Will Horcharnetta

Cinco de Cuatro Celebration, Drink

While Lucille isn’t fond of Gob in the slightest, Will Arnett is one of my closest friends and I’m so glad that he could take the time out of his busy Lego Batman-ing schedule to reconnect.

As you know, his ex-Amy Poehler is one of my best friends and while their divorce was tough on their children and I, they both put in a concerted effort to ensure that we all knew that they both still loved us and nothing will ever change the way they feel about us.

I feel like it may appear like I sided with Amy in the divorce – given the fact I passionately ride her (and Teen’s) coattails – but I will always hold my boy Wills dear to my heart. We first met on the set of SATC and were bonded by a mutual disappointment in how dated the show would be in but a few years.

Wills has been hella busy lately promoting The Lego Batman Movie – which my nephew has given many rave reviews for FYI (don’t tell Will I haven’t seen it yet) – and so it was such a treat to hang out and celebrate Cinco de Cuatro / find ways to ensure the second season of Flaked is better received and less about a man child / get a role on BoJack Horseman.

Obviously that is so pretty rugged terrain to traverse – and since we’ve both had a past with alcohol – I thought I’d whip us up a fresh batch of Will Horcharnettta.

There is nothing better than rice pudding and cinnamon … but mix them together and turn them into a drink, and you’ve got a holy elixir. Spicy, refreshing and joyous, it is the perfect thing to help reconnect friends and celebrate a fake holiday.

Enjoy!

Serves: 4.

Ingredients
1 cup rice, aggressively rinsed
1 ½L water
1 cinnamon stick, broken in half
1 tsp vanilla
½ cup muscovado sugar

Method
Combine the thoroughly rinsed rice in a saucepan with the water and cinnamon and leave to rest overnight.

The next day, bring the rice to the boil over high heat. Reduce to low and allow to simmer for half an hour. Remove from the heat, stir in the vanilla and sugar, and allow to cool.

Once cool, remove the cinnamon and blitz everything with a stick blender until smooth. Strain through cheesecloth and chill in the fridge for an hour or two.

Then down, over ice.

Jessica Flaulters

Cinco de Cuatro Celebration, Main, Snack

Given that her wickedly delightful character Lucille is the creator of the passive-aggressive holiday, I couldn’t go past opening up our Cinco de Cuatro celebrations with a power-date with Jessica Walter.

To put it simply, Jessica Walter is a damn saint. I mean, the woman gave us three of the greatest female characters of all time, Lucille, Malory Archer and Tabitha Wilson from the criminally underrated 90210 reboot.

Actually … make that four, Fran Sinclair is probs the second best character of Dinosaurs, which coincidentally is how I met her.

Annelie and I were working on the hit show – as you know, her young years look inspired Baby Sinclair – and were quickly taken under Jess’ wing. Despite her the acerbic women she plays so well, Jess is such a sweetheart and wanted to make sure Hollywood didn’t destroy us.

While she clearly wasn’t able to keep us out of trouble for long, she always forgave our misdeeds and tried to help us be better. This lead to her getting me a job on Arrested Development writing her put-downs as an outlet for my sass.

Sadly Jess and I haven’t been able to catch-up over the last few years – given our hectic schedules – so it was delightful to be able to spend some time together … and work on convincing her to pitch the long-lost-twin-Duster storyline for season five.

I’m not sure how successful I was with the latter but given how delicious my Jessica Flaulters are, I assume they did the persuading for me.

Spicy, fresh and dripping in cheese, flautas are quite possibly my favourite form of rolled chilli-tortilla Mexican. Crisp on the outside, moltenous and gooey in the centre, topped with a little bit of my favourite (albeit trashy) lettuce and dickloads of avo? You can’t argue with that.

Enjoy!

Jessica Flaulters
Serves: 4.

Ingredients
olive oil
500g chicken breasts
salt and pepper
1 onion, diced
2 garlic clove, minced
1 jalapeno, diced
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 cup salsa, Struthers or store bought, I don’t mind
small handful fresh coriander, roughly chopped
1 cup cheddar, grated
1 lime, juiced
12 tortillas
iceberg lettuce, shredded
2 avocados
sour cream
Sriracha

Method
Preheat oven to 180°C.

