12 Days of Chrismukkah, Side, Snack

While Caleb Nichol is arguably the worst person to ever walk Orange County – barring all of the housewives, obviously – my dear friend Alan is as sweet as they could possibly come.

As you could probably guess from our down under connection – in both ways – I first connected with Alan in the mid-80s while working on the hit Australian soap Neighbours. Al was starring as Jim Robinson – stud of Ramsey Street – while I was working originally as the inspiration behind Mrs Mangel and eventually the character’s specific acting coach to ensure she was as awful as possible.

Despite the fact we were polar opposites – aka likeable and insufferable – Al and I quickly connected and became the best of friends, with me introducing him to his eventual wife Tracey (she was an ex-girlfriend of mine) and acting as Best Man Of Honour at their wedding.

With roles drying up for him in Australia – damn you type casting – I encouraged Al to take the leap and move to Hollywood. Thankfully it wasn’t long before I introduced him to Sorkin and his career took off.

I’d recently caught up with Al while he was back home filming Secret City (which FYI is actually pretty good) but sadly we were both to busy to take time out to reconnect over our favourite friendship feast of my Alan Dale Sprouts.

So it may not be obvious given ale perfectly slots into dale … but these are beer and bacon fried brussels sprouts and they are freaking delicious. I promise.

Alan Dale Sprouts
Serves: 6-8.

Ingredients
1kg brussels sprouts, ends removed and halved
200g pancetta, roughly chopped
1 shallot, finely sliced
375ml pale ale
pinch of dried chilli flakes
pinch of muscovado sugar
salt and pepper, to taste

Method
Heat a large frying pan over medium heat and fry the pancetta and shallots for a couple of minutes.

Add the brussels sprouts and fry for about five minutes. Pour in the beer and add the chilli flakes and sugar and reduce for about ten minutes, or until it is a sticky glaze.

Season to taste, serve and devour.

Bahn Michaela Bradshaw

Main, Party Food, Snack, Survivor: Millennials vs. Gen X, TV Recap

In the words of the great, wise Brandi Glanville – fuck you, fuck this, fuck that, fuck him, fuck you, fuck off.

I know, I should be telling you about what happened previously on Survivor, like how five of the first six women were minority women, Hannah had a panic attack, Taylor lost his in-game snuggle bunny, Ken was absolutely banging and Michaela was absolutely beasting the competition … but fuck this.

Seriously.

Not only did we suffer the pain of losing the final minority female cast member, said female was Michaela who was and forever will be my Queen … second only to Sandra Diaz-Twine.

Sure Taylor handled Adam screwing he and Figgy over with a lot more maturity and game awareness than I was expecting.

And yes David and Zeke confirmed their scrappy, underdog alliance.

But Michaela singlehandedly one her seventeenth challenge – behind Vanua, thanks to Chris’ beast 2.0 performance – after throwing out a bye Felecia about Figgy’s departure. Hell, I am so upset I can’t even bring myself to comment on how beautiful Ken looked glistening from the water, shooting hoops during the challenge.

The Vanua tribe may have enjoyed one of my favourite kind of rewards, where locals come to cook for tribe and they in turn repulse everyone by farting and burping. I guess it was an attempt at humour, knowing that Jay was about to crush our souls.

Either way, I’ll stop my sob story to say pray for Michelle as she suffers through bodily Chernobyl.

Over at Takali, Taylor continued to play beyond what I assumed was his capacity and worked over Jessica and Kengel. Or maybe he was looking to start a relationship with Kengel and his open shirt.

We then checked in with Ikabula, reminding me of the agony coming at the end of the episode. Thankfully Hannah started to win me back after her post-Mari faux-pas, trying to turn the tribe on Bret after she interrogated him on his career and immediately picked up on the fact that he is a cop.

It what feels like only moments after reward, Jiffy Pop arrived for to lord over the fateful immunity challenge involving a whole bunch of ball play, weighing down heavy sacks and shooting your load – of sacks – at a target. Normally this would be my favourite thing to write about … but I’m different now, knowing what Ikabula’s loss means.

I mean, even Kengel almost knocking out Adam while avoiding him to hug Taylor couldn’t make me smile.

Back at camp Ikabula had a moment of silence for my loss, before Sunday finally broke rank to start scrambling with Bret while Michaela rallied the kids to lay out their path to the final four. Sadly Queen Michaela’s strategic leadership spooked – rightfully – Jay, who pulled the young James Earl Jones impersonator aside and commenced the march to her doom and my pain.

For Jay it was a great move … for now at least – he got rid of arguably the biggest physical threat just before the merge, he made a huge play he can reference if he makes it to the end – particularly given he boldly told Michaela he had flipped while Jeff tallied the votes – and he saved Sunday and Bret which could become loyal numbers to repay the debt.

And he didn’t get killed by Michaela after her very dramatic blindside … although it would have been better if she had attempted to light his low-rent Joe Anglim locks on fire.

But, you know, choices.

