Nasi Gorinda Medley

13th Annual Easter Meggstravaganza, Breakfast, Main

As much as I love my girl Dorinda Medley and am thrilled that her return to our TV screens with the latest season of RHONY last week is the perfect exclamation mark to her title of successful TV star for purposes of this egg-based ritual – who else feels I should just keep this sentence running on for the duration of the post?! – seeing her reminded me of what we lost last November, when our mutual friend HRC lost the election.

And that hurts.

While seeing her brought up the pain of the election of the devil, Dorinda always makes it nice and as such, we were yacking it up and reconnecting in a matter of no time!

Despite being close friends for decades –  we bonded over having mutual enemies at society events – I haven’t caught up with Dori since she joined the housewives franchise and enjoyed a stratospheric rise to the A-list, so we had much to catch-up on.

After hours of discussing John, Luann’s wedding – that I was viciously banned from for mocking Chic C’est La Vie to TMZ a few years ago – getting the goss on the upcoming season. Sadly she isn’t sure Andy is willing to ‘forgive me’ – HA, he knows what he did – and let me appear on the shows with all of my friends, but she is hopefully that I’ll be able to make it nice.

Just not as nice as her.

As any rational person is, Dori is a huge fan of Megs and was honoured to be called up to assist with the ritual … particularly since it meant she got to devour a Nasi Gorinda Medley, which she has been craving for close to four years now.

Like Dorinda, this nasi goreng is spicy, sweet and a little bit fiery … but comes together to provide comfort to anyone that comes within contact. I don’t want to sound like a broken record, but I definitely made this nice.

And thankfully we didn’t have to sit through timestamped videos of the Berkshires … though I’d be happy to if you need me, Andy.

Enjoy!

Nasi Gorinda Medley
Serves: 4.

Ingredients
sesame oil
4 garlic cloves, crushed
2 tsp grated ginger
3 shallots, thinly sliced
500g chicken mince
3 cups cooked brown rice
2 tbsp soy sauce
¼ cup kecap manis
2 red chillies, thinly sliced
2 carrots, grated
½ small wombok, shredded
handful of coriander leaves, roughly chopped
hot sriracha chilli sauce, to serve
4 eggs

Method
Heat a good lug of oil in a large frying pan – or wok – and fry off the ginger and onion. Once nice and fragrant, add the chicken and cook for about five minutes.

Add the rice, soy, kecap manis, carrot, chilli and wombok, and cook for a further five minutes or so. Remove from the heat and stir through the coriander leaves.

While the coriander is getting fragrant, heat a lug of sesame oil in a small frying pan and cook the eggs until the whites are just done and the yolks are soft.

Divide the mixture between the bowls, drizzle with sriracha and top each with an egg.

Devour.

Quesandillaz-Twine

Main, Party Food, Snack, Survivor: Game Changers – Mamanuca Islands, TV Recap

Previously on Survivor, Tavua continued to dominate immunity challenges, which was very lucky for Troyzan. Unluckily for Mana, Debbie went from lovable-nuts to scary after missing out on sandwiches while over at Nuku J.T. and Aubry’s plot to boot Michaela backfired on the former, sending him out of the game with an idol in his pocket.

Oh and Sandra stole the sugar, blamed it on her closest ally and still came out clean.

Back at camp Aubry gave her best Adam Klein impression while congratulating the people that blindsided her. Despite it being fairly obvious why it was J.T. over her, Aubry asked them why she was saved before correctly identifying that Sandra was running things and is the best player out there, royally screwing her in the process.

Over at Mana, Tai decided to make the most of last episode’s hidden immunity idol clue and get his wood wet under the cover of darkness. Turns out, that little process gives you a happy ending. What a damn surprise.

Clearly getting hot and bothered, Jiffy Pop arrived for what the tribes assumed was an immunity challenge which was instead another swap were Sandra and Varner became the latest people to be completely screwed by the game, ending up on new-Nuku with Ozzy, Sarah, Andrea, Zeke and Tai.

Everyone else but Debbie ended up on new-Mana, while Deb found herself without a tribe and a pony, heading to exile island until one of the other tribes boots someone to make room for her.

New Mana arrived – or returned – to camp where Troyzan was thankful to have some allies, while Brad was feeling screwed though was hopeful to hook up with Troyzan – which is a weird porno I’d give a shot – given his One World connection to my girl Monnie Culpepper.

Over at new Nuku, Sandra and Varner did their best to ingratiate themselves to their new tribe members. Sandra being Sandra, remained calm and was sure that she would be able to find her feet.

And just like that, Zeke and Ozzy went for a walk to reaffirm the need to get rid of Sandra, before rallying their fellow ex-Tavuans and lining up a decoy boot in Tai. Which given his past will not go well if he finds out, despite knowing Sandra is the biggest threat.

