Domenicken Liver Abpâté

Condiment, Dip, Party Food, Side, Snack, Survivor, Survivor: Ghost Island, TV Recap

After being technically booted from the game – and being whisked out of time to join me for a date – Laurel grabbed the urn and walked up to cast the sole remaining vote for the winner. Which lead to Probst opting not to read that vote and instead take it back to the US to pick the winner … meaning Laurel truly, finally got to make a game changing decision.

Just not the one she was really aiming for. Though it was definitely the one she deserved.

With that, Probst moved his hand deep inside Tony and Woo’s urn and pulled out Laurel’s vote which crowned Wendell the Survivor: Ghost Island sole survivor and left Dom to realise his fears had come true by not facing him in a fire challenge.

New curse to reverse though? So, that’s something.

Anyway, Dom played a killer game and despite making the bone-headed move to call out Chris’ day one decision and instantly started a feud, he managed to make a solid relationship with Wendell and they complimented each other perfectly to get to the end.

But buddying up with Wendell wasn’t his only move, his ability to make friends with literally everyone – except Chris – is the reason none of the moves ever came to fruition this season, as either Kellyn, Laurel or Angela would tell him – oft knowing it was against their best interests – and he would be able to avoid the boot or even needed to play his idols.

As such – and I’m not just saying it because it finished in a tie – he truly is the best to never win (behind Cirie, obvi). And because of that, I gladly pulled out a big fat Domenicken Liver Abpâté to dull the pain of just missing out on victory.

Pâté is something I have loved my entire life, until I discovered it was made from livers when I was ten and I couldn’t bring myself to eat it for six horrible years. Which I regret as much as Dom regrets not trying to get rid of Wendell on day 38. Rich and earthy, it is the perfect accompaniment to your pain, wine and a big old sourdough baguette. Oh – and I obvi just adapted this recipe, because who the hell can just trial-and-error with livers.

Enjoy!

Domenicken Liver Abpâté
Serves: 6-8.

Ingredients
2 tbsp currants
100ml verjuice
1 ½ tbsp water
⅔ cup port wine
2 tsp sugar
1 tsp gelatin
pinch of allspice
100g unsalted butter
1 onion, diced
5 cloves garlic, minced
500g chicken livers, trimmed
2 sprigs of fresh rosemary, roughly chopped
3 thyme sprigs, leaves only
salt and pepper, to taste

Method
Soak currants in verjuice overnight.

Combine the water and half the port in a small bowl and dissolve the gelatin in it for five minutes. Bring the remaining port to a light simmer in a small pan with the sugar and allspice. Add the softened gelatin, cook until well combined and remove from the heat to cool completely.

Melt 100g of butter in a pan over low heat and cook the cook the onion and garlic for a about ten minutes, or until translucent and sweet. Add the livers, rosemary and thyme to the pan with a good whack of salt and pepper, and cook for a couple of minutes or until just cooked. Like, still pink in the middle just. Add the verjuice and currants and cook for a further minute.

Transfer everything to the food processor and blitz until completely smooth. Pack into a container and gently pour the cooled jelly over the top of the pâté and leave to set.

Once set, devour with a baguette and forget they’re livers.

Jenna Baoman

Dessert, Snack, Survivor, Survivor: Ghost Island, Sweets, TV Recap

Previously on Survivor, Des finally decided to bring some excitement post the Chris v. Domenick feud and approached the Malolos about taking out one of the bigger threats. Sadly for her, Laurel and Donathan had been doing a good job of keeping their alliance with said big threats a secret so took the plan straight back to them. That in turn led the champion of Naviti Strong – I assume a sequel to Country Strong – Kellyn to join them in turning on her and sending Des out of the game and straight to the jury.

Lavita returned to camp where Dom was thankful to still be in the game thanks to Laurel’s loyalty. Given the fact she saved not only him, but Kellyn and Wendell too, Laurel finally felt that the had a hold on the game. Sadly Kellyn pointed out that OG Naviti still had the numbers and as such, #NavitiStrong.

The next day Sebastian returned to our screens to briefly talk about upping the food intake before Wendell and Domenick stole the show to talk about sticking together no matter what. Well, that is Wendell was feeling while Dom was willing to get rid of him and his secret allies Laurel and Donathan. To further solidify his power in the game, Dom went for a walk to see if yet another idol had been hidden. Which he obviously found. However tragically for him, it was David’s fake idol that screwed Jay – #Justice4Jay – in the generation battle and unlike Ozzy’s stick, it didn’t glow up. Instead, the advantage was a beautifully designed fake idol that could be used to dupe someone into embarrassing themselves. Again. Which Dom was obviously confident he’d be able to do.

