Pie-an Ziering

Donna Martin graduates, Main, Party Food, Pie, Snack

Like David Silver / B.A.G., poor Steve Sanders / Ian Ziering was not the guy you had plastered over your wall, but like a fine wine that man aged into the beautiful Chippendale / shark slayer that I am lucky enough to call my friend.

While I obviously tried to woo Ian countless times on the set of 90210, our relationship never became a fully fledged affair which, I hate to admit, did wonders for our relationship. That being said, that realisation won’t stop my lecherous behaviour with my beautiful friends – sorry Skarsy!

Despite what some members of the D-list would have you believe, Ian is an absolute sweetheart and is every bit as kind and determined as the national treasure he portrays in the Sharknado franchise.

I first met Ian in the late 80s when he was auditioning for a guest stint on Married … with Children before the ugliness of my own creating. Knowing that he had the perfect combination of confidence, charm and uniqueness, I snatched him away from the show and gave him the star making role of S squared.

Give the runaway success of the critical maligned Sharknado masterpieces, Ian has been super busy … and sadly thanks to my ongoing feud with slash the restraining order Tara Reid has out against me, I cannot visit him on set. Thankfully he was able to drop by despite of his busy shark dropping schedule to celebrate the pop culture anniversary to trigger Annelie’s memory.

Obviously that calls for my Pie-an Ziering.

pie-an-ziering-1

Pies are in my top fifteen comfort food – probably sitting at around fourth. Add in two of my other faves, cheese and bacon, and you’ve got yourself a party worthy of Steve Sanders / a Chippendale / a shark slayer / someone that feuds with Brandi Glanville.

While most cheese and bacon pies are something you devour with equal parts shame and joy, these babies, with their salt streaky bacon and sharp blue cheese bring you no shame and are just so damn good.

They are also a little bit posh. Like Sanders Manor or stripping in Vegas – enjoy!

pie-an-ziering-2

Pie-an Ziering
Makes: 8.

Ingredients
2 tbsp oil
1 brown onion, diced
2 cloves garlic, crushed
1 stick of celery, finely chopped
1 carrot, grated
600g beef mince
6 rashers streaky bacon, diced
2 tbsp plain flour
400g canned crushed tomatoes
1 cup beef stock
2 tbsp tomato paste
2 tbsp worcestershire sauce
125g soft blue cheese
2 sheets shortcrust pastry
2 sheet puff pastry
1 egg

Method
Heat the oil in a large pan, over medium-high heat. When as hot as Ian’s Vegas outfit, reduce the heat and add the onions and garlic and sweat for a couple of minutes. When they are fragrant and translucent, add the celery, carrot, beef and bacon, stirring to break up the mince as it starts to brown.

When the meat is cooked, add the flour and give a good stir. Then add the tomatoes, stock, tomato paste and worcestershire sauce, stir and simmer half-covered for about 20 minutes, stirring a couple of times.

Remove from the heat and allow to cool for an hour or two.

Preheat oven to 180°C and remove the pastry from the freezer (I was lazy and there is no shame – puff is a total bitch) to defrost.

When the pastry is ready, divide each sheet into four equal square. Press the shortcrust into individual pie moulds (about the size of the circumference of a fist … probably should have mentioned that sooner). Spoon the mixture equally amongst the lined moulds, crumble the blue cheese evenly over the top and fold over any shortcrust excess. Top with the squares of puff, pressing at the edges to seal the pie and crimp any excess pastry around the edges. I mean, why waste it?

Whisk the egg in a mug and brush the tops of the pies. Give them a stab in the top for steam to escape, place the pie moulds on a lined baking tray (simply for ease of getting them in and out of the oven) and bake for 20 minutes, or until golden and crisp.

Devour. Surprisingly, I advise avoiding tommy sauce. That blue cheese is glorious!

Obviously I strongly encourage mash.

Tortéa Leoni Chips

Party Food, Side, Snack

My life is essentially a series of bad choices linked together, leaving a memoir made up of my trail of destruction. I mean, I am happy – I’ve got to sleep with countless attractive celebrities as I mingle with Hollywood’s elite – but I am fully aware that my actions can leave behind a trail of broken homes and hearts.

Essentially I’m Angelina Jolie and my life is a trail of Jens. Although, she really won in the end amirite?

Anyway, my dear, sweet Téa, thankfully, never allowed herself to be a victim of my debaucherous behaviour with Dave.