None of that however changes the fact that Survivor lost an angel last night, in the form of sweet, feisty, Michaela – who I met at college and quickly befriended as I needed someone to keep me in line – and life will forevermore be broken down by the time before Michaela was voted out and after. The latter being a bleak time where nothing matters anymore. If only there was a way she could change her game fate …

On another season perhaps …

She was obviously not very happy to be blindsided from the game just before the merge but took comfort in a hearty Bahn Michaela Bradshaw, and the knowledge that she is the star of Millennials vs. Gen X.

Like our fallen angel, these sandy-j’s – maybe I shouldn’t bring up Jay right now – are full of flavour and plenty of heat. I mean, if a sandwich was ever going to dominate you in a winning fashion, this is it! Hot, sour, sweet and fresh – it is everything Michaela used to change the game.

Bahn Michaela Bradshaw
Serves: 6.

Ingredients
6 Vietnamese baguettes or crusty white bread rolls
½ cup rice vinegar
½ cup raw caster sugar
sea salt
3 large carrots, peeled and grated shredded
500g minced pork
3 tbsp muscovado sugar
2 tbsp fish sauce
2 tbsp soy sauce
lemongrass stalk, finely chopped
2 cloves garlic, finely minced
1 tbsp chilli paste
pork liver pâté, to taste
mayonnaise, to taste
1 large Lebanese cucumber, quartered lengthwise and deseeded
handful coriander
2 shallots, finely sliced
sliced bird’s eye chilli, to serve

Method
Start with picklin’ your carrots by combining the vinegar and sugar in a small saucepan over medium heat and stir until the sugar has dissolved. Pour into a small bowl, grate in the carrots, add two teaspoons of salt and stir to combine. Leave to steep for an hour or two, drain and refrigerate.

Preheat to the oven to 180°C.

While the carrots are chilling like Michaela wasn’t on her way out, combine the pork in a bowl with a teaspoon of salt, muscovado sugar, fish and soy sauces, lemongrass, garlic and chilli paste and mix well to combine.

Form the meat into 6 sausage shaped pieces of meat, place on a lined baking sheet and bake for fifteen minutes, or until browned and just cooked through. Remove from heat and set aside.

To assemble, split the baguettes in half and slather one side with mayo and the other with pâté – and by slather, to your taste. Top with some pickled carrot, cucumber, pork and some coriander, shallot and chilli to taste.

Devour … being careful to avoid the fiery rather of the bird’s eyes / Michaela.

Australian Survivor, Australian Survivor (2016), Main, Poultry, TV Recap

After booting El the night before, Kristie and Lee awoke on the final day to the customary breakfast feast where Kristie was giddy from excitement while Lee only seemed concerned. Maybe he realised that not wanting to play the game wasn’t actually the best strategy to win?

Not messing about or wanting to see Lee suffer in his thoughts, we arrived at final tribal council where the jury were trotted out to give us some excitement and bring the pain, right?

Oh yes, yes indeed! Well … kind of at least.

Before that though, Lee and Kristie were given the opportunity to make opening statements were Lee – of course – pledged loyalty, mateship and a moralistic game while an assertive Kristie emerged and completely dominated her opponent.

Then the good stuff happened well, after El was startled to be making a speech and then bumbled her way through an attempt to throw Kristie under the bus. Thankfully new Kristie wasn’t having a bar of it and shut her down.

Next it was Queen Flick’s turn to wonder why Kristie hadn’t made any big moves, to which she eloquently explained she was playing with the cards she was dealt and didn’t have the luxury to play in the majority and saw what happened when people stuck their necks out.

Brooke then teed up Lee dumping El – praise – before laying into Kristie for being controlled by Lee every step of the way. Obviously new Kristie wasn’t taking it and told her that she was using Lee by making him feel like he was in control.

JL – like us at home – then introduced herself to Kristie before absolutely tearing the ignorant and arrogant Lee – her words, obvs … since we’re boning – a new arsehole. While that would normally make me jealous, it was the most excitement I’ve seen on the show in weeks, so I let it slide.

Kylie then dropped by to remind us of that first episode winner’s edit and why it disappeared so quickly. I mean, seriously, you use your opportunity to tell them to keep answering questions?

Sam then dropped by to fill the non-fun angry juror quota, where he awkwardly confronted Lee for taking advantage of Kristie. Which is fine and all, if new Kristie hadn’t emerged at the start of final tribal and confirmed she was also using Lee.

Thankfully – or so I thought – Nick arrived to call them both out, asking where this Kristie had been the entire game, which had kind of already been answered, before slamming Lee’s morality … and making a bizarre casually homophobic comment from 2005, leading me to say forget you, go home, GOODBYE, you look weird cleanly shaven. Oh and eat yo’ damn rice.

Sue arrived and spoke for the audience, saying that Kristie’s game completely did her head in. Once again, new Kristie let Sue know that while her game ended her’s she went to twenty tribals, knowing who would go home every time.

Matt then tried to pull a rabbit out of his hat asking Kristie who he would be giving the money to – new or old Kristie – if she won his vote. Um, Matt – the ancient Samoan witch who will live on the island and never touch the money, duh. It is worth it.

