It is the second last day of the 12 Days of Chrismukkah celebrations / our second last recipe of the year – can you believe it?

Instead of lamenting how sad you’re going to be during our annual Christmas break, be thankful that I was able to make time for my dear friend Autumn Reeser.

Full disclosure I absolutely hated Autumn when we first met on the set of season three where she started out as its nuisance but like her character, she wore me down and we’ve been the best of friends ever since, landing he roles in Entourage, Sully and a guest role reunion with Rach on the underrated Hart of Dixie.

I haven’t seen Autumn since the Sully premiere – I was attending as TamTom’s date, so was sadly to busy to really reconnect. Thankfully she was free for a pre-holiday catch-up and to strategise her next careers steps and have a little girl talk.

Now I know I said the duck was delicious, it can also be made better with the inclusion of some gravy.  And thankfully Autumn has odd tastes and was completely cool to just sit down and gab over a nice jug of Portumn Reeser Gravy.

In retrospect, this would have made more sense to post with yesterday’s recipe … but what are you gonna do, amirite? As a stand alone, this robust gravy is delicious – fruity, rich and full of flavour – but with a freshly roasted duck, it truly sings.

Portumn Reeser Gravy
Serves: 4-6.

Ingredients
2 tbsp duck fat from the Roast Melinda Duck
1L chicken stock
2 tbsp plain flour
200ml red port

Method
Transfer the duck fat to a saucepan (and decant the extract to a mug for tomorrow’s recipe) over medium heat – which shouldn’t take long, given you just decanted some from the oven – and add the flour and cook for a minute or so.

Slowly pour in the stock and port, whisking as you go, until it is all smooth. Add the charred veggies and bring the gravy to the boil, reduce the heat and simmer for half an hour, or until thickened.

Strain the gravy through a sieve, pushing out every last drop of flavour. Devour on some duck … or in a jug, no judgement.

Ken McPickle Dip

Condiment, Dip, Party Food, Side, Snack, Survivor: Millennials vs. Gen X, TV Recap, Vegetarian

Previously on Survivor, Ken made the best decision for him – and everyone in the final three – and sent David out of the game as the final juror.

The next morning Hannah started talking about the sunrise – and being hungry – while Ken complained about those dang millennials – despite being the one to defend them in the first episode.

After a brief interlude of the final three talking about why they deserved to win over breakfast, Ken, Hannah and Adam arrived at final tribal council ready to sit in front of the jolly firing squad that is the jury.

Taylor kicked off the fun offering them all a chance to deliver opening statements before Sunday got to work asking each to describe how adaptable they were where Ken – out of nowhere, like Australian Survivor’s Kristie – started throwing shade at Hannah, which Adam jumped on board of. Hannah – wanting a piece of the Kristie-esque action – cut him off and outlined why she had been making all of the decisions and that she voted Sunday out for being a threat, not as a mistake which Adam was trying to say.

Jess then asked Ken how he could vote David out after putting himself on a pedestal for the previous 37 days. He then broke my heart and mentioned that above all else, his alliance is with his daughter.

Take me Ken – take me now!

Will then congratulated Ken for making the move and threw Adam under the bus for being on the wrong side of the numbers all the damn time. He then tried to throw Hannah under the bus, who once again fought back and said that going rogue, as Adam was saying she did, was her taking control of her game.

Channeling Stephen Fishbach, Zeke arrived to talk about the evolution of the game – or game change, if you will – dismissing Ken for not adding to the narrative and allowing Hannah and Adam to continue their fight about who played the better game.

Whoever you prefer out of the two, they have to be congratulated for entering final tribal ready to battle for the title.

Michelle returned to the screen in all her glory and asked Hannah how many times she was on the wrong side of the vote – for the record, it was once. She then asked Adam why she should vote for him despite his failings – he again started to throw shade at Hannah, who again wouldn’t take his shit and outlined why she made the right decisions.