With the excitement of the shady non-idol out of the way, my boy Probst returned for this week’s rewa … wa, wa, what? The immunity challenge? Already? In any event, they’d be required to hold a bar up and keep a ball balanced between the contraption and a beam. Sounds simple … but that is NOT all. This week there will be two immunity winners and two people will be going home AT SEPERATE TRIBAL COUNCILS. The remaining players selected either orange or purple to form temporary tribes which would go to individual tribals and vote out a person each. Poor Michael seemed screwed on the orange team with Kellyn, Wendell, Laurel and Domenick while I dunno, Angela is screwed with lovers Sebastian and Jenna, and Chelsea and Donathan?

Kellyn quickly dropped the ball, literally, followed by Mich-angel leaving Wendell, Dom and Laurel to fight it out for the orange temp tribe. Donathan was the first purple out, followed by Laurel leaving Wendell and Dom to battle it out for orange immunity. Sebastian and Jenna soon dropped leaving Angela and Chelsea to snatch purple immunity. Despite Chelsea almost dropped it, Angela’s ball slipped out of nowhere and handed Chelsea immunity. Sadly for her group, she couldn’t hold on any longer meaning they’d be the first ones attended tribal. Wendell and Dom then brought their smacktalk game while struggling to hold on before Wendell just gave up and handed Domenick the second individual immunity.

Back at camp the two groups broke off and commenced scrambling with Domenick quickly deciding to lock in a vote for Michael. Meanwhile Michael, knowing full well he was royally screwed, approached Donathan to ask him whether he could borrow it for an hour to convince everyone it was his and deflect the target on to someone else. Donathan gave a firm no however, knowing it could come back to bite him breaking both mine and Michael’s heart. Michael then approached Kellyn and tried to feed her the simple lie that he has an idol. While she bought everything he was selling, she was concerned and hoped to put the target on to Laurel as a back-up. On the flipside, Domenick was not concerned when Kellyn brought the information back to him and vowed to get Michael out.

Clearly still concerned Kellyn went to Chelsea and Wendell to talk it through and hopefully convince Wendell to join her in sacrificing Laurel instead. Wendell took said information to Laurel who agreed Michael was acting like he had something up his sleeve, or had simply given up. Knowing full well that Kellyn was willing to flip on her, Laurel decided she would rather vote for Kellyn instead to ensure her safety. Sadly for her, Kellyn was planning to use her second vote and load them up on Laurel to ensure her safety.

The other group were decidedly less intense with Sebastian, Chelsea and Angela keen to stick with Naviti and take out Sebastian’s girlfriend Jenna while telling her they’re targeting Donathan. Jenna was feeling nervous, so approached Sebastian and Chelsea to confirm they’re voting for Donathan … and then went and told Donathan that they told her they’re voting her out. Confusing no? Wanting to try and turn the tables, Donathan then considered playing his idol on Jenna while she was working to turn the vote on him while lying that she was targeting Sebastian. To complicate things, Laurel approached Donathan with her concerns that Dom and Wendell wouldn’t turn on Kellyn and it would end up in her going out … unless she had his idol.

We arrived at the first tribal with me completely confused about what is going to happen. Donathan echoed my sentiments before Sebastian confirmed that someone from Malolo would definitely be leaving this group tonight. Jenna was quick to pretend she was going home and just wanted to vote already and get it over with. That upset Sebastian and made Donathan feel a little bit concerned about his place, and I assume, reconsider playing his idol for her. Jenna continued to talk about herself being the target, leading Probst to put a hold on the questions and get to the vote. Picking up on everyone’s shiftiness, Donathan decided to make the smart move and played his ScotJasonTai idol on himself negating the one vote against him and sending Jenna from the game BY HER BOYFRIEND.

Given the Sebastian’s ultimate betrayal and the fact Probst sent her straight to the jury, instead of doing the walk of shame, Jenna was feeling pretty upset by the time she made it into my arms in Ponderosa. Thankfully the fact that I banned [redacted] from entering Ponderosa until we had finished our feast seemed to cheer her up pretty quickly. Though I have a sneaking suspicion my Jenna Baoman may have helped.

Now I know what you’re thinking – didn’t I see some sweet looking things in the cover image of this here ‘story’? A) the use of inverted commas is shady, which I love, but also hurtful and b) this is my attempt at a dessert bao. And while it may not look impressive, the flavour sure as hell is! Chocolate and (peanut butter and) vanilla (ice cream), swirl … swirled together on a caramelly bun? Poifection.

