Previously on Survivor South Africa Dante continued to be an Island all by himself – which I would love to make land on – after the Seipei blindside when he pushed to get rid of Rob instead. Jacques and Cobus weren’t thrilled to be left out of the Seipei vote, confronting Rob who assured them that they needed to keep it quiet despite how profusely they said that they wanted Seipei gone too. After Dante won another reward and opted to share it with Laetitia, Mmaba and Mike, he pissed off everyone else in the tribe who decided it was because they are so strong. Dante tried to get the rest of those on the outs to join him, this time to get Cobus out, while Durao gave up his vote to get a cheat code for the immunity challenge. After it worked and Durao was safe, the tribe got to deciding who to split their votes on between Mmaba and Jacques – with Dante the target, obvi – with the latter chosen to burn his idol. Sadly for them, and particularly Steffi who was annoyed about any idols she isn’t aware of, Jacques didn’t burn his idol though they were successful in getting rid of Dante.

Back at camp Jacques was pissed about his alliance getting sanctimonious about his secrets, when they were secretly plotting to get rid of him. He approached Cobus to see if he would be willing to flip, given he has been left out of two votes in a row. Cobus was non-committal, deciding it would be best to talk to his allies to find out what happened before making any rash decisions. Oh and Steffi continued to be upset that Jacques didn’t burn his idol. While everyone else slept, Steffi approached Mike and Durao and took them to the well to shade Jacques and Cobus for playing up to the jury … who will decide the winner. While that sounds stupid when you type it, the logic that that makes them a threat is solid.

The next day Nicole tried to do damage control with Jacques and Cobus to make sure they didn’t panic, with Jacques suggesting he will burn his idol if needs be. Nicole shared that she prefers to play with integrity and doesn’t like it when the lines get blurred, and started to question Steffi’s motives because her morals change day to day. Meanwhile Cobus was glad to have Jacques remain in the game as it kept the target off him and damn, I am nervous.

Nico arrived for this week’s immunity challenge where everyone would have to suspend a bar between two handles over a tile, with the last tile left unsmashed winning the victor steak and veggies, wine or an advantage … or a letter from home. To complicate matters further, people would only compete against those that want the same reward. Durao and Nicole were the only ones going for food, Mmaba and Rob went for the advantage and the rest were fighting for letters from home. Nicole and Durao were first upm with Durao nobly dropping out almost immediately, knowing that she needed it more. And honestly, I don’t even think he was trying for anything in return and TBH if he had speedos, he would be my fave. Mike, Cobus, Jacques, Steffi and Laetitia went next for the letters, with Steffi struggling early before Jacques, Laetitia and Cobus dropped out of nowhere in quick succession before Mike dropped out to give Steffi a letter, this time to benefit him down the track. Finally Rob and Mmaba competed for the advantage and while I wish I could tell you Mmaba owned him, she tragically dropped and handed him the advantage which Nico made him read allowed to the tribe. And while I wish that was juicy, it just told them all that his advantage awaited on the Island of Secrets.

We followed Rob to the Island of Secrets where he learnt that his advantage was the food Nicole won, the letter Steffi won and the chance to practice the final puzzle of the upcoming immunity challenge. He sat back and relaxed on the island, knowing that he was in control of the game before breaking down over his letter from home, learning that he had become an uncle since leaving South Africa. Meanwhile back at camp the tribe got down to prepping a meal where Cobus spoke about his shock over picking a letter from home rather than a meal. Steffi found a quiet place on the beach to read her letter, breaking down over the love she was missing though thankful that it will give her the push she needs. She then found Mike to thank him for giving up his letter for her, which made him breakdown over what he missed out on.

While Mmaba was sitting by the shore, Cobus rallied the rest of the troops to ask them to stay together one final time to get rid of her. Steffi was agreeable, though said that Jacques needed to burn his idol to earn back her trust. This frustrated him and led to him asking whether she truly believes that he is the only person with an advantage in his bag, leading to the root of her saltiness coming out – she had been to the Island of Secrets three times and came back with nothing.

The next day Jacques shared that all he wants is to until the loved ones visit so that he can use his reward steal to spend time with his wife. He approached Cobus to see whether he would be willing to watch out for him and help him get to the loved ones visit, with repayment of a visit from his mum. Which he was super keen for. While they were away however Steffi continued to rally people against Jacques, despite assuring him they would stick together if he flushed his idol and god I hope this doesn’t end well for her. They all agreed to split the votes on Jacques and Cobus, with Steffi cocky that her plan was going to be a game changer.

Nico and Rob returned for the reward challenge where they were required to race through a series of obstacles balancing a ball on a bow. Once they navigated three balls through the obstacles, they would have to land them in grooves on a flat, wavy piece of wood. Oh and in addition to immunity the winner would get to drive a luxury SUV around for a month when they get home, which is only notable in how strange it is. Rob made quick work of the obstacles, proving adept at ball play. Cobus followed close behind, with Jacques nipping at their heels. Rob, Jacques, Cobus and Steffi were the first to reach the puzzle, with Rob’s advantage proving too much for them to overcome, snatching immunity and a month of a hire car. Again, strange.

