After kicking off my celebration of Unbreakable Kimmy Schmidt – Hashbrown: The End –  catching up with Carol and Dylan, I realised that I needed to circle back to the point and celebrate the titular Kimmy. Aka my dear friend Ellie Kemper.

While I haven’t known Ellie as long as some of the other cast members – I met her in 2011 while visiting Melissa on the set of Bridesmaids – we quickly bonded over our passion for writing and became the best of friends.

Despite being a close personal friend of Tina, I shockingly didn’t organise the casting. It was such a delight to pick up the phone from Tina who was giddy to have found her Kimmy, only to discover it was my dearest friend.

I haven’t seen Ellie since the last Emmys – where I refused to believe the news that Kimmy’s end was nigh – so it was wonderful to spend some time together and absorb the fact that this delightful, quirky show is ending and the world will never be the same.

And our hearts will become a blackened void.

Though I guess that’s where my Ellie Kemparmigana Rissoles come into play.

 

 

Chargrilled eggplant topped with a juicy, braised rissole, covered in tomato sauce and cheese? You can’t go wrong, even for the staunchest of anti-eggplanters – the veggie only, obvs – like me.

Ellie Kemparmigana Rissoles
Serves: 6-8, depending on the size of your eggplant.

Ingredients
olive oil
1 large eggplant, cut into 1cm slices
1kg beef mince
1 tbsp oregano, chopped
1 tbsp basil, chopped
3 garlic cloves, crushed
⅓ cup parmesan cheese, grated
2 cups passata
½ cup – or more, obvi – mozzarella cheese, grated

Method
Preheat the oven to 200°C.

Place the slices of eggplant on a lined baking sheet and brush with olive oil. Transfer to the oven and bake for half an hour, flipping once. Remove and drain on some kitchen towel.

Reduce oven to 180°C.

Combine the mince, oregano, basil, garlic and parmesan in a bowl and shape into 16 rissoles.

Place the eggplant slices in the bottom of a baking dish and top each with a rissole. Pour over the passata and sprinkle with the mozzarella. Transfer to the oven to bake for half an hour, or until the cheese is golden and the rissoles cooked through.

Serve immediately with a big heaping of Gabriel Mash or on their own. Or with salad. I don’t mind, the most important thing is you devour.

Quesadylan Chipotlula Chicken

Hashbrown: The End, Main, Snack, Street Food

Now I know Kimmy Schmidt only has four main cast members, but I couldn’t go past honouring one of the wider ensemble members before the show comes to an end. While Amy Sedaris is still someone I need to catch-up with ASAP, it is Dylan Gelula who I felt deserved a date given Xanthippe’s relationship with Kimmy provided me with so much joy when it first started.

I first met Dylan on the set of Jennifer Falls where I was working as Jessica Walter’s self-appointed bodyguard – I couldn’t trust Jeffrey Tambor not to appear and verbally assault her – but was taken by the young upstart’s talent. And ability to hold her own against Jess and the equally iconic Jaime Pressly.

When Tina first brought Unbreakable to me, she was hoping I would play Xanthippe – then named Benthippe – though I was too busy making bad choices and made a bad choice for my career. And a great choice creatively, suggesting she gender flip the role and cast Dyl.

You’re welcome.

I haven’t seen Dylan since filming the earlier seasons, so it was a treat to look back on how far she has come and for me to bait her into thanking me for giving her the big break. Thankfully she was a sweetie and before I had even mentioned that I would be serving a big plate of Quesadylan Chipotlula Chicken, she was talking about how wonderful my support has been.

 

 

You know I love my chilli to liquify my insides and given me the hiccups and the table, and these babies don’t fail. Piping hot, smokey and a little bit sweet, they’re the perfect food to honour the fire she brought to the role.

Quesadylan Chipotlula Chicken
Serves: 4.

