Brendan Shapear and Prosciutto Pizza

Main, Party Food, Pizza, Snack, Street Food, Survivor, Survivor: Ghost Island, TV Recap

Previously on Survivor, the tribe swap but Malolo 5-4 deficit on both of the new tribes, filling Kellyn with joy and allowing a newly introduced castaway Bradley’s head to explode. Tragically he wasn’t cursed by Ghost Island, where Chris from new Naviti was sent to be humanised while his ex-Naviti chums plotted to jump across tribal lines and take out his ally Angela. Sadly for them, the Maloloans had different plans, flipping the script and taking out the more threatening Morgan … who willed her legacy advantage to Domenick on the way out.

Back at camp Dom was feeling upset by the blind side, as was Angela who they turned on. Dom and Wendell felt they were now enemies with everyone and with their backs against the wall, Dom finally shared the intell that he had a legitimate idol. Rather than the fake one he shared with everyone to make Chris even more suspicious.

The next day Dom discovered he had been willed the legacy advantage and vowed, wait for it, to reverse the curse.

Throwing us straight into the action, Probst returned for the first reward challenge of the season where the tribes had to fight over a ring, and hold both the ring and a pole at the same time. So, basically any given night. It was for PB&J, so all the OG Navitians quickly forgot about their shock at Morgan’s departure.

Chris and Wendell made quick work of father and son duo Michael and Brendan, Laurel and Angela scored another point for Naviti despite Jenna and Kellyn’s best efforts. Some nipple play from Sebastian and Bradley gave Malolo their first point over Domenick and James, though tragically that was as wild as things got as Laurel and Libby dominated Stephanie and Des, and secured reward for Naviti. Tragically they didn’t select who would go to Ghost Island and the Survivor Gods punished Kellyn for her fear, locking her in for a visit and returning her to camp in time for the next challenge … and potentially tribal council.

Arriving at Ghost Island Kellyn faced her fears of being alone head on. After a two week hiatus, Kellyn was giving the chance to play for an advantage … however given the precarious numbers advantage on Malolo, opted not to risk her vote at the next tribal council. The thought of making the wrong decision triggered memories of being blindsided in her personal life and completely changing everything, endeared her to me even more.

Back at Naviti the newly formed tribe were giddy while devouring their PB&J before Chris tried to get to the bottom of the last tribal council and how Morgan ended up going. Angela quickly filled him in on Dom and Wendell’s betrayal, with the two hightailing it to the Malolo 4 to lock in a six-person alliance and take them out. Dom and Laurel were not huge fans of the idea, preferring to work with Wendell and Dom because they like the former more. Laurel then made a beeline for Dom who filled her in on the idol and locked in an alliance while Donathan pulled in Wendell and TBH became couple goals.

Jiffy Pop returned for immunity where the tribes were required to swim out to a cage, release a chest, carry it across a bridge … open said chest and land the balls on a narrow ridge. Remember when Michaela dominated this challenge in Millenials vs. Gen X? Iconic. Anyway, Malolo got out to an early lead thanks to Michael and his partially see through jocks while Naviti couldn’t even get past the cage before Malolo made it into shore. Naviti continued to lag, allowing me plenty of time – as should you – to oggle the men in wet jocks. However out of nowhere Brendan started knocking balls off the ridge, giving Naviti the chance to catch-up and snag immunity. Much to the delight of Naviti, in particular Donathan who used the celebration as an excuse to plant an adorable peck on Chris’ cheek. Bless him, her is adorable.

Back at Malolo, the OG Maloloans were feeling dejected while Kellyn was thrilled to have trusted her gut at Ghost Island. Bradley on the flipside was feeling super smug and likened himself to dominant winners on day 12 and rubbing in her impending doom to Stephanie. Bradley then went off to rally his troops and confirm which sitting duck should be taken out, deciding that one of Michael or Brendan need to go. While Chelsea argued for Michael, Des made the case that Brendan is the person they wouldn’t assume Naviti would target and therefore he is exactly the person they should be targeting.