Place the chicken breasts on a baking sheet, rub with a lug of oil and a good whack of salt and pepper. Bake for about twenty minutes, or until just cooked. Remove from the oven, shred the chicken and allow to rest / cool.

Turn the oven up to 200°C.

Meanwhile, heat another lug of oil in a large pan and sweat the onion and garlic for about five minutes, or until soft and translucent. Add the jalapenos, cumin and cayenne and cook for a further two minutes. Add the chicken and salsa, and stir to combine.

Remove from the heat and stir through the coriander, cheese and lime juice.

Grab the tortillas and place some of the chicken mixture along one end. Roll the tortilla and transfer the roll to a lined baking sheet. Repeat the process until the mixture is gone. Brush each with some oil and bake for about twenty minutes, or until golden and crisp.

Serve immediately topped with some lettuce, mashed avo, sour cream and Sriracha … and devour.

¡Qué divertido! Es cinco de cuatro

Cinco de Cuatro Celebration, Guess Who's Coming to Dinner

As you know, there is nothing we love more than celebrating holidays – particularly if they’re made up – even if their history is quite horrible.

I mean, sure, Cinco de Quatro was created by the Bluths – well actually I created it, as I was the ghost creator/writer of the show – to ruin Cinco de Mayo for the Mexican community … but they eventually embraced the holiday, meaning it is empowering. Right?

Plus, it is the day before Cinco de Mayo – so ¿por qué no los dos?

Anyway, knowing they’d be very game to catch-up and have a bit of a Cinco de Cuatro party to honour Cinco de Mayo, I reached out to the core-Bluths for a week long bender.

What says tell me everything you know about season 5 … and finally convince Mitch to let me play Buster’s long-lost twin, Duster?

Quesandillaz-Twine

Main, Party Food, Snack, Survivor: Game Changers – Mamanuca Islands, TV Recap

Previously on Survivor, Tavua continued to dominate immunity challenges, which was very lucky for Troyzan. Unluckily for Mana, Debbie went from lovable-nuts to scary after missing out on sandwiches while over at Nuku J.T. and Aubry’s plot to boot Michaela backfired on the former, sending him out of the game with an idol in his pocket.

Oh and Sandra stole the sugar, blamed it on her closest ally and still came out clean.

Back at camp Aubry gave her best Adam Klein impression while congratulating the people that blindsided her. Despite it being fairly obvious why it was J.T. over her, Aubry asked them why she was saved before correctly identifying that Sandra was running things and is the best player out there, royally screwing her in the process.

Over at Mana, Tai decided to make the most of last episode’s hidden immunity idol clue and get his wood wet under the cover of darkness. Turns out, that little process gives you a happy ending. What a damn surprise.

Clearly getting hot and bothered, Jiffy Pop arrived for what the tribes assumed was an immunity challenge which was instead another swap were Sandra and Varner became the latest people to be completely screwed by the game, ending up on new-Nuku with Ozzy, Sarah, Andrea, Zeke and Tai.

Everyone else but Debbie ended up on new-Mana, while Deb found herself without a tribe and a pony, heading to exile island until one of the other tribes boots someone to make room for her.

New Mana arrived – or returned – to camp where Troyzan was thankful to have some allies, while Brad was feeling screwed though was hopeful to hook up with Troyzan – which is a weird porno I’d give a shot – given his One World connection to my girl Monnie Culpepper.

Over at new Nuku, Sandra and Varner did their best to ingratiate themselves to their new tribe members. Sandra being Sandra, remained calm and was sure that she would be able to find her feet.

And just like that, Zeke and Ozzy went for a walk to reaffirm the need to get rid of Sandra, before rallying their fellow ex-Tavuans and lining up a decoy boot in Tai. Which given his past will not go well if he finds out, despite knowing Sandra is the biggest threat.

Feeling uneasy, Tai approached the Nuku well hoping to find their hidden immunity idol … which he did, bringing his total for the episode to two and the season to three.

Why couldn’t it be Sandra?

We then caught up with Debbie who was approaching what she thought was Exile Island and instead landed on a luxury yacht complete with feast and – oh wait, here is the shitty part – cockstainCochran to provide advice … and thankfully something useful in an advantage.