Ingredients
olive oil
2 onions, diced
5 garlic cloves, minced
200g can chipotle chilies in adobo sauce, roughly chopped
400g can crushed tomatoes
1 tbsp muscovado sugar
salt and black pepper, to taste
3 cups roast chicken, roughly chopped
8 tortillas
3 cups grated cheese
Guacamole, sour cream and lime, to serve

Method
Heat a lug of oil in a skillet over medium heat and sweat the onions for five minutes, or until tender. Add the garlic and cook for a further minute, or until fragrant. Quickly add the chipotle in adobo, tomatoes and sugar with a pinch of salt and pepper and bring to a simmer. Reduce heat to low and stir through the chicken until heated through.

Preheat oven to 180°C.

To assemble, sprinkle cheese on a half of each tortilla – in a half-moon, ya dig? Split the chicken amongst the tortillas and spread to cover the cheese. Sprinkle with the remaining cheese and fold the tortillas closed to form semi-circles. Press firmly and transfer to a lined baking sheet.

Place in the oven to bake for fifteen minutes, or until golden and crisp. Cut into wedges and serve piping hot with guac, sour cream and a fresh squeeze of lime juice.

Devour.

Drink, Hashbrown: The End

It is truly hard to pick a favourite character on Kimmy Schmidt. I mean, Titus is iconic, Jacqueline is Jacqueline, Kimmy is adorable and sweet but I will always have a special place in my heart from Lillian. Maybe because we both rent out apartments without floors or more likely because Carol Kane is an absolute damn delight!

Though to be completely honest, I do not and will not ever choose a favourite so DON’T bring it up again.

I first met Carol on the set of Annie Hall when I was part of Diane’s entourage and we bonded over the pain of trying to manage our naturally curly manes. I mean, everyone loves the concept of curly hair but it can be a total pain – particularly in heat or humidity – and that is something that only a curly can understand.

Somehow we’ve both managed to achieve great success despite the stress of our luscious, time consuming manes, so we don’t get to see as much of each other as we would like. No joke, we haven’t seen each other since 2006 and TBH it is probably the thing that keeps me up at night.

As a dear friend to both, I was on hand for the Madame Morrible changeover between Rue and her in Wicked, and we’ve been too busy to catch-up. Thankfully the end of Kimmy does offer us one positive, in that she had enough free time to jet down, reconnect, vow not to go so long between drinks and toast her success with a Sidecarol Kane. At it was amazing.

 

 

It should be extremely obvious by now that I will – and have – suck the alcohol out of deodorant if required, so it goes without saying that I find this delicious. But you will too – a little bit of tang and a whole lot of punch, it is the perfect way to honour a delightful show. And an even more delightful icon.

Serves: 1.

Ingredients
2 shots brandy
1 shot orange liqueur
1 tbsp lemon juice
ice

Method
Pour the brandy, liqueur and lemon juice in a cocktail shaker and give a good ol’ shake.

Pour into an old fashioned glass filled with ice.

Down.

Guess Who's Coming to Dinner, Hashbrown: The End

Sit down and pour yourself a big glass of pinot noir because Unbreakable Kimmy Schmidt’s end is nigh, and if that isn’t a reason to start living your life in ten second increments, I don’t know what is.

Unless you too were kidnapped by Reverend Richard Wayne Gary Wayne and held in a bunker for the last four years, you would know that Unbreakable Kimmy Schmidt is one of the greatest shows of all time. Given it is from the mind of Tina Fey though, we shouldn’t be shocked. And I am totally set to go all Kanye-on-Taylor on the winner of Best Comedy at this year’s Emmy if it doesn’t finally receive some love.

Oh and I guess congrats on being a mole woman if you were in the John Hamm bunker!

So try and relax, get gussied up and look like a million bucks – I’m sure that is a compliment to a non-celeb – and prepare to live as good as a werewolf while celebrating the too short life of Kimmy. And Kymmi too, I guess.