With that, it was finally time to vote and given the fact that none of them really asked Lee any questions about his strategy, it is no surprise that Queen Kristie earnt her crown and took out the title of Sole Survivor.

Sadly for Lee, his kids were trotted out just in time to witness his loss – and I assume to let El meet her new step-kids – but thankfully it did distract him from the pain of losing the game he had never seen, in a landslide.

As I’ve made it quite clear throughout the season, Lee and I have been on-again, off-again lovers – block your ears Nick! – meeting at the cricket pitch when I answered a Craigslist ad for someone looking for someone to bat off and play with balls. While Lee hadn’t placed the ad, I was taken in by his banging bod and pursued him relentlessly until I eventually wore him down.

Wanting to distract from his loss and reinvigorate our spark in a tropical setting, I decided to whip him up our favourite date meal my Jalfleezi Carseldine.

Like my dear Lee, this curry is super hot. Like, damn hot. Throw in some thick, juicy balls and you’ve got a mouthful of absolute goodness. Oh and I strongly recommend serving generously slathered with raita as it is hot and real adds the smutty visual you want when eating outwith Lee.

Jalfleezi Carseldine
Serves: 4-6.

Ingredients
500g chicken mince
¼ cup jalfrezi curry paste
⅓ cup frozen peas, defrosted and drained
2 tbsp fresh coriander leaves, chopped, plus extra to garnish
250g cauliflower, trimmed and blitzed in a food processor
2 shallots, thinly sliced
1 small carrot, grated
vegetable oil
1 onion, peeled, finely chopped
2 cloves garlic, peeled, sliced
2 tsp ground ginger
3 tsp ground cumin
3 tsp ground coriander seeds
800g chopped tomatoes
small knob of butter, about a tablespoon
juice of one lemon
lime wedges, to serve
sliced red chillies, to serve
long grain rice, to serve
raita, to serve

Method
Place mince, curry paste, peas, coriander, cauliflower, shallots and carrot in a large bowl, season and mix well.

Shape into meatballs – roughly the size of golf balls – with wet hands, place on a lined baking sheet, cover and place in the fridge for an hour.

Heat a lug of oil in a large pan over medium heat and sweat the onion and garlic until translucent, aka a couple of minutes. Add all the spices and cook for a further minute to release the flavour. Add in the tinned tomatoes, rinsing the tins out with a bit of water and adding it to the pan. Give a good stir, turn the heat up to high and bring to the boil. Once boiling, reduce the heat to low, gently drop in the meatballs and simmer, covered, for about half an hour, stirring sporadically.

Uncover, stir through the butter and lemon juice and remove from the heat.

Serve on a generous bed of rice with lime, chilli, coriander and all the usual fixins’ – if only Jeff was here to say that – raita, pappadums, naan etc.

Rachel Akorean BBQ

Main, Party Food, Side, Snack, Survivor: Millennials vs. Gen X

Previously on Survivor – I know, isn’t this the premiere? – we were given the answer to the age old question, what could kaôh rōng? Specifically, kind of, for Aubry with the season resembling Game of Thrones and killing off three people, two of which were her closest allies. But that is another story from another time – seriously, click the link above if you want to hear about it – we’re off to Fiji for the battle of the ages.

A Survivor first … previously seen in both Panama and Nicaragua!

With that, we’re off. Then the game is off due to a cyclone and recommenced a day later before gen x learnt that taking both shortcuts – something they’d accuse the millennials of doing in real life – doesn’t work, heading to tribal and voting off the first of my competing friends.

Thankfully – spoiler alert – it wasn’t Ken, meaning he lives to see another day to inherit a blur in his tight, tight undies.

Jeff got to work making introductions, with high schooler Will admitting to the fact he was competing in addition to his homework, Paul described milk delivery as now the work of drones – not sure that is the case, but yay – and Michaela stole my heart by giving eye rolls that would make Sandra Diaz-Twine and Courtney Yates proud.

After an opportunity to scramble for supplies and making choices, old-Jessica grabbed an advantage in the game and Taylor opted to choke (I wish), sorry take, the chickens.

Jiffy then dropped the bomb that a large storm was expected in the coming days, scaring everyone shitless and warned them to build a shelter. Obviously the millennials then opted to go for a swim, rather than focus too hard on building a shelter as the aforementioned storm rolled in.

Thankfully Zeke spoke directly to my soul and admitted that being 28 but feeling 80 is a beautiful thing.

Over on gen x, Ken then started dominating like a boss given his experience living off the grid and old-Jessica introduced us to her Legacy Advantage which is vague, ominous and I’ll forget about it by the time she gets it.

Then Jeff sent them a love letter – which isn’t a good sign – to offer them a tarp for the cyclone. When it didn’t blow over, he visited and took them to share his hotel room with us to ride out the storm.

The tribes reconvened after the cyclone with the millennials rewarded for their previous lack of shelter by not having to rebuild, only build, before heading off to the immunity challenge, where – as I previously mentioned – gen x lost after taking all the shortcuts and my dear friend Rachel became the first person voted off the island.