Feeling uneasy, Tai approached the Nuku well hoping to find their hidden immunity idol … which he did, bringing his total for the episode to two and the season to three.

Why couldn’t it be Sandra?

We then caught up with Debbie who was approaching what she thought was Exile Island and instead landed on a luxury yacht complete with feast and – oh wait, here is the shitty part – cockstainCochran to provide advice … and thankfully something useful in an advantage.

Hatred aside, this is a crazy showmance I can get behind. And I assume, so can Debbie who is more excited to see him than the presidents and prime ministers she has, of course, also met.

Debbie then told her potential new boyfriend about how confident she was and ragged on Brad ‘fuck you’ Culpepper, before Cochran presented her with – what I assumed was an engagement ring – the options for her advantage. She of course elected the worst advantage, the extra vote – which has booted its holder every time it has been played before – rather than an advantage for her tribe at the next immunity challenge or my personal favourite, a kit to build a fake immunity idol.

Sadly a devious revenge plot where she gives a legit looking fake idol to Brad to boot him will not come to fruition.

The next day Zeke and Varner connected by the beach where Varner shared how desperately he wanted to make the jury on his third game. Zeke, knowing he should start making Sandra and Varner relax, told Varner how much they wanted Tai out of the game. The entire conversation made Sandra anxious … but Sandra is smarter than mostall players, and knew something wasn’t adding up.

Not wanting to leave us hanging too long, Jiffy Pop returned for the first immunity challenge as new tribes where they were required to get wet, pull themselves off … a platform and over monkey bars before running to shore and placing their piece(s) in a cart and pulling them into shore.

Obviously it ended with a puzzle.

Mana got out to any early lead, which despite Varner’s best efforts to pull up a load, never went away, sending Mana to tribal council.

Back at camp, Zeke reconfirmed the need to get rid of Sandra, while Varner was feeling confident it was Tai. Again, Sandra’s superior intuition shone as she felt nervous – for the first time in three seasons – and approached Ozzy, Sarah, Zeke and Andrea about booting Tai to avoid a Kaôh Rōng kaôh-lition.

While Sarah and Ozzy weren’t wanting to budge on the Sandra vote, they acknowledged how persuasive and right she is, and that they do need to break up the trio of Tai-Aubry-Debbie.

On the other end of the spectrum, Tai then approached Varner to tell him that Sandra was indeed the target … allowing Sandra time to come up with a plan, which is never a good thing.

With that, they arrived at tribal where Andrea announced that they would continue in the tradition of the season – like All Stars before it – to boot the biggest threat, while Ozzy spoke to the back of Sandra’s head about the positives of keeping a bigger threat as a shield before Sandra announced that she was confident it was her as no one was talking to her.

This spooked Tai … who then commenced talking in circles, confusing himself and making the rest of his original, original Nuku tribemates. Sarah then mentioned being open to a couple of options, spooking Tai even more before Sandra said that she’d vote for whoever he wanted her to. Before he whispered a name to her.

He then gave Varner the same name, to which Varner mentioned they still needed another person. The rest of the tribe wanted the goss … so Tai then announced that he was now considering Ozzy, spooking Ozzy, Zeke, Sarah and Andrea, who then commenced their own whispering.

After some back and forth and everyone being confused, they threw their hands in the air and decided to just vote … which sadly – and I hate that I’m even typing it and never assumed I would have to – resulted in my dear friend, sass-monster and greatest player of all time Sandra Diaz-Twine being voted out for the first time.

Thank fuck those fuckers fucking applauded her on her way out the door. The stupid fucks. The Queen is dead, long live … the D-list returnees rounding out the cast?

While I was fuming by the time she arrived at Loser Lodge, Sandra took her first ever boot in her stride … until I convinced her to break into both camps while they were at the next challenge and burn their camps to the ground. FYI, that is why they were crying in the next episode preview.

As you know, I met Sandra when I was her server at Outback Steakhouse and we quickly bonded over being fiery, sassy and persuasive. While she has never been able to get me out there as a contestant – she tried for Blood vs. Water but Aras got jealous – I was scheduled to appear as her loved one, which is probably more of a tragedy than seeing the Queen and Malcolm felled within a fortnight.

Obviously that meant I was in desperate need of some comfort food, meaning I had to whip out my famous Quesandillaz-Twine.

An ode to my girl’s winning ways, these quesadillas are the absolute best – spicy, cheesy and with a good whack of chilli, the crunch in your mouth and go a long way to help even the sharpest of pain.

Enjoy … if you can!

Quesandillaz-Twine
Serves: 1 first-time boot and her irate firebug of a bestie.