Sandra Dohnuts

Baking, Dessert, Golden Globe Gold, Golden Globe Gold: Goldy Bird, Snack, Sweets

Just like that we’ve arrived at the end of this year’s Golden Globe Gold celebration, Goldy Bird and are ready to see whether my bets will pay literal dividends or whether I will need to assume a new identity and disappear again. But let’s not worry about that because after catching up with the divine Ryan, Katey, Rich, Diane and Gael, we’re wrapping things up with icon, queen and this year’s nominee slash host slash my dear friend, Sandra Oh.

I’ve known Sandy for close to two decades after meeting on the set of The Princess Diaries. I was part of Mandy’s entourage at the time but I quickly bonded with Sandra given she is extremely delightful, charming and I knew she was destined for greatness.

Despite the fact I introduced Sand and her ex-husband, I took her under my wing, introduced her to Alexander Payne and then encouraged her to audition for a little show called Grey’s Anatomy.

Needless to say, she is grateful for the way I shaped her career.

Sandra was super stressed as we caught up, busy perfecting the final Globes script with my boy Andy Samberg and getting set for their moment in the sun. Given two of my friends are co-hosting, it goes without saying I haven’t been this proud since the Tina and Amy years.

Given how busy she is, I didn’t want to waste to much of her time so we quickly sat down to run the final odds of the season. Obviously she downplayed her chances for Best Actress in Drama, predicting it is Julia’s to lose – I know Sandy is winning though – while we both agreed that Matthew Rhys will take Best Actor, Penelope Cruz will take Best Supporting Actress and Pose will snatch Best Drama.

With that, I now hand things over to the globes while Sand and I sit in her dressing room preparing for the final show and smashing some Sandra Dohnuts.

 

 

Pillowy dough covered in sticky, sweet ganache and a healthy layer of sprinkles? They may not be classy, but damn are they perfect.

Sandra Dohnuts
Serves: 6.

Ingredients
100g butter
¼ cup raw caster sugar
3 eggs
1 cup milk, plus 2 tbsp for the glaze
½ tsp vanilla extract, plus 2 tsp for the glaze
3 ¼ cups plain flour
4 tsp baking powder
pinch of salt
150g icing sugar
4 tbsp cocoa powder
½ cup sprinkles

Method
Preheat the oven to 160°C.

In a large bowl of an electric mixer, cream the butter and sugar together until light, pale and fluffy. With the mixer still on, add the eggs, one at a time allowing to mix after each addition, and the milk and vanilla, mixing until combined. Still mixing, add in the baking powder and salt until just combined – it may look a bit curdled, but relax.

Remove from the mixture and fold in the flour until just combined, making sure not to overmix.

Transfer batter into a piping bag and pipe into a doughnut pan. If you don’t have a pan you can try and pipe them into circles – they may not look perfect, but they’ll taste it!  Bake for 8-10 minutes, or until golden and fluffy.

Remove the doughnuts from the oven and transfer to a wire rack to cool. Repeat the process until the batter is done.

While they’re all chilling, sift together the sugar and cocoa powder in a medium bowl and slowly stir in the milk and vanilla until a smooth, pourable glaze forms. Pour over the chilled donuts and sprinkle, with the sprinkles.

Leave to set, then devour.

Main, Pasta, That Is So Fetch Week

While I am heartbroken to confirm that yes, this year’s Mean Girls day celebration, That’s So Fetch, is almost over, rejoice, because the queen bee herself is finally here! That is right, my dear friend Rachel McAdams aka Regina George is finally making her debut on this patch of cyberspace.

Despite only meeting on the set of Mean Girls, we quickly became the best of friends after she survived my Mr G-esque strength training to see whether she had what it takes to play Regina aka the worst parts of my character.

I was blown away by how someone so nice could so brilliantly capture how fundamentally awful I am, and decided to get her to show me how to be nice. While she failed at first and I lashed out, we reunited on the set of my then-boyfriend’s movie The Notebook, and we remained the best of friends. To the point where I gave her my blessing to pursue him after our relationship ended.