Down by the shore Michael and Brendan filled the girls in on their idol find, bringing Stephanie and Jenna to tears at the prospect of somehow taking out the douche-lord Bradley. Michael then assured them they would be taking out Bradley and that he would be pulling out James’ idol mid-way through tribal to spook someone into flipping.

At tribal council Sebastian confirmed their alliance would stick together, while Des couldn’t appear to read the room. Stephanie commenced the attack on Bradley, pointing out that he babysat everyone all day and didn’t give them the opportunity to find an in. Michael then joined the fray, pointing out that Chelsea and Sebastien were definitely on the bottom before Brendan jumped in and asked Sebastien if he truly believed jerk Bradley would take him, a likeable, strong, provider further in the game. While Bradley gave a robot we are equal, beep boop response, Stephanie quickly jumped in and questioned his sincerity. Sadly Kellyn quickly pointed out that they are at war so should be expecting them to try and sling mud.

Probsty tried to get Des’ opinion before Michael jumped in and presented his idol, telling the story that since James left with two in his pocket, this one now had the power to protect two people and he would be playing it tonight while Malolo would be voting Bradley. Feeling the heat Bradley returned to his favourite pastime and complained about his bad luck at them incorrectly identifying him as a mastermind. Probst and Michael then continued to prod Chelsea and Sebastien about making a big move and taking out Bradley, while old sour face got more and more anxious. Bless Kellyn, she tried as hard as she could to diffuse the situation while Michael proved that kids are hella manipulative these days.

Michael then played his idol, first for he and Brendan before reading the room and switching to Stephanie. Tragically that was the wrong move as old Naviti stuck together – probably shouldn’t have told them Bradley would go if the idol play was correct – and piled their votes on Brendan, sending my zaddy out of the game as the fourth boot.

Now I don’t want to sound like a conspiracy theorist here, but it seems like oldies are all falling on reality TV shows this week, with Erin and now Brendan – similar to the double Morgan boots last week. I mean sure they both filmed at different times, but between that and my recent birthday I am really feeling the ageism at the mo, you know?

Anyway … Brendan is literally the sweetest man to walk the earth so wasn’t flipping out when he arrived at Loser Lodge. Which was kind of good because I was ropeable and if he didn’t talk me down I’d likely be banned from ever going to Fiji again. While it took me a while to calm down and I eventually got him to show some signs of disappointment, they disappeared immediately when he lay eyes on my Brendan Shapear and Prosciutto Pizza.

Sweet, earthy and salty, this pizza is so simple, yet do good. And better yet, looks hella impressive with absolutely no effort. None. Nada.

Enjoy!

Brendan Shapear and Prosciutto Pizza
Serves: 1 zaddy and his friends.

Ingredients
2 bases as per Pizsa Zsa Gabor
⅓ cup passata
oregano and basil, roughly chopped, to taste
200g prosciutto, thinly sliced
2 pears, halved, cored and thinly sliced
2 tsp muscovado sugar
salt and pepper, to taste
1 cup mozzarella cheese, grated
balsamic vinegar, to taste

Method
Prep the bases as per Zsa Zsa’s instructions.

Preheat oven to 180°C.

Smear the bases with passata, sprinkle over the herbs and drape over the prosciutto. Toss the pears with the muscovado and place on top of the bases. Season with salt and pepper, sprinkle over the cheese and bake for twenty minutes or until golden and crisp.

Remove from the oven, lightly drizzle with balsamic vinegar and devour, in a melancholic fashion. Think how island hot Brendan would have been.

Engelbert Hummingbirdinck Cake

Baking, Cake, Dessert, Snack, Sweets

After the debacle of catching up with my frenemy, the worst winner of Drag Race and – my honest opinion only – all around garbage person Tyra Sanchez, it was so nice to spend time with my kind friend Engelbert Humperdinck.

Kind, warm, funny, charming and best of all, kind and open with his fans … friend.

Unlike Tyra.

Anyway, I first met the Dinck and his – well, you know – back in the ‘60s when he was still getting his career off the ground. My dear friend Tom Jones’ manager was his former roommate and one night while we were out partying, we decided his name was holding him back. Ten minutes later Engelbert was born and Arnold was no more.