Enjoy!

Jenna Baoman
Serves: 16.

Ingredients
7g yeast
160ml lukewarm water
250g flour
3 tbsp muscovado sugar
1 tsp salt
2 tablespoons oil
¼ tsp baking powder
¾ cup double cream
100g milk chocolate
100g crunchy peanut butter
3 tbsp golden syrup
Vanilla Ice Cream
salted peanuts, roughly chopped to garnish

Method
Combine yeast, ¼ cup water, ¼ cup flour and 2 tablespoons of muscovado sugar in a jug and allow to rest until foamy and glorious, or about ten minutes. Once foamy, combine the yeast mixture in the bowl of a large stand mixer with the remaining water, flour and sugar and salt and oil. Knead using a dough hook for about five minutes, or until smooth and elastic. Transfer to an oiled bowl and allow to prove in a warm area for a couple of hours.

Once the dough has doubled, remove it from the bowl and place on a floured surface. Flatten out, sprinkle with baking powder and knead by hand for five minutes or so,or until well combined. Roll the dough into a long dough and cut into 16 pieces, placing them on a lined baking tray to rest for ten minutes or so, or until puffed. Once they’re glorious, steam for about 8 minutes or until they’re cooked through.

While the buns are provin’ and steamin’, combine the cream, chocolate, peanut butter and golden syrup in a saucepan and cook over low heat until melted, combined and thick.

To serve, split the buns – my favourite pastime, FYI Michael – place a teaspoon of peanut fudge sauce on the bottom, followed by a scoop of ice cream, more fudge and freshly chopped nuts. Then, obvi, devour.

Hulk Hogies

Baking, Bread

Given my passion for men in tight clothes or lycra, men holding each other in a homoerotic fashion and my undying love or sports, it should come as no shock that I am highly involved in the wrestling industry. And as such, am a dear friend of Hulk Hogan.

I’ve been trying to get Hulk out to visit since this anthropological patch of cyberspace began, but our busy schedules have always been working against us. Thankfully that all changed this week.

“Ben, my little hulkamaniac. I’ve got this weekend clear, you free to catch-up and hulk smash some food.”

While I feared he was succumbing to the ravages of old age, I was pleased to discover he was only referencing the release of Infinity War and making a hulk joke rather than confusing his catch-phrases with that of the big green guy.

Anywho, I’ve known Hulk forever and was closely involved with making him the star he is today. You see, I spent months lusting after him at the gym and eventual grew to notice he had other talents. Like his talent for clothed wrestling. I called the Brisco Brothers – who I worked with to bring the sex appeal to wrestling – and got him a spot at Hiro Matsuda’s gym. Bada bing, bada boom – he became and star, and us, the best of friends.

For years and years we’ve been catching up, plotting how to reinvigorate his career – damn, that is this week’s theme, no? – and share a deliciously carby cheat meal together. As such, I knew I couldn’t go past devouring some Hulk Hogies together on our date.

You know I have a passion for smashing warm buns against my face, but this would have to be one of my favourites. Well, when it comes to food at the very least. Soft and pillowy, this babies are the perfect bun for all occasions. And you know I mean all.

Enjoy!

Hulk Hogies
Makes: 8.

Ingredients
7g active dry yeast
1 ½ cups warm (30-40C) water
1 tbsp raw caster sugar
4 cups flour
1 1 /2 tsp kosher salt
2 tbsp vegetable oil

Method
Mix the yeast in a jug with half the water and sugar and leave to foam in a warm place for five to ten minutes.

Combine the flour, remaining sugar and salt in the bowl a stand mixer and slowly stir through the foamy mixture, remaining water and vegetable oil until everything is wet. Pop the dough hook into the mixer and knead for five minutes or so, or until smooth and elastic. Place the dough in a large greased bowl, cover and leave to prove for an hour or so, or until doubled in size.

Punch down the dough and divide into 8 equal pieces. Shape them in an oval and place on a lined baking sheet, leaving room for them to grow. Using scissors, cut a gash in the top of each roll before covering and allowing to prove for half an hour.

Preheat oven to 200C.

Once puffed, transfer the buns to the oven and bake for fifteen minutes, or until lightly golden. Remove to wire racks to cool slightly before slicing and devouring.

Vodcara Delevingatoni

Main, Pasta, Vegetarian

While I haven’t known Cara Delevingne for as long as some of the friends I’ve featured here, she is probably one of my best friends. Scrap that, is.