Ingredients
500g beef mince
2 cloves of garlic, finely chopped
1 onion, diced
2 tbsp smoked paprika
2 tsp ground cumin
2 tsp oregano
1 tsp ground coriander seeds
1 tsp cayenne pepper
½ tsp cinnamon
400g canned diced tomatoes
400g canned black beans, rinsed and drained
2 tbsp tomato paste
2 avocados, pitted and diced
small handful of coriander, roughly chopped
canola or vegetable oil, for frying
8 tortillas
250g sharp cheddar, grated
1 lime, cut into wedges
sour cream

Method
Brown the mince in a large skillet over medium heat, breaking-up with the wooden spoon as you go. Add the garlic, onions and a good whack of salt and pepper and  cook for a couple of minutes, or until the onion is just translucent. Add the spices and cook for a minute, before adding the tomatoes, black beans and paste. Reduce heat to low and simmer for about twenty minutes, or until the liquid is pretty much gone.  Remove from the heat and stir through the avocado and coriander.

When you’re ready to devour, heat a large clean skillet over medium heat and add a lug of oil. Place a tortilla in the pan, sprinkle half with cheese, top with the mixture and more cheese, because this is comfort food. Fold the tortilla over to form a semicircle, pressing down on the quesadilla to set. Flip once, cooking a couple of minutes each side. Repeat the process until the mixture or tortillas run out, I don’t mind which.

Cut the quesadillas into wedges – because you don’t need to feel guilty if the food is hand-sized – and serve with a squeeze of lime juice, a dollop of sour cream and, of course, hot sauce.

Devour, in honour of Sandra.

James Van Der Greek Chips

Party Food, Side, Snack

Did I ever tell you that James Van Der Beek is the reason I am married? I’m fairly certain I have … but it is a story that bears repeating.

While there is a part of me that will always be heartbroken that JVDB never proposed to me while we were dating – he didn’t like sharing me with J-Jax, which was a not-negosh for me back in 2001 – he knew before I did when I found the man of my dreams and pushed me to propose.

He sat me down the day before my 22nd birthday and made me rewatch the two-part finale of Dawson’s Creek. It got to the part where Joey and Pacey were watching his faux-show and he turned to me just as faux-Joe started quoting the theme song and said, do you want to wait? For your life to be over?

Obviously I didn’t and the rest is history … but that is just the kind of close friendship we have, you know? I mean, he knew I should propose even before I did.

I’m not surprised though, JVDB has been my best friends since he guested on Clarissa Explains It All and I dumped the wagon that was Mel J H. I knew he was destined for greatness – and that he was a total babe – and made it my life goal to make him the star of a seminal teen drama series.

When I first locked in that goal, I had a different understanding of the word seminal … but I was successful, even if I didn’t mean to be.

As I mentioned, I haven’t seen to him since the one-two punch of Don’t trust the bitch in Apartment 23’s axing and convincing him to join the cast of CSI: Cyber – with my friend Bow Wow – but thankfully he never held any of my advice against me.

And being that it came from my dear friend JVDB I actually believe he didn’t  … and that that fact had nothing to do with his love of my James Van Der Greek Chips.

I know he is not Greek … but these were our favourite post going Greek snack. And how could you find fault with that/them, really? Crispy potatoes, sharp feta, sweet oregano, tangy lemon and a nice punch of chilli.

Seriously, it is perfection – enjoy!

James Van Der Greek Chips
Serves: 2.

Ingredients
2-3 potatoes, cut into ½ cm batons the length of the potato
olive oil
salt and pepper
1 tbsp fresh oregano leaves, roughly chopped
zest of a lemon
chilli flakes, to taste
⅓ cup feta, crumbled

Method
Preheat oven to 220°C.

Once the oven is scorching hot, place the potatoes on a lined baking sheet with a lug of olive oil and a whack of salt and pepper. Toss the potatoes to coat and spread into a single row. Place in the oven, reduce heat to 180°C and cook for twenty minutes or until golden and crisp. You may need to flip once halfway through cooking …  but I can never really be bothered.

Remove the chips from the oven, sprinkle the oregano, zest and chilli flakes over the hot chips and toss.

Decant to a bowl, top with feta and devour.

Malcolm Freburger

Main, Snack, Survivor: Game Changers – Mamanuca Islands, TV Recap

Previously on Survivor, Queen Sandra got to experience her first ever tribe swap where J.T. and Troyzan were royally screwed … but were saved by their new tribes winning immunity. While poor Hail and Caleb had to battle in their not-as-screwed-but-still-screwed state at tribal council, where Caleb found himself out of the game after the undisputed king of upcycling Brad Culpepper convinced Tai it was for the best.

We opened up back at Mana after tribal where Sierra and Brad apologised to Tai for having to boot his part-time lover and dear friend Caleb, over Hali. Sierra then kissed him, either deluded into thinking that would somehow make it better or trying to be his Fijian Aubry.