Bret came for my boy Kengel, which immediately pisses me off before Ken started fighting with Adam who was underestimating him. Jay soon followed to ask Adam why turned on him, rather than using him to take out David – spoiler alert, you were also a threat and one that was more likely to win immunity. Plus, the best he could do is force a tie. They then referenced Adam’s mother’s illness but Adam chose to stay quiet about it, which I found quite interesting.

Chris then announced that he wasn’t a coach and was actually a trial lawyer, putting to bed a secret that I never knew existed. Luckily for Adam, he then played the role of juror going into bat for a flailing finalist and implored the jury to vote for Adam, who he believed had played the best game.

Closing out tribal council, David asked everyone to outline how the experience had changed them.

Swoon.

Hannah spoke about her growth – aka the Cirie Fields memorial arc … which she shared with David, Ken then spoke about having to overcome being socially awkward to win for his daughter. Adam closed out the show talking about how Survivor was a shared dream with his mother and broke down. Again, breaking hearts completely knowing how that story ends. With that the jury voted, though sadly none for Ken and Hannah as Adam was crowned the Sole Survivor.

So Ken is the outlier in the cast because we weren’t actually friends before filming, which you may have been able to tell thanks to my lecherous recaps each week. I mean yes, I talk lecherously about my friends all the time but I couldn’t go as far as I did with Ken if I knew him.

Anyway, I wanted to make something worthy of his beauty, inside and out, that would also impress him and gain me entry into his pants. I’m pretty sure my phallus-alluding Ken McPickle Dip fits the bill … because who doesn’t want a bit of Ken’s pickle?

While Ken wanted to take our relationship slow, he did love the tangy, creamy dip and let me smear it on his face, nips and abs. So I think we have a future – everyone pray for me, or something.

Ken McPickle Dip
Serves: 2 future lovers.

Ingredients
300ml sour cream
250g cream cheese, softened
1 cup dill pickles, finely chopped
1 tbsp Worcestershire sauce
1 garlic clove, minced
1 tbsp dill, finely chopped

Method
Mash the cream cheese with the sour cream, until smooth.

Stir in the remaining ingredients.

Devour with crackers … or off a nipple.

Chillijamin McKenzie

Can you believe we almost survived 2016 – huzzahs all round! While the year has been the absolute pits, I’m still hoping to salvage it with the ultimate festive celebration with my he-bros, gals and gentiles of The O.C.

Given my close relationship with the cast, I’ve had many a sleepless night over the last few weeks, trying to perfect my Chrismukkah catch-up schedule that a) won’t offend anyone – you know that Tate can be a bit of a diva – is b) festively appropriate and most importantly is c) culturally appropriate.

With those criteria in mind, there was only one person I could select to open up our 12 Days of Chrismukkah celebrations – the incomparable Ryan Atwood … aka Ben McKenzie ak-to me-a Benny Mac.

I’m an old family friend of the Schenkkans – oh FYI, McKenzie is totally his stage name – having worked with Ben’s grandfather and President Lyndon Johnson to pass the Public Broadcasting Act of 1967. While I had a falling out with Presi Jo after he discovered my many scandals and personal foibles, Ben’s grandfather took me in and raised me as his own … and I’m sure you can put it all together and see that Ben was named after me.

Anyway, my career and addictions took off and took me away from the family for an extended period of time but when we needed a brooding unknown to play the classic character Ryan Atwood, I knew that my pseudo-nephew and namesake was the only person capable of playing the part.

After Ben was done reenacting the scene when Ryan and Marissa meet with fans in my driveway – don’t tell him but those people that just happened to be waiting for us when we got back from the airport are fans that purchased an O.C. experience for an exorbitant amount of cash – Ben was thrilled to be able to relax, catch-up and celebrate the start of our festive fun by helping in my sweatshopkitchen to make a generous batch of an edible gift, in the form of my Chillijamin McKenzie.

Like Ryan, the jam is deceptively sweet with a good kick of heat, spice and heart.