Back at camp Cobus was hoping to stick with the easy vote tonight, as it is the safest way to guarantee that he will still be here the next day. He caught up with alliance of seven, asking them to stick together for one final ride with everyone saying that they are happy to get rid of Durao. Steffi and nicole immediately approached Mmaba to get her on board to split the votes between Jacques and Cobus, while Rob locked in Mike, Durao and Laetitia. While Mike was confident in his alliance with Mike, Mike shared that he is only keeping him around as a shield and will gladly slit his throat when needed and hot damn, it may start getting interesting again. Just not at the upcoming vote. Mike then approached Mmaba and Durao to share his plan to stay tight as a four – with who else, I am not sure – to take out Rob, Nicole and Steffi. Speaking of that trio, Rob started to get spooked about them turning on them so decided that he would tell everyone that his advantage was the chance to steal two people’s votes at one of the next few tribal councils to make them fearful of flipping on them. Which they all agreed was a great idea. 

But back to the vote ahead, Cobus started to get nervous, approaching Rob and then Steffi, Laetitia and Nicole, where he learnt that they still plan to split the vote on Jacques to get rid of his idol instead of a straight up vote against Durao. This made Cobus even more nervous, so he approached Jacques, Mmaba and Durao to talk about getting rid of Steffi instead. Cobus was hopeful to tee it all up, then back out and hopefully get Mike to vote her out instead to keep his hands clean and TBH that just makes me nervous that he is about to screw himself over. To try and woo Mike to his side, Jacques showed him the reward steal and promised to share it with him. This led to a moment of real talk, where they agreed that shit is about to hit the fan and that they need to work together to make it to the end. And somehow, Mike still thinks Nicole is someone he should trust which feels important but doesn’t flow with the narrative.

At tribal council Rob continued to downplay his threat status, while Cobus admitted that he is nervous given he hasn’t been looped in on the last three votes. Jacques agreed that he is on the outs, wearing his idol to protect himself, though I am not convinced that he will actually vote. He then reiterated that all he cares about is making the loved ones visit, which he believes is the next day and he will do anything to get there. Talk turned to who the next target is then, if he is out of the picture with Mmaba slyly admitting that people are now talking to her and she isn’t sure whether it is perfect timing, or way too late. She then shaded people for having blind trust in the game before Steffi sounded like a broken record about trust and people breaking their word, Durao admitted that it is important but sometimes it needs to have an expiry date and to be open to options, even if you only trust one or two people.

Everyone reiterated that they are confident in who they trust, while the jurors obviously felt enraged every time she spoke. Rob mentioned that blindsides need to be played perfectly, otherwise they were too risky, while Jacques pointed out that they need to have a purpose rather than being for attention. Queen Laetitia spoke about the post challenge chaos, saying that her strategy was to wait for people for people to make up their minds and then shop around the plans and go with whichever suits her best. Jacques whined about people playing passively, which Mmaba called out as exactly the style he is playing. Laetitia jumped in to say she is anything but passive, given she talks to everyone before Steffi started to act strange, laughing about people strategising and again, coming across as hella cocky. Before Cobus reminded us that he went to his alliance to try and convince them to stick together.

With that the tribe voted, Jacques enraged Steffi by choosing to hold on to his idol and tragically my last boyfriend of the season Cobus became the latest victim of a blindside. Though given Steffi received votes, you know some fireworks are coming and that will keep me happy.

Cobus pulled me into his big, strong arms as soon as he spotted me in Ponderosa, thrilled to see such a dear friend slash ex waiting to cheer him up. Despite our relationship coming to an end when I was deported from South Africa, we’ve remained the closest of friends and as such, I knew the only thing that could dull the pain of being booted was a fresh batch of Cobsister Hugo.

Crisp on the outside, warm and fluffy on the inside with a kick of spice and a sweet lick of honey, there is nothing better to warm your soul. Even when you’re smarting from being booted.

Cobsister Hugo
Serves: 6.

Ingredients
1¼ cups warm milk
60g unsalted butter, melted
1 egg, lightly beaten
3 ½ cups plain flour, sifted, plus extra, to dust
14g dry yeast
2¼ cups raw caster sugar
1 ½ tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground mixed spice
1 tsp ground ginger
1 tsp ground cardamom
1 tsp ground cloves
vegetable oil, to deep-fry
1 cup honey

Method
Whisk the milk, butter and egg in a jug. Meanwhile, combine the flour, yeast, sugar and spices in the bowl of a stand mixer. Pour the liquid into the dry ingredients and mix by hand with the dough hook until just coming together. Engage in the stand mixer and mix for about five minutes, or until a sticky dough is formed. Transfer to an oiled bowl, cover and leave to prove for a couple of hours.

Transfer dough to a lightly floured surface, split it into quarters then divide each quarter into four. Roll into 30cm strips, cut them down the centre, leaving attached by a centimetre or so at the end and then plait the strips and sealing the ends together. Cut the braid into three, place on a lined baking sheet and repeat the process until done.

When you’re ready to get your fry on, heat about 10cm of vegetable oil in a large stock pot. Once the oil reaches 180°C-ish, place a couple of buns in the hot oil and fry for five minutes, or until cooked through, golden and crisp. Transfer to some paper towel and repeat the process until done.

Drizzle with honey and devour immediately, enjoying the departure of the last remaining Zaddy. Other than Mike.

You know how when Randall Pearson is being all dreamy, kind and loving, rather than dismissing Beth and her feelings? Well that is what my dear friend Sterling is like, only better.

I greeted him at the airport, and TBH, it was like a moment out of a rom com. He dropped his bags, ran towards me and lifted me up into the biggest, warmest hug known to man. While I weightlessly spun around the room, I wondered if this was the moment we would fall in love.