Hatred aside, this is a crazy showmance I can get behind. And I assume, so can Debbie who is more excited to see him than the presidents and prime ministers she has, of course, also met.

Debbie then told her potential new boyfriend about how confident she was and ragged on Brad ‘fuck you’ Culpepper, before Cochran presented her with – what I assumed was an engagement ring – the options for her advantage. She of course elected the worst advantage, the extra vote – which has booted its holder every time it has been played before – rather than an advantage for her tribe at the next immunity challenge or my personal favourite, a kit to build a fake immunity idol.

Sadly a devious revenge plot where she gives a legit looking fake idol to Brad to boot him will not come to fruition.

The next day Zeke and Varner connected by the beach where Varner shared how desperately he wanted to make the jury on his third game. Zeke, knowing he should start making Sandra and Varner relax, told Varner how much they wanted Tai out of the game. The entire conversation made Sandra anxious … but Sandra is smarter than mostall players, and knew something wasn’t adding up.

Not wanting to leave us hanging too long, Jiffy Pop returned for the first immunity challenge as new tribes where they were required to get wet, pull themselves off … a platform and over monkey bars before running to shore and placing their piece(s) in a cart and pulling them into shore.

Obviously it ended with a puzzle.

Mana got out to any early lead, which despite Varner’s best efforts to pull up a load, never went away, sending Mana to tribal council.

Back at camp, Zeke reconfirmed the need to get rid of Sandra, while Varner was feeling confident it was Tai. Again, Sandra’s superior intuition shone as she felt nervous – for the first time in three seasons – and approached Ozzy, Sarah, Zeke and Andrea about booting Tai to avoid a Kaôh Rōng kaôh-lition.

While Sarah and Ozzy weren’t wanting to budge on the Sandra vote, they acknowledged how persuasive and right she is, and that they do need to break up the trio of Tai-Aubry-Debbie.

On the other end of the spectrum, Tai then approached Varner to tell him that Sandra was indeed the target … allowing Sandra time to come up with a plan, which is never a good thing.

With that, they arrived at tribal where Andrea announced that they would continue in the tradition of the season – like All Stars before it – to boot the biggest threat, while Ozzy spoke to the back of Sandra’s head about the positives of keeping a bigger threat as a shield before Sandra announced that she was confident it was her as no one was talking to her.

This spooked Tai … who then commenced talking in circles, confusing himself and making the rest of his original, original Nuku tribemates. Sarah then mentioned being open to a couple of options, spooking Tai even more before Sandra said that she’d vote for whoever he wanted her to. Before he whispered a name to her.

He then gave Varner the same name, to which Varner mentioned they still needed another person. The rest of the tribe wanted the goss … so Tai then announced that he was now considering Ozzy, spooking Ozzy, Zeke, Sarah and Andrea, who then commenced their own whispering.

After some back and forth and everyone being confused, they threw their hands in the air and decided to just vote … which sadly – and I hate that I’m even typing it and never assumed I would have to – resulted in my dear friend, sass-monster and greatest player of all time Sandra Diaz-Twine being voted out for the first time.

Thank fuck those fuckers fucking applauded her on her way out the door. The stupid fucks. The Queen is dead, long live … the D-list returnees rounding out the cast?

While I was fuming by the time she arrived at Loser Lodge, Sandra took her first ever boot in her stride … until I convinced her to break into both camps while they were at the next challenge and burn their camps to the ground. FYI, that is why they were crying in the next episode preview.

As you know, I met Sandra when I was her server at Outback Steakhouse and we quickly bonded over being fiery, sassy and persuasive. While she has never been able to get me out there as a contestant – she tried for Blood vs. Water but Aras got jealous – I was scheduled to appear as her loved one, which is probably more of a tragedy than seeing the Queen and Malcolm felled within a fortnight.

Obviously that meant I was in desperate need of some comfort food, meaning I had to whip out my famous Quesandillaz-Twine.

An ode to my girl’s winning ways, these quesadillas are the absolute best – spicy, cheesy and with a good whack of chilli, the crunch in your mouth and go a long way to help even the sharpest of pain.

Enjoy … if you can!