With that, I earned his complete and unequivocal trust, shaping his career ever since. Well until yesterday, when he tragically declined my offer to coach him to another Eurovision berth. Which no doubt would have been more successful.

While I was upset he didn’t trust me, I respect his wishes like a friend – unlike say, Tyra would – and we instead focused on reconnecting and havin’ a laff. Though that is kind of the go to reaction to splitting an Engelbert Hummingbirdinck Cake between two best friends.

Moist, sweet and perfectly spiced, hummingbird cake is like a carrot cake on crack. In all the right ways. Add in some cream cheese icing and my shorts are creamed, culinarily speaking obvi.

Enjoy!

Engelbert Hummingbirdinck Cake
Serves: 12.

Ingredients
1 ½ cups flour
1 tsp baking powder
½ tsp baking soda
2 tsp ground cinnamon
½ tsp ground ginger
pinch of nutmeg
1 cup, muscovado sugar
½ cup desiccated coconut
½ cup walnuts, roughly chopped, plus extra to garnish
2 ripe bananas, mashed
450g crushed pineapple (in juice), drained with juice reserved
2 eggs, lightly whisked
¾ cup sunflower oil, plus extra to grease
250g cream cheese, at room temperature
3 cups icing sugar mixture

Method
Preheat oven to 160°C and grease 2 x 25cm cake tins.

Sift together the flour, baking powder and soda, and spices in a large bowl. Fold through the muscovado sugar, coconut and walnuts. In another bowl, combine the banana, pineapple, eggs, oil and ⅓ of the pineapple juice. While stirring pour the wet ingredients into the dry, and continue to fold until just combined.

Divide the mixture between the lined tins, transfer to the oven and bake for 40 minutes, checking after half an hour. You want it golden brown on the outside and an inserted skewer to just come out clean. Allow to cool for five minutes before transferring to a wire rack to cool completely.

While the cakes are cooling, beat the cream cheese and icing sugar until it is light, fluffy and just combined. Don’t overbeat as the icing will become too soft.

To assemble, smear a third of the icing on top of one of the cakes. Top with the second cake, and smear the rest of the icing on top and around the edges. Press the remaining walnuts into the icing and transfer to the fridge to set for an hour or so, removing ten minutes before serving … and devouring.

Grantbola

Baking, Breakfast, Vegetarian

Now don’t get me wrong, I love me some Hollywood. I mean, my relationships with the A-list of it inspired this patch of cyberspace … but sometimes it is nice just to hang out with a fellow Australian. And by that, Kiwi we adopted as our own after they became a success.

I first met Granty while working together on Blue Heelers in the ‘90s. You see, I created and wrote for the show, inspired by my experiences in the town of Mt Thomas in the ‘80s. Crime was so rife – 99% of them committed by me – that I knew it would make Aussie TV gold, and a legend was born.

But back to Grant. Grant walked in to audition and I instantly knew that he was the Wayne I had dreamed about and the rest, as I oft say, is history.

Grant was so grateful to me for giving him his big break that he pledged undying allegiance to me and begged me to guide his career. Given he worked on True Blood with Anna and Al, Ugly Betty with Alan Dale, I think you’d agree that my influence truly helped.

No shade to his talent though, obvi.

It was such a delight to hang out together, laugh about the good ol’ days with Sacky, McCune and Johnny Woods, reflect on the tragedy that was the latter seasons of True Blood – minus Skarsy’s peen shot – and devour some nourishing Grantbola for the day ahead.

Did I not mention we’re both morning people and work out together? We’re sickeningly cute bestos. Inspired by Sarah Wilson’s coconut-nut granola but made infinitely better thanks to the inclusion of fruits and other things you can’t eat after quitting sugar, this is the only granola you want in your life.

Enjoy!

Grantbola
Serves: 12-ish. Maybe? A soft maybe. I’m not sure, let’s call a shit-tonne and be done.

Ingredients
¼ cup coconut oil
3 cups coconut flakes
½ cup almonds, roughly chopped
½ cup cashews, roughly chopped
½ cup walnuts, roughly chopped
½ cup macadamias, roughly chopped
2 cups rolled oats
1 tbsp vanilla extract
2 tsp cinnamon
pinch of nutmeg
2 tbsp muscovado sugar
½ cup apple puree
½ cup craisins

Method
Preheat oven to 120°C.