He then let me go, patted me on the back and I remembered that we were both happily married, and agreed many years ago, never to let our palpable chemistry get in the way of our beautiful friendship.

We got back to my house where I immediately pummeled him … with questions about This Is Us’ upcoming season, including but not limited to, am I the other parent of Kevin’s child once he comes out and I become his love interest, will Milo show skin like in the pilot and will the Pearsons become less self-absorbed?

He was more non-committal than I liked on the first two, I offended him on the last one, so we agreed to disagree and focus on our beautiful friendship. And smashing a pair of rich, tasty Sterling K. Hot Browns.

While I only recently learned of the majestic hot brown, as soon as it was in my mouth, I knew it had to be dedicated to my lovely Sterl. Warm and comforting, with a big meaty punch (of heart, in his case), there is nothing I want in my mouth more than this. At a meal time.

Sterling K. Hot Brown
Serves: 2.

Ingredients
1 tbsp unsalted butter
2 tbsp flour
½ cup milk
1 cup vintage cheddar cheese, grated
¼ cup parmesan cheese, grated
a pinch of freshly grated nutmeg
1 tsp hot sauce
salt and pepper, to taste
4 slices bacon, fried until crispy
1 tomato, sliced
4 slices sourdough, toasted
8 thin slices turkey
chives, sliced, to garnish

Method
Melt the butter in a saucepan over medium heat, Once foamy, add the flour and cook for a minute or so, or until a glorious roux has formed. Remove from the heat and slowly add the milk, whisking, before returning to the heat to bring to the boil. Reduce heat to low and simmer, still stirring, for five minutes, or until thickened. Add half of each cheese, the nutmeg, hot sauce and a good whack of salt and pepper. Stir to combine and remove from the heat.

To assemble, place the bread on a lined baking sheet and arrange the turkey and tomato on top. Spread sauce on top of each and finish with the remaining cheeses. Transfer to a grill and cook on medium for a couple of minutes, or until golden and bubbly.

Transfer the sandwiches to a plate, top with bacon and chives and then, finally, devour.

Previously on Survivor South Africa Ta’alo narrowly secured immunity in the final immunity challenge – with Durao being the only one to know the merge was imminent – with Cobus rallying the tribe to stick together she a merge be happening anytime soon. And honestly, I’m not sure whatever happened because he too is hot. Despite Durao snatching an idol on the Islands of Secret, he didn’t feel the need to play it since Geoffrey came up with a plan to blindside Nathan, while baited Meryl and Dante into playing their immunity idol. At tribal council Geoffrey was a bit too good at baiting Dante, with them having an ugly, heated fight, leading to his plan coming together perfectly as Meryl played her idol and Nathan was booted from the game and no longer dateable, since he missed merge. Despite the SA speedos.

Back at Sa’ula Geoffrey was worried about any backlash from tribal council. Thankfully Meryl wanted to nip things in the bud, saying that she isn’t the villain and hasn’t lied to anyone. Which Nicole was not buying at all. Speaking of Nicole, Dante was now branding her unstable before Meryl told him that he needs to reel it in and not burn all the bridges. Nicole approached Dante and Meryl to clear the air, though continued to talk in circles which pissed Dante off which led to him cursing her out and burning the charred out bridges until the ash floated away on a light breeze. And just like that, my boner is killed. Things still weren’t looking good in the cold light of day as the tribe talked about the blow-up, with Nicole glad that everyone got to see Meryl and Dante’s true colours and hopeful her bond with Geoffrey and Mmaba will be enough to drag her to the merge. Dante too was still seething, feeling like Nicole was talking over him and putting her finger in her face and hot damn, I need to catch up with Alicia Calaway. 

The tribes met Nico in the jungle where Rob was crushed to discover that Nathan had been voted out of the game, vowing to stop playing nice immediately. But that is not we’re here for – the merge has arrived and everyone was thrilled to be done with their tribes and chow down on a huge Steers feast. While I hate the product placement – I mean, where is my plug – those burgs’, fries and thickies look amaze. Rob quickly moved on from his boyfie Rob, pulling Mike in for a hug and pledging allegiance before whispering to Jacques that they too will get there. Before Rob had aligned with everyone, the tribe sat down to devour their meals, rivalling Meg Ryan with their reactions. Well until Seipei asked Nicole what happened that lead to Nathan’s departure, with her saying how hard the night before handing over Nathan’s necklace to Rob, bringing him to tears. 

Jacques buddied up to Dante and Meryl to find out what they had been up to, Laetitia led the charge was a swim scene while poor Durao realised that he was lactose intolerant and shouldn’t have had the milkshakes. While the tribe swam, Meryl and Dante pulled Cobus and Jacques aside to fill them in on how badly they screwed things up the night before, pissing Geoffrey off in the process given he believes immediately scrambling is in poor taste.

Back at camp the tribe discovered that they had been gifted a couch, tea and coffee, though the price was a lack of shelter. As they started again, the tribe split up to work with Meryl highlighting how well connected Nicole is in the game, which made her the biggest threat. Meanwhile Geoffrey started to regret blindsiding Nathan, worried that it put a target on his back. Speaking of said target, Meryl approached Steffi and explained what had happened with the blindside and how Nicole broke their trust. While Steffi tried to downplay the connection of the OG tribe, she immediately approached Rob to hang out and work with Cobus, who was now hoping to slide under Rob’s wing and be his new number two. He then reminded everyone that not everything in life is straight and I live. Also living is Durao, who was getting a massage from Meryl as she continued to try and find anyone to align with.