After making Tay-Tay a star, I introduced her to my protege Day-Day – love blossomed and a 90s power-couple was born. Then the noughties happened and Day-Day and I got naughty.

It was a very hard (don’t even go there) time for the three of us but Tay knew that we were both spiralling and that we weren’t trying to hurt her. It was a long process, working through all of our feelings after we sorted out our issues, but I will always be thankful to Tay for forgiving us both. When you screw up as often as I do, you get pretty good at apologising, I guess.

Tay, in my humble opinion, is one of the most underrated actresses of our time and I am so glad she wanted to drop by and plot her way back to the A-list. Yes, she is currently starring in the hit Hillary Clinton-lite TV show … but she is finally ready to go after my opus of getting her an Oscar.

I mean, sure, I could give her the seven I’ve stolen from my friends over the years but I really feel she has what it takes to win her own after an egregious snubbing for Jurassic Park III.

Tay was in such a good mood, have just wrapped the latest season of Madam Sexretary and felt ready to focus all of her energy on plotting and scheming her path to gold (oddly she chose to travel without Tim, but I guess that was a wise choice given our past). As you know, scheming makes me hungry, so I was quick to whip up a batch of my Tortéa Leoni Chips.

tortea-leoni-chips-1

There was once a time in my life where tortillas were solely used to make burritos, enchiladas or tacos. It was a terrible fucking existence even with Day-Day in my bed, if I’m going to be honest.

Crisp, light and delicious, tortilla chips are the perfect scheming snack.

Enjoy!

tortea-leoni-chips-2

Tortéa Leoni Chips
Serves: 6, with dips … obviously.

Ingredients
10 flour tortillas, cut into triangles
vegetable oil

Method
Preheat oven to 180°C.

Arrange triangles/strips on two large baking sheets. Brush the chips with vegetable oil and bake for 10-15 minutes, or until crisp, puffed and golden.

Devour with your favourite dips. Salsa Struthers is a pretty good option, FYI.

Obviously you could deep fry them, but you know I’m terrified of pots of oil.

Scot Pollartichoke Dip

Condiment, Dip, Party Food, Snack, Survivor: Kaôh Rōng

Previously on Survivor, Debbie added juror to her extensive resume while the under 70s boys created chaos / Tai went to the darkside. Thankfully in Survivor, pride comes before a fall and after an episode partly-lived in the boys’ fantasy land, proclaiming their maturity and greatness and the fact they are in control, Aubry and Cydney continued their domination (who has better voting records? Exactly) and sent poor Scot and his questionable tatts to the jury.

Aside from the boys continual cockiness, we also got to witness the emergence of the final storyline of the season at the reward challenge, that being the battle between Julia v Tai for the Colby Donaldson memorial challenge beast title, with JuJuSki dominating for love – outlasting Joe for an entire four seconds – and Tai winning an (albeit cursed) advantage, essentially making him Dara’s demi-God.

Sure neither of them went on to win immunity, that went to what’s-his-face (no seriously, what is he going by – Sarge, Jason or the other one?), but mark my words, this season will birth an unlikely challenge beast.

With old-mate winning immunity and in possession of a hidden immunity idol, the under-70-with-peens alliance felt even more unstoppable. I don’t know if he woke up from the darkness he was held under, or felt safe with his newly minted God status, but Tai went back to the good guys and nah bro’d Scot’s request for the idol and sent him sadly into the night.

Sadly for poor Scot, this isn’t the first time misplaced trust has gotten him into trouble. You see, I am actually the reason for the “hey kids, do drugs” video – realistically, this should not come as a surprise to anybody. I was on a bender at the time and assured Scot the camera was off, knowing that his sway as a pro athlete would bring me stacks of business in and around West Beverly High.

Literally high, I had hoped.

Despite his portrayal on the show, Scot is an absolute sweetheart and despite wanting to throttle him throughout his time on the show, I figured it was crazy hypocritical to hold a grudge given our history, so welcomed him to ponderosa with open arms … and a big bowl of my famed Scot Pollartichoke Dip.

scot-pollartichoke-dip-1

Surprisingly, Scot was in good spirits when he made his way to Ponderosa – maybe he learnt about being a good sport during his time in the NBA, despite my advice to always seek revenge. Shit, am I the one that encouraged his behaviour last episode?