And obviously you want to drizzle him all over your meat … or cheese (but that is less smutty, unless … ).

Chillijamin McKenzie
Makes: 1.5L.

Ingredients
lug of olive oil
1 onion, peeled and blitzed in a food processor
3 cloves garlic, blitzed in the aforementioned food processor with the onion
pinch of salt
150g fresh hot red chilli peppers, tips removed
150g capsicum, cored, deseeded and roughly chopped
1kg jam sugar
600ml cider vinegar

Method
Heat a small lug of olive oil in a small saucepan over low heat and cook the onion, garlic and salt for about ten minutes, or until fragrant, sweet and soft.

Place the chilli and capsicum in the food processor and blitz until they are finely chopped into delicate flecks. Or fleeks. This is totes on fleek – you girls keep me young!

Combine the sugar and vinegar in a large saucepan over low heat and cook, sans stirring, until dissolved. Add in the chillis, onion and garlic and stir to combine.

Turn the heat up to medium-high, bring to the boil and cook for about ten minutes with minimal stirring – less is better, but I won’t judge.

Take the pan off the heat  and allow to cool for half an hour, in which time sterilise some jars.

After the half hour the jam should have started to thicken and be suspending the flecks throughout the mixture. Decant into the jars, seal tightly and allow to cool.

Refrigerate after opening.

Brandy Custard

Guys *spoiler alert* this is the last regular, non-Survivor, non-festive-spectacular recipe of the year. Can you believe it?

Now before you start applauding and rioting on the Facebook – which if you ask my mother-in-law’s man-friend is the internet – begging for us to be banned from the internet in 2017, just enjoy these last few moments for the year and I’ll let you have a few weeks off before I terrorise your eyes for another year.

Please – I’m just a poor, old, flailing millennial and I need this outlet. Where is Probst to comment on my generation, when I need him?

Anyway – I’ve gotten sufficiently off track … but I feel such a beautiful and talented soul like my dear friend Brandy Norwood is deserving of some long winded preamble, as terrible as said preamble is.

I first met Brandy in the early ‘90s when I hired her as a backing vocalist for my defunct girl group Gurlfriend. It is defunct because the hit Australian girl group Girlfriend sued me for being a blatant rip off.

Which it wasn’t.

I had promised Brands fame and fortune if she took up the role, so to make it up to her I secured her the lead role in Moesha.

Despite a brief falling out after she won a Grammy in ‘99 for That Boy is Mine, which i wrote but was sadly stricken from the credits, we reconnected on the set of Brie Larson’s defunct sitcom Raising Dad in 2002.

Fun fact: to punish her for making me miss out on a Grammy, I went back in time and forced her to star in I Still Know so that I could watch her be survived by JLH. How do you deal, Brands?

While yes, sending her back to star in that trainwreck was cruel, Brandy took it all in her stride and we’ve remained close ever since. She is, no lie, a damn saint.

So I had completely forgotten that you can’t have an Eve Plumb Pudding without a generous helping of Brandy Custard. Thankfully Brandy had a clear schedule – I mean empty, bupkis, zippo – and was able to jump straight on the plane to whip some up with me to help devour the leftovers.

Full disclosure and likely not shocking anyone, I used to be the proud owner of an irrational fear of brandy custard. As far as I’m concerned though, anyone that has suffered through the cartoned crap should.

Brands finally wore me down and convinced me to whip her up a batch and now I have a passionate love for the boozy, velvety delight – enjoy!

Brandy Custard
Serves: 8.

Ingredients
6 egg yolks
⅓ cup raw caster sugar
2 tbsp cornflour
⅔ cup milk
3 cups double cream
¼ cup brandy
1 tsp vanilla bean paste

Method
Combine the yolks and sugar in  one bowl and the cornflour and milk in another.

Heat the cream in a saucepan over low heat and slowly whisk in the egg and cornflour mixtures, followed by the brandy and vanilla bean. Continue whisking for a couple of minutes, or until thick and glorious. Serve warm with Eve Plumb Pudding.