Back at the well Steffi and Laetitia approached Nicole to find out what happened last night and whether Meryl is telling the truth, with Nicole explaining that she didn’t want to make the decision she made last night but she had to. And at the end of the day, they were so rude to her they no longer deserve an explanation. The trio cheersed to relationships and just like that, Laetitia is back to being my Queen – loitering around, not being a target and befriending everyone. Down by the shore Jacques and Rob smashed some take away, with Jacques filling him in on the extra vote for the upcoming tribal council. Before they could plan any further, Nicole joined them and tried to deflect from the truth about Nathan’s blindside.

The next day Mike, Geoffrey and Mmaba got together after breakfast to figure out where all the numbers lay, and who best to align with. They agreed Rob would be a great meatshield and Jacques would be helpful, and while they used to be close with Geoffrey, he has caused drama and may paint a target on his back. Over at the well Rob and Seipei got together to talk about how angry they are at Nicole for her betrayal, though agreed that she has nobody else to align with and as such, her desperation will keep her loyal. Nicole pulled Rob aside – with Geoffrey loitering behind them to eavesdrop – to explain that whether she voted him out or not, he was going that night and would have quit, so had to go with the flow to avoid taking any heat. While he said he believed her, she still looked down and she knew that she needed to get Seipei to help smooth things over. She pulled her aside and explain the situation before pulling out Nathan’s half idol, and vowing to work together to use it for them when needed. WIth them wedded by idol, Nicole approached Steffi to clear the air and while Steffi was understanding, she told us that her new alliance was more important, putting Nicole on the outs.

Nico returned for the first individual immunity challenge of the season, which is the Shi-Ann Huang and Parvati Shallow memorial hold your hand above your head while tethered to a bucket of water, with the last person standing dry wins immunity. And in addition to immunity, the victor could send someone to the Island of Secrets, rendering them immune as well. Queen Laetitia literally dropped out straight away and I honestly think she thought that she had to pull the bar down when Nico said go. Dante, Mike and Seipei quickly followed, while Meryl annoyed the shit out of everyone by humming to herself. Mmaba dropped out while Nicole terrorised everyone by talking about snacks, which then claimed Durao and Meryl. After an hour, Zaddy Cobus dropped out while Nicole annoyed the shit out of me, despite me not even being starved. After two hours Nicole ran out of menu items, so Nico added torture telling everyone the would now have to balance on just one leg, claiming Jacques, Nicole and Rob, leaving Steffi and Geoffrey to battle it out for immunity. WIth Geoffrey finally losing is balance, handing immunity to Steffi and herself, as she opted to send herself to the Island of Secrets to avoid the drama of tribal.

Steffi arrived at the Island of Secrets and it became clear that she thought that she had to go their to maintain her immunity before explaining she didn’t even want to win immunity and only pushed through to avoid Geoffrey getting it.

Back at camp the tribe yakked it up as they washed the painted war off the water before Meryl and Dante started talking about the vote, wanting to get rid of Nicole for being annoying or Geoffrey for being the biggest threat. Dante pulled in Jacques, Cobus, Meryl, Laetitia and their extra vote to target Geoffrey. Rob too was planning to take out Geoffrey, until he noticed Meryl scrambling like mad and he realised that she is the more pressing concern and as such, she needs to go ASAP. He then locked in the vote with Mike, Geoffrey and Durao, with them identifying Seipei, Nicole and Mmaba as trustworthy allies. Cobus, Seipei, Jacques and Nicole were the next to join Rob to discuss getting rid of Meryl, with nicole arguing that since everyone knows she is a threat, doesn’t that mean she is no longer a threat. And while they agreed, Jacques rightly pointed out that whichever pair they target out of Meryl and Dante, and Geoffrey and Mmaba, they need to break up the other one the next tribal. Rob and Seipei got together to talk about Nicole’s apologies, with both of them agreeing to sleep with one eye open. Cobus played coy with Meryl and Dante, who both wished Nicole was a target instead while Geoffrey too was nervous about how tribal council was about to play out.

At tribal council Nicole admitted that the merge has completely destroyed the hierarchy of the tribes, with this vote dictating where everything really stands. Jacques spoke about each different alliance having different ideas about how to vote, though they can come together to get rid of a common enemy. Cobus shared that he would be voting out the biggest strategic threat, Meryl pointed out that social players are the true threats which Dante jumped on board with and while it works for Nicole and Geoffrey, the fact he kept saying he let the cat out of the bag. Durao said that he is voting out the least socially aware female in the game, Mmaba was targeting a threat, Geoffrey and Rob said they were going with the numbers – while MEryl and Durao whispered, with her thinking he was referring to Nicole – while Nicole planned to get rid of someone that she can’t trust.

With that the tribe voted and piled up six each on Meryl before the latter secured the thirteenth vote and found herself becoming the Queen of the Jury. While I was heartbroken to see my fell curly head Queen exit the game, I am thrilled that it happened at the start of the jury which is one of my favourite places for someone to finish on Survivor. I assured her that at least she is still dateable as she made the jury and her long-term husband doesn’t need to divorce her, toasted a game well played and absolutely destroyed a Merylktert Szolkiewicz in her honour.

