbsp baking powder
pinch of salt
100g butter, chilled, cubed
¾ cup water

Method
Preheat oven to 180°C.

Combine the flour, baking powder and salt in a bowl together. Add the cubed butter and rub together with your fingertips until it resembles wet sand / breadcrumbs – Adam and I made it look like a culinary version of Ghost and it was amazing.

Pour in the water and use a knife to cut across the mixture until it is all combined, adding extra if it appears dry.

Bring the dough together with your hands and shape into a large cob-esque loaf. Place on a lined baking sheet, cut a deep cross into the dough and bake in the oven for half an hour, or until golden and cooked through.

Transfer to a wire rack and allow to cool slightly, before slathering in butter and your chosen condiments and devouring.