Quesandillaz-Twine
Serves: 1 first-time boot and her irate firebug of a bestie.

Ingredients
500g beef mince
2 cloves of garlic, finely chopped
1 onion, diced
2 tbsp smoked paprika
2 tsp ground cumin
2 tsp oregano
1 tsp ground coriander seeds
1 tsp cayenne pepper
½ tsp cinnamon
400g canned diced tomatoes
400g canned black beans, rinsed and drained
2 tbsp tomato paste
2 avocados, pitted and diced
small handful of coriander, roughly chopped
canola or vegetable oil, for frying
8 tortillas
250g sharp cheddar, grated
1 lime, cut into wedges
sour cream

Method
Brown the mince in a large skillet over medium heat, breaking-up with the wooden spoon as you go. Add the garlic, onions and a good whack of salt and pepper and  cook for a couple of minutes, or until the onion is just translucent. Add the spices and cook for a minute, before adding the tomatoes, black beans and paste. Reduce heat to low and simmer for about twenty minutes, or until the liquid is pretty much gone.  Remove from the heat and stir through the avocado and coriander.

When you’re ready to devour, heat a large clean skillet over medium heat and add a lug of oil. Place a tortilla in the pan, sprinkle half with cheese, top with the mixture and more cheese, because this is comfort food. Fold the tortilla over to form a semicircle, pressing down on the quesadilla to set. Flip once, cooking a couple of minutes each side. Repeat the process until the mixture or tortillas run out, I don’t mind which.

Cut the quesadillas into wedges – because you don’t need to feel guilty if the food is hand-sized – and serve with a squeeze of lime juice, a dollop of sour cream and, of course, hot sauce.

Devour, in honour of Sandra.

Tony Nachos

Main, Snack, Survivor: Game Changers – Mamanuca Islands, TV Recap

Previously – aka minutes ago in viewing time – on Survivor, Sandra continued to be charming, Michaela continued to have killer facial expressions and poor Ciera found herself becoming the first boot of Survivor: Game Changers without having her mum around to vote out in her place.

We opened up at Mana the next day, where Tony announced how bored he was waiting for everyone to start playing the game. Aubry and Tony then convened at the well to put into place arguably the greatest alliance of all time, consisting of them, Malcolm and Sandra aka all the threats. Tony then approached Sandra who confirmed that winners going to the end together was the only way to win twice … which she would know, given she is the only one with a double crown.

Meanwhile over at Nuku, knowing his chances of ever winning are quite slim Tai continued his scam to swindle money from Sia while Debbie – adding pragmatist to her list of titles (I’m counting it as a job) – confirmed that Tai be damned, those chickens will eventually become her dinner. To which country boy JT obviously agreed.

Back at Mana, Tony continued to overplay and returned to digging his spy bunker under the cover of darkness. Sandra and Troyzan then went for a walk to discuss strategy – or tides and their crates’ proximity to the water – sending Tony into hyperdrive and setting off the beginning of the great Sandra vs. Tony feud.

I mean, it wouldn’t be a Sandra season without her feuding with a loud male.

Things were moderately less stressful over at Nuku where Ozzy and JT were getting friendly, terrifying poor sweet Cirie. She then went for a walk to the well with Sarah where they confirmed their allegiance to each other and set off Sarah’s – could it be – winner edit as she confirmed she will be changing her game this time.

Not one to rest on her laurels, Cirie then pulled Zeke and Debbie aside to try and make even more friends that could one day become lovers, or allies. Debbie then reminded us she is a Captain in the civil Air Force – maybe, I’m honestly starting to lose track of her resume and it is only episode 2 – and that she wasn’t falling for Cirie’s charm.

Debbie then added Veterinarian to her list of professions, I assume, given her ability to detect bull shit. *Boom tish*, thank you!

Over at Mana, Sandra continued to dismantle her alliance with Tony and proceeded to pull together a majority alliance in the space of five minutes. The Queen is a Queen for a reason.

The next day Tony then Aubry aside to build a counter-alliance with Malcolm and Caleb. Tony then approached Malcolm to discuss getting rid of Sandra, as she lurked in the background, before Caleb gave us his surprisingly – sorry Caleb – insightful view on the fact you can’t really trust either Sandra or Tony but that Tony was strong and strength was still important on day five.