Anyway, artichoke dip is literally the greatest thing to ever happen. No joke. Hot, creamy, rich and cheesy … it is everything I want from a man shot straight into my mouth.

Minds out of the gutter, it is awesome – enjoy!

scot-pollartichoke-dip-2

Scot Pollartichoke Dip
Serves: 1 booted b-baller and his terrible influence.

Ingredients
800g canned artichoke hearts, rinsed, drained, and roughly chopped
½ cup mayonnaise
¼ cup grated parmesan, plus extra for garnishing
1 tbsp fresh lemon juice
1 garlic clove, minced
4 shallots, thinly sliced
handful baby spinach, shredded
crudites, crackers or bread, for scooping

Method
Preheat oven to 220°C.

In a food processor, place half the artichokes, mayo, parmesan, lemon juice, and garlic, and process until smooth.

Add shallots and the remaining artichokes and give a little pulse, without going nuts, so you have some texture. Fold through spinach and place in a size appropriate baking dish (not Tai tiny or Scot giant), top with extra parmesan and bake until hot and golden. 30 minutes should suffice.

Garnish with shallots, if you can be bothered, before devouring and burning off the roof of your mouth. Maybe let it cool a bit first?

Nick Paitatorano Pizza

Main, Party Food, Snack, Survivor: Kaôh Rōng

Previously on Survivor, the tribe commenced their reversion back to High School before Neal’s knee ejaculated and he was pulled from the game.

Oh FYI, that was read by Scot Pollard while impersonating Probst. Then reread in his terrible version of Gump.

The episode opened up with the cool kids plotting out their remaining time on the island (excluding the future casualties), which you just know means you can sit back, relax, pour a wine and celebrate their eventual win, right?

Nope, not at all. You know this game – as soon as you’re confident, you’re voted out … as my dear friend and perennial withdrawal from my spank bank, Nick learnt the hard way. As tragic as Debbie and our loss is, his passing (I just assume they die when not in the game … which is a fair assumption this season) allowed us to witness Cydney emerge and commence her domination.

Oh and there were no balls this week but Aubry took a stack of dumps, so you know Probst was bringing his A game.

I first connected with Nick about six years ago when I was working in the casting department of of a major gay porn company. I had just pitched my first tent film, a porn parody of Mad Men titled Mad 4 Men and was stalking the streets to find the lead role of Don Dicker, when I saw the dreamy Nick Boston Rob Mariano Jr.

He took my breath away, albeit not in the way I would have liked, and I knew in an instant that no one else would be able to play the role. I tried courting him for months however, sadly, Nick was not interested in anything beyond our friendship … which has been going strong ever since. I will get that porn made eventually … or make a sexy-Will Forte biopic, I can’t choose but in any event, I’ve digressed.

Dear, sweet Tai followed in the hallowed Kaoh Rong / Keith Nale tradition of saying too much at tribal and sending yourself or an ally under the bus, cementing the Joe’s Angels alliance and sending Nick to my wide open arms (and Neal’s wide open wound) in Ponderosa. While he arrived harbouring no ill will following his blindside, I made quick work abusing him until he was so enraged that he needed a nice, comforting Nick Paitatorano Pizza.

nick-paitatorano-pizza-1

Pizza, as evidenced by the number of people accepting Probst’s immunity challenge temptation, is the kind of food you can’t go past … particularly if you’re having a shit day or, you know, haven’t eaten properly in weeks so I knew this would be perfect for when Nick’s in-game smarm caught up with him.

The rich creaminess of the cheese and sauce are perfectly cut through by the salt of the pancetta and woodiness of the rosemary. Throw in the world’s favourite carb/vegetable, potato, and you’ll cream your shorts … like you would have if Nick accepted the Don Dicker role.

Enjoy!

nick-paitatorano-pizza-2

Nick Paitatorano Pizza
Serves: 1-2.

Ingredients
pizza dough (I used the one from Pizsa Zsa Gabor)
white pizza sauce (I used this one)
1 potato
1 sprig of rosemary, leaves removed
100g pancetta
⅓ cup gorgonzola, crumbled

Method
Follow the dough recipe on Zsa Zsa’s recipe and then preheat the oven to 180°C.

While the oven is getting as hot as the showmance between Debbie and Nick, which sadly never was, get to work making the white sauce. I added an extra clove of garlic, but I love garlic so don’t let me be pushy.