Obviously I first met Rach while working for Heff, when she modelled for Playboy. I was immediately drawn to her intelligence and mentored her as writer, leading to her becoming a #1 Best Selling Author on Amazon.

Fun fact my mum rates me as the #1 Never Sold Non-Author in her heart. Same same.

Anyway, Rachel and I have been close for a long time and as such a knew that only my Rachael Akorean BBQ would be able to cheer her up.

Like Rachel the BBQ is spicy and keeps it real. The delicately cooked – albeit haphazardly cut – meat is simple and delicious, the mushrooms sweet and the onion salad brings the kick. Combining to create a delicious meal leaving you wanting more, like we are left wanting more of Rachel on the island.

Rachel Akorean BBQ
Serves: 4.

Ingredients
½ onion, thinly sliced
1 bunch shallots, cut into thin batons
1 tbsp chilli powder
1 tbsp caster sugar
1 tsp salt
½ tsp black pepper
1 tsp white vinegar
handful shiitake mushrooms, roughly chopped
⅓ cup tamari
1 tbsp muscovado sugar
600g(ish) piece of brisket
ssam sauce, to serve
vegetable oil, to grill
short grain rice, to serve – cooked per packet instructions

Method
Freeze the brisket until solid through, overnight is perfect – then allow to defrost for a couple of hours while you’re doing the salad and mushrooms.

Place the onions and shallots in a bowl of iced water and chill for about half an hour, or until the shallots are curled.

While they are chilling, combine the chilli, sugar, salt and pepper with a tablespoon of water in a medium bowl until the sugar is dissolved.

Drain the onion and shallots and transfer to a bowl with the chilli sauce, add the vinegar and season again to taste.

Meanwhile, add the mushrooms to a small saucepan over medium heat with the tamari and muscovado sugar. Cook stirring for 15 minutes or so, or until the mushrooms are soft, sweet and glossy.

Finally, get to work on the meat by slicing it as thinly as possible, a few millimetres maximum.

Heat a griddle over high heat, brush with oil and grill the meat until lightly cooked, a minute or so each side.

Serve together on a platter as a snack or with rice as a main.

Craig I’Anson-in-law Eggs

Previously on Survivor, after Vavau lost yet another immunity challenge Kate and Craig flipped sending deadweight Andrew and his white male privilege / self-importance out of the game.

For once we opened up at Saanapu where, to be honest, I have no idea what was happening. Kylie wanted to sleep with the tribe, Matt got upset and I wish Probst was here to provide some smutty commentary. The next day we continued to buck tradition and continued with Saanapu where Matt explained that Kylie chucked a shit for trying to sleep in the shelter for the first time in 26 days. While I wouldn’t exactly call it a crime, she was playing the victim so I get why people were irritated.

Finally we caught up with Vavau after the triumphant outsing of King Douche where Conner was freaking out about Kate’s flip, despite it being a move that both she and Craig made. Thankfully they had a chat and Kate was able to smooth things over with the help of some – I assume – crocodile tears. Well played Kate. With that they reaffirmed that Phoebe was the target, while she reaffirmed that she’s playing hard to stay and would find a crack to get the numbers.

Phoebe and Kristie then took to playing with machete while Craig went searching for the non-existent idol, much to their delight. It felt a bit American Psycho of them, to be honest. After the casual gloating, Phoebe then started working on Conner to get him to spill to her if she was ever the target. What is with Conner falling for the girls’ stories?

Over on Saanapu Lee and Sam attempted to channel Rupert Boneham / Ozzy (althought less porn-y) with the Hawaiian sling … with the success of say, Cochran. Thankfully the girls turned the scene around by lecherously watching Lee fish before Matt slut-shamed Brooke and caused another rift in the tribe.

Call me crazy but Vavau may win a challenge tonight with this Saanapu shit? Also, is Nick alive or did I miss something?

And just like that JoJo puts in some face time at the immunity challenge, proving that Nick is still alive and giving me the chance to launch my celebrity psychic career.

With that, they started flicking balls at each other before working a pole while avoiding low-hanging, swinging sacks and lining up balls on a wall. Probst would have had a field day.

Sadly my psychic career ended as quickly as it began with Vavau losing the challenge and returning to their second favourite place, tribal council.

Back at camp Conner took responsibility for the loss, while Phoebe and Kristie got to work planning for tribal council and figuring out how best to play the idol. Conner then made a great decision and told Phoebe she was the target, making her job a whole lot easier. I mean, he is sure she doesn’t have the idol, so that’s cool! Kristie then gave a great performance lamenting the loss of Phoebe to Vavau, knowing that she and Phoebe had again pulled off the impossible.

They arrived at tribal without us knowing who Phoebe and Kristie were targeting, meaning their plan is guaranteed to work. Add to that the emotional music when Craig started talking and I’m starting to get worried for their only challenge asset.

After polling the tribe about whether they were confident they knew who would be going tonight  – to which they all agreed – they went to vote, Phoebe played her idol and Craig found his way to my warm embrace in loser lodge, surprising everyone.

His boot, not my lecherous hold obviously.