Wanting to give us a break from the politicking, Jiffy Pop returned for the second immunity challenge where the tribes had to man-handle a big, long, thick snake through an obstacle course. I got distracted around the time Caleb cried out how tight it was …

Once again, despite Malcolm’s best efforts to catch up – and much to Michaela’s chagrin – Nuku won immunity setting off Malcolm’s Matsing PTSD and sending Mana back to tribal council.

Back at camp Sandra and Tony got to work rallying their troops – after a brief frustrated outburst from Michaela, which isn’t as charming as it was last season.

Sandra went with the fact that once Tony is gone, people will calm down … while Tony scurried around for an idol. Hali then made a play for Courtney Yates 2.0 – aka Sandy’s ride or die bestie – and started to work on Caleb and Malcolm. This spooked Tony who then took time away from his busy idol shopping schedule to pull Caleb aside and start working on Michaela to boot Sandra instead.

Not wanting to let Tony down, Caleb approached Michaela and Varner to talk about getting rid of challenge liabilities like Sandra, neglecting to realise that Varner was the sole reason they lost the last challenge.

Queen Sandra then gave us a final pre-tribal speech to confirm that Tony has only won once and that her legacy will speak for itself tonight. Yas Queen … or horrific foreshadowing of her downfall.

At tribal they got to work debating the merits of keeping the strong players, spooking Sandra for the first time in her Survivor career … before she correctly pointed out the fact that the strong people are the reason they lost the first two challenges and fell behind, not her.

Tony then got annoyed at Troyzan for correctly pointing out that Tony was erratic and paranoid. Sandra was then viciously attacked by a bug, terrifying Michaela. Tony then said that he respects the players as they were all game changers before Varner announced that they would be getting rid of the square peg that didn’t fit into their round hole. Which appeared to terrify Sandra and excite – obviously – me.

Thankfully her fears were unfounded as Tony was revealed as the square peg and found himself out of the game as the second boot. Wanting to one up Michaela’s exit last year, Tony proceeded to warn people about blindly following Sandra.

“That’s what you get for plotting against me. That’s what you get, and the Queen stays Queen. That’s what you get and take yo’ ass home. Bye Tony, say hi to Ciera for me” Sandra Diaz-Twine, iconic.

As glad as I was to see my girl win the war, I’m sad it was at the expense of my dear friend Tony who I met whilst training to be a cop in NJ at the turn of the millennium … before milk was flown in by drones.

Despite being expelled from the force for my illegal dealing, Tony and I stayed in touch and he endeavoured to help me see the light and live an honest life. As such, Tone was delighted to see me doing something decent with my life in Ponderosa and gladly accepted a big old bowl of my Tony Nachos.

I know what you’re thinking – maybe, sometimes – how does this differ to your Keanachu Reeves jerk? For one, no chipotle and two … this is a more relaxed nachos. Single – well probably double given the size of my bowls – serve, comforting, warm and everything you need to help work through the pain of going from Sole Survivor to slayed by the Queen.

Enjoy!

Tony Nachos

Queso Fundido

Condiment, Dip, Party Food, Side, Snack

With Thanksgiving now less than two weeks away, I’ve decided to start taking stock of my life and remembering what I am thankful for. Hella deep, right?

While I am forever thankful for my exes Jiffy Pop and Skarsy, I’m also thankful that *soon to be spoiler alert* Gilmore Girls is about to make a return to TV, Leo finally snatched a damn Oscar and, always and forever Alyssa Edwards, am I thankful that my dear friend Dido Florian Cloud de Bounevialle O’Malley Armstrong goes by the mononym of Dido.

As such I decided to invite her over for a pre-Thanksgiving date and to once again thank her for not forcing the tongue-twister on the world.

I’ve known Dido for years after lecturing her in law at Birkbeck, University of London – seriously the amount of universities I bamboozled into hiring me to lecture in law is terrifying and all it took to get each job was to scream that is assault.”

Obviously she discovered the scam and obviously she forgave me however unlike many celebs that caught on to my scams, Dido was crafty enough to blackmail me into launching her music career.

I would go as far as to say it is the proudest I have ever been in my life.