Queso Fundido

With Thanksgiving now less than two weeks away, I’ve decided to start taking stock of my life and remembering what I am thankful for. Hella deep, right?

While I am forever thankful for my exes Jiffy Pop and Skarsy, I’m also thankful that *soon to be spoiler alert* Gilmore Girls is about to make a return to TV, Leo finally snatched a damn Oscar and, always and forever Alyssa Edwards, am I thankful that my dear friend Dido Florian Cloud de Bounevialle O’Malley Armstrong goes by the mononym of Dido.

As such I decided to invite her over for a pre-Thanksgiving date and to once again thank her for not forcing the tongue-twister on the world.

I’ve known Dido for years after lecturing her in law at Birkbeck, University of London – seriously the amount of universities I bamboozled into hiring me to lecture in law is terrifying and all it took to get each job was to scream that is assault.”

Obviously she discovered the scam and obviously she forgave me however unlike many celebs that caught on to my scams, Dido was crafty enough to blackmail me into launching her music career.

I would go as far as to say it is the proudest I have ever been in my life.

Anyway, her blackmail led to getting her song included on the Sliding Doors soundtrack – you should see the rest of the pap photos I took of Gywn and Brad’s holiday (obviously, NSFW) – an introduction to my dear Eminem to convince him to sample her song and most importantly bribing the Academy into nominating her for If I Rise.

I also successfully bribed the Razzies into giving her the award for Worst Original Song … but she wasn’t thrilled about that.

Being as busy as I am, I haven’t been able to see Dido and congratulate her on her 2013 comeback – though given I just heard about it, I didn’t know whether it would be appropriate. Either way, I made a Queso Fundido which is more than celebratory … just in case.

I’ve said it once and I’ll say it a thousand times before dying of cheese clogged arteries, cheese is the greatest thing in my life – outside of my husband, it is without doubt, my great love (sickening display of genuine emotion, I’m sorry).

Add chilli, booze and a fat spicy sausage and you’ve well and truly got yourself a party – enjoy!

Queso Fundido
Serves: 4-6.

Ingredients
3-4 chorizos, skin removed
1 onion, diced
2 clove garlic
1 green capsicum, diced
¼ cup tequila
250g vintage cheddar, grated
250g gouda (smoked if you like it super smokey), grated
generous pinch of flour
2-3 tomatoes, diced
small handful of coriander, roughly chopped
Tortéa Leoni Chips, for dippin’

Method
Preheat the oven to 180C.

Heat a small skillet over medium heat and fry the chorizo until brown and crisp. Remove from the pan to drain on some paper towel.

Wipe out the pan, return to the heat, reduce to low and cook the onion and garlic for a couple of minutes, or until soft and fragrant. Add the capicum and tequila and cook until the liquid has reduced a little. Remove from the heat.

Combine the cheeses in a bowl and toss through a generous pinch of flour. Add the cheese to the still warm pan and stir to combine. Top with chorizo and place in the oven for about ten minutes, or until cheese is bubbling and hot.

Serve straight out of the oven with some Tortéa Leoni Chips – obviously being careful of the hot pan, like I wasn’t – topped with tomatoes and coriander.

Figgy & Prosciutto Tarts

Main, Party Food, Side, Snack, Survivor: Millennials vs. Gen X

Previously on Survivor, the Millennials and Gen X tribes were no more as the tribes dropped their buffs – in addition, I assume, to Taylor and Figgy’s busy pants dropping schedule – and Jeff threw a third tribe into the mix, much to Michaela’s sassy chagrin. Thankfully the situation didn’t get any worse for our reigning Queen of Fiji with new Vanua heading to tribal council and CeCe continued in the season’s tradition in booting minority female.

We opened back up at new Vanua where the old, olds were proud of themselves for flipping to the youngins … on the one tribe they had numbers on, much to Zeke’s delight.