Anyway, I haven’t seen Rach since her son’s christening – I am obvs, godfather – so it was such a joy to reconnect, laugh about our fun times on set with Linds, Teens, Ames, Mands, Dan Fran, Jono and Lizzy – and Lacey, but obvi I can’t say that yet – whilst smashing a Rachon McAndcheesems.

 

 

Now I know mac and cheeses are fast becoming an over-catered market on this patch of cyberspace, I dare you to explain how the addition of bacon doesn’t send this to the next level. I mean, name a more iconic duo than bacon and cheese. I’ll wait.

Rachon McAndcheesems
Serves: 4.

Ingredients
500g macaroni
6 rashers streaky bacon, diced
2 garlic cloves, minced
4 shallots, sliced
3 tbsp butter
3 tbsp flour, plus extra for dredging
1 tsp chilli powder
1 tsp smoked paprika
1 tsp dijon mustard
salt and pepper, to taste
2 cups milk
150g parmesan cheese
250g cheddar cheese, plus extra for crumblin’

Method
Preheat oven to 180C.

Get the pasta cooking as per the packet instructions and cook the bacon in a large saucepan over medium heat for five minutes, or until nice and crisp. Add the garlic and shallots, and cook for a further minute. Add the butter to melt, and once foamy, add the flour, chilli, paprika, mustard and a cook whack of salt and pepper, and cook for a minute or two. Remove from the heat and stir through the milk until smooth and combined. Add the cheeses to the saucepan and return to the heat until melted and combined.

By this point the pasta should be done, so drain and add to the saucepan and stir until well combined. Pour into a baking dish, top with additional cheese – potentially more than included in the dish, but who am I to say – and transfer to the oven to bake for twenty minutes.

Serve fresh and molten hot, obvi being careful whilst devouring.

Let me start by getting the obvious out of the way first – while my dear friend Sarah Silverman wasn’t able to get me a role in Wreck-It Ralph 2, the rough cut she showed me is hilarious. Though I stand by the fact I should have been in the princesses scene as the queen.

But whatevs.

Thankfully I’ve been friends with Sez for such a long time, that I was able to look past the slight and join together for a nice date. I’m a damn saint, I tells you.

I first met Sare while skulking around 30 Rock trying to get Lorne Michaels to lift my life ban. She was finishing up her one-and-done run on the show while I was being escorted from the building, and Clive the kindly security guard threw me into her path. I call him kindly because that harsh toss from the door led me to my best friend, and for that I’ll always be grateful.

I took advantage of her post-SNL pain, and drove her to show them what a big mistake – HUGE – they had made, and in turn ride her coattails to fame, fortune and success.

While we had a brief period of vicious feuding after her edits on Fucking Matt Damon made me lose out on an Emmy – yeah, my version was pretty X rated – I moved past it because I knew my life is better with Sare Silv in it.

Who am I? That was so earnest and sweet.

Anyway – as I am wont to do, we laughed, we cried, we watched the movie, we watched the random swingers party happening in the rooftop pool in the building across the street and we smashed a deliciously confusing hybrid Pizzastarah Silverman.

 

 

What is better than pizza or pasta? Yes, you guessed it – a pasta made out of pizza ingredients! Ten points to Gryffindor! I mean, nothing can possibly give your pasta a pep in its step quite like pepperoni. Add in olives, mushies, parm and all the usual pizza suspects, and you’re in for a world of joy.

Pizzastarah Silverman
Serves: 4-6.

Ingredients
olive oil
4 garlic cloves, minced
1 onion, diced
1 tbsp chilli flakes
a handful of mushrooms, sliced
½ cup black olives, sliced
½ cup sundried tomatoes, sliced
½ cup chargrilled capsicum, sliced
100g pepperoni, sliced
2 cooked Italian Sausage, sliced
400g can diced tomatoes
½ – 1 cup cream, to taste
2 cups baby spinach
salt and pepper, to taste
½ cup grated parmesan, plus extra for serving
500g pappardelle

Method
Start by getting a large pot of water boiling over high heat.