Thinly slice the potato into 3mm-ish rounds, roughly chop the rosemary leaves and slice the pancetta into strips.

Roll out the dough and slather liberally in white sauce. Scatter the potato on the base, then some rosemary, the pancetta and then top with the gorgonzola.

Bake in the oven for 15-20 minutes, or until golden, crisp and the cheese bubbly.

Megg Rolls Ryan

12th Annual Easter Meggstravaganza, Easter Meggstravaganza, Main, Snack

Bless her heart, Megsy is happy with her mediocre career resurgence!

“You don’t have to do this, I worked with Kiernan Shipka!”

Kiernan shouldn’t be responsible for paying your bills Meg, she is still a child.

“But I can’t be the first recipe double-up on your highly-lauded, prestigious and meaningful anthropological documentation of your close, personal relationships with celebrities told via your cooking catch-ups.”

Ah, yes you should be Megs – and more importantly, you deserve the prestigious honour of being our 150th Recipe! We’ve always loved you and you deserve another shot at fame thanks to the Easter Meggstravaganza … it is named after you, after all.

The battle waged for about six hours, but eventually I was able to convince that this would be our year and we’d be able to celebrate her return to fame/form together at the Oscars next year, rather than have it continue to languish like the victim of a biking crash while the Goo Goo Dolls played.

Megs has been busy with her latest actorial-directorial effort with my friend (who I must catch-up with) Tam Honks, Ithaca and really needed the break … and the good juju for reviews/box-office receipts/plaudits that comes with my egg based ritual.

While last year I went with an 70/80s special Devilled Meggs Ryan, I decided this year that the only way to truly get her back on the A-list was something hearty, substantial and relevant aka the culinary embodiment of what we want her career to be – enter scene, Megg Rolls Ryan.

meg-rolls-ryan-1

I have really struggled through the recent Queensland summer, so have been dabbling in any meal that is luke-warm yet delicious as I like to eat good food, but don’t enjoy the accompanying sweet dripping off my balls when in the kitchen making it.

These Egg Rolls, which aren’t like their American Chinese take-away counterparts, are light, fresh and packed full of paper with minimal cooking leaving me satisfied but not like I’ve just stepped out of a G-rated, food-safe sauna.

Now to start prepping for my struggling musician pal … enjoy!

meg-rolls-ryan-2

Megg Rolls Ryan
Serves: 4.

Ingredients
500g shredded cooked chicken breast
1 large carrot, peeled, cut into matchsticks
1 red capsicum, seeded, thinly sliced
1 Lebanese cucumber, cut into matchsticks
2 tbsp kecap manis
6 eggs, lightly beaten
1 tsp sesame oil
1 tbsp peanut oil
Extra kecap manis and sriracha, to serve

Method
Combine the shredded chicken, carrot, capsicum, cucumber and kecap manis in a large bowl. Stir and season to taste.

Combine egg and sesame oil in a jug. Heat a nonstick frying pan over medium-high heat, add a dash of the peanut oil and swirl to coat. Drizzle a few tablespoons of the egg mixture into pan to form a crisscross patterned omelette. Cook for 30 seconds, carefully flip and cook for 20 seconds. Transfer to a plate, cover and keep warm. Repeat with remaining egg mixture and oil, to form 8 crepes.

Place the egg crepes on a clean work surface. Divide the chicken mixture among the centres of the crepes. Roll up the crepes tightly to enclose the filling – I’m pretty bad tag this, so mine look more like crepe enchiladas. Transfer the egg rolls to serving plates and drizzle with extra kecap manis and sriracha. Devour but not so quickly that you end up Sleepless (in Seattle) with indigestion.

Liz Markham and Egg Pizza

Main, Party Food, Snack, Survivor: Kaôh Rōng

Previously on Survivor, Darnell’s aqua-dump required him to exit for a top-up of Darnell HamilWontons before Jenny listened to that little worm inside her head to join him and me at loser lodge for my famed Jennifer Parmesanetti Buns.

This episode saw a welcome return to Probst’s, and my, favourite thing – smutty innuendo. We first saw Tai shoving his hard stick into a tight hole to come up with a glorious pay off, then Jason pushed Blondie to work something up with Scot and do the same thing before a challenge requiring everyone to get wet and try and shove balls into holes too.

It got weird but we love that kinda thing so just roll with it.