Combine everything but the craisins in a large bowl until everything is coated and combined.

Spread across two lined baking sheets and cook for 10 minutes, toss, and cook for a further 10 or so, or until golden. Remove, toss through the craisins and allow to cool completely.

Store in an airtight container for up to two weeks, devouring daily with yoghurt, fresh berries and, if you want to upset Sarah further, some Mahersharaspberry Coulis.

Apple Libertea Cake Netuschil

America's Next Top Model, America's Next Top Model 24, Dessert, Snack, Sweets, TV Recap

Previously on America’s Next Top Model, the models made viral videos before turning all deli-like and serving up beauty sandwiches. Yes, beautiful sandwiches aka three heads smooshed together, where Rio shone as her attitude got dark about wicked Sandra being beautiful, Christina’s attitude stayed the same and Coura continued to coast … floating right out of the competition.

On the way home from panel, Shanice and Brendi K threw some shade at Christina, asking whether Coura should have stayed over her … and if being rude to the judges is what she is going for. Allegedly she isn’t rude and, I guess in her defense, she didn’t fight back when Brendi K continued to decimate her verbally, so she can hold it back occasionally.

Back at the house Rio continued to rub me the wrong way, using her best photo to slam the ‘pretty girl’ and vowed not to compare herself to others, while comparing herself to others.

That confusion was interrupted by Tyra-mail where she announced it was Pride Week, filling Kyla with joy at the prospect of doing drag. On the flipside, Liberty was scared since she hasn’t met any game people. Brendi K then came out as bi, yet Shanice still won the scene proclaiming her love of cock. I mean, we have so much in common, how can I not love her?

The models then rolled into WeHo where Erin taught the children some acronyms, Liberty was still not sure what to expect given her town views homosexuality as an ailment and my basement started flooding from some questionably pantied dancers. They rolled into Mickey’s to meet Drew, Law and Stacey for a pop-up runway, doing everything themselves – selecting outfits, hair, makeup … models better work. The winner automatically wins a place in Christian Cowan’s show at NYFW, so it was worth it.

After some more gratuitous nudity, the models took to the runway where Jeana killed and Liberty looked like she doesn’t understand what homosexuality is given how she tried to work the crowd. Brendi K bombed despite it being her community, Rio owned the stage, Khrystyana was serving Katya’s-mother-to-Katya-realness and will be robbed if she loses, Christina did ok, Shanice killed it giving pimp-realness and then Erin slayed while serving her cakes. After poor Brendi K broke down over letting the community down, Jeana, Erin and Khrystyana were praised as the best performers … before the latter rightfully won her place at NYFW.

Tyra-mail arrived announcing a royal photoshoot which got everyone pumped for drag queens, before Liberty fully lost me with her anti-feminist ways. I mean, seriously? Christina decided to try and work through some of her issues with the girls, joining the models in the spa to share some of herself and apologise to Brendi K. She then corrected Brendi K’s misuse of a word – which I was totally doing myself – before the conversation abruptly ended. That night, Erin went into full mum mode, going to Christina and given full-blown I’m not mad, I’m disappointed realness.

The next day, the girls were joined by Manila Luzon, Katya and Valentina, who would be the queens to their princesses. Can they join the competition permanently, please? Rio got paired with Valentina – who let’s be honest, was looking all Princess Disastah – and gave an ok performance … before the queens descended on Liberty. After being threatened to be burnt and rolled down a hill, she tried not to let Katya destroy her … but she was. Khrystyana slayed while working with Katya, who could be her sister. Kyla was way too excited to be paired with Manila, bumbling her way through the shoot. Shanice murdered Valentina, I wish Erin and Manila could adopt me, Jeana also killed Valentina, as did Sandra. Are you sensing a pattern? Manila then worked to stir the pot, with Christina still unable to see that she was the most consistent aspect of each feud. Tragically Christina got Katya, who would have chemistry with a steaming turd, while Brendi struggled to get a shot with Manila.