Meanwhile over at the new Ikabula tribe, Jay started on his winner’s edit in earnest while breaking my heart, searching for the hidden immunity idol to protect his fellow millennials like he would his mum and sister. Oh and when he wins he is buying his mum a house.

Swoon town – I think someone wants to take Kengel’s place in my heart.

Thankfully Michaela arrived on scene impersonating Jack Nicholson in The Shining to catch Jay and Will and add some humour to the scene and save me from feeling genuine emotion.

I assume feeling threatened by Michaela’s killer screen presence, Jiffy Pop arrived for a reward challenge where Figgy commenced digging a hole when seeing CeCe had been booted and her ally saved. Jeff kindly distracted the tribes from her stupidity to show them the array of sweets up for grabs during the blindfolded challenge.

It is hard for a blindfolded challenge to go wrong … for the audience, with toes broken and heads slashed open in the past, but sweet Kengel caressing his junk will go down with my favourite blindfolded challenge moment of all time.

That actually gives me an idea …

Anyway after a massive come from behind victory, Zeke and Michelle secured reward for their tribe and – of course – Queen Michaela took out second place for her Ikabula, before Hannah collapsed … on the sidelines, while not competing in the challenge. But hey, I get panic attacks so I’m not one to judge. Well, shouldn’t be at least.

After watching Figgy cry over missing out on reward, we returned to Vanua to watch them feast on their reward and listen to Zeke commence severing ties with the fellow kids. Over on Ikabula, Hannah walked Sunday through the fun of panic attacks while on Takali, Figgy and Taylor commenced making out – I assume for Figgy to reenact the Halle Berry role in the Monster’s Ball sex scene – and considered bringing their relationship out into the open.

Obviously Jessica and Ken were not shocked. At all. In the slightest.

Thankfully it gave Kengel the opportunity to display some killer sarcasm. Say what you will about it being the lowest form of comedy (fuck you, it is my life blood), this proves Kengel is hot and funny …  so I’m looking into venues for our December wedding.

Almost as if Jeff knew someone else was making a claim for my heart, he returned for an immunity involving my favourite item – BALLS! Despite a decided lack of ball puns, Michaela saved the challenge by once again unleashing the – to quote Alyssa EdwardsBEAST and singlehandedly won immunity for Ikabula by barking orders at Hannah and ensuring she wasn’t a hindrance.

Not one to rest on her laurels, she then commenced barking orders to Michelle and Zeke, coaching Vanua to victory and sending Takali to tribal council to boot another Gen Xer.

Sadly for her, Adam decided to flip from the bottom joining Ken and Jessica to break-up the lovebirds and vote out Figgy. Thankfully despite the fact it was pretty obvious she was going home, Jeff added some fun to tribal by offering to marry them, then and there. Again sadly, that didn’t happen.

While Figgy was obviously disappointed to find herself booted pre-merge – I mean, will TayTay dump her for it?! – I was quickly able to turn my friends’ frown upside-down (we met while working in radio in Nashville) and dry those tears with a batch of delicious mini Figgy & Prosciutto Tarts.

Like the Figster, these babies are a little bit sweet, puff and wild, and quite tarty – but isn’t that why we love her, and them?

Figgy & Prosciutto Tarts
Serves: 6.

Ingredients
3 sheets frozen puff pastry, thawed
¼ – ½ cup fig jam
250g prosciutto, roughly sliced
400g goat’s cheese, crumbled

Method
Preheat oven to 180°C.

Place each sheet of puff pastry on a lined baking sheet – they can share, if they fit. Slather each generously with fig jam, top with prosciutto and crumble over the goat’s cheese.

Chuck them in the oven and bake for fifteen minutes, or until puffed and golden.

Devour as you cry over the horrific separation of figtayls. Oh-oh.

JL Salkeld Caramel

Australian Survivor, Australian Survivor (2016), Condiment, Dessert, Snack, Sweets, TV Recap

Previously on Australian Survivor, the alliance continued to be led by a dominant trio while Matt lacked the self awareness/respect to see that JL was speaking the truth and that he was well and truly on the bottom – not in a good way – before poor Sue found her way out of the game and into the jury.