Sixteen were left before Annelie and my prototype BethBot 3000 was voted out in a tribal council.

Following our mediocre success creating SpenBot in the 80s, Annelie and I attempted to upgrade our creation however we accidentally doubled up on her confidence and attitude, rather than emotions resulting in, essentially, Lady Spencer. BethBot3000 eventually overthrew her creators after we tried to correct our mistakes (“Beep boop, I am perfect. I need no change”) and, clearly, as a passive aggressive attack, opted to be referred to as Liz. I mean, how petty.

After the tigress Debbie, who is like that person you work with (and given her extensive work history we all probably have at some point), that is really intense and ‘happy’ … and one bad email away from a breakdown, narrowly lost the challenge leading to another tribal council where somebody tried to talk their way out of the game.

Sadly for Liz, Obama wasn’t as persuasive at talking himself out of the game as he was at talking himself into the White House. Thankfully I had a life changing Liz Markham and Egg Pizza waiting for her in the wings.

liz-markham-and-egg-pizza-1

BethBot3000, sorry, Liz was as thrilled as a humanoid cyborg can be when spotting me at Loser Lodge – thankfully being the victim of a blindside, her self-programmed vendetta against me was registered as void.

The delightful combination of ham and egg (leftovers I had because Probst kicked me out of his room before I could make him breakfast) with the kick of chilli and the mild, nutty sweetness of the cheese left her showing true emotion – unbridled joy.

Who knew pizza would fix Annelie and my inventing mistakes? Enjoy!

liz-markham-and-egg-pizza-2

Liz Markham and Egg Pizza
Serves: 1-2.

Ingredients
pizza dough (I used the one from Pizsa Zsa Gabor)
passata or tomato paste, with a combination of herbs
100g ham, sliced into strips
½ an onion, finely sliced
1 tsp chilli
4 eggs
handful of grated swiss cheese

Method
Follow the dough recipe on Zsa Zsa’s recipe.

Preheat the oven to 180°C.

When you’re ready to get comfort cooking for your robot-human creation, flatten the dough out to fit the pizza tray (or whatever you are cooking it on), cover with a tomato sauce (you could use tomato paste and a sprinkling of herbs … basil, thyme, oregano, the usual subjects).

Sprinkle onion over the base of the pizza, followed by roughly topping with the strips of ham, shaping four little ham-wells across the base and then sprinkle with chilli. Crack an egg into each of the wells and top with swiss cheese.

Cook for 15 minutes or until golden and bubbly.

Ang Leek and Asparagus Tarts

Oscar Gold, Oscar Gold MMXVI: Gold Interrupted

I am almost overwhelmed when it comes to talking about my beautiful, breathtaking and languid friendship with the gorgeous Ang Lee. He has brought me so much joy over the years – adapting books I love, casting men I love and having them flash their buns, which I love.

Ang Lee is both a pimp for my love of celluloid flesh and a saint, which is a stunning combination.

I first connected with the celebrated director while attending the Provincial Tainan First Senior High School where his father, our principal, made him act as my mentor to curb my shameful, wayward behaviour.

Ang was such a kind, gentle soul and I desperately wanted to avoid disappointing him, however me being me, I rubbed off on him and he failed his final exams and couldn’t progress to being a professor. Thankfully it led him to eventually being a director so, in a roundabout way, I am responsible for his lush films and lauded career.

You’re welcome.

We lost contact after his mandatory military service however reconnected through Em Thomp – my closest boozing bud – while he was making Sense and Sensibility and I became his most trusted advisor, leading to Bana buns in Hulk and Brokeback Mountain.

While it was very hard to be overlooked for the role of Ennis opposite J-Gyll, Ang was kind enough to introduce us on set – he hired me as the resident flannel expert – and we enjoyed a torrid love affair that I ran to the paps about, thus starting all of the Jake gay rumours.

No one was better to discuss this year’s Best Director crop than the two-time winner, so I whipped up my Ang Leek and Asparagus Tarts to fuel our moving discussion about the possibility of our dear friend George Miller finally getting recognised for his work after such a majestically eclectic filmography.

Dark horse pick goes to Adam McKay. I mean, he was robbed for the Anchorman movies.

ang-leek-asparagus-tarts-1

While asparagus pee is both a blessing (I’m special) and a curse (it is rank), these tarts are well worth it. The sweetness of the leek with the sharp goat’s cheese and earthy asparagus create a delicate little tart that packs as much of a punch as one of Ang’s films.