When you translate it, a milk tart doesn’t really sound very enjoyable but let me tell you, this little pie is damned near perfection. A delicate custard in a crispy pastry covered with a hearty sprinkle of cinnamon – glorious!

Merylktert Szolkiewicz
Serves: 2 queens … of the jury.

Ingredients
125g unsalted butter, at room temperature
1 ¼ cup raw caster sugar
4 eggs
2 ¼ cups plain flour, sifted
2 tsp baking powder
1L milk
⅓ cup cornflour
¼ tsp vanilla essence
ground cinnamon, to dust

Method
Preheat oven to 180°C. 

Combine the butter, ½ a cup of sugar, an egg, 2 cups of flour and baking powder in a food processor and blitz until it all comes together to form a dough. Form into a disc, wrap in cling and transfer to the fridge to chill for half an hour.

Once chill, roll the disc out until it is 5mm thick and line two pie dishes. Prick the bases with a fork, line and add some baking weights and blind bake for 15 minutes. Remove the weights and return to the oven to cook for a further 10 minutes. Remove and leave to cool.

While the crusts chill, heat the milk in a saucepan until it boils before removing from the heat immediately.

Whisk the remaining eggs, sugar and flour together in a bowl with the cornflour and vanilla until a thick-ish paste forms. Whisk the eggs into the warm milk until smooth and combined. Return the saucepan to the heat and cook over medium for 5 minutes, or until it thickens. Pour into the pie crusts, smooth the tops and transfer to the fridge to set overnight.

When the pie has set, dust with cinnamon and devour. Regally like the Queen that you are.

Paulnapple Wupside Downs Cake

Baking, Cake, Dessert, Four and Three and Two and Done: A Farewell to Broad City, Snack, Sweets

After catching up with Abbi, Arturo, Hannibal and John, I am almost coming around to the idea that Broad City is coming to an end tomorrow, despite the fact it breaks my heart. Thankfully I am trying to focus on the positives, like Abbi doing Ilana at the co-op, Jaime becoming a citizen, Lincoln being Lincoln, Bevers literally being the worst and the discovery of Trey’s past as Kirk Steele. And damn did it make me fall even harder for my dear Paul W. Downs.

Like Abbi I started of hating Trey and episode by episode fell in love with him, which comes down to the comedic work and total charm of Paul.

While I didn’t meet him until Broad City, we fast became friends and I’m honoured that he came to me for advice on how to block the Kirk Steele scenes. While my infatuation made our friendship awkward for a brief period, I am thrilled that I was able to cool down and he never let it get in the way of our bond.

Paul being the absolute best, he arrived at my door with the inflatable pool toy and a visor and told me how grateful he was to be celebrating the show, and how much he wanted me … to have the props.

I mean, can you believe? He is a sweet angel. Just like my Paulnapple Wupside Downs Cake.

 

 

TBH I have always looked at this cake as kitsch krap, but somehow it defies my expectations and further proves that the ‘80s get a lot of unnecessary hate. A sweet and tart top, with melt in your mouth fluffy sponge, there is nothing better to while away an afternoon with a dear friend.

Paulnapple Wupside Downs Cake
Serves: 8-12.

Ingredients
¾ cup unsalted butter
½ cup muscovado sugar
8 canned pineapple rings, juice, reserving ½ cup for the cake
12 maraschino cherries
1 ½ cups flour
1 tsp baking powder
¼ tsp salt
1 cup raw caster sugar
2 eggs

Method
Preheat oven to 180°C and spray the base of a 23cm cake pan with cooking spray.

Combine ¼ of a cup of butter with the muscovado in a saucepan and cook over medium heat until combined and slightly darkened. Remove from heat and pour directly into the cake tin.

Arrange the pineapple rings in the caramel and dot the maraschino cherries as artfully as you desire. Set aside.

Meanwhile whisk the dry ingredients together in a bowl, and cream the remaining butter and raw caster sugar in a stand mixer until light and fluffy. Agg one egg at a time, beat well after each addition. Add the dry ingredients and pineapple juice in thirds, alternating between each until it is well combined.

Spoon the batter over the fruit and gently smooth the top, being careful not to move or break the fruit. Transfer the cake to the oven to cook for 45 minutes, or until golden brown and an inserted skewer comes out clean.

Leave the cake to cool for ten minutes before flipping onto a serving plate … and devouring like it is Kirk Steele.

Florgeres Welch

Baking, Dessert, Snack, Sweets

I know it is stupid and I sound so whiny – I am a diva, so like Britney, leave me alone – but damn did I need this time with Florence to perk myself back up – sorry, raise – and focus on what is important in life.

I mean, as soon as Florence got off the plane and held me in her arms it was like happiness hit me like a train on the track.

It should really come as no surprise to me, given we’ve known each other since attending Thomas’s London Day School as young kids. Fun fact: I was the one that suggested Kathy and Will send my godson George there.

While it has been a few years since we’ve had the time to catch-up, it felt like not a day had gone by since our last date. We laughed – even about the fact I was outside her door for Grammy Gold before realising she is just a nominee – we cried and she cheered me the fuck up over a big plate of my Florgeres Welch.

 

 

Crunchy on the outside, delicate and creamy on the inside, these sweet cigars are the perfect treat to bring people together and turn around your mood. Am I putting too much power into food? Sure. But what else am I meant to do?

Florgeres Welch
Serves: 6.