Brendi K and Kyla were questioning their performances as the models arrived at panel. Christina’s picture channeled her grumpiness in a good way, Shanice dominated Valentina, Khrystyana was gorgeous, Brendi was boring in beige, Jeana was brought down by Valentina, Erin slayed, Sandra was pretty, Liberty was awkward, Rio schooled Valentina in a Mills & Boon-esque shot and Kyla was a hot mess.

At the risk of sounding like a broken record, Khrystyana rightfully snatched the best-photo-crown, before Liberty landed herself in the bottom with Kyla before exiting the competition, I assume, to make America great again. While I appreciate the irony of her getting the boot during Pride Week, Liberty has been nailing the competition so it was a shock to see her going home. Thankfully Apple Libertea Cake Netuschil is hella delicious, so it dulled the pain of any feelings of wrongful bootage.

Like this quote-unquote all American girl, this tea cake feels as wholesome and delicious as apple pie. Through thankfully the verjuice and cinnamon provides a kick, like a fire crotch that runs into Libs in the street and takes issue to the term fire crotch.

Enjoy!

Apple Libertea Cake Netuschil
Serves: 6-8 people thinking they’re making America great again because they own a cap that says so.

Ingredients
5 Granny Smith apples, peeled and sliced
⅓ cup Verjuice
¾ cup muscovado sugar
¾ cup unsalted butter, softened
1 tbsp vanilla extract
2 eggs
2 ½ cups flour
1 ½ tbsp baking powder
2 tsp ground cinnamon
¾ cup milk
icing sugar, to serve
ice cream, to serve

Method
Grease a 20cm springform cake pan and preheat the oven to 160°C.

Place the apples and verjuice in a medium saucepan and cook with a pinch of muscovado sugar and cinnamon for about half an hour, or until just soft and smelling deliciously caramelly and spiced. Remove from the heat and allow to cool.

Meanwhile, cream the butter, sugar and vanilla in the bowl of an electric mixer on medium, or until so fluffy it looks to be pulsating. Add the eggs, one at a time, beating well after each addition. Remove from the mixer and fold through the flour, cinnamon and milk until just combined. Cakes and pastry are all about the just, ok?

Spoon half the mix into the greased pan, top with flagrantly caramel apples, and spoon over the remaining batter to enclose. Transfer to the oven and bake for an hour or so, or until golden on top and cooked through. Transfer to a cooling rack to cool.

Serve with a sprinkle of icing sugar and a huge-ass dollop of ice cream. Because, obviously.

Turkey Tom Westyum

Main, Poultry, Soup, Survivor, Survivor: Heroes vs. Villains, Survivor: Palau

So I’m going to start by going a little off topic, which is so on brand for me that I really shouldn’t have had to say anything. Anyway I was already hitting peak excitement for Survivor’s return in less than three weeks, particularly given I got to reconnect with my dear friend Tom Westman today … and then I started listening to Josh Wigler’s First One Out, and now I’m surprised I haven’t had an aneurysm in anticipation.

Anyway … if you love Survivor, listen to it. If not, ignore the above par and continue on.

I’ve known Tom for years, meeting not long after 9-11. I was starting to fetishise all first responders following their bravery during the attacks, and was working my way through the ladder companies to find me a mans. While Tom ultimately wasn’t won over by my charm and sexuality, he did grow to love me and guided me like a big brother.

As is oft the case, he failed at turning me into a decent person but for some reason, never gave up on me. I repaid the favour by getting him cast on Palau … which earned him a mill, so technically I was a good investment. Fun fact: if he had made it farther on Heroes vs. Villains, I would have been his loved one visit.

Like me, he is hella excited for the new season and hopes that the cursed Stephenie LaGrossa doesn’t have to spend the entire time on Ghost Island, and can at least enjoy some tropical delights while sucking the life – literally – out of one of the tribes.

Was it a kind of dark way for our conversation to go? Sure. But when it comes with a side of Turkey Tom Westyum, how can you be mad?

Spicy, fresh and healthy – for the sole reason that turkey is healthy, duh – this tom yum, is the tom yum to beat all tom yums. Sorry Tom Yum Everett Scott, this is a winner.