Enjoy!

ang-leek-asparagus-tarts-2

Ang Leek and Asparagus Tarts
Makes: 18.

Ingredients
2 sheets puff pastry, thawed
1 tablespoon butter
2 leeks, finely sliced
1 bunch asparagus
Sea salt
Freshly ground black pepper
3 eggs, lightly beaten
300ml cream
150g goat’s cheese

Method
Preheat the oven to 180°C.

Melt butter over low heat and saute the leeks until soft, and place into a large mixing bowl.

Trim the ends of the asparagus and cut into 5cm pieces and fry for two minutes on high heat in the same pan, until bright and just cooked. Add asparagus to the leeks and allow to cool.

Once cooled, add in the eggs and cream, season and stir to combine.

Place the puff pastry on a clean surface and cut both into a 3×3 grid, so that each sheet make nine squares. Roughly press each square of pastry into a muffin tin, to create a rustic looking case – I am too lazy to worry about it looking “nice,” as is Ang.

Pour the vegetable/custard mixture even amongst the 18 cases and crumble the goats cheese on top.

Whack in the oven and bake for 20 minutes or until set and golden. Remove from the oven and rest for about 20 minutes before inhaling.

Devour in a poignant fashion.

KeBarbra Streisand

Main, Oscar Gold, Oscar Gold MMXVI: Gold Interrupted, Party Food, Snack

After an evening of focusing solely on the music, I wanted to make a gateway into discussing the current crop of nominated acteurs. Who better than to make that jump than the funniest girl I am friends with, the one, the only and very dear to me Barbra.

I first connected with Babs in the late 50s – Stockard Channing would have been about 68, but I digress – when we were both young up-starts living a gypsy lifestyle in NY, waiting to make it big. There is nothing quite like the bond you form on the street other than the ones you form in prison, but again, I’ve digressed.

Babs and I would surf the couches in the evening, while trying to make it big during the day until she beat me in a singing contest in a bar in Greenwich Village, where I was too busy beating people off for money. She went to Broadway and I went to prison.

While I was in the clink for the best part of the 60s, Babs was never one to shy away from visiting and even plead my case to the parole board so that I could accompany her to witness her tied-Oscar glory in 1969. I mean, you can take the girl out of the streets but you can never take the street out of the girl.

It was such a hoot catching up with my Babs – she is just so humble, down-to-earth and accessible that being around her is never intimidating, when it really should be. I mean, she is a damn legend!

Obviously we agreed that while our dear Cate again knocked it out of the park, she is likely to end up as the second coming of Mez – being always invited to the party, but rarely the guest of honour. Yep – I’ve firmed up my Best Actress pick and what better way to officially board the Brie train than with a spicy, cheesy Kebarbra Streisand?

kebarbra-streisand-1

Despite being a good Jewish girl, Babs is willing to go non-kosher for these glorious snacks. Spiced lamb, haloumi and capsicum cut with a hint of lemon – you better believe a star was born when I first made these!

Enjoy!

kebarbra-streisand-2

Kebarbra Streisand
Makes: 10ish.

Ingredients
400g lamb, diced
2 tbsp fresh oregano, diced
1 lemon, zested and juiced
½ tsp ground cumin
¼ tsp ground chilli
⅓ cup olive oil
1 capsicum, cut into 1(ish)cm squares
250g haloumi, cut into 1(ish)cm cubes

Method
In a large bowl, combine the oregano, lemon zest and juice, cumin, chilli and olive oil. Add the lamb, stir, cover and place in the fridge to marinate for at least two hours to help it get as freaky as possible.

Preheat the oven to 180C.

Take the meat out of the fridge, grab a handful of metal skewers and thread with the ingredients, alternating between the lamb, haloumi and capsicum until they are all gone. I found I got about 8 skewers.

My metal skewers are a bizarre size for griddles and I live in an apartment so am without a barbecue, so I go the oven baked approach however if you heat up a griddle, cook the skewers a couple of minutes each side and they will be golden.

Lay the skewers on a lined baking sheet, drizzle with oil and bake for fifteen minutes or until golden and gorgeous.

Darnell HamilWonton

Main, Party Food, Side, Snack, Survivor: Kaôh Rōng

My poor, sweet Darnell – oh how my heart bleeds for you!