Who knows.

The next day Hali and Debbie bonded, with Hali hoping that by showing Debbie she is the best asset for Debbie to use going forward / to help get rid of Tai … who is still feeling salty about from their time in Kaoh Rong. On the flipside, Debbie added double agent to her resume as she confirmed that old tribal lines would hold out and Hali is the next to go.

Period.

Jeff arrived for the reward challenge for coffee … without me even mentioning how b-b-bangin’ Malcolm is looking. The man is clearly working overtime to be my number one and I both love and hate it.

Wanting to bring the excitement, Jeff announced it was a hero challenge with only two people competing for each tribe – gleefully one involving balls, poles and bags – leading to Troyzan blowing Ozzy’s huge … early lead and my love Malcs and the artist formerly known as fuck you Brad Culpepper securing victory for their tribes.

Back at Tavua, Troyzan was even more screwed than he was after last episode and Ozzy got back to his cocky Micronesia/South Pacific roots, talking about how he is carrying the tribe and providing for them. To his credit though, the man then caught a stingray and as Steve Irwin would tell you if he wasn’t murdered by one, those fuckers are dangerous.

Over at Nuku Sandra was feeling nice and confident in her position – though far more charming about it than a lucky to be alive Ozzy – while J.T. and Malcolm got together to discuss taking out Sandra due to her complete control and the fact that she truly is the most threatening player out there.

Lucky Malcs is a babe, or I’d be angry.

Seriously … I call Malc a babe and like that, immunity is back up for grabs and Probst is on my screen! Clearly salty about the situation, he then announced that only one tribe would be winning immunity and the remaining tribes would both be attending tribal council.

Finally – a double tribal episode that makes sense. Three tribes, one winner, double tribal … this is the only fair format, Probst!

Earning even more points the challenge involved blindfolds, yanking on chains until you got drenched and a whole lot of ball play. Kinky af, and I like it. Despite an early lead for Nuku poor Varner dropped his load – and broke down, breaking my heart – while Andrea’s advanced ball skills saved Tavua from tribal council … where the two tribes would join together to vote out one.

Like a fucked up version of the spiceys. I take back my praise from two pars ago. I mean, good twist … but you’ve got 20 castaways and will need a double boot and this actually makes sense.

Back at camp, Nuku were feeling calm given their numbers advantage over Mana. But as Malcolm said, it is only simple on paper. Everyone started throwing out names with Sandra Diaz-Twine targeting her initials twin Sierra Dawn-Thomas as the least likely to have an idol, J.T. suggesting Tai … and then having a side conversation with Malcolm about how Brad would hopefully vote Sandra and they could flip to get her out.

Over at Mana, Brad was concerned about Hali’s loyalty to new-Mana, while they debated the merits of booting either Sandra or Malcolm. Knowing they’d be screwed otherwise, Tai got busy destroying foliage in search of another idol … which he successfully found.

He returned to camp to tell his tribemates – minus Hali – where Sierra felt it appropriate to cut Caleb’s grass AGAIN (seriously, he was booted just an episode ago) and kiss Tai.

With the underdogs having a fighting chance we arrived at tribal council where Brad got his Charlton Heston on and started talking guns, before Sandra joined the party and said all their guns were on one person. Debbie mentioned then joined the fray and mentioned that they used to be close with J.T. to which Sandy mentioned used to as the key part of that sentence.

There was talk about threats on each tribe, Sandra was trying to bluff about an idol, Brad mentioned Hali flipping was suicide to which Hali got annoyed and felt like they weren’t really trying to make her feel safe.

And I feel like this is where it started to get insane with the side whispering which lead to J.T. getting out of his seat, walking over to Brad and whispering that Brad was safe and Sierra was getting the votes. Royally pissed, Hali marched over to old-Mana-now-Nuku and gave them her intel, trying to flip their vote to Brad.

It was madness and I still don’t know exactly what happened but their were huddles and side huddles, Jeff trying to get the tribes to vote to which Hali refused to try and help her old tribe stay together, before then changing her mind when they wouldn’t listen and walking off to vote without Probst’s intro.

It. Was. Insane.

Then tragedy struck. Brad told Tai to use his idol on Sierra, who all of new-Nuku had voted for, resulting in Malcolm being axed by the new-Mana … and J.T.’s second worst move of his Survivor career. While Malc was disappointed as he arrived at loser lodge, I was absolutely livid, flying around the room like Blanche, mid-breakdown in Streetcar.

Now I don’t want to shade my love Jiffy-Pop Probst or throw about claims of jealousy of my throbbing crush on Malcolm … but how could they line up this twist and think it wasn’t going to end this way? Poor Malcolm was not felled by Sierra and Tai’s idol at a jaw-dropping tribal, but rigga morris by Jeff concerned about my weekly Malc-erotica fan-fiction.