While the water is coming to a rollicking party, heat a lug of oil in a frying pan over medium heat Add the garlic and onion and cook for a couple of minutes, or until soft and sweet. Add the chilli, mushrooms, olives, sundried tomatoes and chargrilled capsicum and cook for a further minute before stirring through the pepperoni and sausage.

Add the tomatoes and cream and bring to a simmer for a couple of minutes, reduce heat to low, add the spinach and a good whack of salt and pepper and leave to bubble, covered, while you cook the pasta as per packet instructions.

When the pasta is ready, add the parmesan to the creamy tomato sauce and stir well. Toss the pasta into the pan and stir until coated. Serve immediately, slathered in additional parmesan for optimal devouring.

Guess Who's Coming to Dinner

I had an extremely hectic weekend, quickly dropping by the Berkshires – visiting Dorind, obvi – before getting an extremely patient and thorough lesson in how to play chess by my seven year old nephew. Obviously I was exhausted by the time Sunday afternoon rolled around, so I lay by the pool drinking Jimosas and watched movie trailers.

Don’t worry, I’m about to get to the point.

I was wondering how The Meg differed from Jaws III before I was distracted by the trailer for Wreck-It Ralph 2 and realised I had about twenty missed calls from Sarah Silverman over the past fortnight.

Thankfully she bought how busy I claimed to be and accepted my invite to drop by and catch-up later this week. What do I make for one of my dearest friends that happen to be a Disney princess?

Tabboulea Michele

Salad, Side, Snack

I’ve finally caught up on listening to all of Danny Pellegrino’s podcast in the last couple of weeks – not a paid endorsement, but it is perfection – and he has mentioned the importance of the Wicked movie moving into production ASAP with Lea Michele starring as Elphaba. It reminded me how desperately I needed this to happen, so I reached out and decided to push the point as hard as I could.

I’ve known Lea for years after meeting while sharing the starring role in Spring Awakening, opposite my ex-lover Jonathan Groff. You see, she and i were extremely busy chasing down roles and men respectively, so the producers allowed us to share the role if I became a Lea Michele drag impersonator and never spoke about.

NDA, shmemDA.

Anyway, given I had to develop a deep understanding of her psyche and perfect her mannerisms and vocal style, we became the best of friends. Even after I was kicked out of the cast in a blaze of scandal.

“You do a perfect Lea Michele impersonation, can’t you just play Elphaba and share your beautiful talents with the world?” she said as I sat her down to talk about the movie.

“Yes, obviously! But I feel it is the role you were born to play. I mean, my dear friend and OG Elphaba played your mum on Glee. And it would make Danny Pellegrino so happy,’ I pleaded.

I don’t know which part softened her but by the time I was serving up my Taboullea Michele, she vowed to Elphaba hers. Thank goodness!

 

 

While most people would argue that tabbouleh isn’t a meal, we aren’t most people. Plus – it is green people! How else do I convince her other than a big bowl of fresh, tasty salad that packs a delicious punch?

Tabboulea Michele
Serves: 6.

Ingredients
⅓ cup fine burghul
2 lemons, zested and juiced
2 tbsp olive oil
2 bunches flat-leaf parsley, finely chopped
1 small bunch fresh mint, finely chopped
2 tomatoes, finely diced
2 shallots, finely chopped
salt and pepper, to taste

Method
Combine the burghul in a bowl with the zest and juice and leave to soften for about ten minutes.

While it is softening, combine everything in another bowl, then add the softened burghul and stir to combine.

Devour.

She was just a small town girl, livin’ in a lonely world until she took the midnight train, found me willing to go anywhere … and I jumped on her coattails and vowed to make her a star.

Oh – FYI, I’m talking about Lea Michele.

Now I know – I KNOW – Journey are the reason that we all know to never give up on your dreams or to not stop believin’, if you will … but my dear friend Lea is the reason we started believing in the first place.