We arrived back at camp where Matt continued to be deluded, JL scared for her ever more precarious position and Kristie pissed to have received 4/9 votes. Surely that means we are in for a blindside tonight, right?!

Lol – the ads said it, so no.

In the words of my dear Celine Dion, a new day has come and we opened up with the contingent who have never seen an episode going fishing before Lee opened up to Kristie that he was forced to write her name down because that is what his alliance wanted. Thankfully Kristie is aware that this is a game for half a million dollars and knew that this was a possibility and stayed quiet.

At this point, if anyone other than Kristie wins (or Brooke, as the most likeable of the trio), the season is a waste.

Kristie then approached JL, knowing that since they are the only two – outside of Brooke – with a brain, that they need to make a move and convince the idiots to do something – ANYTHING – to save what started out as a promising season.

Thankfully the power trio then started talking to JL about the fact that they would have to start turning on people – aka the basic premise of Survivor – giving me hope. Misplaced hope probably, but hope nonetheless.

Sam then decide to take a leaf out of that evil snake Nick’s book and commenced plotting the downfall of El and Lee, aka two of his four closest allies … leading to old Saanapu proclaiming that literally doing the bare minimum, is the biggest move of Survivor in all time.

Remember when Craig, Phoebe and even – I hate myself – Andrew were in the game? Who would have thought Andrew was part of the gold old days era?!

We arrived at the immunity challenge where Flick acknowledged that they have to vote people out and JL noted she is fucked if she doesn’t win. So obviously, she didn’t win – Brooke did – but more shockingly Dim Sam was smart enough to do well in an intelligence/memory challenge.

Sam.

The tribe arrived back at camp to commence scrambling, however considering the dominant alliance all applauded and congratulated Brooke upon her victory, it was looking more likely that JL’s promise to not go down without a fight, will still end up with her going down.

Aside, remember Kat? So great. Her hat was more strategic than half the remaining cast.

Two that were smarter than her hat, JL and Kristie, went to find a way out of their hole by playing up their pawn status, Flick and Brooke were feeling bad about having to turn on El and Lee to win – although highly likely, NOT TODAY – and JL told El that she needed to do something if she wants to win.

We then arrived at tribal where JL continued to call out the tribal dynamics and position herself as a valuable number. Lee and Brooke then scoffed at the money, begging the question why the hell do you play if you don’t want to win? Matt then pretended he knows about strategy, El made me pray for that blindside and Lee edged towards losing my love completely and Flick took JL’s bait and announced that their is a smaller alliance within the boring alliance, hopefully waking up El and Lee.

Sadly, despite all of her hard work and Flick’s massive misstep, JL found her way out of the game and into my loving arms.

As we are both Queensland based writers, JL and I have enjoyed a close relationship for many years after meeting at law school where I was mock Annalise-ing my way through a scam. Yes I was found out, but JL is kind, loyal and knows that building friendships with story generators is good for a writer, so we remained very close. The only thing sweeter than our friendship is my Jennah-Louise aka JL Salkeld Caramel … which is coincidentally, what I made her to dull the pain of joining the jury and celebrate her status as the last remaining Vavau.

Welcome back! How amazing is it? Sweet, salty and smooth – it is life affirming and delicious and uplifts everything it touches.

JL Salkeld Caramel
Makes: 500mL … ish. Well technically I guessed the size of the jar, it could be a tablespoon given my spacial awareness.

Ingredients
2 cups raw caster sugar
180g unsalted butter, at room temperature and diced
1 cup heavy cream, at room temperature
1 tbsp maldon salt

Method
Melt the sugar over medium-high heat in a medium, heavy bottomed saucepan, stirring minimally. Every recipe calls for something different at this stage, but I get too paranoid it will burn if I don’t stir, so do what feels right?