As we’re both from Australia’s largest small town, Brisbane, I’ve known Craig for years and have enjoyed a very close friendship despite his passion for Pokémon. Call me crazy, I’m far more interested in poking a man – given we share that interest, we were able to remain the best of friends despite … Pokémon.

Craig was heartbroken to find himself idoled out of the game but as a fan of the game, he was able to appreciate that his boot was special and his outsing would cause a national outrage. Wanting to cheer him up I got to work whipping up a batch of my Craig I’Anson-in-law Eggs.

While these babies are – and to be honest, I think they are – from Thailand and I’m guessing Pokémon is Japanese, I thought these were throwing Craig enough of a bone to keep him happy.

Not that way sickos. Although these eggs are sticky, sweet, salty and spicy … so yep, enjoy!

Craig I’Anson-in-law Eggs
Serves: 2 as a main with rice, 6-12 as yum cha.

Ingredients
6 eggs, at room temperature
½ cup vegetable oil, to fry
¼ cup shallots, thinly sliced on an angle
handful Thai basil leaves
handful coriander leaves
2 tbs fried shallots
1 long fresh red chilli, thinly sliced diagonally

Caramel
1 cup muscovado sugar, I have an aversion to palm oil and assume the sugar is just as bad
½ cup water
2 tbsp tamarind concentrate
1 tbsp tamari
1 stem lemongrass, bruised, cut into 5cm pieces
thumb piece of ginger, finely grated
1 tsp dried chilli flakes

Method

Boil the eggs in a saucepan of boiling water until soft boiled aka about 5 minutes. Drain and rinse under cold water for five minutes before peeling carefully and setting aside to rest on a paper towel.

Meanwhile, get cracking on the caramel by dissolving the sugar in the water over medium heat, obviously in a saucepan. Cook for a couple of minutes before adding the tamarind, tamari, lemongrass and ginger. Bring to a simmer, reduce heat to low and allow to boil away from about five minutes or until it starts to thicken. Remove from heat, stir in chilli flakes and keep warm.

Now start work on the eggs – I mean, seriously this feels like a lot of work but it isn’t – heat the oil in a wok over high heat and fry each for a few minutes until golden, crisp and delightful. Drain on paper towel and repeat until done.

Slice the eggs in half, scatter on a plate and drizzle with copious amounts of the caramel. Garnish with the shallots done two ways, the herbs and chilli before devouring with rice.

Amy MuSchumer

Emmy Gold, Main

Ok – so again, we’re catching up with another current Emmy nominee but I promise, this is the last one. Rightly or wrongly, but I’ll get to that tomorrow.

Amy and I are just way too similar for me to not include her in such an important occasion. I mean, both of us are praised as brave for posing nude (I’d argue that it is the photographer that is brave in my case, but I’ve digressed), have a penchant for smut and swearing and have felt the disappointed gaze of Michael Caine.

Plus she is a killer friend and is sure to take me as her date, right? Well wrong … but all is forgiven as she too agrees that Kit and I should go together.

I first met Ames in the early 00s when we both became involved in a shoplifting scheme, resulting in grand larceny charges. While she was able to plead down the charges thanks to her cousin, I bought my way out of my problems and fled back to Lisa Vanderpump’s mansion.

While we didn’t speak for a few years, we reconnected during her stint on Last Comic Standing. I was heavily involved in rigging reality television programs and was desperately trying to get my hands on NBC’s stable after my dear friend Bethenny/any/eny/annie/infghtsmjfjf lost on Martha Stewart’s Apprentice, so spent a lot of time on set.

The decade that followed will go down as arguably the greatest friendship either has ever had and the best creative partnership known to mankind.

Like Bryan, Ames has a breadth of nominations under her belt so thankfully was able to run a shit tonne of odds with me. Our choices, are as follows:

Notably – but not surprisingly – she only backed her show when she wasn’t listed as a nominee. I however back her when she isn’t up against JLD (and was right to back Teens and Ames in the Guest category). Adjust your betting accordingly.

After such a lengthy discussion, we were absolutely famished by the time it came to plotting the best way for me to get to Kit that I had to stop everything and whip up a huge batch of my Amy MuSchumer.

Like Ames, the muschumer packs a punch, has a little bite and fills you with absolute joy. Coincidentally those are all aspects of my plan to woo Kit.

Amy MuSchumer
Serves: 4.

Ingredients
½ cup plain flour
2 tbsp cornflour
¼ cup water
¼ cup milk
6 eggs
2 tbsp butter, melted
1 tbsp chilli flakes
peanut oil
600g pork, cut into strips
¼ cup soy sauce
2 tbsp sake
2 tbsp oyster sauce
thumb of ginger, peeled and minced
1 large carrot, julienned
1 red capsicum, thinly sliced
100g shiitake mushrooms, sliced
6 shallots, sliced on the angle and one whole for the pancakes
2-3 cups shredded wombok
hoisin sauce, to serve

Method
Combine the flour, cornflour, water, milk, 2 of the eggs, half the butter, chilli flakes and rough chopped additional shallot and blitz in a food processor until smooth. Cover and stand while you make the pork.