Thankfully we had each other – and oh (in maybe just my mind) did we have each other – and a shit tonne of hella comforting Malcolm Freburgers.

Full disclosure, these babies are a hybrid of the many different In’n’Out Animal Style Double Double copycat recipes available online … because like Malcolm, In’n’Out are the absolute best and you want them to fill you up on the daily. Multiple times.

Simple, fresh and an absolute classic … these will become a staple of comfort eating menu. And are perfect for the man who was absolutely screwed by a shitty twist as hard poor Michelle Yi … back in OG Fiji.

Enjoy!

Malcolm Freburger
Serves: 4.

Ingredients
1kg beef mince
salt and pepper
vegetable oil
2 onions, diced
¼ cup mayonnaise
2 tbsp ketchup
1 tbsp sweet pickle/gherkin relish
½ tsp champagne vinegar
4 hamburger buns
American mustard
pickles
iceberg lettuce, shredded
1-2 tomatoes, sliced
8 slices American (or any high-melt) cheese

Method
Squeeze as much liquid out of the mince as possible and place in a large bowl. Add a generous whack of salt and pepper and combine with your hands. Divide into 8 patties, place on a plate lined with cling, cover and place in the fridge for about an hour or so.

Heat a lug of oil in a small pan and cook onions over low heat for half an hour, or until golden and caramelised. Add water as you need to avoid them catching on the bottom and burning.

Set aside.

Combine the mayo, ketchup, relish and vinegar in a jug. Cover and place in the fridge.

Heat a large pan or griddle and brush with vegetable oil. Half the buns and light toast, split side down (obviously). Transfer to a plate and spread the base with some special sauce. The actual special sauce and not Malcolm’s, though …

Lay a couple of slices of tomato on the sauced up bun and top with some lettuce.

Brush the pan with some more oil, if needed, and when searingly hot place the patties on the pan, pushing down with a spatula until they are roughly 1cm thick. Squeeze some mustard on the top and cook for a few minutes. Flip the patties, top with a slice of cheese and cook for a further minute.

Place two patties on each bun, top with some caramelised onion, drizzle seductively with more special sauce and top with the other side of the bun.

Serve with fries, animal style … aka covered with any excess onion, sauce and some American cheese.

Devour.

Tony Nachos

Main, Snack, Survivor: Game Changers – Mamanuca Islands, TV Recap

Previously – aka minutes ago in viewing time – on Survivor, Sandra continued to be charming, Michaela continued to have killer facial expressions and poor Ciera found herself becoming the first boot of Survivor: Game Changers without having her mum around to vote out in her place.

We opened up at Mana the next day, where Tony announced how bored he was waiting for everyone to start playing the game. Aubry and Tony then convened at the well to put into place arguably the greatest alliance of all time, consisting of them, Malcolm and Sandra aka all the threats. Tony then approached Sandra who confirmed that winners going to the end together was the only way to win twice … which she would know, given she is the only one with a double crown.

Meanwhile over at Nuku, knowing his chances of ever winning are quite slim Tai continued his scam to swindle money from Sia while Debbie – adding pragmatist to her list of titles (I’m counting it as a job) – confirmed that Tai be damned, those chickens will eventually become her dinner. To which country boy JT obviously agreed.

Back at Mana, Tony continued to overplay and returned to digging his spy bunker under the cover of darkness. Sandra and Troyzan then went for a walk to discuss strategy – or tides and their crates’ proximity to the water – sending Tony into hyperdrive and setting off the beginning of the great Sandra vs. Tony feud.

I mean, it wouldn’t be a Sandra season without her feuding with a loud male.

Things were moderately less stressful over at Nuku where Ozzy and JT were getting friendly, terrifying poor sweet Cirie. She then went for a walk to the well with Sarah where they confirmed their allegiance to each other and set off Sarah’s – could it be – winner edit as she confirmed she will be changing her game this time.

Not one to rest on her laurels, Cirie then pulled Zeke and Debbie aside to try and make even more friends that could one day become lovers, or allies. Debbie then reminded us she is a Captain in the civil Air Force – maybe, I’m honestly starting to lose track of her resume and it is only episode 2 – and that she wasn’t falling for Cirie’s charm.

Debbie then added Veterinarian to her list of professions, I assume, given her ability to detect bull shit. *Boom tish*, thank you!

Over at Mana, Sandra continued to dismantle her alliance with Tony and proceeded to pull together a majority alliance in the space of five minutes. The Queen is a Queen for a reason.