Ingredients
125g cream cheese, softened
250g ricotta
250g cottage cheese
2 tbsp raw caster sugar
1 tsp honey
1 tsp ground cinnamon, plus extra for sprinklin’
24 sheets filo pastry
unsalted butter, melted

Method
Preheat oven to 180C.

Blitz the cheeses, caster sugar and cinnamon in a blender or stand mixer until well combined.

Place a sheet of filo on the bench, brush with some butter and top with a second slice of filo. More butter, more filo, more butter and a fourth and final piece of filo.

Cut the filo tower into quarters and spoon 1 tbsp of filling along the short edge. Roll over to just cover the filling, fold in the edges and then continue rolling to form a small cigar, brush with butter and place on a lined baking sheet. Repeat the process until the four are done. Then repeat the process with the remaining filo.

Transfer to the oven to bake for ten minutes, or until golden and crispy. Devour immediately, sprinkled with some cinnamon.

Choc Berry Muffins

Baking, Cake, Dessert, Grammy Gold, Grammy Gold: Somebody That I Used to Gold, Snack, Sweets

It has been an extremely busy week celebrating this year’s Grammys with my annual Grammy Gold parties, but as usual, I always push through. Or get by with a little help from my friends, so to speak. And Somebody That I Used to Gold would have been nothing without the love and support of my dear friends Lady Gaga, ONJ, Trey, Tina, Kandi and today, the late, great Chuck Berry.

Given I already had the delorean out to visit Kandi, I decided I should take it out for another spin and seeing Chuck again was high on my list of priorities.

I met Chuck in the ‘40s while studying to become beauticians at the Poro College of Cosmetology. While I wasn’t very good, my boy Chuck was a bloody star and so I quickly helped him rise in the industry. Until I heard his dulcet tones and realised that making him a singing star would be far more beneficial to my bank account.

While in the car, I started pondering about the major Grammy categories that I still needed to run the odds for. Obviously I am backing This is America for Song of the Year, however my gut – or indigestion – is telling me that movies are going to dominate the other two, With Black Panther snagging Album of the Year and Shallow getting Record of the Year, though This is America truly deserves the double.

With that out of the way, I arrived back in the ‘80s to help celebrate his Grammy Lifetime Achievement Award and boy was it an absolute thing of beauty. His kind, talented soul, and my Choc Berry Muffins, obvi.

 

 

Tart berries and gooey chocolate are quite possibly my favourite flavour combination. Add them into some pillowy cake, and I am in heaven. Heaven I tells, ya! Like my dear friend Chuck, may he rest in peace.

Choc Berry Muffins
Serves: 6.

Ingredients
75g unsalted butter
200g plain flour
½ tsp bicarb of soda
2 tsp baking powder
75g raw caster sugar
200ml buttermilk
1 egg
100g blueberries
100g raspberries
200g milk chocolate, cut into rough chunks

Method
Preheat oven to 160C and line a six-hole Texan muffin pan.

Melt the butter and leave to cool slightly.

Combine the dry ingredients in a large bowl, and whisk the buttermilk and egg with the melted butter. Fold together with a wooden spoon until just combined before folding through the berries and chocolate.

Divide the batter between the holes and bake in the oven for 30 minutes, or until risen cooked through and golden.

Allow to cool slightly, though making sure they’re still warm enough for the chocolate to be gooey. When you devour.

Jane Crackpieski

Baking, Dessert, Hashbrown: The End, Pie, Sweets

Like Unbreakable Kimmy Schmidt itself, we’ve reached the end of the road of our farewell celebration – Hashbrown: The End – and I am starting to get a bit misty, which is inappropriate when you’re meant to be honouring a hilarious show. But after catching up with Carol, Dylan, Ellie and Tituss I was too emotional, so I reached out to my dear friend and icon Jane Krakowski to see if she was free to drop by.

And she obviously was, since you’re ready this.

As you know I met future EGOT Jane in the 80s while co-starring in Starlight Express until my before I was callously cut. Thankfully it was Jane’s undying love and support that saw we through the tragic loss of my role of a lifetime.

Given Jane is a damn comedy icon, I try to see her as much as possible however it has tragically been well over two years since we last got together. As soon as she walked through customs I ran into her arms and started sobbing – some say it was because I missed her so, but we both knew that it was because at the close of today Jacqueline Voorhees will go the way of Jenna Maroney. And that is hard for me to deal with.

Unless Teens does reboot 30 Rock, I guess.

Somehow I managed to pull myself together long enough to drive home, go to the fridge and pull out the ultimate comfort food in the form of a Jane Crackpieski.

 

 

I feel like I am on a bit of a Milk Bar kick at the moment, but you know, when it’s right, it’s right. Any everything they do is right, even when it is a mistake. If you don’t know the story, Christina Tosi made the pie for staff dinner and while it was undercooked and she felt it was a dud, they couldn’t stop eating it and an sweet, addictive icon was born – the Crack Pie®.

And if that doesn’t offer you hope in a post-Kimmy Schmidt world, I don’t know what does.

Jane Crackpieski
Serves: 8.