Given we’ve both got such busy schedules, Car and I don’t always get to spend as much time together as we’d like but when we do it is damn near perfection. Like that time I partied with her, Paris Jackson and Macaulay … which I can’t talk about. I’ve said too much.

As you know, we met during the filming of Anna Karenina when I was visiting Kiz and Az but what I didn’t mention is that we bonded over our close relationship with the Collinses. You see, my dear(ly departed) friend Jacks’ big sister Joan is her godmother and when you’ve got the Collinses as mutual friends, you’re destined for a beautiful relationship.

I made quick work of convincing her she could do better than bit roles in Kizza star vehicles, watched her bounce from Paper Towns to Pan and into the acting A-list with Suicide Squad. To say I am filled with pride is an understatement.

After catching up on each others’ lives since we last hung – I can’t confirm whether she and Paris Jackson are dating … but I also can’t not confirm they’re dating – and reminiscing about the good old days, I delighted her by whipping out a majestic and decadent Vodcara Delevingatoni.

Does anyone need something this rich, carby and heavy after the insanity that is Easter eating? No. But does anyone actually need anything? Yeah, confusing, inception … I’m on a high from this Carbone copycat of perfection and I can’t think.

Don’t judge me, don’t look at me … just enjoy!

Vodcara Delevingatoni
Serves: 4-6.

Ingredients
3 onions, sliced
100ml water
150g butter
2 tbsp kosher salt, plus extra
1.6kg canned crushed tomatoes
¼ cup raw caster sugar
¼ cup olive oil
2 cups thickened cream
3 tbsp chilli paste
¼ cup vodka
500g rigatoni

Method
Combine the onion and water with 100g butter and a pinch of salt in a large skillet over low heat and cook for half an hour or so, or until softened but not coloured.

Combine the two tablespoons of salt, crushed tomatoes, raw caster sugar and olive oil in a saucepan and simmer for ten minutes, or until combined and slightly thickened.

Cook the rigatoni as per packet instructions.

Combine the tomato and onion mixture in a large saucepan with the cream, chilli, vodka and remaining butter, and cook, stirring until the sauce comes together and is cooked through.

Drain the pasta, add to sauce and stir to combine, adjusting seasonings as required.

Devour.

America's Next Top Model, America's Next Top Model 24, Burgers, Main, Snack, Street Food, TV Recap

Previously on America’s Next Top Model, Tyra and Co celebrated pride. Well, except for Liberty who was struggling with the culture shock since she is used to the bias against gay people in her community. Christina continued to create drama and Brendi K was overwhelmed by the thought of representing her community. The models posed with Drag Race royalty – Manila, Katya and Valentina – where Khrystyana slayed, and Kyla and Liberty bombed, with Liberty ultimately sent back to her small-minded community. Hopeful to change minds.

The models returned from panel where Erin contemplated slipping Khrystyana a little something to bring her back in line with the other girls. JK, Kimora – Erin is a saint and would never do that. Kyla reflected on the humbling experience of landing in the bottom two before she accidentally bumped into Brendi K, setting off some mild rage before stewing in her sadness. Thankfully Christina was on hand to give some solid advice about Brendi maybe just stopping being poor and not being offended by the judges critiques.

It is hella meaningful, since Christina is so good with human interaction.

Erin, Rio and Jeana took time out by the spa to talk about their lives, their choices and how people view their modelling dreams. Erin then broke down about her ex, who she left while he was dying from cancer … WHICH IS WAY TOO HEAVY FOR A MODELLING SHOW.

Tyra Mail arrived the day announcing that this week, everyone would be getting manicures. Thankfully Tyra arrived to offer some clarity … no, nope, no clarity. She just wanted a manicure and to spill some tea. Once again Christina proved adept with human interaction, sharing that she was trying to open up to the girls and form bonds. Then she shared a sad story about her dad’s heart stopping, being put into an induced coma and the fact he should have died. To reiterate, TOO DAMN HEAVY FOR TOP MODEL. Give me a booty tooch while smizing.

Ty-Ty continued to act as Oprah with Kyla sharing her nerves about being in the bottom, Sandra and Erin spoke about never wanting to be a part of a nude shoot and Khrystyana spoke about being molested. Once again and I know I sound like a broken record, THIS IS WAY TOO HEAVY FOR A MODELLING SHOW. Won’t someone bring Tiffany back to get yelled at? Thankfully for Sandra and Erin, Tyra wasn’t going to make them face their fears instead this week’s raw shoot is actually just make-up free … while being cradled by the hands of the other models.