Heat a lug of peanut oil in a wok/large frying pan over high heat and stir-fry the pork, in two batches, until browned aka about a minute. Transfer to a bowl and stir through the soy, sake, oyster sauce and ginger.

Clean out the wok/frying pan, add another lug of oil and stir-fry the carrot, capsicum and mushrooms for a minute. Add the shallots, wombok and pork and stir-fry for a couple of minutes, the liquid has reduced and the vegetables bright but tender. Remove from heat.

Meanwhile heat another lug of peanut oil in a small frying pan over high heat. When blisteringly hot, add the remaining eggs, lightly beaten, reduce heat to low and stir the eggs over themselves to form a delicate omelette.

Remove from the heat, roughly chop and stir through the pork mixture and keep warm while you fry the pancakes.

Heat a small frying pan over medium heat and brush with the remaining butter. Add about a tablespoon worth of batter to the frying pan, spread it out to form a thin pancake and cook for a minute or two. Flip and cook for a further minute. Transfer to a plate and repeat until the batter is done.

Once the pancakes are sorted, dish up the pork, garnishing with some extra slice shallots, and serve with the pancakes.

I wouldn’t worry too much about presentation as you inhale them pretty quickly!

Colin Kung Powell Chicken

Amer-she-can Week, Main, Poultry

I know what you’ve been thinking, my relationships with all of my recent guests have been strangely harmonious for someone as terrible as me! Don’t worry, I was an absolute jerk to poor Colin Powell when we first met.

You see I was working closely protesting with Jane Fonda during the Vietnam War and Colin invited me for a sit down so that we could discuss his experience. Being young, strung out and generally dislikable, I spent the time abusing Colin.

About a decade later, during a stint in NA, I reached out to Colin in an effort to make amends and given his kind heart, he agreed and we were able to work through all of the problems and trauma I caused for him.

It has been a couple of years since I was last able to catch up with Colin, given how busy and important we both are, so it was great to be able to take some time out, reconnect and discuss the current political landscape and how best to tackle the campaign.

Shit, I might be saying too much – bait your breath, ok?

Anyway in continuing with HRC’s request for a multicultural theme Independence Week celebration, we opted for a big serving of my Colin Kung Powell Chicken.

So you know how I love chilli? This dish makes me pretty damn happy.

While I don’t feel like my insides are liquefying from the heat – which I admit, does disappoint me a bit – it has the perfect balance of sweet and sour rumbling under the strong heat. And that sweet/sour combo makes up for me retaining my organs.

Colin Kung Powell Chicken
Serves: 4.

Ingredients
3 tbsp Szechuan peppercorns
¼ cup flour
500g chicken thighs fillets, roughly chopped
vegetable oil
5 cloves of garlic, peeled and minced
1 thumb-sized piece of ginger, peeled and minced
4 shallots, cleaned and finely sliced on an angle
6 dried red chillies
2 tbsp tamari
1 tbsp rice wine vinegar
1 tbsp honey
50g unsalted peanuts, roughly chopped
coriander leaves, to garnish

Method
Heat a large frying pan over high heat and toast the Szechuan peppercorns until golden and fragrant. Pour the peppercorns – can you just call them corns? – into a mortar and pestle and grind until you get a rough powder. Mainly cause they are tough and I’m weak though?

Anyway, pour the ground corns – I’m going with corns – into a large bowl and mix with the flour. Toss through the chicken until it is coated.

Pour a good lug of vegetable oil into the frying pan and return it to a hot hot heat. Add the chicken and fry for 5 minutes, or until crisp, browned and cooked through.

Add the garlic and ginger, the shallots and the dry chillies and fry for a couple of minutes before adding the tamari, vinegar and honey, and cook until reduced and sticky.

Remove from the heat, stir through peanuts, garnish with coriander and devour with a shit tonne of rice.

Joe Del Campho

Main, Soup, Survivor: Kaôh Rōng

Yeah, yeah – previously on Survivor, Jason couldn’t pull off the impossible and was sent to Ponderosa despite everyone in the alliance trying to turn on each other. But this episode, seriously? Again! Another freaking medevac!?

Poor little Joey, Joe-Joe aka Rudy 2.0 found himself experiencing some severe #GastrointestinalDistress and was swiftly pulled from the game in fifth place. Confirming to Tai that, despite his fears, he goes home with his idol in his pocket.

Game, set, match editors – well played!

Anyway, let’s rewind. We got back to camp and again Joe spoke, before Michelle and Tai butted heads over Tai’s late-game villain turn after he once again flipped on his alliance for the third time.

We then headed straight to reward where Joe shocked everyone and won the reward, proving that slow and steady wins the race, and ended his anti-Anglim streak in the process.

Damn straight he #GetsItDoneAt71!

I first connected with Joe about four decades ago when we worked for the FBI together. Joe is an absolute gentleman and acted like a mentor to me, despite my questionable relationship with the law.

We stayed close throughout the years – despite my many scandals, arrests and stints in rehab – and Joe has remained a constant in my life and has always tried to help me be the best version of me. Could you imagine how bad I would have been without him?