The next day Tony then Aubry aside to build a counter-alliance with Malcolm and Caleb. Tony then approached Malcolm to discuss getting rid of Sandra, as she lurked in the background, before Caleb gave us his surprisingly – sorry Caleb – insightful view on the fact you can’t really trust either Sandra or Tony but that Tony was strong and strength was still important on day five.

Wanting to give us a break from the politicking, Jiffy Pop returned for the second immunity challenge where the tribes had to man-handle a big, long, thick snake through an obstacle course. I got distracted around the time Caleb cried out how tight it was …

Once again, despite Malcolm’s best efforts to catch up – and much to Michaela’s chagrin – Nuku won immunity setting off Malcolm’s Matsing PTSD and sending Mana back to tribal council.

Back at camp Sandra and Tony got to work rallying their troops – after a brief frustrated outburst from Michaela, which isn’t as charming as it was last season.

Sandra went with the fact that once Tony is gone, people will calm down … while Tony scurried around for an idol. Hali then made a play for Courtney Yates 2.0 – aka Sandy’s ride or die bestie – and started to work on Caleb and Malcolm. This spooked Tony who then took time away from his busy idol shopping schedule to pull Caleb aside and start working on Michaela to boot Sandra instead.

Not wanting to let Tony down, Caleb approached Michaela and Varner to talk about getting rid of challenge liabilities like Sandra, neglecting to realise that Varner was the sole reason they lost the last challenge.

Queen Sandra then gave us a final pre-tribal speech to confirm that Tony has only won once and that her legacy will speak for itself tonight. Yas Queen … or horrific foreshadowing of her downfall.

At tribal they got to work debating the merits of keeping the strong players, spooking Sandra for the first time in her Survivor career … before she correctly pointed out the fact that the strong people are the reason they lost the first two challenges and fell behind, not her.

Tony then got annoyed at Troyzan for correctly pointing out that Tony was erratic and paranoid. Sandra was then viciously attacked by a bug, terrifying Michaela. Tony then said that he respects the players as they were all game changers before Varner announced that they would be getting rid of the square peg that didn’t fit into their round hole. Which appeared to terrify Sandra and excite – obviously – me.

Thankfully her fears were unfounded as Tony was revealed as the square peg and found himself out of the game as the second boot. Wanting to one up Michaela’s exit last year, Tony proceeded to warn people about blindly following Sandra.

“That’s what you get for plotting against me. That’s what you get, and the Queen stays Queen. That’s what you get and take yo’ ass home. Bye Tony, say hi to Ciera for me” Sandra Diaz-Twine, iconic.

As glad as I was to see my girl win the war, I’m sad it was at the expense of my dear friend Tony who I met whilst training to be a cop in NJ at the turn of the millennium … before milk was flown in by drones.

Despite being expelled from the force for my illegal dealing, Tony and I stayed in touch and he endeavoured to help me see the light and live an honest life. As such, Tone was delighted to see me doing something decent with my life in Ponderosa and gladly accepted a big old bowl of my Tony Nachos.

I know what you’re thinking – maybe, sometimes – how does this differ to your Keanachu Reeves jerk? For one, no chipotle and two … this is a more relaxed nachos. Single – well probably double given the size of my bowls – serve, comforting, warm and everything you need to help work through the pain of going from Sole Survivor to slayed by the Queen.

Enjoy!

Sofia Coppo’boyla

Main, Oscar Gold, Oscar Gold MMXVII: Gold with the Wind, Snack

Another day of our Oscar Gold celebrations, another catch-up with a Best OG Screenplay winner. But I mean, my girl Sofia is Hollywood royalty and really should have some Best Director and Best Picture wins under her belt … so she is pretty much the perfect person to run most of the outstanding odds.

As you know, I am a dear, close personal friend of the Coppola-Schwartzman-Cage Dynasty and as such have known Sof since she was knee high to a pig’s eye!

I was even the one to suggest to Fran-Ford to cast her in The Godfather Part III, which in retrospect I should apologise to all involved … but that is beside the point, you know.

Thankfully Sof was quick to bounce back from my (horrific) career advice and quickly turned herself into the auteur we know now. I mean, between The Virgin Suicides, Lost in Translation and Marie Antoinette, she creates beautiful languid films of substance, lead by strong women.

Basically, I love her. So damn much. And that isn’t just because she made a movie about my crime spree in Bev Hills back in the day.

I’m pretty sure I mentioned being part of The Bling Ring before, right?

That being said, my girl has been hella busy with The Beguiled so we haven’t been able to connect recently so it was such a treat to get together and discuss the Oscars … which we are hopeful she will have a strong showing at next year.

Anywho, I know you came for the odds so let’s get to them first. Sof agrees that the Screenplay gongs will go to Moonlight and Manchester by the Sea … because La La Land’s best writing came in the form of its music which will take Best Score and Original Song along with Cinematography, Editing, Sound Editing, Sound Mixing, Production Design, Director and Actress on its way to Best Picture.