Have I mentioned, tom yum? Enjoy!

Turkey Tom Westyum
Serves: 4.

Ingredients
500g turkey mince
3 garlic cloves, minced
1 lime, zested and juiced
1 tsp ground ginger
handful of fresh coriander leaves, roughly chopped
vegetable oil
1 bunch of shallots, trimmed and sliced
1 tbsp tom yum paste
1L chicken stock
4 kaffir lime leaves
2 birdseye chillies, halved
1 tsp muscovado sugar
1 tbsp fish sauce
salt and pepper

Method
Combine the turkey mince in a bowl with a clove of garlic, lime zest, ginger and a tablespoon of chopped coriander. Form into balls and place on a lined baking sheet in the fridge to semi-set.

Heat a lug of oil in a large deep frying pan and cook the shallots and remaining garlic for a minute or so. Add the tom yum paste and cook for a further minute. Stir in the stock, lime leaves and chilli and bring to the boil. Reduce heat to low, gently place the balls in and simmer for fifteen minutes.

Stir through the sugar, lime juice, fish sauce, remaining coriander leaves and a good whack of salt and pepper. Serve immediately and devour, piping hot.

Rhiyan Carrackers

America's Next Top Model, America's Next Top Model 24, Baking, Side, Snack

Previously on America’s Next Top Model, Liz and Rhiyan spent the episode having emotional breakdowns, with Liz struggling with life in the house and Rhiyan dealing with issues left over from her childhood. That led to her struggling at the photoshoot, as did Coura and Sandra. Liz however didn’t struggle with the shoot, however walked out of the competition due to the drama inside the house.

The remaining girls arrived at panel to discover than Liz had not just left to go sleep elsewhere, instead quitting the competition. While a quit generally mean everyone gets a reprieve, Tyra and Co. were there to inform them that they had no lucky stars to count as they still planned to eliminate someone at panel.

Shanice was first up, praised firstly for her improved attitude. And her ability to ad-lib in the acting challenge. And then for her killer photo, which also featured her new attitude. Poor Sandra’s wig owned the photo, Khrystyana was universally adored … even when trying to learn to say bitch.

Rhiyan shared that she was feeling like the other girls were overtaking her, and the judges felt the photo showed it. Rio looked amazing, Liberty was beautiful, Jeana was NLF – next level fierce, obvi – Erin’s flexibility was praised, Christina looked scary-amazing, Brendi K looked amazing and Kyla looked like she was waiting to be killed but was hella determined to look gorgeous.

Coura then kicked things off by announcing how scared she was during the shoot. Law and Drew smelt that blood in the water, immediately going in and tearing the photo apart.

My girl Khrystyana snatched best photo away from Jeana and Christina, before Coura and Rhiyan found themselves in the bottom two. While Rhiyan arguably had the better photo, Coura had more potential overall, sending Rhiyan out of the competition.

Poor Rhi – she seemed to be doing really well, but seemed to never be able to recover from her hair extensions. Thankfully Rhiyan Carrackers cure all that ails you.

At the risk of sounding like a moron, I didn’t realise that the water part of water crackers where highlighting that water crackers were essentially made of water. Water. I slotted that away in the back of my mind, and instead focussed on how delicious these little crackers are. Lightly spiced and perfectly fragile, they’re perfect for scoping up any ol’ dip.

Enjoy!

Rhiyan Carrackers
Serves: 6-8.

Ingredients
3 cups flour
1 tbsp muscovado sugar
1 ½ tbsp kosher salt
1 tsp freshly cracked black pepper
¼ cup olive oil
1 cup water

Method

Preheat oven to 225°C.

Combine the flour, sugar, salt and pepper in the bowl of a stand mixer and make a well in the centre. Add the oil and water, and stir with the dough hook until everything is wet. Transfer to said stand mixer, and mix with the dough hook for five minutes or so, or until coming together. The dough should be soft and sticky, so either add more flour or water, bit by bit, until you get the desired consistency.

Split the dough in two, and set one half aside.