Anyway, poor little Joe overindulged in the delicious meat at his Hef reward, despite not being a big meat guy, and sadly that was his downfall.

We heard all about Cydney upping her game (by downplaying the fact that she could literally crush everyone left in the game), Joe, Cyd and Aubry formed a final three alliance, Tai and Michelle joined forces, Aubry and Tai reconnected while Michelle and Cydney solidified their bond … all for nothing after Joe was done in, I assume, by an extreme case of meat sweats!

Having zero respect for the fact that he was just medically evacuated for stomach issues – and the fact that he is 71, to boot – I decided to go with a (potentially) digestively aggressive Joe Del Campho to welcome him to post-hospital Ponderosa.

In my defense, pho was Joe and my go to meal after cracking a case / defeating the bad-guys / whatever it is we did in the FBI back in the day (I was way too high to remember those days) – it was to us, what shawarma is to the avengers, you know?

So yeah, onion, par cooked-meat and chilli isn’t a good thing on paper – but it was the ultimate comfort food for my dear old friend. Despite that, the fresh flavours, delicately cooked meat and the kick of heat and lime work together to bring you a pho that dances in your mouth.

Plus, ginger is good for you … so there is that, right? Enjoy!

Joe Del Campho
Serves: 4.

Ingredients
5 cups beef stock
3cm piece ginger, finely grated
2 star anise
1 tsp fennel seeds
cinnamon quill
1 tbsp fish sauce
2 tsp soy sauce
dried pho noodles, softened in boiling water for a couple of minutes
250g beef sirloin, finely sliced across the grain
1 onion, finely sliced
4 shallots, green part only, finely sliced
⅓ cup chopped coriander
black pepper
lime wedges, to serve
sliced chillies, to serve
Thai basil leaves, to serve
bean sprouts, to serve
sriracha sauce

Method
Place stock, ginger, spices, fish sauce, soy sauce and 2 cups of cold water in a large saucepan over high heat. Cover, bring to the boil and then reduce the heat to low and simmer uncovered for 5 minutes.

Place a handful of pho noodles in a large bowl and cover with boiling water. Allow to rest until cooked through or about fifteen minutes, drain and leave to rest.

Thinly slice the steak – it helps if you freeze it for about 20 minutes before.

Remove the spices from the stock mixture with a slotted spoon.

To serve, place pho noodles in the bottom of a bowl, layer the raw steak and onion over the top and cover generously with the piping hot stock. Season generously and sprinkle on some coriander.

To eat, season to taste with lime juice and chilli and add in some basil and sprouts. As I like heat and disregard Joe’s health, I topped it up generously with some sriracha.

The heat may have got things moving?

Scot Pollartichoke Dip

Condiment, Dip, Party Food, Snack, Survivor: Kaôh Rōng

Previously on Survivor, Debbie added juror to her extensive resume while the under 70s boys created chaos / Tai went to the darkside. Thankfully in Survivor, pride comes before a fall and after an episode partly-lived in the boys’ fantasy land, proclaiming their maturity and greatness and the fact they are in control, Aubry and Cydney continued their domination (who has better voting records? Exactly) and sent poor Scot and his questionable tatts to the jury.

Aside from the boys continual cockiness, we also got to witness the emergence of the final storyline of the season at the reward challenge, that being the battle between Julia v Tai for the Colby Donaldson memorial challenge beast title, with JuJuSki dominating for love – outlasting Joe for an entire four seconds – and Tai winning an (albeit cursed) advantage, essentially making him Dara’s demi-God.

Sure neither of them went on to win immunity, that went to what’s-his-face (no seriously, what is he going by – Sarge, Jason or the other one?), but mark my words, this season will birth an unlikely challenge beast.

With old-mate winning immunity and in possession of a hidden immunity idol, the under-70-with-peens alliance felt even more unstoppable. I don’t know if he woke up from the darkness he was held under, or felt safe with his newly minted God status, but Tai went back to the good guys and nah bro’d Scot’s request for the idol and sent him sadly into the night.

Sadly for poor Scot, this isn’t the first time misplaced trust has gotten him into trouble. You see, I am actually the reason for the “hey kids, do drugs” video – realistically, this should not come as a surprise to anybody. I was on a bender at the time and assured Scot the camera was off, knowing that his sway as a pro athlete would bring me stacks of business in and around West Beverly High.

Literally high, I had hoped.

Despite his portrayal on the show, Scot is an absolute sweetheart and despite wanting to throttle him throughout his time on the show, I figured it was crazy hypocritical to hold a grudge given our history, so welcomed him to ponderosa with open arms … and a big bowl of my famed Scot Pollartichoke Dip.

Surprisingly, Scot was in good spirits when he made his way to Ponderosa – maybe he learnt about being a good sport during his time in the NBA, despite my advice to always seek revenge. Shit, am I the one that encouraged his behaviour last episode?

Anyway, artichoke dip is literally the greatest thing to ever happen. No joke. Hot, creamy, rich and cheesy … it is everything I want from a man shot straight into my mouth.

Minds out of the gutter, it is awesome – enjoy!