Anyway, her blackmail led to getting her song included on the Sliding Doors soundtrack – you should see the rest of the pap photos I took of Gywn and Brad’s holiday (obviously, NSFW) – an introduction to my dear Eminem to convince him to sample her song and most importantly bribing the Academy into nominating her for If I Rise.

I also successfully bribed the Razzies into giving her the award for Worst Original Song … but she wasn’t thrilled about that.

Being as busy as I am, I haven’t been able to see Dido and congratulate her on her 2013 comeback – though given I just heard about it, I didn’t know whether it would be appropriate. Either way, I made a Queso Fundido which is more than celebratory … just in case.

queso-fundido-1

I’ve said it once and I’ll say it a thousand times before dying of cheese clogged arteries, cheese is the greatest thing in my life – outside of my husband, it is without doubt, my great love (sickening display of genuine emotion, I’m sorry).

Add chilli, booze and a fat spicy sausage and you’ve well and truly got yourself a party – enjoy!

queso-fundido-2

Queso Fundido
Serves: 4-6.

Ingredients
3-4 chorizos, skin removed
1 onion, diced
2 clove garlic
1 green capsicum, diced
¼ cup tequila
250g vintage cheddar, grated
250g gouda (smoked if you like it super smokey), grated
generous pinch of flour
2-3 tomatoes, diced
small handful of coriander, roughly chopped
Tortéa Leoni Chips, for dippin’

Method
Preheat the oven to 180C.

Heat a small skillet over medium heat and fry the chorizo until brown and crisp. Remove from the pan to drain on some paper towel.

Wipe out the pan, return to the heat, reduce to low and cook the onion and garlic for a couple of minutes, or until soft and fragrant. Add the capicum and tequila and cook until the liquid has reduced a little. Remove from the heat.

Combine the cheeses in a bowl and toss through a generous pinch of flour. Add the cheese to the still warm pan and stir to combine. Top with chorizo and place in the oven for about ten minutes, or until cheese is bubbling and hot.

Serve straight out of the oven with some Tortéa Leoni Chips – obviously being careful of the hot pan, like I wasn’t – topped with tomatoes and coriander.

Frijoley Fisher Dip

Condiment, Dip

It is so hard being a close friend of celebrity dynasties. I mean, you catch up with one of your dearest friends and next thing you know, their kid half-sister is calling begging to reconnect as well!

Sure I would consider Joely Fisher a dear friend but just because I needed some soul affirming love from Carrie doesn’t mean I need to field over 100 missed calls a day from Jo, begging to catch-up.

After a quick call from my service provider begging me to just take the damn calls and free up their network, I relented and offered her a quick weekend slot to tide her over and help me soften up after the infuriating desperation of her calls.

As you can probably guess, I first met Jo through Caz after connecting in rehab and like the rest of the broader Reynolds-Fisher Dynasty, is a complete triple threat. Obviously being the youngest that I’m friends with, our duelling talents led to a friendly rivalry that would go on to inspire the hit movie Drop Dead Gorgeous.

Despite this, we have always remained close so I didn’t verbally assault her for the incessant calls.

Joels hasn’t be overly busy recently – aside from a guest stint on Tim Allen’s show and Drag Race U – so honestly, I was wary that this catch-up was an attempt to get back in the spotlight. Thankfully I was wrong and bless her heart, she truly just wanted some down time with a dear friend.

After learning that, I threw out my laxative-laced treat and quickly whipped up our favourite from our old vegas days, my Frijoley Fisher Dip.

frijoley-fisher-dip-1

Beans and by extension, bean dip, often get a bad rap for the music the oft inspire – which is not a probs if you’re singing and dancing 8 shows a week in Vegas – but this dip is killer. Maybe that has something to do with the shit tonne of cheese?

Warm, creamy and spicy – it is the perfect accompaniment to reconnecting with a friend.

Enjoy!

frijoley-fisher-dip-2

Frijoley Fisher Dip
Makes: 2 cups.

Ingredients
800g canned pinto beans
⅓ cup cream cheese
1 cup cheddar cheese, grated

Top with shallots, grated cheese and/or a dollop of sour cream.

Devour.