Sprinkle some flour on a bench and roll the dough into a large 2-3mm thick rectangle. Cut the dough into cracker sized pieces with a sharp knife and place on a lined baking sheet. Prick the tops with a fork. Repeat the process with the remaining dough.

Transfer the baking sheets to the oven and bake for 10-15 minutes, or until they’re just starting to brown around the edges. Place them on a wire cooling rack and allow to cool completely, which will help make them crackier. Then devour, preferably with some Ivana Hummus.

Rice Kheer Smith

Dawson's Creek 20th Anniversary, Dessert, Snack, Sweets

I bet you thought, how do you top spending time with Dawson himselfJVDB, obvi – as part of the Dawson’s Creek 20th Anniversary celebration? And not just Dawson – yes, here it comes – but Josh, Katie and Mezzy-B too. The answer, obvi, is the man that first awakened my sexuality on screen Kerr Smith.

While obviously Josh Jacks had well and truly awakened my sexuality by the time Kerr arrived on the set, the character of Jack McPhee – and him posing naked for Joey’s painting – showed me that homosexuality was a thing. And daaaaaaamn boy, paint me like one of your French girls.

Fun fact: seeing that painting scene inspired me to travel back and journey on the Titantic, lure a pleb into a romance and get him to draw me wearing only a locket. Sure he could have fit on the door with me when I was clinging to life, but I wasn’t ready to make that sort of commitment just yet. Anyway, it inspired the movie Titanic and that is why Jack didn’t get on the door.

End. Of. Story.

Anyway, we became the best of friends on set and while it never became romantic between us, his responsibility as a straight white man playing an LGBT character made him feel like he needed to support me out of the closest. He truly is, a sweetheart.

I haven’t seen Kerr in a couple of years so was pleasantly surprised when he sauntered through the arrivals AND COMPLETELY TRANSFORMED INTO A ZADDY. After fainting in his arms, I pulled myself together and got to work celebrating his masterful work as Jack and slurping up a big bowl of Rice Kheer Smith.

Is this just a gussied up rice pudding? Sure. Is it also just fucking delicious? Of course. Lightly spiced, delicately sweet and now requirement for teeth. It is, truly, perfection.

Enjoy!

Rice Kheer Smith
Serves: 4.

Ingredients
3 cups milk
½ cup rice, rinsed and drained
½ cup muscovado sugar
4 cardamom pods
¼ cup raisins
1 tsp ground cinnamon
slivered almonds, to garnish

Method
Place the milk and rice in a medium saucepan and bring to the boil. Reduce heat to low, add the cardamom pods and simmer for about 15-20 minutes, or until the rice is cooked through and the milk is starting to thicken.

Add the sugar, raisins and cinnamon, and cook until the sugar has dissolved and everything is well incorporated.

Remove the cardamom pods and serve, or refrigerate until cold. I, personally, prefer it cold … but you can devour straight away if you prefer. With almonds scattered atop, obvi.

Joshua Flapjackson

Baking, Dawson's Creek 20th Anniversary, Dessert, Snack, Sweets

Kicking off my Capeside celebrations is a huge honour that required a big name, and while Mich is arguably the biggest star of the bunch and the show was literally named after JVDB’s character, I couldn’t go past bequeathing said honour to my oldest friend Josh Jackson.

As you should probably guess, I first met Josh in the early ‘90s while working together on The Mighty Ducks. As a champion figure skater slash coach – I trained Tonya Harding, have I mentioned that – and ameteur street fighter, Disney hired me to train the cast to skate and effectively smoosh people into the glass during hockey.

While Josh wasn’t violent enough for my tastes, he was an expert skater and had the acting chops of a young Daniel Day Lewis. So you know what that means … I took him firmly under my duck wing and vowed to make him a star.

Between headlining a franchise, starring opposite soon-to-be Oscar nominee Laurie Metcalf in Scream 2 and playing me in Cruel Intentions, I think I succeeded. And that is without even bringing Dawson’s into the equation.

Given how busy Josh has been with The Affair of late, we haven’t been able to see much of each other. Which is obviously equally heartbreaking for both of us. As such, it was such a delight to spend time with my bestest of best friends again and celebrate one of his sexiest characters – emphasis on one of – Pacey Witter. I mean, be still my throbbing …

We laughed, we cried, we reminisced and most importantly, devoured an entire batch of his favourite treat – my Joshua Flapjackson.