Christina seemed to be in her head throughout the shoot, Brendi K felt the process was cathartic, Kyla put the judge’s’ advice into action and Khrystyana’s soul was captured by Tyra. While we didn’t really see much, it seemed like literally everyone nailed it.

The next day, the models met Drew and Director X to film videos standing up to bullying with the winning one forming part of a National Crime Prevention Council campaign. The models split into three groups, with Brendi K electing to work with sworn nemesis Christina and Shanice as the referee, while Erin, Rio and Jeana, and Khrystyana, Kyla and Sandra were the less dysfunctional groups. Stacey McKenzie arrived to provide advice to the girls while filming the commercial, with Christina wasting no time to bringing up her experiences being bullied in the house. Obviously without naming names.

We were then treated to a screaming montage while the models filmed their videos, and once again, it was way too emotional to actually throw any shade at. All the videos were powerful, well maybe not Christina, Shanice and Brendi K’s, with Kyla, Sandra and Khrystyana’s ultimately taking out victory.

At panel, Kyla received universal praise, as did Sandra, and Shanice … and Brendi K. Khrystyana shared her experience being molested, and explained it fed her release in the photo which was perfection. Hold up, literally everyone was beautiful and their photos received universal praise. Well except for Erin, whose face was completely covered by her hair and Christina who once again argued with the judges, making Tyra question whether she is in the competition to learn or get attention. For the first time in Top Model history, Brendi K, Jeana, Khrystyana, Kyla, Rio, Sandra and Shanice tied for best photo, really putting salt on the wounds of Erin and Christina who really had it driven home to them, that their photos were balls. Despite arguably having the worst photo – wait no, Tyra said it was definitely worse – Erin was saved, while Christina was eliminated because of her bad attitude and the fact she isn’t willing to learn.

Make no mistake, Christina continued to rail against the judges and her fellow models by the time she met up with me backstage, and despite being a lifelong friend … all I could do to shut her up, was smack a Chicktina Big McDonald into her gob.

The Chicken Big Mac has been a hallowed thing popping up on Aussie Maccas menus for the last year or so. Essentially, it is our McRib. And this little number is as close as you can get, when they aren’t trying to lure your into stores. Crispy chicken, the tang of mac sauce, pickles, cheese and iceberg? I damn near creamed my shorts just thinking about it.

Enjoy!

Chicktina Big McDonald
Serves: 4.

Ingredients
500g chicken mince
1 egg
1 cup water
1 cup plain flour
2 tsp salt
1 tsp onion powder
¼ tsp ground black pepper
½ cup mayonnaise
2 tbsp French dressing
1 tbsp sweet gherkin relish
1 onion, finely minced – ½ for the sauce, ½ for the burgers
1 tsp white vinegar
1 tsp sugar
½ tsp smoked paprika
1 tsp garlic powder, plus a pinch for the patties
8 slices American cheese
pickles, thinly sliced
4 sesame seed Kirsten Bunst
iceberg lettuce, chopped

Method
Place the chicken mince in a large bowl and season generously with salt and pepper. Divide into eight patties and place in the fridge to set for at least an hour. While you’re refrigerating things, combine the sauce ingredients and refrigerate until needed.

Beat the egg and stir with the water in a large, shallow bowl and combine the flour, salt, pepper, onion powder and a pinch of garlic powder in a second bowl.

Grab the patties out of the fridge and coat each with the flour mixture, remove and dredge each filet in the egg mixture, before coating in the flour mix again. Place in a freezer bag and freeze for an hour.

Remove and repeat the flour and dredging process again and leave to rest for about ten minutes.

Heat a generous lug of oil in a large frying pan, I mean crazy generous but not enough to technically consider it shallow frying as you know it scares me. Cook the patties for about 5-6 minutes per side, or until light brown and crispy.

Combine the mayo, French dressing, sweet gherkin relish, half the onion, white vinegar, sugar, smoked paprika and garlic powder in a small bowl with a good season, stir and place in the fridge to chill.

To assemble, cut each bun in three and place the base on a plate. Smear generously with special sauce, top with a pinch of the reserved chopped onion, add the lettuce, top with a slice of cheese and a chicken pattie, followed by the middle of the bun. Then smear with more sauce, top with onion, lettuce, a few pickle slices, cheese – because I believe it needs two slices – a chicken pattie and the top of the bun.

Smoosh as thinly as you can and devour, greedily.