Once the sugar has dissolved, let it bubble away until it turns an amber colour, at which point add the butter and whisk like crazy. It will steam, spit and get angry – kind of like me at any given moment – but in the words of Dory, just keep whisking … until all the butter is combined.

Remove the caramel from the heat, slowly adding the cream – again while whisking, avoiding the rage of the caramel. Stir until combined before whisking in the salt.

Set aside to cool for about half an hour before decanting into a jar / your mouth.

No judgement.

If you refrigerate, you’ll need to heat it – very carefully – before use.

It is so hard being a close friend of celebrity dynasties. I mean, you catch up with one of your dearest friends and next thing you know, their kid half-sister is calling begging to reconnect as well!

Sure I would consider Joely Fisher a dear friend but just because I needed some soul affirming love from Carrie doesn’t mean I need to field over 100 missed calls a day from Jo, begging to catch-up.

After a quick call from my service provider begging me to just take the damn calls and free up their network, I relented and offered her a quick weekend slot to tide her over and help me soften up after the infuriating desperation of her calls.

As you can probably guess, I first met Jo through Caz after connecting in rehab and like the rest of the broader Reynolds-Fisher Dynasty, is a complete triple threat. Obviously being the youngest that I’m friends with, our duelling talents led to a friendly rivalry that would go on to inspire the hit movie Drop Dead Gorgeous.

Despite this, we have always remained close so I didn’t verbally assault her for the incessant calls.

Joels hasn’t be overly busy recently – aside from a guest stint on Tim Allen’s show and Drag Race U – so honestly, I was wary that this catch-up was an attempt to get back in the spotlight. Thankfully I was wrong and bless her heart, she truly just wanted some down time with a dear friend.

After learning that, I threw out my laxative-laced treat and quickly whipped up our favourite from our old vegas days, my Frijoley Fisher Dip.

Beans and by extension, bean dip, often get a bad rap for the music the oft inspire – which is not a probs if you’re singing and dancing 8 shows a week in Vegas – but this dip is killer. Maybe that has something to do with the shit tonne of cheese?

Warm, creamy and spicy – it is the perfect accompaniment to reconnecting with a friend.

Frijoley Fisher Dip
Makes: 2 cups.

Ingredients
800g canned pinto beans
⅓ cup cream cheese
1 cup cheddar cheese, grated
2 tsp cumin
2 tsp chili powder
2 tbsp diced pickled jalapeños
1-2 shallots, finely sliced
extra cheddar and/or sour cream, to garnish

Method
Chuck beans and cream cheese in a food processor. Blitz.

Transfer to a small saucepan over medium heat, add other ingredients, stir to combine and heat until until all combined.

Top with shallots, grated cheese and/or a dollop of sour cream.

Devour.

Have you all recovered from my culinary disaster the other day?

I was feeling very disappointed in myself after Miley went on her way – I mean, how often do I fail (the answer is never, FYI)? Not knowing what to do following my cooking cock-up, I decided to reach out (not around) to my dear friend Bob Harper to help me cheer up and have a culinary win.

And, who am I kidding, he will likely get my cock up, but that’s probably an overshare and you know I have more class than to say something crass like that.

Anyway, I first met Bob after bungling my way off the third season of Australian Biggest Loser. Taking a fellow trainwreck under her wing, Ajay reached out to the recently departed Bobby to see if he could train me privately.

And oh did he train me on that private ranch of his!

As the wise Michael Bolton once said, how can we be lovers if we can’t be friends? Which is proven – in a roundabout kind of way – by the fact our friendship quickly blossomed into a romance until the Feds tracked me down and had me deported.

While my chequered past ruined our romance, we have remained close friends ever since … even since he became a crossfit fan (Survivor Sally is the only person I want to see in knee socks, thank you).

I hadn’t caught up with Bob since his promotion taking over from (another dear friend) Alison Sweeney as the host of TBL, so it was great to hear his take on my frenemy Hatch and discuss his strategy for summer, swimmer selfies. Obviously I was very pushy about him saturating the market – you know I love a tall, pale, strawberry blond!