Enchilada Nicodemou

Main

Oh Ada, how you fill my heart with so much love!

Ada was thankfully given the night off from her relentless Home and Away filming schedule – the only reason I have never taken up one of the many offers to appear on the show – to drop by, gab and devour something as nourishing as our friendship is for our souls.

I mean yes, as with most of my friendships we had our rough patches like when I forced her off Heartbreak High and onto my new series Breakers where I was casting Alex Dimitriades look alikes to fill the void that he left after finally getting a restraining order. Thankfully after the show tanked, she got Home and Away though and I got her a role in The Matrix, so she eventually had to forgive me.

I mean, she got to marry Ryan Kwanten … she couldn’t hold a grudge.

Despite the many lawsuits Channel 7 have brought against me in her past 16 years on Home and Away – the daily death threats to Kochie and Grant Denyer (back in the day – I forgive him after he tanked people I knew on Family Feud), the aggressive trolling of Tara Dennis’ design skills and my lecherous courting of Bruce McAvaney caused but a few – she has always demanded my presence on set to provide her with love and guidance.

Given how busy I’ve been the last year, travelling the globe to provide culinary coverage of multiple Survivor seasons while managing HRC’s campaign, hosting brunch with the All Stars of Drag Race and my usual weekly guests, our relationship has regretfully been on the backburner. Thankfully Ada jumped at the chance to come up and reconnect – but really, who would want to miss out on a batch of my Enchiladas Nicodemou.

enchilada-nicodemou-1

Make no mistake, these enchiladas are less Mexican than Tex Mex but to a Australian Greek Cypriot and an Australian of questionable origins it does the trick – smokey, sweet and packing a nice kick of heat, they keep you coming back for more despite the complete bastardisation of a culinary history.

Enjoy!

enchilada-nicodemou-2

Enchilada Nicodemou
Serves: 4, heartily.

Ingredients
olive oil
1 onion, finely diced
3 cloves garlic, chopped
800g chicken breast, diced
1 capsicum, diced
1 tbsp paprika
1 tbsp smoked paprika
1 ½ tsp ground cumin
1 ½ tsp dried oregano
½ tsp cayenne pepper
¼ tsp cinnamon
½ tsp ground coriander seeds
½ tsp turmeric
400g can chopped tomatoes
400g can kidney beans, drained and rinsed
1 tbsp tomato paste
hot sauce, to taste
salt and pepper, to season
8 tortillas
1 cup tasty cheese
guacamole, extra hot sauce and sour cream, to serve

Method
Heat a lug of olive oil in a large frying pan over medium heat. Sweat the onion and garlic for a couple of minutes before adding the chicken and cooking, stirring occasionally, for about five minutes. Add the capsicum and the shit tonne of spices and cook for a minute to release the flavours before stirring in the tin tomatoes and kidney beans, tomato paste and hot sauce. Season to taste and bring to the boil. Reduce heat to low and simmer, half covered and stirring occasionally, for about ten minutes.

Preheat the oven 180°C.

Once the mixture is ready, get out a large baking dish – one you’d use for lasagne etc. – and layer out your tortillas. Place about a half a cup of mixture on the middle of the tortilla, tightly roll up and place into the pan. Repeat the process until the tortillas are gone and the pan burst with deliciousness.

Pour any remaining meat mixture over the top of the enchiladas, top with the cheese and bake for about half an hour, or until golden, bubbly and moreish.

Allow to rest for ten minutes before devouring, slathered in gauc, hot sauce and sour cream.

Australian Survivor, Australian Survivor (2016), Breakfast

Previously on Survivor, Des was grumpy and irritated his way out of hearts and the tribe, before Saanapu ended their reign and went to tribal where the intelligence officer lacked intel and became the first blindside/second boot of the season.

We opened up with the sad Saanapu’s and a burnt out fire, where Kween Kylie (trademark pending) was disappointed to be out of the loop after Pete – wanting to be the Osten Taylor of  – was kept in the game against his wishes.

Not to be outdone, Pete was also heartbroken to still be there but quoted Probst and said he would dig deep – queue Holly Hoffman redemption arc, hopefully, in two episodes time.

Aka Tuesday – talk about post-a-palooza this week.