Scot Pollartichoke Dip
Serves: 1 booted b-baller and his terrible influence.

Ingredients
800g canned artichoke hearts, rinsed, drained, and roughly chopped
½ cup mayonnaise
¼ cup grated parmesan, plus extra for garnishing
1 tbsp fresh lemon juice
1 garlic clove, minced
4 shallots, thinly sliced
handful baby spinach, shredded
crudites, crackers or bread, for scooping

Method
Preheat oven to 220°C.

In a food processor, place half the artichokes, mayo, parmesan, lemon juice, and garlic, and process until smooth.

Add shallots and the remaining artichokes and give a little pulse, without going nuts, so you have some texture. Fold through spinach and place in a size appropriate baking dish (not Tai tiny or Scot giant), top with extra parmesan and bake until hot and golden. 30 minutes should suffice.

Garnish with shallots, if you can be bothered, before devouring and burning off the roof of your mouth. Maybe let it cool a bit first?

Debbie Wannerkopita

Main, Survivor: Kaôh Rōng

Well this week, we suffered a major blow. Yep, everyone’s favourite major league baseball pitcher, model, waitress was blindsided and we are now forced to suffer through a few episodes of her silence before her finale rebirth where, hopefully, she adds the role of Sue Hawk impersonator to her list of jobs.

Like Debs, this episode was absolutely bananas. Completely. Like, Gwen Stefani in the 00s B-A-N-A-N-A-S, bananas.

We started out with the reminder that the men’s sexist paranoia of a female alliance, led to the women forming a female alliance before dear sweet Tai was led to the darkside by Scot and what’s-his-face, Sargsonyle, and joined them in stealing food, hiding supplies and dousing the fire in water.

Tai, to quote my parents when they wanted me to listen to their scolding, I am so disappointed in you.

FYI future contestants, the only time hiding supplies or burning people’s items was a good thing was Sandra unwittingly getting two-seasons worth of revenge on Hantz 1. Unless you are Queen Sandra, don’t even.

While the under-70 men skulked about camp being sore losers and proved why people always root for a women’s alliance, Mark the chicken emerged as a favourite for the title of Sole Survivor. Mainly because all the murder weaponry was removed from camp.

After a beautiful immunity challenge that Probst created based on our favourite sex game, where whoever hit their dong first won immunity – #50Shades / #Pegging for the win, you know – dear, sweet, busy Debbie made her way to Ponderosa.

I first connected with Debbie in the modelling biz in the 80s before following her to work at the Olive Garden, J Crew, doing mousekeeping at both Disney’s Land and World, teaching Demi to strip at The Body Shop, prosecuting the O.J. case, ghost-writing Faye D. Resnick’s book, bringing down the Berlin Wall, working as NYC fire-fighters during 9/11, competing in the steroid-using Olympic 400m relay team with Crystal Cox, creating the hit series’ Friends, Melrose Place, Baywatch Nights and Breaking Bad … amongst other jobs.

Given our extensive history together (and resumes), I knew that there was only one thing I could make after she became victim to a vicious – albeit required after the tribal council theatrics – blindside, while continuing in the Kaoh Rong tradition of having your mouth get you unexpectedly booted; my famed Debbie Wannerkopita.

Debs first fell in love with my Wannerkopita aka spanakopita aka spinach and cheese pie while we were working on yachts in the Greek Islands. We spent a lot of time providing business analysis for Yiannis Latsis who generously gave me his old family recipe (which we gave to Paris Hilton when we were her au pairs and were helping her woo his grandson). The zing of the lemon perfectly cuts through the cheese and onion and leaves you with a fresh hearty pie worthy of a diligent worker like D.

While she lost the game, the silver lining of the kop’ coupled with the fact she will be in Ponderosa with Nick – who I assume will lay down for her like a puzzle – make it all better.

Debbie Wannerkopita
Serves: 6-8.

Ingredients
375g filo pastry
400g feta cheese
1 bunch spinach, washed and shredded
1 bunch shallots, finely sliced
2 medium onions, diced
4 eggs
½ cup olive oil
1 tsp salt
¼ tsp black pepper
2 tbsp chopped dill
½ tsp grated nutmeg
½ lemon, zested
melted butter

Method
Preheat the oven to 170°C.

Combine feta, spinach, shallots and onions in a large bowl. Beat the eggs, salt, pepper, nutmeg, dill and zest in a small bowl and then pour over the spinach mixture. Mix well until combined.

Layer half the filo pastry in a medium baking dish, buttering every second sheet with melted butter, top with the mixture and fold in any overhanging ends. Repeat the layering process with the remaining filo, tucking in the top sheets to neaten off. Or do as I do and drape them artistically because not only do I write, cook and enjoy stints as a z-list instagram celebrity, wait tables, provide medical advice, run an ice cream empire and work as a motivational speaker, I’m also artistic. And creative. And became a fluffer after my stint as a stripper.

Anyway, brush the top with melted butter (I drizzle with grated parmesan sometimes to indulge my cheese fetish) and bake for around 45 minutes, or until golden brown.