Ingredients
Oat Cookie
115g unsalted butter, at room temperature
75g muscovado sugar
40g raw caster sugar
1 egg yolk
½ cup flour
120g rolled oats
⅛ tsp baking powder
pinch of baking soda
½ tsp kosher salt

Assembly and filling
180g muscovado sugar, plus 1 tbsp for the base
1 tsp kosher salt, plus ¼ tsp for the base
280g butter, melted – 55g for the base, the rest for the filling
300g raw caster sugar
20g milk powder
24g corn powder
¾ cup double cream
½ tsp vanilla extract
8 egg yolks, separated with military precision
icing sugar, for dusting

Method
Preheat the oven to 180°C.

Kick things off by working on the oat cookie. Cream the butter and sugars using the paddle attachment on a stand-mixer on medium-high for 3 minutes or so, or until light and fluffy. Scrape down the sides and add the egg, before increasing speed and beat for a further couple of minutes.

Add the remaining ingredients and using the paddle, mix by hand until moist enough to return to the mixer to beat on low until just combined.

Dollop the mixture onto a lined baking sheet and flatten into a 1cm thick splat. Transfer to the oven and bake for 15 minutes, or until caramelised, puffed and firmly set. Allow to cool completely.

When you’re ready to get to work on the final product, preheat the oven to 180°C.

Place the cookie in a food processor with a tablespoon of muscovado sugar and ¼ tsp of salt, and blitz until it is the consistency of wet sand. Add 55g of melted butter and blitz until it comes together as a ball. Transfer the ball into a pie dish and firmly pack to cover the edges in an even thickness.

To make the filling, combine the remaining sugars, with the milk powder, corn powder, and salt in the bowl of a stand mixer fitted with the paddle attachment and mix on low speed until evenly blended. Still going, add the remaining butter and mix for 3 minutes or until all the ingredients are moist. Add the double cream and vanilla and continuing mixing for 3 minutes, or until completely combined. Scrape down the side and add the egg yolks, mixing on low speed until it is glossy and combined.

Pour the filling into the pie dish and transfer to the oven to bake for 20 minutes, or until golden brown but still jiggly.

Open the oven door and reduce the oven temperature to 160°C and close the door once it has cooled to that temperature. Cook for a further ten minutes, or until firming around the edge but jiggly in the centre.

Remove from the oven and allow to cool completely before covering in cling and transferring to the freezer to set. Remove to defrost a couple of hours before you’re ready to serve.

When you’re ready for your mind to be blown, dust with icing sugar, grab a spoon and devour. Greedily. Thankful that we exist at the same time that Milk Bar does.

Mike White Chocolate Mud Cake

Baking, Dessert, Survivor, Survivor: David vs. Goliath, Sweets, TV Recap

After toughing it out on a Fijian Island for 39 days without a jacket, begging for idols and scaling the largest cliff face on the planet to snatch an idol to embarrass one of the final jurors, the heroic Angelina’s claim for the title were completely ignored by the jury, despite having a passion for negotiation and persuasion. With that it came down to Hollywood heavyweight Mike White and public defender Nick, with the former toppled by the latter fulfilling the destiny of the season’s theme.

Given the fact that Mike comes from the entertainment industry and is the most well-known celebrity to ever join the cast – and as such has a lot of easy targets to paint on him in a game where any excuse to vote someone out is valid – he never should have made the merge, let alone the final three and be a couple of votes away from winning.

But that is how well my dear friend Mike played.

Obviously I first met Mike while working together on Dawson’s Creek and we quickly bonded over our sardonic wit. As is often the case, I vowed to make him a star however plot twist, when he decided to partner with Jack Black – who I was feuding with at the time – we went our separate ways and I had to watch him succeed without me.

Well until footage of me having a meltdown at work leaked – by me – on the internet, and he reached out to see if I was ok and whether he could base a television show about me. I am passionate about being a muse, so gladly gave him my blessing and Amy Jellicoe slash Enlightened were born and our friendship renewed. You’re welcome.

Anyway Mike’s charm and killer gut instincts that allowed his to wait until just the right moment to make a move played a huge roll in him getting to the end and almost snatching the title of Sole Survivor. And while he was disappointed not to win, he was thrilled to see me in Ponderosa waiting to cheer him up with a big, heavy Mike White Chocolate Mud Cake.

 

 

Obviously this is ridiculously, sickeningly sweet, as mud cake is want to do, but damn is it good. Dense, moist and melt in the mouth, there is nothing better to distract from losing $900k after 39 days on an island.

Mike White Chocolate Mud Cake
Serves: 8-12.

Ingredients
700g white chocolate, roughly chopped
350g unsalted butter, chopped
2 ½ cups raw caster sugar
1 ½ cups milk
2 ⅔ cups plain flour
1 tbsp baking powder
2 tsp vanilla extract
3 eggs
½ cup cream

Method
Preheat oven to 140°C.

Combine 200g of the chocolate in a large saucepan with the butter, sugar and milk, and stir over low heat until smooth and combined. Transfer to a large mixing bowl and leave to cool slightly. Whisk in the flour, vanilla and eggs, and stir until just combined.

Pour into a lined cake tin and bake for 2 hours, though start checking from 1 ½ hours and stop once an inserted skewer comes out clean. Remove from the oven and allow to cool in the pan for about half an hour, before transferring to a wire rack to cool completely.

Once cooled, bring the cream to the boil in a small saucepan and transfer to a bowl. Add the remaining chocolate and stir until smooth. Transfer to the fridge to cool for half an hour, stirring a couple of times.

To assemble, flip the cake upside down, slather with ganache and devour.