Oh and obviously if we are wrong about the technical categories … it is fake news, ok? Because let’s be honest Arrival will probably take most of those. Maybe it isn’t fake news if I hedge my bets?

Ok – I’m hella confused, so I’m off to prep for tomorrow’s big guest, so why not head to the kitchen and whip up a delicious Sofia Coppo’boyla while you wait.

sofia-coppoboyla-1

Spicy, warm and delicious with the addition of the comfort of bread, these Po’Boys are everything I want from those creole creations without the addition of the mucus of the sea.

Because oysters are grosse, long live chicken ok!

Enjoy!

500g chicken breast
1 cup panko breadcrumbs
salt and pepper, to taste
1 tbsp Cajun seasoning, plus ½ tsp extra for the sauce
1 egg, whisked
1 cup mayonnaise
3 tbsp Dijon mustard
1 tbsp hot sauce
1 tbsp sweet pickle juice
1 tbsp smoked paprika
1 tsp prepared horseradish
2 cloves garlic, finely diced
4 small baguettes, sliced in half leaving a join at the edge
half a small iceberg lettuce, shredded
3 tomatoes, sliced
4 hot and spicy pickles, thinly sliced

Method
Preheat the oven to 180°C and cut up the chicken into bite sized pieces.

Combine the breadcrumbs with a good whack of salt and pepper and the tablespoon of cajun seasoning. Dip the chicken into the egg and toss through the spiced breadcrumbs to thoroughly coat. Transfer to a lined baking sheet and cook for twenty minutes, or until golden and cooked through.

While the chicken is baking, combine the mayonnaise, mustard, hot sauce, pickle juice, paprika, horseradish, garlic cloves and remaining cajun seasoning in a jug. Add salt and pepper to taste and leave to chill in the fridge and let the flavours mature.

When the chicken is done, brush the inside of the bread with some butter or oil and place in the oven to crisp for a couple of minutes.

Remove the rolls, smear generously with sauce, top with lettuce, tomato, pickles, chicken and another drizzle of sauce.

Devour.

Waffadele Burger

Main, Oscar Gold, Oscar Gold MMXVII: Gold with the Wind, Party Food

So speaking of Beyonce – one woman’s curse via recipe is another woman’s gain … and that woman making the gains was none other than my dear frenemy Adele.

Uggggghhhhhhhh. And contrary to what some may think of me, that wasn’t a shady comment about weight. Glass houses and all, you know?

Also let me start by saying that firstly, I love Adele … but the slag can fucking drink me under the table and I hate to lose – particularly if said competition I am losing is based on alcohol consumption – so as such, she is more frenemy than friend.

Plus – she keeps winning things and Jesus loves winners and if she is winning, maybe sometimes that means I’m losing. Which is terrible.

Anyway the ol shagger has not only won a shit tonne of Grammys but is also the proud owner of an Academy Award for Best Original Song which is, quite possibly, my favourite category (because when I’m nominated in 7 years, I get to perform the song on stage the same night I win 15 awards).

I should probably tell you about my past with Adele though, shouldn’t I? I first met Adsy ten years ago when I stumbled upon her busking on the tube or something – I was big into bath salts at the time so don’t remember much. I do remember she had talent though and took her under my wing and decided I would one day make her a d-list star to rival Kathy Griffin (read: they are both red(ish)heads).

Halfway through my tutelage of her I sobered up and realised that she is just someone that is skilled at writing sad music and holding notes – I must remember to see Chris Martin one day soon – and told her that she should give up on her dreams, lest she wanted my forehead to chase itself into the pavement.

It inspired her hit song and gave her a career … but did I get any thanks? No. Which is another reason we are frenemies. I also inspired her Oscar winning song Skyfall – it was about balls and is meant to be part of Lil Whorephan Andy – but that is another story for another time.

As much as I’ve complained about Ads, it was such a treat to see her and her 6000 new Grammys and to discuss something she is far less skilled at, the world of celebrity and the Holy Grail of awards ceremonies.

Lucky for this year’s race for Best Original Song is a two horse-one batch of nominees race between the two nominated hits from La La Land. I mean sure, in any other year Lin Manuel would be polishing the EGOT label on his future tombstone … but La La Land was a gem celebrating old Hollywood that was also more cerebral than most people give it credit for, meaning it is pretty much unbeatable in this category above all else. And even Adele can see that.

I mean, it is a musical for christ sake – we can ignore that Another Day in the Sun and Someone in the Crowd are infinitely superior songs.

We both agreed that City of Stars is the safest bet for the gong and that a Waffadele Burger is the perfect feed for such robust debate.

And drinking.