I always struggle feeding my fit friends, given their penchant for specialty diets, so instead of offering him the wrong thing and having to lie (no Linda McCartney, this is definitely not steak … relax – we’ve all been there, right?), I went with the safer option of my Bob Harpersimmon Jam.

I mean sure, it is pretty much pure sugar … but there is fruit in there, so that counts for something.

And cinnamon is good for you too.

Plus, it is delicious. So enjoy, Bob did …

Bob Harpersimmon Jam
Makes: 500ml.


Ingredients
500ml pulp of ripe persimmons
350g brown sugar
rind of a lemon and juice of ½ lemon
1 cinnamon quill
½ tsp nutmeg
100ml water
1 tsp vanilla extract

Method
Steralise a 500ml capacity jar – I just pour boiling water in a sink and let them sit in there for a bit. This is probably not correct but I don’t have kids so don’t care to learn about steralising bottles. I am yet to get the trots from this method, so I consider this a win?

Combine all the ingredients – except the vanilla – in a heavy bottomed saucepan and bring to the boil over high heat. Cook, stirring occasionally, for about 15 minutes, or until the jam has thickened slightly.

Remove from the heat, discard cinnamon quill, stir through the vanilla and cool for about 10 minutes.

Pour the jam into the steralised (depending on your definition of steralised) jars, seal tightly with the lid. Flip upside down and all to cool. Flip the jars back up, open the lids to release the air and then close them again. Store in a cool, dark dry place for a month … and then devour.

Obvs keep them refrigerated once open, you hear?

Chillian AnderCon Queso Dip

Full disclosure, I have never seen an episode of The X-Files.

Yes, I spent a lot of time on the set due to my friendship and subsequent affair with David Duchovny and to gather intel for the script of the porn parody I was working on, which was obviously called The Sex-Files.

Despite being quite busy being … occupied by David and my research, I was able to connect with the delightful, elegant and downright badass Gillian Anderson.

Gills and I connected over our shared Chicago heritage – she was born there, I inspired the role of Velma Kelly – and she quickly took me under her wing, I assume to “fix” me. Clearly she didn’t know who she was dealing with!

Either way, I continued to be an obnoxious, hyper-sexual, alcoholic, junky, felon and G loved me, either in spite of or because of my flaws.

G has been very busy lately, what with The X-Files reboot, her creepy turn in Hannibal and starring in the critically acclaimed The Fall, which she won’t let me near. Yes, Jamie Dornan does have a restraining order out against me, but I know that if she just got me close enough I’d be able to explain why I was caught rubbing his hair while he slept. I mean, it was only the one time after all.

Obvs I would then get a role as Christian’s lover in 50 Shades of Gay … which is what he will demand the sequels become to celebrate both our love and our kinks.

Anyway, it has been ages since we last caught up so I made sure I blocked out some time in her calendar months ago so that we could reconnect and I could work on the Jamie sitch, and nothing says reconnection quite like a big ol’ bowl of Chillian AnderCon Queso Dip.

I make no secret of my unbridled love of cheese: cottage, gouda, roquefort, camembert, pamesan, feta, dick, cheddar, philly, swiss – you name it, I’ll gobbleeat it. Add my other fave, chilli, and you’ve got a warm, thick white liquid that you want to take straight in the mouth … on a chip, right?

Chillian AnderCon Queso Dip
Serves: 6-8.

Ingredients
225g vintage cheddar cheese
125g colby cheese
100g queso quesadilla
340g  cream cheese
3 fresh tomatoes, chopped
6 spring onions, finely chopped
6 jalapeños, chopped
3 garlic cloves, minced
½ cup fresh coriander, chopped
salt and pepper, to taste

Method
Melt cheeses together in a saucepan over low heat.

Stir in all other ingredients.

Devour, warm, with corn chips. Or even better, Tortéa Leoni Chips?