Sticky, sweet and a little bit earthy, this bars are the perfect pick-me-up snack when you’re struggling your way through life. I mean for you, obvi, I’m blessed with a wonderful life on the A-list.

Enjoy!

Joshua Flapjackson
Makes: 16.

Ingredients
150g butter
175g golden syrup
150g muscovado sugar
350g quick cooking oats
1 tsp ground cinnamon
pinch ground ginger
pinch nutmeg

Method
Preheat oven to 150C.

Combine the butter, golden syrup and muscovado sugar in a saucepan over medium heat and cook until the sugar has dissolved and everything is well combined.

Place the oats in a large bowl with the cinnamon, ginger and nutmeg, and stir to combine. Fold through the buttery syrup until everything is sopping. Transfer to a lined square baking dish, packing it in nice and tightly – like Josh in my fantasies – and transfer to the oven to bake for 45 minutes.

Remove from the oven and allow to cool in the pan for ten minutes or so before turning out on a wire rack to cool completely before cutting into squares.

Then you can devour.

Nannaimurphy Bar

All up in Schitt's Creek Week, Dessert, Snack, Sweets

After a glorious week attending the powerful Golden Globeswith future President Winf- on a table in the front row – and spending time with Eugene, Cath, Em and Dan honouring the triumphant return of Schitt’s Creek, we’ve tragically come to the end of the celebration. And I am so thankful it is with the perennially delightful and delightfully snarky Annie Murphy.

Despite appearing with my friends Mish and Corbs in the TBL pilot, I didn’t connect with Ans until she appeared in an episode of Blue Mountain State. I was part of Denise Richards’ entourage of the time but was quickly taken by her spunky attitude and became the best of friends.

When it came time for Eug and Dan to cast the show, I immediately got Annie on the phone and said – in my best Moira voice – “you simply just have to audition, my dear. It is the role you were born to play!”

I think it goes without saying that I was completely right. Though really, that goes without saying as I’m always right. Just ask my husband!

Like the four that came before her, it was such a treat to get some qual time with my girl – plotting potential ways I could join the cast, laughing about TBL and smashing a tray of my Nannaimurphy Bars.

A little bit custard, a bit choc and co(conut) – this Canadian classic is near perfection. Sweet, earthy and velvety smooth, I would smear it all over my body if Allez-Vous said it would work.

Enjoy!

Nannaimurphy Bar
Makes: 16 squares.

Ingredients
250g unsalted butter, plus 2 tablespoons for the topping
⅓ cup cocoa powder
¼ cup muscovado sugar
1 ¾ cups Lauren Graham Cracker crumbs
1 cup shredded coconut
¼ cup almonds, finely choppedThis Hour Has 22 Minutes
¼ cup walnuts, finely chopped
¼ cup double cream
2 tbsp vanilla custard powder
2 cups icing sugar
2 tsp vanilla
150g milk chocolate

Method
Bring a small saucepan of water to boil over high heat. Place half the butter, the cocoa and muscovado sugar in a large heatproof bowl and heat over the bubbling water until the butter has melted and the mixture is nice and smooth. Obviously if you have a double boiler, use that, bit I’ve never seen one. So, yeah.

Remove from the heat and fold through the graham crackers, coconut, almonds and walnuts until well combined. Press into a lined square baking dish until firmly packet and smooth. Transfer to the fridge to chill while you work on the filling.

Place the remaining butter – sans the 2 tbsp, obvi – in the bowl of a stand mixer with the cream, custard powder, vanilla and icing sugar, and beat on medium until smooth and fluffy. Dare I say it, hella fluffy even. Smooth it over the base and return to the fridge to set.

Get the old poor-man’s double boiler going again – after cleaning it, of course – and melt the chocolate and butter together until well combined. Remove from the heat and allow to cool for about five minutes before pouring over the slice.

Return to the fridge and chill for a couple of hours.

When it is good to go, slice with a warmed knife and promptly devour.