Choc Peanut Butter Aaron Spelting Cookies

And now, the end of The Gold Wing is here and I thought it best to once again go back in time and celebrate with someone that has faced their final curtain – Toto that into My Way, would you? – my dear friend Aaron Spelling.

As you know, I’ve long been a friend of the Spelling Dynasty and my catch-up with Loni – who played Candy in Tori’s hit show So Notorious – reminded me that Aaron has a couple of Emmys to his name, despite creating some of the most iconic TV shows of our time.

I used my time in the purring delorean to finalise my tips for the best series gongs, settling on an ASP clean sweep as The Marvelous Mrs. Maisel takes Comedy, The Handmaid’s Tale goes back-to-back for Drama and The Assassination of Gianni Versace: American Crime Story is honoured for Limited Series. I found things more difficult for Talk and Sketch Series, eventually decided Variety Talk would go to Last Week Tonight with John Oliver and At Home with Amy Sedaris will/should surprise for Variety Sketch.

Oh and I obviously am backing RuPaul’s Drag Race but that should come as a surprise to absolutely no one.

By the time I arrived at the epic Spelling Compound, I was so overjoyed to see Aaron one last time that I didn’t want to let him go. I desperately danced around filling him in on what I had been up to, lest I set off a butterfly effect, eventually shoving Choc Peanut Butter Aaron Spelting Cookies into our mouths to avoid any issues.

 

 

Inspired by a delicious Nigella classic, these babies are decadent, rich and a little bit healthy – yay spelt! – so you can devour them without feeling to guilty. And while that is a total lie, just buy it … because they are worth it.

Choc Peanut Butter Aaron Spelting Cookies
Serves: 2 nostalgic friends, or 6-8 normal people.

Ingredients
150g peanut butter chips
125g dark chocolate
125g spelt flour
25g cocoa
½ tsp bicarb soda
pinch of kosher salt
60g unsalted butter, at room temperature
125g muscovado sugar
2 tsp vanilla extract
2 eggs, still cold

Method
Chuck the peanut butter chips in the freezer and preheat the oven to 160°C.

Melt the dark chocolate in a bowl and leave to cool a little, and combine the flour, cocoa, bicarb and salt in another bowl. In the bowl of your stand mixer, cream the butter, sugar and vanilla for a couple of minutes, or until light and fluffy. Beat in the cooled chocolate until well combined before adding the cold egg. Scrape down the sides, reduce speed to low and carefully add in the dry ingredients, avoiding a mushroom cloud of flour at all costs. Remove from the stand and fold through the peanut butter chips until combined.

Dollop a tablespoon of dough on a lined baking sheet, leaving a large rim for spread, until full. Place the remaining dough in the fridge while you transfer the baking sheet to the oven for ten minutes and bake until just set. Leave to rest on the warm pan for ten minutes before transferring to a wire rack to cool.

Repeat the process until the batter is done, and then devour.

Lena Wafers

Baking, Dessert, Emmy Gold, Emmy Gold: The Gold Wing, Sweets

It is the second last day of this year’s Emmy Gold celebration The Gold Wing, can you believe? And something something segue Gaz, Marg, Ava, Rami and Rhea something, I am thrilled to catch-up with my dear friend and semi-freshly minted Emmy winner Lena Waithe.

Given she won her Emmy with my (problematic) friend Aziz for the beautiful Thanksgiving episode of Master of None, it should come as no surprise that he is the reason we became friends.

I was visiting the set during season 1 and Lena and I got to talking about our coming out experiences, and Aziz suggested that they write it into the second season. So you’re welcome, because that episode was perfection and he and Lena truly deserved that Emmy and I can’t even begrudge them for not including me in the writing process.

Since her victory, Len’s career has absolutely exploded and while it means we don’t get to see each other as often as we’d like, I’m so proud of her. And it makes our fleeting dates even more special. As a fellow writer, I knew that she would be best placed to go through the writing categories with me. Obviously she agreed that The Marvelous Mrs. Maisel’s auteur Amy Sherman-Palladino would snag it for Comedy. Continuing our agreeance, we both backed Phoebe Waller-Bridge for Killing Eve, Steve Martin and Martin Short for their Netflix special and William Bridges and Charlie Brooker will snag it for USS Callister.

With the formalities out of the way, we toasted her success and got to work demolishing a big batch of Lena Wafers.

 

 

Not your childhood’s technicolour crosshatched biscuits, these wafers may not look as perfect but damn they are delicious. Light, sweet and delightfully crisp, they are the only thing worthy of honouring my girl Lena.

Lena Wafers
Serves: 6.

Ingredients
115g unsalted butter, at room temperature
100g raw caster sugar
1 egg, whisked
2 tbsp vanilla extract
1 tbsp milk
200g flour
1 tsp baking powder
pinch of kosher salt

Method
Preheat the oven to 180C.

Cream the butter and sugar in a stand mixer for a couple of minutes, or until it is light and fluffy. Still going, add the egg, vanilla and milk and continue beating until just combined.

Combine the flour, baking soda and salt in another bowl before folding through the wet ingredients. Cover and transfer to the fridge for half an hour.

When you’re ready to bake, place teaspoon sized bowls on lined baking sheets, leaving plenty of space for spread. Flatten each ball to form a thin disc and transfer to the oven to bake for fifteen minutes, or until golden.

Remove from the oven and allow to cool on the sheets for a couple of minutes before transferring to a wire rack to cool completely.

Once set, devour.