I know, I know – a waffle burger is gimmicky … but this one is pure perfection. I mean it is a copycat Big Mac, served on waffles. It is a better McGangbang than the McGangbang and dipping fries into a sundae.

I’d tell you to enjoy but I know there is no getting around it! Now off to greet my fave writer/director …

waffadele-burger-2

Waffadele Burger
Serves: 4.

Ingredients
1/2 cup mayonnaise
2 tbsp French dressing
1 tbsp sweet gherkin relish
1 onion, finely minced – ½ for the sauce, ½ for the burgers
1 tsp white vinegar
1 tsp sugar
½ tsp smoked paprika
1 tsp garlic powder
500g beef mince
salt and pepper, to taste
12 waffle *Spoiler alert* aka 12 waffles, I don’t mind if you buy … for now
cooking oil of your choosing
iceberg lettuce, roughly chopped
8 slices American cheese
pickles, thinly sliced

Method
Combine the mayo through garlic powder in a small bowl with a good season, stir and place in the fridge to chill.

Meanwhile squeeze out excess moisture (read: blood) from the mince and transfer to a bowl. Season generously, combine with your hands and shape into eight balls and flatten to make thin patties. Leave to rest while you heat up a large skillet over high heat.

While that is happening, start toasting the waffles in a toaster and transferring to a plate.

When the skillet is nice and hot, reduce heat to medium, brush with some cooking oil and cook the patties for a minute or two each side. Transfer to a plate and repeat until they are done.

To assemble, place a waffle on a plate, smear generously with special sauce, top with a pinch of the reserved chopped onion, add the lettuce, top with a slice of cheese and a pattie, followed by the centre waffle. Then smear with sauce, top with onion, lettuce, a few pickle slices, cheese – because I believe it needs two slices – the pattie and another waffle.

Push down, grab in one hand – if you can, Ads and I have big hands like Donald Trump, obvi – and devour.

Salt-n-Pepa Squid

Grammy Gold, Grammy Gold: Golden Little Pill, Main, Seafood, Snack

While Elts and I weren’t up for pushing it – sexually or the limits of our tenuous reconciliation – I didn’t let it get me down, knowing that my dear friends Salt-n-Pepa were joining me for day two of Grammy Gold.

As you could probably infer from my aggressive sexuality nature, I was heavily involved in writing Let’s Talk About Sex with the girls. Our friendship, however, goes much deeper than that having met in the mid-80s. From the early days, I knew the girls were destined for greatest and immediately tried to hitch my wagon to theirs.

While we lost contact after their disbanding – and by that, I berated Salt for quitting and we stopped talking – we recently reconnected after our second (and final) co-written song Shoop was used on the Deadpool soundtrack.

After watching the disturbingly sexy nude scene, I ran out of the cinema, picked up the phone and we’ve been on the road to renewed best-friendship ever since.

When it came time to organise my inaugural Grammy Gold, I knew that the gals had to be in attendance. Plus – why would I miss out on having my first duo recipe, featuring the first all female hip-hop group to go platinum as part of the first Gram-Go?

Exactly. Plus, Salt-n-Pepa Squid is delicious, even if you’re a seafood hater like me.

Fun fact: this spicy delight is the reason for all of the girls success AND is where their names came from. We were hanging in my crib trying to re-name their band – everyone was getting hangry so I hauled arse to the kitchen, grabbed out some squid and asked what flavour the girls wanted.

Salt and pepper where the first words out of their respective mouths, became their nicknames, and this beautiful dish was born – enjoy!

Also yes, I am claiming to have completely invented salt and pepper squid … and post-its.

Oh – and FYI, Elts, Salt and Peps all agree that Beyonce / Lemonade is going to dominate.

Salt-n-Pepa Squid
Serves: 8-10.

Ingredients
1 tbsp peppercorns
1 tsp chilli flakes
1 tsp chinese five-spice powder
2 tsp sea salt flakes
100g rice flour
lemon, zested and sliced into wedges to serve
10 small squid hoods, cleaned, quartered and scored
2 eggs, lightly beaten
vegetable oil, for frying

Method
Heat a small skillet over medium heat and add the peppercorns, chilli flakes, five-spice and salt and cook, stirring, for a couple of minutes or until fragrant. Remove from the heat and allow to cool slightly before transferring to a mortar and pestle, and bash out your unresolved sexual feelings from yesterday until the spices are a rough powder.

Combine half of the spices with the rice flour and lemon zest. Dip the squid in the eggs and toss through the spice mixture. Repeat until done.

Heat a very generous lug of oil in a large frying pan. When nice and hot, cook the squid a couple at a time for a minute or two, or until crispy and curled. Transfer to paper towels and repeat the process until done. Toss with the remaining spice mixture and serve immediately, with lemon wedges.