Again, they opted to go with another of my Survivor wet dreams – the poisoned chalice idol clue which has led to the downfall of many – on the outs, Kylie and male-HH went with deceit, as did Aganoa, though they one-upped them by giving us the visual of a clue going into an underwear model’s jocks while Vavau also went with dishonesty but in a potentially intelligent manner, admitting there was a clue…but lying about it.

While nobody bought the poorly constructed rhyme that had Dr Seuss turning in his grave, I am sad I never came up with that option, to be honest. Well, if it had worked.

Let’s return to Rohan dropping the clue from his junk, which Mr G found without sniffing it for man musk, #epicfail. Despite the fizzle of the deceit, choices make drama so I’m still putting this down as a win.

Plus we found definitive proof that in the High School ecosystem that English teachers are better than drama teachers.

We returned to the Aganoa where Mr G ostracised El by showing her the junk clue, who they approached the mutineers straight away to discuss the issue. Being far more social, they easily won El back. At this point can we all just accept that drama teachers are really difficult people to deal with? Thanks.

At this point I also am concerned about the welfare of Kat and Kristie. Are they safe? Are they still in the game? Did I black out and miss a week in which they were booted back to back? BRING BACK MY GIRLS!

And just as it came to me, lil Jojo listened to my plea and gave a proof of life of Kat and Kristie at the reward challenge where Vavau dominated the competition and the missing girls returned to a camp without luxury. Will the Resort Report spokesmodel survive the indignity? Hopefully.

We quickly checked in with our victors where Craig sadly commenced his pride cometh before the fall edit. While I assume they are good tonight, I’d back them going to tribal tomorrow and that has nothing to do with the fact I was on location during filming so literally know the entire outcome.

Anywho, we returned to Saanapu where Kween Kylie felt she proved her worth before the most sickening – not in a good way – stretch of television focusing on a phallocentric object ever filled.

I mean, the pus in that sea cucumber? Foul.

Meanwhile in Aganoa – where Kat returned to the scene briefly to become this episode’s decoy boot before the immunity challenge where – despite a thrilling comeback – Aganoa were given their return papers to tribal council.

After a period of back and forth between Evan and Kat, Phoebe worked her way into my (now) dream final four by forming what I hope will become the Australian black widow brigade and sent Mr G to loser lodge.

I know I’ve been hard on Mr G but after meeting on opposing sides of the 2012 school spectacular challenge, friendship was never going to come easily for us. Thankfully I’m so kind and mature that I could still offer my frenemy a nice comforting Huevans Rancheros Jones to dull the pain of being the third boot.

I oft speak of my love for food so spicy that my innards liquify and more importantly, I like a bit of spice to work through the copious amounts of alcohol I’ve been consuming in the crew villas. So obviously this delight really fits the bill by packing a punch – hot, spicy and all together soothing, it helps Evan work through his pain and me my burgeoning drinking problem. Enjoy!

Serves: 4.

Ingredients
200g dried chorizo, diced
1 onion, diced
1 yellow capsicum, chopped
2 cloves of garlic, minced
800g canned diced tomatoes
1 tbsp chopped chipotles in adobo
¼ cup coriander, roughly chopped
1 tsp salt
8 large eggs
8 tortillas
refried beans, obviously from a can as I didn’t have time to make any in my luxury digs
2 avocados, mashed
1 green chilli, sliced to garnish

Method
Heat a large frying pan over high heat and fry the chorizo for a few minutes. When the pan is full of beautifully smoky oil, add the onion, capsicum and garlic and fry for a further few minutes. Reduce the heat to medium, add the tomatoes and chipotles and bring to a simmer.

Crack the eggs into the tomato liquid, reduce heat to low, cover and simmer for 5-10 minutes or until the eggs are delicately poached.

While the eggs are cooking, heat the tortillas in the microwave, heat the refried beans in a small saucepan over low heat (or the microwave, whatever) and mash the avocados.

To serve, add a generous ladle of sauce with two eggs, top with beans, avocado, coriander and some chopped fresh chillis. To devour, scoop it all into a tortilla and revel in the spicy joy. You could add sour cream, which I always usually love, but wouldn’t you rather experience the full force of the heat?