Despite what Fransesqua would have you believe, there is nothing worse than being the first boot. I mean, not only did we learn that the first cut is the deepest from my ex-lover Cat but in Survivor it also means that you don’t make the merge and NOBODY wants to date you if you don’t make the merge.

This may come as a surprise, but I am friends with – or at the very least a frenemy of – the entire cast of the current season, so witnessing one of my closest friends entering loser lodge on day three was always going to be tough. But Darnell? He is one of my top five BFFs in the cast!

We first connected a couple of years back when I was doing research for a script I was developing for a live action Postman Pat movie. I had some success with my early research while following Diane Ogden for six months, but Darnie was like a breath of fresh air after the horror that was the six hours I spent trundling about with Dan Foley.

The bond with Darnell was instant and while delivering the mail together over those few months, I learned that our friendship would always be there, neither snow nor rain nor heat nor gloom of night could get in the way.

He learned that shitting is natural and it is more than ok to do it right out the front of your house. I just didn’t think he would take my advice with him on the show and aqua dump just outside the shelter.

As you could see, Darnie was quite emotional and confused as to why they kept Bye (F)Alecia another week (I tried to save him with the worm but it didn’t work), but after a batch of my Darnell HamilWontons he was back to the upbeat guy I know, encouraging me to go for my dreams. I don’t know if he knew that my dream is to marry Probst though, in his defence – again Jeff, sorry for storming your tent, with my own pitched tent.

darnell-hamilwonton-1

Spicy, sweet and glorious – these wontons are calling to be devoured in their soft, pillowy homes. As aggressive as that description sounds. Darnell said his gut doesn’t lie … he just didn’t realise that it was saying the wontons were done and to come drown your sorrows with me, not to shit out the front.

Enjoy!

darnell-hamilwonton-2

Darnell HamilWonton
Makes: 60.

Ingredients
500g chicken mince
6 shiitake mushrooms, finely chopped
5 shallots, finely chopped
2 garlic cloves, crushed
1 tbsp grated ginger
¼ cup coriander, finely chopped
1 tsp Chinese five-spice
1 tbsp soy sauce
1 tsp fish sauce
1 tsp honey
60 round wonton wrappers

Method
Now listen carefully because this is pretty complex. You ready?

Place everything but the wonton wrappers in a large bowl, mixing well to combine.

Place the wonton wrappers on a clean surface, keeping covered with a damp cloth to avoid them drying out and going as crusty as the Brains think Debbie and Joe are. Working one at a time, place about a teaspoon of the filling in the centre of each wrapper.

Slightly wet the edges, pull the edges in to create a coin purse or meat filled sack (honestly I tried to avoid that being dirty but couldn’t) and twist the around to seal at the top. Place on a lined plate or tray while you repeat the process until you run out of meat, or wrappers.

When you’re ready to cook, place a large pan/pot filled without about an inch of water over high heat and bring to the boil. While heating, line a steamer (bamboo or metal) with baking paper. When the water is ready, place the steamer in the pot and fill with about 8-10 dumplings, depending on the size of the steamer. Cover with a lid and steam for about 8 minutes or until cooked through.

Serve with sriracha, soy, hoisin or sweet chilli and let the pain of following in Diane Ogden’s footsteps and being the first boot disappear.

Keeping it Kardashian Khristmas, Sweets

Although we are putting on a delicious Christmas spread for her, Kenny Jenner actually really owes us one.

Kendall, or Kenny as she goes by with her inner circle, had the honour of featuring on the Victoria’s Secret runway this year. Did she look amazing? Yes. Did she deserve the opportunity to strut her stuff? Totally. Would she have gotten there without us? No way!

You see, Victoria’s Secret had been positioning our nemesis Ariana Grande to take one of the esteemed runway spots this year. Ariana was invited to perform at the 2014 show as a primer for a walking gig in 2015 – a spot Kenny was desperately coveting. As we had insider goss, we came up with a plan so beautiful the likes of it hadn’t been seen since Fabio copped a goose to the face (also our doing).

You guessed it – we got that bitch wing-slapped. Let’s  be honest, no-one wants this face sauntering down the runway. Kenny was officially in for 2015!

While we haven’t decided how she can repay us just yet, it is the season of giving and it is high time to gift Kenny with our glorious presence again.
